It took awhile for her to come around…

Actually it took a lot of me just forcing her to eat it…but now my roomie, formerly someone who loathed hummus and everything about it…someone who when I would make her eat it insisted it had to be warm first (EWW!!)…has since seen the error in her ways.  It happened a little while ago actually.  She’s been a hummus fiend ever since.  Without it needing to be heated.

So…hummus has become one of those things we tend to have on hand in the kitchen these days.  It’s a great, healthy spread…good on just about any vegetable…or a gluten-free cracker…or in a gluten-free wrap or sandwich.  Hummus is not only delicious…it’s also so versatile.

I admit…this is the first time I’ve ever purchased hummus in a box.  Usually it’s in those lidded plastic containers in the refrigerated area of the grocery store.  But Pacific Foods has created a, ready for this?, shelf stable hummus.  Yes…shelf stable.  Which is good, because I forgot I had this in pantry.  I actually got this box of hummus for free with a deal going on at my local Earth Fare awhile back.  It was spend $10 or something and get free hummus.  Free and hummus.  Two of my favorite words!

Well…it’s late in the week.  Tomorrow another CSA bin of fruits and veggies will be delivered to my door, and I’m still trying to use up some of the veggies from this past week.  I decided to make it easy.  Knowing that one of the veggies still in my bin was my carrots, I went to the pantry and put the box of Pacific Foods Organic Roasted Red Pepper Hummus into the fridge before heading to the gym this morning.  I knew tonight, I could polish off the remaining two ears of corn by grilling them up and serving them with some carrot sticks and a serving of the hummus.

Work was hectic today…so I was glad to have an easier dinner planned.  Upon returning home, I peeled the corn and got it in the grill pan with some roasted garlic and her vegan buttery spread.  As that was grilling and, as usual, smoking up the apartment, I started to peel and slice the carrots.  When they were ready, I plated them, seasoned the corn, and then grabbed the Pacific Foods Organic Roasted Red Pepper Hummus from the fridge.  I opened up the box and noticed that it really needed to be stirred.  This…is no easy task.  When you try to stir something in a bowl, it’s easy.  When you try to stir something in a box…a mess is bound to happen.  I kept it pretty well contained to the box itself though.  Once it was blended, I scooped out some healthy tablespoons and dinner…was served.

Mmmm…veggies for dinner.

That’s pretty usual for me actually…being a gluten-free vegetarian.

So…how was it?

It was delicious.  Definitely not as creamy as the refrigerated varieties, but not bad.  It was packed with really good flavor.  I could taste the roasted red peppers…which just elevated the spread.  I loved how easy it was to scoop up with the carrot sticks.  And it was so refreshing.  Honestly.  In fact, I ate my grilled corn up first so I could end my meal with the hummus.  That’s how much I liked it.  It reminded me a lot of the hummus I make.  That’s what the texture reminded me of, and perhaps that is why I enjoyed it so much.

Interesting to note…the Pacific Foods Organic Roasted Red Pepper Hummus is one of few shelf-stable hummus’ on the market.  It is actually packaged in BPA-free cartons.  The hummus contains 1/3 fewer calories and 40% less fat than the leading refrigerated brand.  And, Pacific Foods, as always, places their reputation on their high-quality ingredients.

Speaking of ingredients, the Pacific Foods Organic Roasted Red Pepper Hummus is made from water, organic chickpeas, organic roasted red bell peppers, organic red bell peppers, organic canola oil, organic tahini, organic garlic, organic lemon juice concentrate, sea salt, organic sesame oil, organic spices.  It is vegetarian, vegan, cholesterol free, dairy-free, corn-free, soy-free, wheat-free, and yeast-free.

So let’s talk nutrition, shall we?  Hummus is such a healthy spread.  Honestly.  It’s amazing.  A serving of the Pacific Foods Organic Roasted Red Pepper Hummus is 2 tablespoons.  This will provide you with 45 calories and 3 grams of fat.  A serving will also give you 130 mg sodium and 1 gram of sugar.  LOVE IT.  It will also give you 1 gram of fiber and 1 gram of protein.

Hummus is one of the best condiments and spreads to ever come into the world.  It’s rich, creamy, and delicious.  It’s good on sandwiches, or on salads, or on pizzas, or on crackers, or on vegetables…etc.  You see what I’m getting at here?  Hummus makes the world a richer and happier place.  Well…maybe not alone…but it is one healthy way to enjoy some of your favorite foods in a new way.  Or…just dip some tortilla chips or fresh veggies in it…and you’ll be just as happy.  Pacific Foods Organic Roasted Red Pepper Hummus is amazing and I will totally be trying out the other two flavors in the future.

For those of you, who, like me, were diagnosed with Celiac later than life…raise your hand if you remember the simplicity, the ease, and the not-really-so-tasty-but-you-thought-it-was days of yore when you could pull something called a Hot Pocket out of the freezer, slide it into a little heat envelope thingy, and nuke the hell out of it…the filling oozing out of the edges and baking to that microwave safe, dish.

Mmmmm…

Yeah…those were the days.

There was, honestly, a time when those were my lunch.  Every.  Single.  Day.

Sometimes dinner.

Those were the days I lived out of my freezer.

Like…I sort of am now because I hit a low point in my life and went on a buying spree of things I didn’t really need…but at the time, apparently had to have…in my freezer…which I had emptied out of processed foods and is now packed full of them once again.  This is what happens when a runner sprains her ankle.  She falls off that wagon.

That being said…simplicity and ease shouldn’t be eliminated completely.  And while I don’t like dining on processed foods, they do play their part.

As I mentioned, Aldi put out a test line of gluten-free products, branded as liveGfree, and spanning everything from cookies to crackers to snack bars to frozen meals to ready-made frozen pancakes (2 flavors even!) to…things like baking mixes.  Yes…Aldi has jumped on the bandwagon and has offered those of us who must eat gluten-free a more affordable option than what we get at all the grocery stores and natural food stores where we have to shop.

I won’t lie…I pretty much snagged one of everything when I went into Aldi.  Thankfully, I took a stroll around the store and found more items in the freezer section.  YAY!!  Jackpot.  Because in among them were the liveGfree Gluten Free Southwest Veggie Stuffed Sandwiches.  Yeah…happiness can be achieved with stuffed sandwiches…because they really don’t exist in the gluten-free world.  Well, Glutenfreeda makes a version of them, but none of theirs are also vegetarian.  BOOO!  So the fact that Aldi’s liveGfree brand has a vegetarian option…hell yeah…that was coming home with me.  This was meeting my freezer.

