Yep…it’s that time again.  Time for another blog about the affordable, and mostly delicious findings from Aldi’s liveGfree gluten-free line.  Let me first reemphasize how happy it made me when I was told that for the month of May (also Celiac Awareness Month) Aldi was going to be introducing a test run of their gluten-free products…in a brand known as liveGfree.

I, naturally, hightailed it over to Aldi on Mother’s Day and stocked up on one of everything (save a few items…as they were mixes that I have plenty of already), spending under $30 in the process.  For someone who spends over a hundred dollars each week on food for two people…this was a blessing.  My only concern was…would it taste good.

And as of right now, only one item (the Aldi liveGfree Gluten Free Southwestern Stuffed Sandwich), has not really lived up to my expectations (for processed and frozen food).  So, that’s a good thing, yes?  I think so.

After being away all weekend, I had to cancel my bin for the 4th of July as well as for the following weekend (I’m heading out to see Queen!)…so this means no fresh fruits and veggies delivered to me, from which I could concoct a myriad of new dishes.  Nope.  The next two weeks will be spent living out of the freezer and pantry.  Which is okay…because my budget is shot.  And I have some travel things I need to really get taken care of in the next couple of weeks.  Basically…I have no money…so I make due with what I do have.

And what I do have is a bunch of Aldi liveGfree gluten-free items.

And tonight…really not wanting to spend a lot of time in the kitchen…I decided I would cook up the Aldi liveGfree Gluten Free Cheese Lasagna in the microwave and serve it with the remaining Rudi’s Gluten-Free Rosemary Olive Oil Ciabatta Rolls.  That’s what I did.  All it required was about 10 minutes in the kitchen.  That’s it.  And most of that was getting the rolls going in the oven.  HA!

As for the Aldi liveGfree Gluten Free Cheese Lasagna…preparation was simple.  Remove the tray from the box and cut a slit in the top.  Stick tray in the microwave for 5 minutes.  Cook.  Let stand for 1 minute before removing, serving, and eating.  Simple!  Love simple.  So, as the gluten-free ciabatta was baking in the oven, I got to work on the Aldi liveGfree Gluten Free Cheese Lasagna.  Prep was as easy as I stated above and soon the microwave was rocking and rolling, cooking the meal, melting the cheese on top, and just getting it ready for a nosh-fest.  The rolls finished up just as the microwave beeped.  I let the tray sit for one minute before removing it and carefully peeling away the plastic wrap.

At first glance…not too impressive.  Like most frozen meals, the Aldi liveGfree Gluten Free Cheese Lasagna looked like…lasagna.  The problem was, the marinara was more than a little watery.  *SIGH!*  Aside from that, however, it looked like any other frozen lasagna meal.  I carefully sliced the lasagna in half, as my roommate and I were splitting it, and then served it up.

The lasagna itself held together well, I must say, not slopping off or falling apart as I sliced it in half and then used a spatula to transfer the half to a plate.  It held together.  I was impressed.  I poured the marinara that was left in the tray over the two slices and then served it up.

It was…what it was.  A frozen lasagna.  Nothing too exciting to rave about.  The best part was the ricotta/romano cheese filling.  Honestly.  It had great texture and great flavor.  It was seasoned perfectly.  If the marinara had been less watery, this might have been the perfect frozen meal.  For real.  The cheese on top wasn’t much, but as I can’t tolerate a lot of cheese…that was ideal for me.  It was easy to slice into with a fork and it held together as I brought each bite up to my mouth.  Warmed all the way through and to perfection.  The soft cheese with the brown rice noodles and the seasonings all came together for one stand-up frozen meal.

And fast and easy.  Convenient food.  I’ll take it.

And, for being a frozen meal, the ingredients that go into Aldi liveGfree Gluten Free Cheese Lasagna are fantastic.  Seriously.  The tomato sauce is made from chopped tomatoes, onions, garlic, canola oil, butter, parsley, basil, sugar, and black pepper.  The dough from which the noodles are made are made from rice flour, corn starch, tapioca dextrin, water, whole eggs, canola oil, xanthan gum, salt, guar gum, and sodium alginate.  The filling is simply whole milk ricotta cheese, romano cheese, eggs, salt, and parsley.  And finally, the mozzarella cheese on top is simply made from pasteurized whole milk, cheese culture, salt and enzymes.  While not exactly clean eating, I’d be hard-pressed to find another frozen meal with an ingredient list like that.  Real, recognizable, and quality.  The Aldi liveGfree Gluten Free Cheese Lasagna is gluten free and wheat free.

