Oh, I just can’t stop singing the praises of thinkThin and the amazing, gluten-free, delicious, and nutritious bars that they have out on the market. I have reviewed quite a few along the way, as I often use these as a protein pick-me-up, or even a pre-race or post-race snack. They are portable…and…even more importantly…impressively filling and delicious.
One of the newer bars out on the market are their line of thinkThin Crunch bars. They have a few varieties out there. Previously, I tried out just the regular Chocolate Dipped Mixed Nuts Crunch Bar…and absolutely devoured it and sang its praises along the way.
Well, my roommate loves a good deal…and while I sent her out to grab something from the grocery store one day when I was in the kitchen slaving away over dinner, she returned with gifts. And one of these gifts was a new flavor of thinkThin Crunch bars.
Happiness. I love new products. Especially by companies and brands that I trust.
Enter…the morning of one of my races. For longer races, I usually dine on a delicious banana about 40 minutes prior to the run. For shorter races…it’s whatever I can grab. Banana works then too…but I haven’t been keeping bananas recently. Sad…I should start doing that again. But, in a rush to get out the door, it was find something quick from the drawer of race morning snacks. I didn’t want something with a lot of chocolate…because I don’t think my tummy would handle that well before a run. The only option, then, that I currently had…was the thinkThin Caramel Chocolate Dipped Mixed Nuts Crunch Bar that Cathy brought home for me. It still had a small amount of chocolate in it…but far less than the other options in the drawer. It would have to do.
We ended up being way ahead of schedule to the race…but the guy with all the packet stuff was running late that morning. It was a little earlier than I liked, but as we were sitting around waiting on someone before anything else race related could be done…I figured I’d go ahead and eat my bar, giving my body some time to work on digesting not just the bit of chocolate, but the nuts as well.
I unwrapped the bar and took a bite.
It reminded me of something…and I still can’t seem to put my finger on it. But…it was something I used to eat…often. So, trust me when I say…this bar is yummy! It is packed with a blend of peanuts, almonds, and cashews. All of the nuts are bound together and sweetened with a hint of honey, then the bottom layer is dipped in a decadent blend of caramel and dark chocolate. Together, the salty-sweet mix is the perfect blend for any palate. Who doesn’t love a hit of sweetness with salty things? It’s why I loved eating chocolate covered pretzels before I had to go gluten-free (but Glutino makes fantastic gluten-free chocolate covered pretzels)…that combination of salty and sweet just does it for me. And this bar combines everything I love about that combination…into one healthy and satisfying bar.
Nutritionally speaking, when it comes to bars of this nature, this is one of the best you can choose. One bar will only set you back 190 calories and 11 grams of fat. Yes…the fat content may seem high, but most of that is from the nuts, and those are healthy, belly-flattening fats. This bar is low in sugar, topping out at only 6 grams, which is 70% less than most leading fruit and nut bars. In addition to that, a healthy dose of 9 grams of protein (that’s 80% more than leading fruit and nut bars as well) and 4 grams of fiber will help keep you feeling full and satisfied long after this bar is eaten. I ran a hard, hilly 5K race and I wasn’t even starving afterwards like I usually am.
Replace candy bars with this wholesome Crunch bar from thinkThin and you’re right on track to delicious, nutritious snacking. I absolutely loved the flavor combination and that this bar is so healthy on top of it. thinkThin has done me proud in the past…and once again…they live up to the high standards they set. I continue to buy bars from thinkThin because they continue to put out a product worth buying. The crunch bars will replace your sugar-loaded candy bars or granola bars…and give you added nutrients in the process.

Product: Mary’s Gone Crackers Organic Herb Crackers – $4.99+
First of all…best name for a brand…ever. It makes me smile when I look at it. Love the whimsy behind the name. You need whimsy…because Mary’s Gone Crackers deals with the great unknown of gluten-free snack products.
This is such a grey area at times when it comes to snack foods. Especially, if you’re like me, and had previously been able to eat regular foods. Going gluten-free was not easy for me. Nothing tasted just right. Nothing lived up to what I had previously been able to eat. Turns out…I was just purchasing the wrong products. I was doing gluten-free on a budget…and that was reflected in the products I was buying. I soon expanded my budget out of necessity to eat…something…delicious…and my world was opened up to an entire new line of products.
Gluten-free crackers are one of those products that can either be really, really delicious…or just…not so good.
If you flip back through my blog, you might discover quite a few varieties of crackers that I have sampled…and either enjoyed…or disliked. But…Mary’s Gone Crackers Organic Herb Crackers…they leave me on the fence.
Here’s why:
These crackers aren’t horrible. Not in the slightest. In fact, they are quite good. The flavor is just…bizarre to me. Honestly. I love how crunchy these are, but they leave my mouth feeling dry whenever I bite into one. I love how these are a blend of healthy grains and seeds…blending organic herbs in with their original recipe to add this savory quality. But…they just seem to be missing something. I think it’s a dip or a spread. A light schmear of cream cheese, or salsa, or even guacamole might do these crackers wonders. They have great texture and I love that I can see the seeds throughout the product. They are definitely crispy and have this rich herby and nutty flavor to them, despite containing no nuts at all in the ingredients. I really want to love these…I don’t. I like them. I think I need hummus or something to devour these with and enjoy them to their full potential. But they aren’t horrible. They are just…different.