And, as I was going running with my friend Natalie yesterday…I needed a simple dinner to heat up so I could change, slather on some sunscreen, and head through the mess of Louisville traffic to her apartment.  We wanted to do something out-of-the-box instead of our normal Monday run.  And it meant some ice cream at the end of it (I had Fudgesicle sorbet!).  So, I really had nothing already prepared…so I opened up my freezer and spotted the liveGfree Gluten Free Southwest Veggie Stuffed Sandwiches.

Perfect.

I got out some plates, pulled the stuffed sandwiches out of the box, slid them into the sleeve, put them in the microwave for just over 2 minutes…and gave them their quick nuking.

Dinner was served…conveniently speedily.

But was it any good?  Well, I served up Cathy first and she was delicately nipping at the sandwich while mine was heating.  I asked her how it was.  She did the high-pitched, “It’s…okeedokey.”  That means…eh….not so good.  So, I asked her to elaborate.  She found the crust to be dry and the filling to be spicy.  She’s a spice wimp.  I can’t remember (because it has literally been ages) if Hot Pocket’s crusts were dry to the taste…so I can’t really compare as far as that is concerned.  When mine finished up it’s cookery in the microwave, I dumped it onto my plate, cut it in half, took a picture, and then took a bite.

Yes…the crust was definitely dry.  In fact…it was distractingly dry.  I felt that the stuffing was lacking.  I loved the spice and I loved the brown rice and black bean combination, but it was seriously lacking.  I felt it wasn’t truly “stuffed,” if you know what I mean.  And while rice and beans are great fillers…and filling…these are Soutwest Veggie sandwiches.  And I found the veggies to be really lacking on the inside.  It was mostly rice and beans.   Bummer.  Actually, so far…of all the items I’ve tried from the liveGfree brand, this is the one I am least likely to purchase again.

So, let’s talk ingredients.  The crust and filling of the liveGfree Gluten Free Southwest Veggie Stuffed Sandwich is made from gluten-free millet flour, water, gluten substitute (rice flour, corn starch, maltodextrin, pea fiber, guar gum), brown rice, salsa (diced tomatoes, tomato puree, salt, diced jalapeno peppers, diced Anaheim peppers, dehydrated onions, spices, dehydrated garlic and citric acid), water, black beans, roasted corn, green chilies, pepper jack cheese with jalapeno peppers, sugar, honey, soybean oil, xanthan gum, dry yeast, deli seasoning, baking powder, baking soda, salt pasteurized dried egg yolks, low moistere part skim mozzarella cheese, southwest style seasonings (spices, red chili pepper, paprika, salt, garlic powder, citric acid, modified food starch (NOOOO!), and cornmeal.  As for the topical ingredients, these include BBQ seasoning, fructose, paprika and paprika extract, tomato powder, natural smoke flavor, and spice.  These are gluten-free, nut-free, and wheat-free.

Nutritionally speaking, a serving size is one of the two included stuffed sandwiches.  This stuffed sandwich will provide you with 270 calories and 6 grams of fat. You will also be taking in 2 grams of saturated fat, 5 mg cholesterol, 440 mg sodium, and 8 grams of sugar.  Not impressed.  And, you will also be taking in 5 grams of filling fiber and 7 grams of protein.  These, surprisingly, were filling…but they just weren’t all that good.  LOVED the spice…but it just lacked…flavor.

While I know some of my gluten-free friends have raved about these, I wasn’t as high on them, nor as impressed.  I don’t think I’ll spend my money on these again in the near future.  I was underwhlemed and a bit disappointed, since these had really gotten me pretty excited when I saw them in the freezer at my local Aldi.  A bit of a letdown…but…I am glad I at least tried it.

Lucky Clover Farms Gluten-Free Herb Bread – $7.00

This past weekend, I was happy to attend the Buy Local Fair in Louisville, Kentucky.  That’s one thing I have to give to Louisville…they are very supportive of their local businesses.  I first attended this event last year, so when I heard that it was happening again, I was just thankful my half marathon ran on Saturday, as this event happened on Sunday.

My main purpose for attending the Buy Local Fair was purely selfish.  I wanted a gluten-free crepe from Sweet ‘N Savory.  My favorite food truck disappeared over the winter but have been back in town since April.  I, however, have been out of town or very busy hosting friends and doing what I do best.  So, my entire purpose was to eat lunch there…which I did.  A delicious savory crepe, which I’ll blog about in a separate post.  After that, I purchased some dairy-free gelato from Sweet ‘N Savory and Cathy and I set about to check out the local businesses that had set up booths and tents at the event.

We first just perused…seeing a few different things that caught our eyes.  One thing that one particular booth did was advertise, quite boldly, gluten-free baked items.

REWIND.

I honestly think that’s what it looked like.  Because I backpedaled and then quickly ducked into the tent to check out what items they had for sale.  I mean, it never hurts to look, right?  In my case…it hurts the budget, but it’s supporting a local business.  I really wanted the gluten-free carrot cake, but it’s hard to sell carrot cake on my roomie…so we both agreed to pick up three varieties of their jams, one of the Gluten-Free Blueberry Muffins (next blog!) and a loaf of the Gluten-Free Herb Bread.  It looked really good.  A light brown crust and you could see the variety of herbs that was baked into it.  It wasn’t dense to hold and it smelled fantastic!

Yeah…that was totally coming home with us.

And…it totally became dinner too.  After a light breakfast, but a crepe-filled lunch, I figured we’d keep dinner a little light.  So, that evening I sliced into the bread, cutting two pieces for each of us.  We had an odd number of my gluten-free minestrone soups in the freezer, so I figured we could split that and have some toasted bread with it.  I turned on the oven, gave the bread slices a little drizzle of olive oil (after we split an end piece to eat without toasting!) and put it in the oven while I heated the soup in the microwave.

The slice we had without toasting was amazing.  As I said before, this bread was not dense at all.  I loved the light feeling it had.  And I loved the flavorful herbiness that came in each bite.  Seriously.  I was drooling just thinking about having more bread with the soup.  And it was a task not to go slice more off the loaf to devour while waiting on the bread to toast and the soup to heat all the way through.  Somehow, I resisted.