As for nutrition…well…for a frozen meal, it’s not bad.  My roommate and I split it, but if you were to eat a serving size, it would be the entire slice of lasagna.  This serving would provide you with 410 calories and 17 grams of fat.  You would be taking in 105 mg cholesterol, 520 mg sodium, and 6 grams of sugar.  Finally, you’d be consuming 4 grams of fiber and 17 grams of protein.  It is filling.  Even half of it is filling…trust me.

With the exception of watery marinara, I absolutely found this to be an enjoyable frozen meal from Aldi.  If I were eating it on my own, it wouldn’t have needed the roll to accompany it.  Trust me…I’m full on just half of the lasagna.  That’s saying something.  My hat is off to Aldi and the quality of their liveGfree line.  It’s quite evident in each product that I have tried so far how they strove for quality, using real ingredients and just trying to get that flavor right.  I’m beyond impressed!

I sincerely hope that they continue to keep the line in the stores…because this is gluten-free food I can totally afford.  And enjoy!

I am still praising Aldi for their special gift to those of us who have to follow a gluten-free diet as May (also known as Celiac Awareness Month) kicked off.  I had heard from numerous people that Aldi was going to test their gluten-free product line, called liveGfree, in their stores to see how it did.  Two coworkers of mine snatched up a few products and told me I had to get over there.  And then my mom called and said she had gone to Aldi and stocked up on quite a few things as well and that I really, really needed to check out my Aldi.

So, on that very same day…Mother’s Day…my roomie and I did just that.  And we pretty much bought one of everything.  We didn’t get the flour and dessert mixes because I am overloaded with those…but one of practically everything else.  We even found the frozen items in the freezer near the back.  Sometimes walking the aisles does pay off.  Hey…we were in no hurry and I hadn’t been to Aldi in at least a year…if not longer.  Lucky us…we spotted the frozen meals from the liveGfree line…and picked up the vegetarian ones.  One of everything.  Including the frozen pancakes.  Because…pancakes…HELLO!

Well, World Cup is currently going on…a month later.  And with busy days and wanting to catch matches…even on a Sunday like today…we had a full morning and it was leading into an afternoon of World Cup watching and chores around the house.  Much of my day was spent in the kitchen, prepping meals for this coming week.  Just makes life a lot easier.  Trust me.

So, for lunch…Cathy and I decided that we’d keep it light (because with the USA World Cup match against Portugal tonight…we’re doing vegan fish and chips)…and thought we’d each of one of the (previous reviewed) Rudi’s Gluten-Free Rosemary and Olive Oil Ciabatta Rolls and split one of the frozen meals in the freezer.  I asked if she was feeling ravioli or lasagna…

Well…as you can tell…she went for the ravioli.

Here’s the best thing about these meals…they are so convenient.  Sure, frozen food is never as good as fresh, but I don’t have the time nor the skills to make my own gluten-free ravioli.  I’d love to…but…seriously…no.  Not right now.  Life is far too busy.  With the rolls toasting in the oven, I plucked the box of Aldi’s liveGfree Gluten Free Cheese Ravioli from the freezer and opened it up.

Like most microwave meals, this comes in a microwave-safe tray.  I could see the large (loved the size) ravioli and the red sauce and big flecks of cheese all over the dish.  I cut a slit through the plastic as directed and popped it into the microwave for 5 minutes.  Yep…five minutes.  Then let it sit for one minute and…just like that…lunch is served!  I cut the plastic away and dished up the ravioli between Cathy and I.  Again, I was more than impressed with the size of these.  They were at least two inches around.  I topped our servings off with the extra sauce and cheese that lingered in the tray and popped a roll on each plate.  Time to take a bite.

First of all, I’ve had quite a few gluten-free ravioli’s since having to go gluten-free.  Only one…Conte’s…has truly impressed me.  Well, color me impressed.  Seriously.  While this isn’t as good as the Conte’s brand…it is close.  The ravioli actually cooks to a nice al dente texture, so it still has a bit of that bite that pasta should have.  And, wow…the filling was so delicious.  And these were packed with filling.  They didn’t skimp on that at all.  And for that, I praise them to the sky.  So often the fillings in these microwave meals are non-existent…but these oozed cheese.  Yummy.  And the sauce had a lot of flavor as well.  Fresh tasting, even.  Maybe slightly oily, but nothing that couldn’t be skimmed off.  You can tell it is made from real ingredients, which is actually quite surprising for a microwave meal…from Aldi of all places.  Saucy…cheesy…delish!