Different can be good. Different can be bad. This sort of different is just…different.
Mary’s Gone Crackers Organic Herb crackers are made from organic, gluten-free whole grain brown rice, quinoa, flax seeds and sesame seeds…with a touch of blended organic herbs. They are not only organic, but also non-GMO (YAY!), vegan, dairy-free, wheat-free, gluten-free, made from whole grains, kosher, use no hydrogenated oils, and contain no trans-fats. So, these aren’t at all a horrible choice for a snack. Just know…these are best with a dip or spread…not on their own. On their own, you’ll be downing the water to rid yourself of the dry sensation and taste they leave in your mouth.
A serving of Mary’s Gone Crackers Organic Herb Crackers is 30 grams (or about 13 crackers). Remember, I always way out my food. It’s more accurate. This serving will set you back 140 calories and 5 grams of fat. These crackers are low in sodium as well. Yes, there is a small touch of saturated fat listed on the nutrition information, but that is naturally occurring in the sesame seeds that are part of these crackers. This is good. They have 3 grams of fiber and a powerful 3 grams of protein as well. So, not a bad choice for a snack. Not really. But…they could be if you have to add a spread or dip, depending on what you choose to top it off with. Healthy fats and healthy spreads or dips are a good choice. A homemade guacamole or hummus…or even a salsa would be amazing. I also think that goat cheese would be awesome on these crackers. But that’s just me.
So, while I don’t dislike these crackers, they just don’t stand out on their own. This is one of those crackers that would be perfect to lay out for a party…with a variety of toppers and dips. On their own, they are lackluster and a bit dry. But they definitely have a great crispiness in each bite, which is something I do love about them. I have sampled other Mary’s Gone Crackers products and crackers and have really enjoyed them. I think the herbiness of these particular crackers just sort of take away from what is normally so amazing about this brand.
Special Delivery of Udi’s Gluten-Free Goodies – including brand new products!
Product: Udi’s Gluten-Free Sweet and Crunchy Vanilla Granola – $6.50+
A little while back, I received a nice box of goodies from Udi’s Gluten-Free, containing some of their old products and a few of their new products. Now…one of the first gluten-free products I actually enjoyed eating came from Udi’s. I believe it was their bread…and I think it made me cry because I was finally eating gluten-free bread that actually tasted like bread. I was in Colorado at the time. At a convention. And it felt like I had just won the lottery. Nothing could have made me happier.
Since that initial taste, I’ve been a staunch supporter of Udi’s products. In fact, I’ve tried most of their older products at some point and have enjoyed every single one of them…save the Cinnamon Rolls. They just don’t…do it for me. Perhaps it’s because I’ve been spoiled by gluten-free bakeries like Annie May’s Sweet Café here in Louisville, Kentucky, and Sinfully Gluten Free in Dayton, Ohio…whose gluten-free cinnamon rolls are to die for. Udi’s just hasn’t mastered that product yet. But…that’s okay. Everything else…is addicting. To the point I have my cousin in Minnesota (who does not have to eat gluten-free) completely addicted to and purchasing Udi’s Gluten-Free Double Chocolate Muffins.
No lie. I got her hooked on them last year when I was out to visit my grandpa and my family. If people who can eat anything prefer Udi’s…well…they are doing something right!
Udi’s Gluten-Free Sweet and Crunchy Vanilla Granola
Some of you may realize that I am a breakfast person. I love me some breakfast. LOVE it. I could eat breakfast for every meal of the day and not get tired of it. Breakfast is so versatile and so many varieties of food can be made into a breakfast treat of some sort.
Well, one of my favorite things to make for breakfast is a fruit and Greek yogurt parfait. I give these some texture by adding gluten-free granola. And, let me tell you…I have pretty much exhausted the market of gluten-free granola. At least the ones I can find in this area. Every now and again I’ll stumble across one that I haven’t tried yet…but…yeah…I’ve pretty much got the granola available around here covered.
But…in my Udi’s box of gluten-free goodies…there was a package of granola. Now, I’ve had a few of Udi’s Gluten-Free Granola before…but I hadn’t tried the Sweet and Crunchy Vanilla Granola yet. So…this one, while not a new product, was a new product to me. I hadn’t tried it yet. In fact, I hadn’t even seen this variety in my various grocery stores I hit up on a week-to-week basis (and let me tell you…I hit up a lot every week).
Excited for my next breakfast parfait, I tucked it into my pantry for safe keeping and then…promptly went on two trips out of town and had to cancel my CSA bin of fresh and local produce and fruits. That being said, I was finally back in town and had some leftover plain Greek yogurt from making tzatzkiki with the cucumber and red onion I had received in the bin. When fresh blueberries showed up in my CSA bin, I already knew what was on the menu for breakfast.