The toasted slices of the Gluten-Free Herb Bread filled the apartment with the most amazing aroma.  I pulled them out of the oven, now a golden color and toasted to perfection.  I plated the bread and dished up the soup and we both settled in for dinner.

Oh. My. God.  This bread was some of the best I have ever tasted.  Honestly.  Toasting it only drew out the flavors more, if that was even possible.  I was in love with the different herbs that would dance across my palate with each bite.  It paired so well with the soup too.  In fact, the following night, I heated up the last of the soup, and made grilled cheese sandwiches with this bread to go with it.  I mean…it was so versatile.  I used the last of it this morning, serving it up with some roasted vegetables and a poached egg on top.  It goes good with practically anything and everything.  And I kept wanting to cut smaller slices just to make it last.

Of course, now I’ll be looking for Lucky Clover Farms in other fairs and markets, hoping to pick up more of their items.  From what I’ve been reading, it sounds like the carrot cake I didn’t get is one of their best sellers.  Next time, I’m getting the damn gluten-free carrot cake.

For now, as the loaf is gone, I will dream of the next time I get to enjoy a slice of Lucky Clover Farm Gluten-Free Herb Bread.  Because, yeah…it really is that good.  Gluten-free baking is a science in and of itself…and they have mastered this bread for sure.  Soft.  Flavorful.  And absolutely delicious…however you slice it and serve it.  Highly recommended.  So glad to have them in the area…because I’m going to be dreaming of that bread until I can get another loaf!

I mean…here I was…walking through the freezer section of a natural food store in Columbus, Ohio…and there you are…just screaming at me from your shelf in the freezer: CROISSANT.

Seriously…that was all I needed before jamming it into my rapidly filling basket and hoping the giant box wouldn’t take up too much of my allotted room.  My roommate was treating me to gluten-free treats…things I couldn’t get anywhere else…but I had one medium-sized basket.  My friend Jenn and I were pretty certain that we could “Tetris the shit” out of the basket with the products that were inside if needed.  But…I was rapidly filling up and this box was one of the last items I put in.  Mostly due to package size.

But…CROISSANT STYLE ROLLS!  HELLO!

I wasn’t sure exactly how I wanted to utilize these, but I knew they were coming home with me.  Fast forward to another meager living out of the pantry, fridge, and freezer week (I was out of town again, so no CSA bin).  I happened to have some avocado on hand (because I always have that on hand) and a can of chickpeas, so I whipped up a delicious chickpea and avocado salad.  I needed a vehicle in which to serve this on…and the Celiac Specialties Gluten-Free Plain Croissant Style Rolls were screaming (once again) to me from my own freezer.  BINGO!

So, after a long day at work, I was ready for an easy dinner.  I had set two of the four rolls in the box out on the counter to thaw in a bag.  They did so beautifully.  You can just eat them straight like that, but I like to toast my bread.  So, I sliced the Gluten-Free Plain Croissant Style Rolls in half, drizzled lightly with olive oil, and popped them in the oven for about 5 minutes to lightly toast.  While that occurred, I washed some baby kale and got the chickpea and avocado salad put together.  When the Plain Croissant Style Rolls were ready, I popped them out of the oven and plated them.  Then on went the kale and then a scoop of the chickpea and avocado spread.

Dinner was simple…and served.

When I first got these rolls out to toast, I noticed how light they were.  Well, they were still light.  Very light.  In fact, toasting them didn’t really add any additional weight to them.  I love that.  Because so often bread can overshadow the dish.  There is just so much of it.  Well, this was not the case here.  And upon taking my first bite, I found it to taste exactly like fresh bread right out of the oven.  It had that crusty, warm, delicious, lightness to it.  And it didn’t have any weird aftertaste or horrible flavor.  It was just…plain bread.  Very good plain bread.  In a croissant roll form.  And it was really, really good.  I mean, really good.  I was sad I only had 2 days worth of it, honestly.  I liked it that much.  Anything that can remind me of homemade, fresh bread is okay by me.  Sure, this wasn’t seasoned with special flavors, but it’s honest-to-goodness good.  And that’s all that matters.

Let’s look at the ingredients, shall we?  Celiac Specialties Gluten-Free Plain Croissant Style Rolls are made from water, whole egg, tapioca starch, corn starch, corn flour, canola oil, potato starch, xanthan gum, sugar, rice flour, active dry yeast, and salt.  That’s it.  They are gluten-free and dairy-free.

As for nutrition… a serving size is 1 roll.  In this roll, you will be consuming 110 calories and 3.5 grams of fat.  One of the Celiac Specialties Gluten-Free Plain Croissant Style Rolls contains 50 mg cholesterol, 140 mg sodium, and 1 gram of sugar.  That’s not too bad for bread.  Trust me.  You will also be taking in only 1 gram of fiber and 2 grams of protein.  They are light and fluffy, remember…but not very filling.  So, be sure you sandwich it up with something good and packed with both fiber and protein (like chickpeas and avocado!).

I wasn’t sure what these were going to taste like…and I admit, after my initial excitement, I was a bit worried that they would taste like cardboard…or worse.  But that wasn’t the case.  These actually tasted like real, “normal” bread rolls and I was thrilled that I made the decision to go ahead and give them a try.  I hope I can find more of the various products that Celiac Specialties sells so I can give those a try as well.

Let me tell you…I adore products from Katz Gluten Free.  I have been pimping the quality, taste, and everything about their variety of products since I have tried so many of them.  However…in order to make a gluten-free breakfast bread pudding with a friend of mine…I needed some gluten-free challah.  And I knew the only place to get it was from Katz Gluten Free.

I debated for a long moment over whether to go ahead and order the very, very, very pricey Large Braided Challah Loaf…or just skimp on that line of thinking and get either the sliced challah loaf or the rice challah.  I debated.  Price had a lot to do with it.  I mean…holy gluten-free gods…$35 was a lot to spend on a loaf of bread.  But…I figured I wanted to go for quality of what we were making and opted to go ahead and place an order for Katz Gluten Free Large Braided Challah Loaf.  I just hoped it was worth the $35 I was spending on it.  Oy!

A few days later, the loaf arrived via UPS…and I was really excited to take a look at what a $35 loaf of bread looked like.

Little did I know that when the loaf is called a large braided loaf…it really is LARGE!!  Seriously…the size of two of my heads put together.  That is not an exaggeration!