So, as I mentioned it above, let’s take a look at the ingredients.  Amazingly and surprising (to me)…is the fact that these are real ingredients.  I recognize them all.  Seriously.   The tomato sauce part is made from chopped tomatoes, onions, garlic, canola oil, butter, parsley, basil, sugar, and black pepper.  The dough is a blend of rice flour, corn starch, tapioca dextrin, water, whole eggs, canola oil, xanthan gum, salt, guar gum, and sodium alginate.  The filling is a combination of whole milk ricotta cheese, romano cheese, eggs, salt, and parsley.  And then…it’s all topped off with mozzarella cheese!

Seriously??!  Yep.  Seriously.

Almost makes me feel less guilty about eating a processed microwaveable meal.  HA!

As far as nutrition goes, a serving size is 1 package.  The entire thing is all yours to eat and enjoy and savor.  This meal will serve you up 360 calories and 15 grams of fat.  Yep…it is a lot…but it’s a lot of cheese!  You will also be taking in 85 mg sodium, 560 mg sodium, and 7 grams of sugar.  The sodium is a little higher than I like, but still under 600 mg…so it’s okay.  Also you will be taking in 4 grams of fiber and 15 grams of protein!  Yes!!  That’s awesome.  And it is a rather filling little meal.  Seriously.  And…yeah…it’s good too!

I would definitely restock this product in my freezer.  And as long as Aldi keeps this line in their stores, I will continue to purchase these items.  Because when I can walk out of a store spending under $30 for the huge amount of products I purchased…well…it makes my budget a whole lot better.  Honestly.

Thank you, Aldi…for making gluten-free convenience food savory and palatable.  Being able to eat something tasty from the freezer that also won’t bust the budget is a fine treat indeed.

Thank you, dearest Raisin Rack, in Columbus, Ohio.  Because ever since I heard of the debut of the Rudi’s Gluten-Free Ciabatta Rolls…I’d been wanting to try them out.  I used to get samples of their products all the time…but that has sort of stopped in the past year.  Too bad, I loved being able to try out products that take forever to make it to my area.  While Louisville, Kentucky is quite the foodie mecca, it still lags behind at times when it comes to gluten-free foods in the grocery stores.  Even the most dedicated of natural food stores around here (and we have plenty) don’t get in these products for what seems like a year from their debut.

BUT…

Apparently, Raisin Rack, up where my friend Jenn lives near Columbus, Ohio…is quite the opposite.

On a visit there awhile back…I was given the task of filling up a nice basket of products that I haven’t seen before…or have wanted to try…but are not always readily available in our area.  I took to this task with a gleam in my eye and products on the mind.  And just as my basket was full…I wandered past a freezer at the end of an aisle and glanced down to the bottom…only to see…Rudi’s Gluten-Free Ciabatta Rolls…both types: Original and Rosemary and Olive Oil.

I gave my roomie the gluten-free doe eyes of puppy dog pleading…and she relented and let me add one to the already full basket I was hauling around the store.  I opted for the Rosemary and Olive Oil variety because…um…yum!  Jenn was helping me Tetris the products so more could get in there.  HA!  Brilliant.

However, with a fantastic, local, allergen-free bakery in my city…I sometimes don’t get to bread-y things in my freezer for some time.  And can you blame me?  Well…despite a stop at the bakery this morning…tonight when I was cooking up some zucchini noodle pasta with portobello mushrooms and a garlic marinara sauce with homemade basil pesto…I figured…with the low carbness (is that a word?  It is now…) of the meal itself, I would go ahead and give the Rudi’s Gluten-Free Rosemary and Olive Oil Ciabatta Rolls a try.  Seemed like a good time to do so!

So…while Germany and Ghana draw in their World Cup match…I began making ribbons of zucchini with my mandolin slicer…chopping up huge portobello mushroom caps…and making my own vegan basil pesto with the pesto Cathy and I are growing on our balcony.  As I got the portobello mushrooms into a sauté pan to begin cooking and sweating out…I got out the Rudi’s Gluten-Free Rosemary and Olive Oil Ciabatta Rolls and plucked two from the package.  They were actually light and airy…not what I was expecting at all.  But…hell…the only other gluten-free ciabatta rolls I’ve had are Schar’s…and they are really good.