The next morning, I pulled out the remainder of the Greek yogurt and knew I needed to dress it up some for my roommate. Plain yogurt has never been her thing, so I added a dash of my gluten-free vanilla, a hit of cinnamon, and a squeeze of honey and mixed it all together. It looked fantastic. I gave the blueberries a rinse and then pulled the granola out of the pantry. It was time to assemble the parfaits…but first…I needed to see how this granola tasted on its own.
I grabbed a small cluster in the palm of my hand and popped it into my mouth.
And then…I did it again. It was so incredibly good. The vanilla gives it the right amount of sweetness and the almonds give it texture and this nice savory and saltiness that it needs to balance it all out. The toasted gluten-free oats are crunchy to perfection, lending this great flavor and texture a much needed crunch. And the sweetness of the honey really shines in each bite. Oh yeah…this was good. This was beyond good…this was deliciously fantastic…and amazingly addicting.
I had to tell myself to stop eating it from the bag and start making breakfast parfaits for my roommate and I. So, into the bowl went a bit of the Udi’s Gluten-Free Sweet and Crunchy Vanilla Granola. I spooned some Greek yogurt over that, gave it a hit of honey, then added some blueberries. I then repeated with another layer. Topped it off with a bit more granola, and then hit it up with one last drizzle of honey. The result?
Sweet, refreshing, crunchy, perfection. It was one of the best parfaits I had assembled. The flavors just meshed well. The granola gave the yogurt and berries a much needed crunch. And the sweetness blended well with that of the other components in the parfait. I was hooked.
Udi’s Gluten-Free Sweet and Crunchy Vanilla Granola is a good choice when it comes to gluten-free granola. So often, granola are laden down with sugar, making them an unhealthy choice. Which, is not what you expect when you eat granola. A serving of Udi’s Gluten-Free Sweet and Crunchy Vanilla Granola is 1/4 cup, which will set you back about 140 calories and 6 grams of fat. That’s not too bad for granola. Even better, this particular variety only has 7 grams of sugar (YAY!! It’s one of the better ones I’ve seen!), serves you 2 grams of fiber, and 4 grams of protein. Awesome. This flavor has no cholestorl, no sodium, and no trans-fat.
And it is SO addictive and SO delicious. Trust me. Whether you eat it straight or add it to your oatmeal or yogurt…one thing is for certain…
Udi’s is continuing to do great things for the gluten-free foods on the market. Udi’s Gluten-Free Sweet and Crunchy Vanilla Granola is just proof that good things come in small packages. This is one delicious and fantastic granola that won’t make you feel too guilty about indulging. Find it and try it. You won’t be disappointed.

Lemon is one of my most favorite flavors in this world. Honestly. There is something so refreshing and revitalizing about not just the scent, but that taste of lemon. And everyone who knows me is quite aware of this fact.
Especially my friend Jenn…who is as much a connoisseur of lemon-flavored lemony things as me. And she is the person I have to thank for bringing Simply Shari’s Gluten-Free and Fabulous Lemon Shortbread Bite Size Cookies into my life. For freakin’ real. She has been one of the most understanding and adapting of my friends when it came to me having to go gluten-free. I show up at her house at times and she showers me with goodies that she has found while out and about. AND…she keeps a “gluten-free” section in her pantry for me as well. Good friends like Jenn are AWESOME and meant to be praised in blogs like this one.
So…awhile back she gifted me with a bag of gluten-free goodness that I asked her to pick up for me since the items were on sale. And when there is a gluten-free sale, even in another state, I jump at the chance to take advantage of it. Well, she threw in a couple of extra things she spotted…and one of them was these little bite-size lemon shortbread cookies.
Simply Shari’s was one of those brands I just sort of accidentally happened upon way back when this gluten-free thing was new to me. I was in Frankfort, Kentucky for the Black Cat Chase 5K…and my roommate and I dropped into the Kroger on our way out. And one of the Manager’s Specials was on a frozen gluten-free pizza from Simply Shari’s. We ended up purchasing it…and eating it a few nights later…and loving it. The Almond Shortbread was next…and we both were enamored with that as well.
So…lemon goodness had to abound from these, right? I knew it was a sure thing because Jenn had picked up some for herself and told me that they were super yumtastic. Those weren’t her exact words. I’m loosely quoting here.
Well, being as it is National Chocolate Chip day…and I don’t have anything chocolate chip in the apartment…I settled on the next best thing for dessert. Yes…lemon cookies. Because nothing says celebrating chocolate chips like lemon shortbread. I never do anything normal or simple. This is my norm.
So, after a delightful dinner and after scouring all the dishes…my roommate and I were definitely ready for a small bite for dessert. That’s one thing I love about these cookies from Simply Shari’s. They are bite-size. So you aren’t getting this huge cookie that is packed with all these fillers that will make you feel more stuffed than you already are. Nope. Not these.
Simply Shari’s Gluten-Free and Fabulous Lemon Shortbread Bite Size Cookies (for being bite size…that’s a mouthful, yes?) are awesome. No exaggeration there. One bite and it was hard to keep myself from simply devouring the other two that were held in the palm of my hand. Honestly. Lemon at its best. Shortbread at its most awesome.