I only hoped the Large Braided Challah Loaf was worth the investment in the end.  I’d find out on Sunday morning…after a short run…when my friend, Jenn, and I raided her kitchen and began working on a recipe for Gluten Free Morning Bread Pudding with Salted Caramel.  We had the recipe picked out prior to the get-together weekend…and I told her if she got the rest of the ingredients, I would get the bread.  And with both of us following through on the deal…it was time to open up this monster loaf and see if I made a wise investment.

The bread smelled fantastic the moment I got that plastic wrap off of it.  I mean…almost like it was fresh out of the bakery.  So amazing.  I sniffed the air quite a few times, ignoring the slight hunger rumbles in my belly. There was a lot of time between this moment and breakfast time…so I had to focus on getting it made if I wanted to get myself fed.  I sliced off the end piece and, instead of using it as the center of the bread pattern as suggested by the recipe…we cut it up to sample.

OMG…it was good.  It was really, really good.  I loved the taste of the crust and the actual challah bread itself.  The sesame seeds that are scattered on the top of the loaf are a brilliant touch and a very tasty addition.  I wouldn’t have though that those little seeds could be so important, but the taste and texture was only elevated with their presence.  I was impressed.  And, let me tell you…this is one very soft and fluffy loaf of bread.  You’d never guess it because it feels so heavy…but you slice into it and it is just super airy and light.  It’s so weird, I know…but that’s the truth.  It didn’t crumble or fall apart as I sliced into it, as so many loaves of gluten-free bread can do.  And the taste was out-of-this-world delicious.  It tasted like it had just been made and pulled out of the oven.  It didn’t even need a reheat to make it taste edible.  It can go straight from the freezer to the counter top with only a quick defrost.  Amazing.  Totally worth all $35 I paid for it.

I don’t know how this ranks nutrition-wise as no nutrition information is available on the site.  Just know this bread loaf is HUGE!!  HUGE!!  The recipe we were making called for about 12 ounces and I used less than 1/3 of the loaf.  Honestly.  The rest is sitting in my freezer until my next culinary adventure arises.

I can, however, list off the ingredients that Katz Gluten Free uses to make its legendary Large Braided Challah Loaf.  This gigantic loaf is made from a mix of gluten-free flour (white rice, tapioca, arrowroot, corn, soy, and potato), fresh eggs, palm oil, brown sugar, honey, xanthan gum, yeast, salt, flaxseed, and apple cider vinegar.  Mine came topped with sesame seeds, however you can choose to purchase the loaf without the seeds on top.  However, if you don’t have an allergy…I highly recommend keeping them on there.

This bread was amazing in the bread pudding that we baked up for breakfast.  It’s amazing on its own.  It’s amazing with a little butter schmeared on it.  It’s amazing with pizza toppings cooked on it.  It’s awesome as a grilled cheese sandwich.  It holds up to anything and everything.  It won’t fall apart on you.  The flavor is amazing.  The texture is more than superb.  And the versatility this loaf offers is unmatched.  And you’ll want to use it in a variety of ways…since there is so damn much of it.  Not a complaint anymore.  One of my favorite gluten free breads I have ever eaten.  I will definitely spend another $35 in the future without a second thought.

Product Review: Daiya Deliciously Dairy Free Provolone Style Slices – $4.99+

Grilled cheese sandwiches.

They are one of my favorite go-to comfort foods.  Seriously.  And so easy to make too.  Put anything inside with the cheese of your liking and you have yourself a gourmet sandwich good for breakfast, lunch, and yes…even dinner.

Cheese and I don’t always get along though.  But that is where vegan and lactose-free cheeses come into play.  Granted, most of the time, these cheese alternatives lack in the stretchy, ooey-gooey nature of cheeses.  But, over time, it is something you do get used to.  Not saying I don’t miss it…but…you work with what you are given.

That being said, not too long ago, Daiya introduced their slices of vegan cheese, perfect for sandwiches.  I mean…perfect.  Now, it took awhile for these to hit the market around here, but I spotted them at Whole Foods.  And, while I had wanted to start with the cheddar flavor, they were out of that one, so I grabbed the Daiya Deliciously Dairy Free Provolone Style Slices to have on my grilled cheese sandwich I intended to make for dinner on…my birthday.  Yes…my birthday.  This also means you can tell I am about a month behind on my blogging.  Trips and a busy training schedule do that.  But I’m catching up…kinda.

First of all, I love that these slices come in a resealable package.  YES!!  No need to dig out a storage bag to ziplock around the container.  Nicely done, Daiya.  I also love the promise that these slices will stretch and melt like real cheese.  And that they taste like real cheese.  It was enticing…and I really wanted to try them.  So, on my birthday, with no money in the budget to go out and plenty of food in the pantry, fridge and freezer to use, I did up a gourmet grilled cheese sammie (complete with spinach, tomato, and yes…Diaya Provolone Style Slices) with a heaping side of steamed corn from my CSA bin.  Hey…no one said that the birthday dinner had to be fancy.  And, I have gotten amazing reviews of my grilled cheese sandwiches.  I have finally mastered the art of making them without burning one side.  The key…I don’t distract myself with too much else in the kitchen while making them.

While I won’t go as far as to say that the Diaya Provolone Style Slices melted and stretched like real cheese (not even close!), the taste had that nice sweetness that provolone provides.  I was so incredibly happy with the way it flavored the sandwich itself.  A little buttery golden crust on the outside of my gluten-free bread, some sweet cheese, and healthy vegetables sandwiched in between…gourmet grilled cheese it was.  The flavor of the cheese itself once again has that distinctive Daiya cheese flavor.  It doesn’t taste plastic-y like some vegan cheese, but it does have that distinctiveness to it that if you take a bite, you know at once you are eating Daiya cheese.  And I love Daiya.  I wish it had really melted and stretched as the packaging promises, but in the end, all I can ask for is a safe and delicious cheese alternative.  And that’s exactly what these slices are.

Daiya Deliciously Dairy Free Provolone Style Slices are made up of filtered water, tapioca starch, palm fruit oil, expeller pressed non-GMO canola and/or safflower oil, coconut oil, pea protein isolate, natural vegan flavors, vegetable glycerine, brown rice syrup, sea salt, xanthan gum, lactic acid (for flavor) carrageenan (NOOOOO!!!!), titanium dioxide (naturally occurring mineral), and vegan enzyme.  So…again…not a huge chemistry experiment, but not all-natural either.  Then again, it’s vegan cheese…how natural can it be?