I preheated the oven to 400°F and placed the rolls on a baking sheet.  Once the oven was properly warmed…into the oven the rolls went for 10 minutes.  That gave me ample time to not only watch the end of the World Cup match, but also get the zucchini noodles in the pan with some olive oil…add the mushrooms back in…season…add the sauce…and get it all together.  They rolls finished up just as I was finishing up placing the zucchini pasta into bowls and polishing it all up with my homemade pesto.

I pulled the Rudi’s Gluten-Free Rosemary and Olive Oil Ciabatta Rolls from the oven.  They didn’t look much different from when I put them in the oven…maybe a little more golden…hard to say.  But…they smelled fantastic.  I’m a huge fan of rosemary…and so is Cathy.  We each got one roll and a bowl of my made-only-with-veggies “pasta” dish and dinner was served.

While we watched “The Supersizers Go…Seventies” we indulged in our own meal…thankful we weren’t eating the tinned and powdered rubbish the people in England ate in the Seventies.  Real food here.  With a side of one simple gluten-free roll.

The Rudi’s Gluten-Free Rosemary and Olive Oil are really…really good.  Honestly.  They may not look like much, but one bite…and you’ll be sold too.  The outside of the roll gets that nice crusty, crunchy crust on it.  But the inside…still soft and doughy and just…mmmm.  I think Cathy would normally melt some butter inside and dig in.  But we had pasta…and this sort of bread is great for sucking up the last bit of sauce.  And when your noodles are made from zucchini…you tend to have some sauce…or at least some veggies to pile on top.  The bread was amazing.  I was actually very impressed because, while rosemary is one of my favorite spices…it can overwhelm and overpower quite easily.  Not here.  They use just the right amount so that you get the flavor without it taking over your palate.  Oh, I hope we get these soon in our stores around here.  Otherwise…next time I visit Jenn in Columbus, I am taking a cooler…ice packs…and stocking up!

Ciabatta with herbs and olive oil…awesome.  And without all the hassle of making up a flour blend that works with this sort of bread and doing it myself.  LOVE IT!!

So, let’s talk ingredients.  One thing I love about Rudi’s Gluten-Free products is that they use real ingredients…no junk…no chemicals.  It holds true with their Gluten-Free Rosemary and Olive Oil Ciabatta Rolls too.  The ingredients are: water, potato extract, tapioca starch, rice flour, rice starch, evaporated cane juice (cane sugar), egg white, yeast, sea salt, xanthan gum, olive oil, rosemary, sodium bicarbonate, garlic powder, natural enzymes.

As for nutrition…I love these stats.  A serving of the Rudi’s Gluten-Free Rosemary and Olive Oil Ciabatta Rolls is one roll.  With this one roll, you will be consuming 70 calories and 0 grams of fat.  YES…FAT FREE!!  While on the subject of fat, you won’t find saturated or trans-fats in these rolls either.  LOVE.  One roll provides 170 mg sodium and 1 gram of sugar.  LOVE THIS!  Oh…and they are cholesterol free too!  Non-GMO.  And you will be taking in 1 gram of protein…but these rolls have no fiber.  So don’t make a meal out of these…they won’t leave you feeling full.

I’ve always been a huge fan of the products that Rudi’s Gluten-Free has out on the market.  It’s the sandwich bread that I purchase each week.  It’s the wraps I purchase to make tacos or the like.  And now…it’s the rolls I serve at dinner.  Because when a company cares that much about the quality of their food…it shows.  Gluten-free foods are a science, but when done correctly…they can knock your foodie socks off.

Product Review: Annie May’s Sweet Café Gluten Free Vegan Garlic Bread

I love that my local gluten-free bakery is growing.  I love that they are getting enough business to even offer more of their business aside from their daily lunch specials and daily specials in the case.  This makes me insanely happy.

On Saturday, on the third anniversary of the opening of Annie May’s Sweet Café on Frankfort Avenue in Louisville, Kentucky, I finally got to partake in the newest feature of the bakery…

Take-n-Bake goodies from their freezer.  I am talking their (FAMOUS AND DELICIOUS) pizza crusts, garlic bread, vegan garlic bread, cinnamon rolls, and even some of their pastas…(like the best mac & cheese ever).  All items are gluten-free and most are allergen-free.  They make a point when doing gluten-free to also try to do allergen-free.  But some items (like the regular garlic bread and the mac and cheese) contain dairy.