Yes…you still have that buttery and crumbly texture that is associated with shortbread. It’s sweet and savory all at once. But then…add in that fantastic lemon flavor and you totally turn of the volume on these cookies…all the way up to 11. They don’t skimp on the lemon flavor, nor do they throw it in your face either. It’s not subtle but it won’t leave your taste buds feeling assaulted by lemon. That’s the tricky thing about lemon…you can easily make it too lemony so easily. Not Simply Shari’s. And that lemon flavor…it was the perfect match with the buttery taste of the shortbread. So impressed.
These cookies are made with simple ingredients. Rice flour, brown rice flour, sweet rice flour, tapioca flour, cornstarch, potato starch, xanthum gum, water, baking soda, modified corn starch, guar gum, baking soda, and, naturally, lemon fruit pieces. These candied lemon pieces are the star of these cookies, bringing them to life with their stunning lemon flavor. And these crumbly, delicious shortbread cookies are rather impressive nutritionally too…as far as cookies go.
One serving is three bite size lemon shortbread cookies. These three cookies will set you back only 120 calories and 6 grams of fat. Not bad for shortbread. Not bad at all. Even better, the sugar content in these cookies is definitely on the low side – only 9 grams. These gluten-free cookies are also non-GMO, which is always appreciated.
Simply put…Simply Shari’s Gluten-Free and Fabulous Lemon Shortbread Bite Size Cookies are amazing. I am so glad I have a second pack of these in my pantry as well. I’m addicted and hooked and loving the lemon and buttery goodness in a simply delicious and simply fabulous bite-size package. It’s hard to keep that serving down to just three.
Product: Popchips Chili Limòn Tortilla Chips – $2.99+
Popchips really, really, really had to win me back after the bad taste (literally) they left in my mouth with their Sweet Potato Popchips a little while back. I disliked it so much that even at the store I was a bit hesitant to even pick up the flavors I actually do like. Yeah…that’s pretty bad.
However, my gluten-free pantry has quite a few snacks left in its overstock and the next one up, according to expiration date…was the Popchips Chili Limòn Tortilla Chips. I was almost hesitant to retrieve them from the pantry…but I don’t let products go to waste…so I put on a brave face and opened up the bag.
One serving is 28 grams of these chips. You actually get quite a lot for that weight because these are corn masa that has been popped into this light, airy, barely-there feeling tortilla chip. Like…a less-dense version of a Dorito. They looked innocent enough at first glance…so I packed away the serving in a dish to take to work with me and dig out for my late afternoon snack.
Well, the moment of truth came just now. Yes. RIGHT now. I’m at my desk with the lid off my Pyrex container and I’m happily munching away on these Popchips. Smile on my face and everything. The disgusting memory of the Sweet Potato Popchips a thing of the past. Redemption…thy name is Popchips Chili Limòn Tortilla Chips.
I am in love with these. They are light, airy, and totally dusted with amazing flecks of flavor. Sort of…like Cool Ranch Doritos. I know that most of the Doritos out on the market are free of gluten ingredients (not officially gluten-free)…but I hate not seeing that label on the packaging. If it’s not labeled, I normally don’t buy it. So it has literally been two years since I’ve eaten Doritos (also…not all Doritos are vegetarian…so…). But…from what I remember, these Popchips Chili Limòn Tortilla Chips taste like…COOL RANCH DORITOS! Those were always my favorite. These just have a little more of a spice to them. Other than that…I probably wouldn’t be able to tell the difference. It makes me smile…even more than I already am from snack happiness.
Seriously…if like me you gave up simple pleasures like Doritos…welcome something even better back into your life.
Popchips Chili Limòn Tortilla Chips are the perfect blend of spices to give it a kick, but then add that twist of lime that sort of tames it down. It’s awesome. The flavor is just exciting on the taste buds. And yes…you will keep reaching for more. I can’t stop myself…which is why I weigh out my portions instead of carrying the entire bag with me to the office. Seriously…spiced to perfection and made light as air. These chips are made from all-natural ingredients and contain no preservatives. They are non-GMO (a really, really big deal!) and are labeled gluten-free, kosher, and vegan. NICE!
A serving of these amazing tortilla chips is 28 grams (or about 16 chips). This amazingly filling serving will only cost you 120 calories and 4 grams of fat. Not bad for a chip, right? These are very low in sodium (only 135 mg), contain no cholesterol, and serves up 2 grams of protein. As for ingredients…you’ll recognize them. And there are so few of them. Love that. These include stone ground corn masa, oil, chili pepper, salt, sugar, citric acid, dextrose, rice flour, onion powder, yeast extract, garlic powder, paprika, turmeric, paprika extract, toasted corn germ, and a twist of lime. Easy as that.
And they all just mix together to make the perfect bite. Every…single…time!
Popchips…I am so glad I had these after the disaster that was the Sweet Potato Popchips. Because these have won you back my favor. And I intend to keep the Popchips Chili Limòn Tortilla Chips in stock in my pantry whenever possible. Beyond delicious. These are downright addicting.
There are times where I regret waiting so long to get to one of the restaurants or places of interest on my list when I visit a city. That was certainly the case when it comes to BitterSweet Gluten Free Bakery in Eagan, Minnesota.