Nutritionally speaking, a serving of Daiya Deliciously Dairy Free Provolone Style Slices is one slice of cheese.  This one slice will serve you up 70 calories and 5 grams of fat.  Each slice is also cholesterol-free, sugar-free, and contains only 85 mg of sodium.  One slice does not provide any fiber to your diet and only 1 gram of protein.

These are definitely not a bad option for the lactose intolerant or those who are vegan and gluten-free.  These Provolone Style Slices are lactose-free, gluten-free, casein-free, and soy free.  They do make a great alternative to cheese if you find your system unable to handle the real stuff, as mine sometimes does.  Diaya is one of my favorite companies to turn to for allergen-free vegan cheese alternatives.  And I appreciate all the effort they put forth to make sure their products remain top-of-the-line.  It’s why I continue to return to their variety of cheese-y good products time and time again.  Another win, Diaya!

What I Ate in Colorado

With our California girls needing to return to work…and since we were sort of already out that way…and sort of missed out on our usual journey to Denver, Colorado in April due to my roomie’s teammate…Cathy and I decided that we would take that journey to Colorado.  I admit, for much of the planning stages, tacking on the Denver portion was a nightmare…but we got it all worked out.  And with that, we got to spend Wednesday through Sunday in beautiful Colorado.

There is so much to do and see in Colorado…and we’ve been here enough times that we have our favorites that we wouldn’t miss out on…ever.  But, we also had our sights on some new adventures, both with friends and with food.

So…here’s how a gluten-free vegetarian eats while in Colorado!

It was our first day in Colorado.  After landing at the Denver airport and getting our rental car (free upgrade to the Toyota Prius), we hit the road for our drive up to the Boulder, Colorado area.  We were staying at the Boulder Twin Lake Inn, where many a famous runner has spent the night.  I was thrilled.  I was hoping maybe I was in the room Shalane Flanagan stayed in so that I could channel some of her speed.  The inn is actually owned by runners, which is why it is popular with runners.  Well, after getting checked in, we were starving…so Cathy and I made a short little drive to Lafayette, Colorado.  Our Find Me Gluten-Free app had directed us toward a place called Zaparelli’s Italian Bistro…and it had many gluten-free options.  Including…gluten-free pizza.  Which, mind you, I was thrilled about, as I was doing my long run the following morning around the area the inn was located in…a full 12.5 mile run.  Pizza was just the thing I needed.

Wanting to try something we couldn’t get anywhere else, we decided to get a Gluten-Free Johnny V’s Vegan Pie ($15.00).  It just sounded intriguing…and, as I said, the toppings were different from anything we’d been able to get out anywhere else.  Order in.  At Zamparelli’s…the gluten-free crust is a $2.00 upcharge, but when you have to eat gluten-free, what are you going to do?  The gluten-free pizza is a 12-inch pizza crust…and in this case…it is topped off with a garlicky white bean spread, roasted red peppers, caramelized onions, sauteed spinach, roasted mushrooms, artichoke hearts, and a spicy salsa rosa.  Is your mouth watering yet?  Mine was just reading the description.  I liked that it was vegan…no cheese to upset my delicate stomach as it sometimes does.  Also important with that long run looming.

The pizza was delivered and boy…did it look and smell amazing.  It tasted just as good as it looked too.  The white bean spread acted as the base, instead of a tomato sauce.  The roasted red peppers elevated a lot of the flavor, especially when paired with the caramelized onion.  Sweet and savory.  Very delicious.  But the star, believe it or not, were the artichoke hearts.  That just brought all the other toppings together.  Fantastic.  The crust was really good.  Not undercooked, but done to perfection.  It was a thin crust without being a cracker crust, which I appreciated.  I was quite happy with this meal and my roommate and I walked out of there satisfied, full, and quite happy.

I first heard about The Buff Restaurant on Man vs. Food.  They are best known for their “Saddlebags” which are pancakes that are stuffed with either bacon, sausage or ham, and then topped off with two eggs.  They are massive, mind you.  Like…steering wheel size.  So much more of the menu now has a gluten-free option available (including the Saddlebags…except being vegetarian…not for me)…but I had just done a 12.5 mile run and I was wanting some protein.

I ended up getting one of the omelettes.  In fact, I went with the Veggie Omelette ($9.50).  This thing is, honestly, the size of my head.  But…full of delicious veggie goodness.  This particular omelette comes packed with broccoli, mushrooms, tomatoes, spinach and onions, with a touch of blended cheddar.  Along with this massive egg-splosion of goodness (see what I did there?), you get a side of their potatoes…or you can upgrade to the fruit for just $1.00 more.  I wanted my carbs…so I stuck with the potatoes.  And, with it came a slice of gluten-free toast.  YUM!  As I was in need of some caffeine, I ordered a Café Au Lait with almond milk ($3.50).  It was just the hit I needed, especially since the cup it came out in was, again, the size of my head.  I think I was wired for much the rest of the day.  But it was good.

So was the food for that matter, but I already knew that.  I’ve been eating at The Buff for three years now.  I make a trip to Boulder specifically to eat there and go to the Celestial Seasonings factory.  Honestly.  I do.  It’s the truth.  The eggs are always done to perfection.  The toast is crispy and never burned.  I love it with their homemade jam.  SO delicious.  And the potatoes…they are my favorite way to consume carbs.  Seasoned to perfection.  Done with that bit of crisp on the outside and that soft center.  I ate mine with hot sauce.  The omelette too.  HEAVEN…on a plate.  Which I demolished, mind you.  I ate every last piece.  I was full for the rest of the day.

Around 5 p.m. after my massive breakfast, however, the tummy was starting to get a case of the rumblies.  And my roommate had researched the perfect solution for said problem.  We were now down in Denver for the remainder of our stay and it just so happened that Denver is the home of a 100% gluten-free deli and bakery.  Seriously.

St. Bon’s Café was an absolute nightmare to get to.  And we were getting hungry and cranky as we made our way through rush hour traffic on a Thursday night.  Our GPS got us down to the right area, but had so much trouble actually getting us to the store.  I finally looked it up on my iPhone and managed to get us there.  But it was about 30 minutes before they were going to close.  It was a good thing we already had an idea of what we wanted to eat…because we were cutting it close.