Live and learn!
So, let me set the scene. On Find Me Gluten-Free, Cathy discovered that the Minneapolis area was home to this gluten-free bakery. And it got rave reviews. This meant…I had to check it out. So it was placed on the list with the address to get to while in town. And…life got busy. And before I knew it…it was Tuesday morning, the morning of the day I was leaving. I had gone on a 6.26 mile run that morning. Cathy had some shops she wanted to check out in Minneapolis and Saint Paul. Oh, and I had a date with a celebratory banana split after my fantastic race on Sunday morning. I always celebrate races with banana splits. But it was still early and I wasn’t quite ready for ice cream.
As we were heading out toward some of the bookstores that Cathy wanted to hit up, we were driving by the Cliff Road exit. And she remembered…we had the gluten-free bakery to stop into. I’m glad she remembered. I would have cried had I not made it in there. We set the Garmin for the address she had written down and soon we were pulling into this little strip mall. The bakery was open, and it looked like the door was getting repaired as a large piece of wood covered it. No matter…they were open and that was what mattered.
We stepped inside and were greeted immediately. We were asked if they could help us and we mentioned that we were from out of town, that I was a Celiac, and that the very fact that this bakery existed was enough to make me happy. The man behind the counter said he would give us some time to look around and he’d be back in a moment.
The bake case was filled with amazing looking bread loaves, cookies, bars, and the like. The counter top had different gluten-free mixes and even some gluten-free hamburger buns (that I am now kicking myself for not purchasing!). We scoured the case and decided that we would buy one of the half loaves of the Gluten-Free Banana Walnut Bread, a Gluten-Free Lemon Bar (which we would split), and then we each decided we would try one of the various cookies that the bakery made. We were rejoined by the nice gentleman behind the counter where I placed a gorgeous half loaf of the Gluten-Free Banana Walnut Bread. I asked about getting one of the amazing looking lemon bars, and then I chose to have the Monster Cookie and Cathy chose the Lemon Zinger Cookie. He wrapped up the cookies, and placed the lemon bar and half loaf of bread into a bag. We talked about being from Louisville, Kentucky, and he mentioned having been at the 2011 gluten-free expo in Carmel, Indiana. He said so much has changed over the years…and that BitterSweet Gluten Free Bakery had been open for nine years now and was still going strong. This spoke very highly to me of their quality and their products…but I had to judge that for myself.
BitterSweet Gluten Free Bakery’s Lemon Zinger Cookie and Monster Cookie
After climbing back into the car, Cathy and I decided we would make our cookies an amuse bouche. I mean, what better lead-in to a banana split than cookies, right? So, she grabbed her Gluten-Free Lemon Zinger Cookie ($1.48) and took a bite of it. Immediately she was elated, saying it reminded her of the Lemon Blossoms my friend Jenn and I make, but in cookie form. I snagged a piece and she couldn’t have been more spot on. The Lemon Zinger cookie was refreshing and zippy. Honestly. I love lemon flavored stuff anyway…and this was awesome. The Lemon Zinger is also a dairy free cookie at this bakery. The other ingredients include white rice flour, sugar, soy shortening, tapioca flour, lemon juice, lemon zest, eggs, aluminum free baking powder, sea salt and xanthan gum. The icing that was zigzagged over the top was a combination of powdered sugar and lemon juice. Just really amazing.
The Gluten-Free Monster Cookie ($1.20) intrigued me immediately. It looked like it had a little bit of everything…and all ingredients that I love. And I couldn’t have been happier when I took my first bite. It was sweet, savory, and just amazing and full of flavor. A party in this cookie monster’s mouth, for sure. This cookie really does have it all. It’s a perfect blend of peanut butter, gluten-free oats, brown sugar, sugar, eggs, chocolate chips, butterscotch chips, raisins, butter, corn syrup, and baking soda. So, it was like getting a peanut butter-chocolate chip- oatmeal raisin- butterscotch cookie all in one. Amazing. Sweet…without being too sweet. I gave Cathy a piece of mine and she thought it was mighty tasty herself. LOVED this cookie. I sort of want to make some for myself. Just…yummy. And as a runner, my love of peanut butter and that salty-sweet combo really was matched with every bite of this cookie. YUM!
Bittersweet Gluten Free Bakery’s Half Loaf of Banana Walnut Bread
The rest of the goods sat in the car all day and then made the long flight home from Minneapolis. That following morning, being that we had no groceries in the fridge, meant that I’d simply slice up some of the half loaf of Gluten-Free Banana Walnut Bread ($4.25). First of all…bananas…walnuts…bread. This was going to have to be good. When I opened up the bag that the loaf was in, I could smell the mouth-watering aroma of the banana bread…almost as if I had just pulled it out of my oven. I sliced off two 1/2 inch slices, one for me and one for my roommate. I threw each one into the microwave to warm it up slightly, then kept it simple with a light schmear of Smart Balance and a drizzle of honey.