That being said, the owner, Kurt Fulwider, was behind the counter and ready to take our orders.  He told us not to worry about it.  He had a meeting he needed to get to across town and already called to say it wasn’t happening and that he would be late.  So…we ordered…not just dinner…but a dessert to split.  More on that after I tell you about our sandwiches.

For me…I wanted The 3 Wisemen Panini on the house made Rosemary Thyme Focaccia ($7.99).  The 3 Wisemen is a basic caprese sandwich.  It’s freshly sliced tomatoes, basil leaves and mozzarella.  Cathy went with her favorite…something cheesy…opting for The Trinity Panini on the house made Basil Garlic Focaccia ($7.99).  This sandwich is stuffed full of three different cheeses…creamy havarti, sharp white cheddar, and smooth meunster.  We decided we could split a dessert and I had my heart already set on the Blasphemous Bread Pudding ($3.99), which was a gluten-free bread putting with a delicious custard and dark chocolate.  With our orders now paid for, we settled at a table until they were ready.

Let me tell you…the wait wasn’t bad…and the food was fantastic.  Absolutely FANTASTIC!  I fell in love with the rosemary thyme focaccia.  The flavors meshed so well with the fixings in my sandwich.  The basil was so fresh and so fragrant.  The mozarella was melt-in-your sammie good.  And the tomatoes were ripe, and didn’t bleed juice all over my bread.  The focaccia was toasted in the panini press to perfection, giving that nice golden crispiness to each bite.  I was in love with this sandwich.  Cathy tried a piece and said while she loved hers…she really loved the bread on mine.

As for that sinful dessert…oh…yeah.  It was rich…creamy…and beyond blasphemous.  This was a sin to eat.  The custard was rich and creamy, but not overly heavy.  The dark chocolate…melt my heart to pieces…so good.  It paired so well with the custard.  I was so happy when eating this.  So very happy.  I sort of want to recreate it for myself.  If possible.  It’s worth a try.  Yep…that good.  Mouth watering…sinfully…satisfyingly…perfect for when you are PMS-ing or any other time because you just need some chocolate dammit…good!!  I hope I can get back here when I’m in Denver in May.  It must happen.

I love crepes.  LOVE them.  With the exception of my local food truck, I normally can’t have them.  I don’t have a good crepe pan to do them myself…nor would they come close to what Sweet ‘N’ Savory can cook up for me in their food truck.  Normally when I am in Colorado, I would go to La Creperie Cafe in Denver.  But…they closed.  THEY CLOSED!!  I was saddened by this, but started doing some research.  What I did run across though was a little cafe that does only 100% gluten-free food.  The catch was…it was in Colorado Springs.  The best thing is…that doesn’t phase Cathy.  We hopped in the car on Friday morning and took a little drive down to Colorado Springs.

Nestled at the foot of Pike’s Peak, Coquette’s Bistro and Bakery has the perfect location to entertain visitors and locals alike.  The place and the food has won numerous awards over the four years it has been open.  And it claims that the food is so amazing, you’d never guess it was gluten-free.  This little restaurant serves breakfast, lunch, dinner, desserts, espresso, and cocktails.  There is a little bit for everyone.

But Cathy and I made the journey for…yep…crepes.  None of their savory crepes are vegetarian.  That was fine for Cathy, and she ended up ordering the Rise and Dine ($11.00), which is a crepe that is stuffed full (and I mean full) with two scrambled eggs, ham, red onions, tomatoes, and cheddar cheese. The crepe is then topped off with hollandaise.  It came with a side of fruit or their truffled potatoes.  She went potatoes.  I swiped one.  OMG.  Amazing.  I swiped more than one after that.  I think she welcomed the help as her crepe was HUGE.  I would have gone savory had there been a vegetarian option…but I was okay going sweet.  Most of the offerings were what I could get from my local gluten-free crepe food truck…so I went with the one that I hadn’t been served by my local go-to gluten-free crepe place.  And that was the Bananas Fosters Crepe ($8.50).  This dessert crepe (hey…dessert for breakfast is allowed on vacation!) is a delicious crepe that is topped off with banana and a rum brown sugar flambé.  The crepe is served with some house made whipped cream on the side.  My crepe was definitely the size of my plate, but being a dessert crepe, it is usually dusted with cinnamon and sugar on the inside and then topped off with the goodness on the outside.  Much less to navigate through.  But…let me tell you…this was one fantastic crepe.  I loved the rum brown sugar sauce.  The whipped cream was a nice touch.  And the banana, being one of my favorite fruits in this world, made it all taste a little like heaven.  I devoured it.  Like…completely.  Cathy had a good portion of her crepe remaining.  Not me.  I went all vegetarian piggy on that plate.  Worth it.  YUM!  I am making this a required stop from now on.  It must happen.  It is that good.  And I feel safe eating there.

It’s no secret…my roommate and I are completely obsessed with Sherlock Holmes.  For real.  No…seriously.  And when we discovered that just a short walk from our hotel room at the Denver DTC was one of Colorado’s four Baker Street Pub & Grill locations, well, you better believe we knew what we were doing for dinner after hiking around Colorado Springs and the Garden of the Gods.  Hey…you work up an appetite doing that.

We walked over to Baker Street Pub & Grill from the hotel on Friday evening.  I loved how you got to seat yourself.  Our server, a bubbly and enthusiastic woman came over to see about drinks.  I was sticking with water.  But Cathy decided to take in Happy Hour and went with a Baker Street Brown Ale ($4.25).  And with that…her usual pub fare…a half portion of the Fish & Chips ($7.99).  As for me…I went with the Baby Spinach and Feta Cheese Salad ($9.99), which I added avocado slices to ($1.49) with a side of the Serrano Coleslaw ($1.99).  Our waitress put in our order and we sort of geeked out over Sherlock Holmes until it arrived.

My salad was MASSIVE!!  And it looked absolutely amazing to top it off.  This salad was a blend of baby spinach, feta cheese, gala apples, red onions, candied pecans (they didn’t candy mine), and red grapes.  All of this was tossed in a fantastic raspberry vinaigrette dressing.  And let’s not forget my deep love of avocado…which topped off my salad nicely and gave it this rich creaminess that I truly love in a salad.  The flavors really, really worked together.  I loved the way the fruit played well with the vegetables and how the sweet, yet savory vinaigrette just brought it all together.  The avocado…if you order a salad…always top it with avocado…trust me!!  As for the coleslaw…eh…it was coleslaw.  With the wording of Serrano Coleslaw, I expected something with some heat behind it…but it just tasted like your run-of-the-mill coleslaw.  Probably my only disappointment.  The rest…so good!

Cathy was very impressed with her fish.  In fact, we both enjoyed our food so much we came back on Saturday night, our last night in town.  The manager on duty rustled up some can coozies for us and let us get in the big phone booth outside and took a picture.  It was epic.  We ordered the same thing…minus the coleslaw and rounded out the perfect stay in Colorado at one of our new favorite places in Denver…just a short walk from our hotel.  Perfection.

I had every intention of making it out of Denver without eating at the airport.  I figured Cathy and I would grab something in Atlanta.  It’s a good thing she talked me out of that because we had no time for food in Atlanta as it turned out.  So, her plan to eat something in Denver before heading to our gate for the first leg of our journey back to Louisville was a stroke of sheer genius.

And to our delight, Terminal B at the Denver Airport has an Udi’s Café and Bar.  Udi’s is one of the major names in gluten-free breads and other products on the market.  And…they are based in Denver.  So the fact that the airport has one of these cafés shouldn’t be a surprise.  I was so happy they did.

We settled in at a table and a waitress came over to give us menus and let us look them over.  We had a vague idea of what we wanted to eat…sandwiches…with fries.  Filling.  Which is exactly what we needed, honestly.

Cathy went with the BLTA ($9.35), which is a bacon, lettuce, tomato and avocado sandwich with chipotle aioli and served on ciabatta bread.  She got hers with the standard fries that come with the sandwich.  As for me…I went with the Gluten-Free Caprese Sandwich ($9.95) and substituted the regular fries for Sweet Potato Fries ($2.00).  Gluten-free sweet potato fries.  Pardon my dance of joy and glee.  This was the second time this trip I was getting sweet potato fries.  This is me…being happy.

It was a little bit of a wait, but Cathy and I soon received our plates full of food.  The sandwiches were huge. The fries…a big portion.  But this was our meal for the day…so while we weren’t starving…we dove in.

My fries were FANTASTIC!  Better than the ones I waited forever for at Disneyland.  They were crispy, fried to perfection.  I was in love with them.  In fact, I saved them for the last bite because I wanted to remember those fries.  As for the sandwich…epic win.  Served on Udi’s bread (of course), this sandwich was stuffed with mozzarella cheese, fresh tomatoes, and a pesto aioli.  And the flavors just popped.  I have been eating a lot of caprese things since going gluten-free and this was one of the best sandwiches put together.  Simple flavors…executed perfectly.  And served with SWEET POTATO FRIES!!  I was thrilled to actually be able to eat something other than a fruit cup, a salad, or some unhealthy snack at the airport.  Seriously.  This was my happy that day.

So…there you have it.  I find eating gluten-free in Colorado to be so easy.  Both Rudi’s Gluten-Free and Udi’s Gluten-Free are based out of Colorado (one in Boulder…the other in Denver).  Granted, on Saturday when we went up into the mountains to Rocky Mountain State Park…my lunch was a banana, some yogurt, and some Boulder chips…but…I’m in the mountains.  I will cut them some slack.

This was one of my best foodie trips to date.  Both California and Colorado offered me so many options and such delicious food.  I wasn’t really disappointed with any of the restaurants that we chose to dine in.  And that…is amazing!!

Colorado…see you in May.  I hope my favorite places to eat will be ready for me again!

Some of you might have heard that in October, I am going to be running in the Chicago Marathon.  Shortly after getting registered, I decided that I would go one step further and run in the marathon and raise money for a good cause.  I chose a charity and have been fundraising for it ever since.  That charity, Action For Healthy Kids, makes it part of their mission to fight childhood obesity, undernourishment and physical inactivity by helping schools become healthier places so that children can live healthier lives.  This specific organization engages diverse organizations, leaders and volunteers to take action and help foster sound nutrition and good physical activity in children, youth and schools.

It’s something I think this nation is lacking.  Too often we see children sitting in front of game systems, computers, or the television.  And their health is getting worse because of it.

But this charity that I am running for isn’t the only organization or company to want to strive to push children into a healthier and more active lifestyle.

In fact, my friends at Rudi’s Gluten-Free Bakery are excited to be celebrating the upcoming National Take Your Parents to Lunch Day on October 16.  This special day was created to allow parents to eat lunch with their children in school and eat a school-provided lunch.  The meal they provide will be nutritious and healthy and reflect a lot of action that is taking place throughout the country to provide healthier options for children in lunchrooms.

There is one thing that normally goes missing in my life.  Being a gluten-free vegetarian…having sliders is usually not even an option…unless I make them myself.  I’m okay with that…I’ve done it quite a few times, but sometimes it’s nice to just throw something into the oven or a pan and have it ready in no time flat.

And that was never the case until I spotted these amazing little slider patties at Whole Foods.  What caught my eye?  The box.  It clearly is labeled…these slider patties are vegetarian/vegan, wheat-free, gluten-free, a good source of calcium and iron, and also made with heart healthy soy!  You better believe I didn’t even blink when I grabbed a box of these and tossed them into my basket.  Budget be damned this time.  I wanted some sliders, dammit!

As fate would have it, I happened to have some gluten-free dinner rolls in my freezer, which would definitely make the perfect stand-in for slider buns…because you definitely can’t find those in  gluten-free form.  Not yet.  But gluten-free dinner rolls…they work.  I use them all the time for sliders…normally ones from my hometown allergen-free bakery…or Udi’s.  But this time it was Katz Gluten Free.  Which I toasted up in the oven to get that nice golden crust on the buns.

But…let’s get back to the star of this post…Sol Cuisine Original Sliders.

Frozen little disks of meatless goodness, that aren’t really that highly processed when you look at the ingredients.  Which, I’ll do now, since I brought it up.  These little patties are made from filtered water, soy protein concentrate, sunflower oil, dried onion, modified vegetable gum, dried tomato, sea salt, dried garlic, spices, organic lemon juice concentrate and caramel color.  So, it’s not exactly clean eating…and yes…it is a processed food, but it isn’t too bad.  Not when you compare it to other items out on the market.  And the fact that these are vegetarian/vegan make me one happy girl.