Bread…perfection. Honestly. This bread is super moist, despite being a couple of days old at this point. We had it this morning for breakfast as well. Still moist. And we’re polishing off the loaf tomorrow morning for breakfast. I just checked…it is still moist. Soft. Delicious. Filled with banana flavor that is only enhanced by the addition of the walnuts. This bread is awesome. I can’t emphasize this enough. Gluten-free bread, when done right, tastes just like any other bread. Regular bread. The kind anyone could eat. If you put this loaf down in front of someone who could eat any type of bread…and had them eat it…they wouldn’t know the difference. I promise you that. This is one of my favorite gluten-free breads I have ever eaten. Just…super yummy!! Super flavorful. Super moist. And super banana-y. This bread is love.
And, last night for dinner, while it was still fresh…Cathy and I decided that we would give that lemon bar a taste at dessert. So, after we ate our gluten-free grilled avocado and vegan cheese sandwiches, I got out the plastic container that held the lemon bar and pulled it open. And that…was where I realized that the flight and the car ride weren’t too kind to the lemon bar. The icing came off with the lid. Whoops. No matter…I could fix that.
BitterSweet Gluten Free Bakery’s Lemon Bar
The Gluten-Free Lemon Bar ($3.05) is actually a light, airy lemon cake. I sliced it in half and placed one piece on a plate. I then scraped the icing off the lid and began to attempt to reapply it the best I could to the lemon bar itself. This was…a slight success. You work with what you have. I took the first slice out to Cathy and she immediately dove in. Before I even had icing on mine, she was raving about it. So, this was happy news to me. I put my slice on a plate, reapplied the icing to the top and went out to enjoy.
Cathy was so right. The light cakey base made this unlike the other gluten-free lemon bars that I have had in the past. I absolutely loved this take on this treat. The cake itself was very light, not heavy and dense. The icing…wow…that icing. Just like the icing on Cathy’s Lemon Zinger cookie, the frosting was simply a combination of powdered sugar and lemon juice. As for the light, delicious cake…that was simply eggs, sugar canola oil, white rice flour, potato starch flour, tapioca flour, lemon juice, lemon peel and xanthan gum. I loved how different this lemon bar was compared to the others I have tried from other gluten-free bakeries. The ingredients all worked well together well and baked up lemon perfection. Happiness in every tart lemon bite.
I was so happy with everything that I got from BitterSweet Gluten Free Bakery that it has been decided that next time I’m in the Twin Cities…I immediately head to BitterSweet Gluten Free Bakery and buy items to feast on the entire visit. This must happen. This WILL happen.
As for you, BitterSweet Bakery…you are amazing and completely delicious. Just the four items that my roommate and I purchased and enjoyed were enough to make me want to continue to go back for more…as often as possible…every time I’m in Minnesota. BitterSweet Gluten Free Bakery…this out-of-towner can’t wait to get back into town to visit you again.

BitterSweet Gluten Free Bakery’s Lemon Bar (with reassembled icing of awesome!)
It has become quite evident as of late that shortbread is totally in. Totally. Why? Because I have been eating a lot of it recently. Oh, nothing is better than that slight crunch, that buttery flavor, that sweetness that sort of hits on the light side of savory. Yeah…shortbread is pretty amazing.
Gluten-free shortbread can go either way. I’ve had some that have impressed, and I have had some that have fallen short of all expectations. I wasn’t sure what I was getting into when I picked up a bag of Simply Shari’s Gluten-Free & Fabulous Almond Shortbread Bite Size Cookies…but it was a risk I was, apparently, willing to take. I had previously only tried one other product from Simply Shari…a frozen pizza…and I fell in love with it. I think that was where my confidence in this product came. That and the fact that I really am a cookie monster…and where there are gluten-free cookies…you will find me.
Simply Shari’s Gluten-Free & Fabulous Almond Shortbread Bite Size Cookies are a simple blend of recognizable and common ingredients: sugar, unsalted butter, rice flour, brown rice flour, sweet rice flour, tapioca flour, cornstarch, potato starch, xanthum gum, water, baking soda, and modified corn starch. Basic, key ingredients to any shortbread, yes? Even better…the products that Simply Shari’s produces are all made in a dedicated gluten-free facility. It definitely takes some of the guess work out of what you are eating…even if it is simply a cookie (or three).
Given that these are almond shortbread cookies, be assured that almonds are a prevalent and important part of the flavor and texture in this flavor of shortbread. This particular flavor has almond slivers throughout the crumbly, buttery cookies. And that…honestly…is what sets it apart from other gluten-free shortbread.
Let me first start by saying…this is, hands down, one of the better gluten-free shortbread cookies out on the market. The almond flavor really meshes well with the buttery, sweet flavor of the shortbread itself. In fact, these are so reminiscent of homemade shortbread cookies. Honestly. The sweetness is just the right amount to make it feel like a dessert. It definitely cleanses the palate. And it has that wonderful shortbread crunch, coupled with the taste and smell of almonds…it’s right at shortbread perfection.
And…even better…is that these cookies aren’t loaded down with calories and fat either. When it comes to other gluten-free treats on the market, these will definitely fit into your diet plan, for sure. There might be a little guilt, but nothing a good yoga session won’t burn off.