The box supplies about 3 different ways to cook these up.  Oven, stove top, microwave…however you choose.  When I made the Sol Cuisine Breakfast Patties, I cooked them in the oven.  But I already had dinner rolls and hand-cut sweet potato fries (yep…I made my own fries) working in the oven.  So, I figured why not give the stove top a go.  I warmed up a skillet and lightly coated it with some olive oil.  Into the pan I placed four of the little patties.  They immediately began to sizzle and cook.  I gave each side about 4 minutes…and they got perfectly golden and had that great crust you associate with a good burger.  I was already happy.

I plated each one up on one of the toasted dinner rolls and topped it with condiments and served it up with my oven-baked sweet potato fries.  I handed my roommate her plate while I fixed up mine.  She dug right in.  And I could tell she was one happy girl when I saw her take her first bite.  Now, as I have mentioned numerous times before, my roommate LOVES burgers.  She is neither gluten-free nor a vegetarian…but she doesn’t mind eating like one.  Lucky for her…as I am the cook in the apartment.  And she was devouring these.

I settled in and was prepared to try for myself.  Sol Cuisine has wowed me with their Breakfast Patties…and they totally disappointed me with their Tofu BBQ Ribs.  So…I knew this could go either way.  But…it was a total win!!  The little patties are FANTASTIC.  They have this great savory flavor to them.  Pan searing them was definitely the right call.  It gave them this moist texture.  It was the perfect veggie burger, without tasting like a veggie burger.  Honestly!  I was in love with the texture.  I thought the flavors were spot on.  And I wanted to savor each bite.  But…you know…burgers are best when they are warm.  So, I polished it off and vowed to pick them up again sometime…as a treat.

Nutritionally speaking, a serving is 2 patties.  This serving will dish up 100 calories and 3 grams of fat.  That is SUPER!!  These patties are cholesterol free and sugar free.  WOOHOO!!  And they are low on the scale for sodium, with only 240 mg per serving, which is awesome for something that is processed.  In addition, 2 patties will also give you 3 grams of fiber and 13 grams of protein.  No wonder this meal filled me up.  I was full for the rest of the night.

A long, long time ago…well…maybe not that long ago…but a good while back…Cathy (the roomie) placed an order for some goodies from Katz Gluten Free…which has quickly become one of my go-to places for amazing gluten-free products.  Sure, I have to order online, but the prices are reasonable and they ship immediately.  So I never have more than a 2 day wait to get my order.  Everything goes into the freezer or pantry and I pull it out as I need it.  And life is good.

Because Katz Gluten Free provides good products.  Time after time I have been nothing but impressed by what I have ordered and eaten.

Whenever the last order was placed (which, as I said…was a long, long time ago), the roomie picked out a new product to try.  These were Katz Gluten Free Dinner Rolls (Small Challa).  When they came in the mail, I put them in the freezer at home and that was where they stayed…waiting…waiting for me to do something with them.  They waited very patiently, being pushed further back into the freezer.  I hadn’t forgotten about them, I just got distracted by my local bakery’s gluten-free dinner rolls.  It happens.

But, after picking up some vegan and gluten-free sliders from Whole Foods a couple weeks ago…I needed dinner rolls for the buns.  And without anywhere to pick up Udi’s Gluten-Free Dinner Rolls (they are really good) and not having picked up any from my local allergen-free bakery…I dug around in the freezer and…like a gift from the gluten-free freezer gods…there they were!!  Katz Gluten Free Dinner Rolls (Small Challa).  I let them thaw while I was at the office, which they did perfectly.  I was afraid that, with how long they had been in there, they might become mushy or crumbly…but I should have known better.

While these rolls can go without being reheated, I love putting a bit of a crust on my buns when I make sliders.  So, I sliced them in half (which was interesting as they do resemble muffins in shape), expecting them to crumble or fall apart.  But they didn’t.  They were soft and very fresh feeling.  I smiled, feeling better about the situation already.  So, I placed each half on a baking sheet and sprayed a light  mist of olive oil over each cut side.  I popped them into the oven for a couple of minutes while I finished up the sliders in the pan and the sweet potato fries finished up in the oven as well.

It only took a few minutes to get them perfectly golden.  I plated them and placed a vegan and gluten-free slider on each bottom part.  Then topped it with the top bun.  Dinner was served.

My roommate actually bit into hers first.  And she went, “KATZ RULES!”  So this was a good sign.  I love it when she raves about gluten-free foods…because she eats like this at home by choice…because I have to.  And that’s a huge deal.  Our kitchen is 100% gluten-free…which means she even gets gluten-free bread to eat instead of whole wheat, like she had previously been doing.  Honestly…best roomie ever!!  Aside from that, she said they tasted amazing.  So, as I put my sliders together, I went and settled in to find out for myself.

First of all, even with the gentle toasting in the oven, the texture of the dinner rolls was incredibly soft and fluffy.  I was so impressed.  They had this very light texture to them and this very light sweetness in taste.  I loved it.  I was enamored with the taste of these.  I just wanted to keep eating them.  Forget the slider…these were fantastic.  I loved being able to squish it down like a regular bun, watching as it would bounce back when I set it down.  It wasn’t heavy or dense.  The flavor was a little sweet, but definitely savory.  I could have eaten all four of them in the package.  But I was good…and I shared with my roommate.  We both couldn’t stop raving about them.  If my local bakery didn’t make such amazing ones, I’d be placing another order…STAT!

So, here we get to the science of the product itself…the ingredients and the nutritional information.  Let’s start with the ingredients.  These dinner rolls are free of gluten, dairy, and nuts.  These rolls are made with real ingredients because a bakery makes them…from scratch.  Honestly, that’s what I love about Katz.  Anyway, the Dinner Rolls (Small Challa) are made from Katz Gluten Free flour mix (white rice, tapioca, arrowroot, corn, soy, potato) water, eggs, palm oil, brown sugar, honey, xanthan gum, dry yeast, salt, flaxseed, and apple cider vinegar.

Nutritionally speaking, a serving is one dinner roll.  Each roll contains 150 calories and 6 grams of fat.  One dinner roll also provides you with 20 mg sugar and 2 grams of sugar.  Not bad.  Not at all.  And you also are provided with 1 gram of fiber and 3 grams of protein.

Okay…so as with a lot of gluten-free baked items, they contain more calories and fat than what regular ones would, but they make it up in the amount of sodium used for sure.  And…these were fantastic.  And sometimes…that’s enough!!

These…will definitely make their way back into my freezer in the future.  They just won’t be kept waiting for so long.