A serving of these cookies is 3 bite-size cookies. Yep. Three. These cookies are about the width of a quarter and stand about a half an inch tall. So, they are just the right amount of dessert at the right time. Three cookies will only set you back 120 calories and 6 grams of fat. That’s not bad for a cookie, as I said before. Additionally, you will take in only 80 mg sodium, 1 gram of protein, and a scant (for cookies) 7 grams of sugar. Loving it? I am.
I’m so very impressed with these cookies that I’m looking forward to opening my next bag of them…which just happens to be the Lemon Shortbread variety. Lemon + Shortbread…two of my most favorite dessert flavors in one? With Simply Shari’s…I bet they are beyond simply delicious.

Special Delivery of Udi’s Gluten-Free Goodies – including brand new products!
A couple of weeks ago, I was the proud recipient of a box of goodies from Udi’s Gluten-Free, one of the first gluten-free companies to really wow me with their products. This two year journey into the gluten-free world was a struggle at first, and then…I discovered the wonder of Udi’s. First bread I liked. First cinnamon rolls I had after going gluten-free. First muffins that tasted like they were fresh out of the oven at a corner bakery. Yep…I had a deep love affair with Udi’s, which continues to this very day. I have yet to meet one of their products that I don’t love.
Case in point…
Last week, my mornings were hectic and stressful. I was pulling extra hours at the office, trying to fit in my training runs, and still make it to the gym every other day. It meant that cooking something for breakfast was near impossible. I didn’t have time for that. At all. Thankfully, this box came along at the perfect time…and with it…brought perfect breakfast bliss.
Back in January of last year, I blogged on the epic tastiness that are Udi’s Gluten-Free Blueberry Muffins. What I said back then still applies today. And let me tell you, I have devoured the blueberry muffins on more than one occasion. My mom tends to buy some sort of muffin from Udi’s lineup when I come home for Christmas to visit. This past holiday…blueberry. Yep. Love. Every morning was full of blueberry love. A simple warming in the microwave and it was like it was hot out of the oven. They are soft and moist, and you would never, ever guess that they were frozen or refrigerated prior to consumption. That’s how good Udi’s is with these products. That’s how much care they put into their food. It doesn’t taste manufactured. My favorite part of the blueberry muffins, aside from the sweet berries and moist cakey muffin part…is the crystal sugar that is dusted over the top. It puts a little crunch into the product, which is already flavored with lemon and vanilla. Blueberry muffin bliss…every time. These have never disappointed. And, as long as Udi’s keeps this tradition alive…they never will.
In my mind then…nothing could ever top the Udi’s Gluten-Free Blueberry Muffins.
What might this product be? Well…muffins for starters, duh!
But, these were nothing like what I expected.
Enter…Udi’s Gluten-Free Harvest Crunch Muffins.
What in the world are Harvest Crunch Muffins? Well, I can elaborate for you.
Udi’s Gluten-Free Harvest Crunch Muffins are everything you want a muffin to be…and then some. Not only do they pack a nutritious punch with each muffin, being that they are filled with healthy ingredients that are rich in protein, vitamins, and minerals…but they are just sheer awesomeness baked in muffin form. Allow me to elaborate.
Harvest Crunch Muffins are a Udi’s take on a more savory, yet still sweet, muffin, making these ideal for any time…but I devoured mine at breakfast. And when I say devour…I mean devour. What made them so nom-worthy? Well, for one thing, they combine the sweetness of cranberries, with the salty (and texture-giving) pepitas (pumpkin seeds), along with sweet potato and quinoa flour. What emerges is this rich, sweet and savory flavor that is so satisfying to the palate, you’ll find yourself digging in for more. I hope my area gets these muffins soon (we tend to run a year behind on new products in the gluten-free market), because these were crazy-good. Stupid-good. Amazing.
And, as I mentioned a bit earlier…nutritious too.
A serving is one muffin. These come in a pack of four. And with one muffin, you are served 250 calories and 10 grams of fat. That’s really, really good when it comes to muffins. Regular muffins can sometimes be twice that for an entire muffin. I am SO impressed. In addition, you get 4 grams of fiber and 3 grams of protein in each serving. LOVING it. These are also low in sodium as well. And I love that the ingredients are all real food that I recognize and don’t need to hit up a dictionary to know what it is I am consuming.
Blueberry muffins will always be one of my favorites, but I really think Udi’s outdid itself with the texture, flavor, taste, and just sheer awesome nutritiounal powerhouse with those Harvest Crunch Muffins. Look for them. Buy them. DEVOUR!! Trust me…you won’t just eat them…you honestly will devour them.
But that’s okay…
Gluten-free goodness can still be hard to come by. Thanks to Udi’s…it’s a given.
Product: Lundberg Salt Free Organic Brown Rice Cakes – $3.49+
I was an odd child.
Well, I’m still a bit odd, but growing up, not many children would have said that one of their favorite snacks to eat was rice cakes. Don’t look at me like that. It’s the truth. My mom often had a sack of them in our pantry and when we’d want a snack, we’d dig one out, give it a little schmear of peanut butter, and happily devour. Sometimes…we nixed the peanut butter and would just eat them on their own. Most people would say they taste like cardboard. Not me. I loved the little cakes of puffed rice. I’d eat the entire bag if I had the opportunity.
Not much has changed in my tastes as I grew into an adult. But…for years I went without my rice cake treat. When I moved out on my own, snacks like that just fell to the wayside. I just stopped buying them.
But along came the giant closeout scare at my local grocery store. These were marked down, and I spotted them on the bottom shelf. I wasn’t going to pass that up, so I snatched a bag of them and, without hesitation, purchased them right then and there. And, as we all know, my plethora of gluten-free snacks and treats was out of control…so these waited for the day they would get to shine.
And that day finally came. These little rice cakes came out of the pantry and journeyed to the office with me for my 3:00 p.m. pick-me-up snack. I even packed a tablespoon of peanut butter to put on top of the little brown rice cake as well. Just like mom used to do for us. Just like we used to do as we got older. Memories…treasured, happy memories.
Well, snack time came and I opened up the pack of Lundberg Salt Free Organic Brown Rice Cakes. I broke off a little piece of it to try on its own. So…so amazing. No…really. Even though this is a Salt Free Rice Cake, the little puffed rice cakes are light, airy, and actually have a rich flavor. Some might say…Styrofoam. Not me. I think they have that bit of sweetness to them, and aren’t loaded with sodium or preservatives that I don’t need to be ingesting. In fact, the Lundberg Salt Free Organic Brown Rice Cakes are made with one ingredient…and one ingredient only…organic whole grain brown rice.
Bingo. Simplicity is a beautiful thing.
But, I had that peanut butter right there, so I had to pay homage to my childhood, so I gave it a schmear across the top of the rice cake. The sweetness of the peanut butter went so well with the crispy, savory taste of the brown rice cake. And it did transport me back to the days of growing up in upstate New York, feasting on these little cakes of goodness as a child, not knowing that they were actually good for me. I have my mom to thank for that. And I often do thank her for providing us with healthier snacks and well-balanced meals as we grew up.
Rice cakes don’t mean bland diet treats. Not when it comes to Lundberg Farms Salt Free Organic Brown Rice Cakes. Honestly, these just may have to become a new staple in my pantry. I’m enjoying this trip down a delicious memory lane!

It has been forever since I’ve had an Oreo. Going gluten-free takes simple pleasures like a simple sandwich cookie and sometimes makes them…untouchable. But…not with sandwich cookies. Quite a few brands are actually out on the market. Some are better than others. But…that’s to be expected.
Another treat to myself when I was last in Minneapolis, Minnesota was these Gluten-Free Chocolate O’s, Schär’s version of the gluten-free sandwich cookie. In every sense of the world…an Oreo. Chocolate cookies with a vanilla cream center sandwiched between them. I saw the box while at Cub Foods, and again, at the time, had yet to see that in my area. Since then, they have been incorporated into at least a few of the natural foods stores that I frequent. But, I’m just a little backed up on my cookie obsession in my gluten-free pantry. I’m getting there! So, naturally, since these were not available, at the time, in my region, I purchased them and carried them home with me.
Mmmm…sandwich cookies!
And, after all this time, they were next up in my gluten-free cookie backlog of epic proportions! So, two days ago, I broke into this box and pulled out a serving of Schär’s Gluten-Free Chocolate O’s. That, by the way, is 3 cookies. Yes…THREE cookies. Don’t get too excited though. These are definitely not the size nor stuffed portion you would find in Oreo cookies. These cookies are about the size of, or maybe slightly bigger (very slightly) than a quarter. Yep. One bite delight. But, that’s the good part…they are at least delicious!
The chocolate biscuits that make up the cookie portion of these little bite-size cookies are a rich and have that crisp softness to it. Sound contradictory? Well, you won’t break your teeth biting into these, but they aren’t soft either. They have just the right amount of crispness to them to make them taste like a cookie. And the center…so delicious. Not too sweet, but so reminiscent of the Oreo stuffing (just less of it), that it wowed me. I was in sheer heaven, looking for a glass of almond milk to dunk these in for good measure. Yes…they are truly amazing. I loved them. The chocolate is rich, but balanced by the cream in the middle. Just delicious bite-sized cookie goodness.
While these cookies are wheat-free and gluten-free, they do contain milk and soy. So be aware! The chocolate cookie is simply made from sugar, palm oil, corn flour, cocoa powder, soy flour, milk powder, potato starch. The filling is a blend of palm oil, milk powder, dextrose, sugar, lactose, soy lecithin, and natural vanilla flavor.
The three cookies in your serving will only set you back 170 calories and 8 grams of fat. Not too shabby for sandwich cookies, I think. The sodium is low (135 mg). As for sugars, for sandwich cookies, 11 grams per serving isn’t bad. And each serving does offer 3 grams of protein. Keep in mind…these are sandwich cookies you are eating. Indulge a little. You can have broccoli tomorrow.
While these are not at the top of my list for gluten-free sandwich cookies, these were very delicious and I have enjoyed indulging my inner cookie monster with a these dunkable, sweet, bite-size treats. Would I buy them again…sure. Would they be the first ones I reached for? Nope. But they are definitely worth the money.