I had stuck my head in the deep freeze earlier in the week when I was in for Soft Pretzel Wednesday (because pretzels on a Wednesday make the best lunch ever!).  The key words that made me happy was…Vegan. Garlic. Bread.  Short on money in the middle of the week, and knowing I was stopping in for the celebration of three years at that location on Saturday, I vowed to make a purchase then.  Little did I know I’d walk out of there with not just the Vegan Garlic Bread, but also the Mac & Cheese, and the Pizza Crust (seriously…best gluten-free pizza crust on this planet…hands down!).  I might have also walked out with an Allergen-Free Banana Spice Muffin (of heaven!).

But, I digress with the muffin.

Let me focus on the entire reason I pulled open that freezer in the first place…

Gluten-Free and Vegan Garlic Bread.

What you get is a half of a half loaf of bread that has been slathered down with a vegan butter and garlic topping.  Then…wrapped and frozen with baking instructions on the label.  Talk about easy.  Just preheat the oven and place the garlic bread on a pan and into the oven and allow to cook for allotted time.  Once done…enjoy.

That’s what I did tonight (and served it up with the Mac & Cheese which I baked at the same time!)

I cried when I took my first bite.  Tears of happiness.  Tear of joy.  Because I haven’t had garlic bread in a very long time.  I tried to order some gluten-free garlic bread from a pizza place in Denver, but they wouldn’t deliver to the hotel (which was only 4 miles away).  So…unless I make it out of gluten-free sandwich bread, it hasn’t happened.  And trust me…that’s not the same.  Annie May’s Vegan Garlic Bread was amazing.  Delicious.  The crust got all golden and crunchy and the middle…soft…chewy…garlic and vegan buttery goodness.  Honestly.  Seasoned perfectly.  Tears.  When a food makes me cry…then it’s damn good.  We only ate half the loaf tonight with dinner…I almost cooked up the second half.  I think this will become another staple that I always purchase from Annie May’s when she has it in stock…much like her cinnamon rolls and her macaroni and cheese!  This…is one of my favorite things I have ever eaten since going gluten-free.  Real food.  Really good.  Make you cry good!  Even my roomie was blown away.  She had taken a bite before I had and she gave me the saddest eyes.  When I took my bite…I understood why.  She liked it better than the garlic bread she has been able to eat.  I liked it better than any I had prior to having to go gluten-free.  Honest…good…food!  That’s what Annie May’s bakes up every single time!

Annie May’s Sweet Café has literally changed my life.  With all the restaurants in Louisville’s blossoming foodie areas, all I want is Annie May’s!  Why?  Because not only can I get safe treats and meals there, but now…I can take a whole lot of their good stuff home to bake up myself when it is convenient.  I hope that the take-n-bake freezer takes off for them and expands, because I would be totally willing to purchase these convenient meals and items every week…just to make one day of my life (if not more) a lot easier.

It’s World Cup time!!  YAY!!  I had the honor of attending a World Cup match back in 1994, when the USA was hosting the matches.  It was so much fun.  And while I’ve never played soccer…I love the sport.  I could go to a match and have the best time of my life.

And with the World Cup kicking off a couple of days ago…and with my favorite player (Diego Forlan on the Uruguay National Team) playing a match late this afternoon, I figured we needed some sort of game-day grub for the occasion!  Back in 2010, you couldn’t pull Cathy or I away from the matches on television or online.  We watched the hell out of them.

Those days are back with a vengeance.  And…although Uruguay lost today to Costa Rica (BOOOO!), at least I made a fun “pub grub” like meal.  The main focus of said World Cup meal was…veggie burgers.  And…more to the point…one of my favorite brands so far…Hilary’s Eat Well.  This time, instead of her original veggie burger…I was told to choose one of the options at our new local grocery store (Lucky’s).  They had three other ones I had yet to try…and in the end, I went for the Adzuki Bean Burger.  Why?  The words green chili and cumin caught my attention!  And we had purchased an avocado…so that would pair well, I figured.  Green chilies and avocado are best mates!  I think.

With kickoff happening, I got up to make the veggie burgers and prepare the toppings.  I had thawed out some of the Rudi’s Gluten-Free Hamburger Buns that were in my freezer and put them in the oven to toast.  I caramelized some onion…sliced tomatoes…tore up some lettuce…and sliced up the avocado.  As I finished that up, the Hilary’s Eat Well Adzuki Bean Burgers came out of the freezer and hit my skillet with just a touch of oil.

These don’t take long to cook at all.  About three to five minutes on each side.  And then, because I melt a slice of vegan cheese on mine, a moment longer with some water thrown in and the lid topping it to allow it to steam and the cheese to melt (as well as vegan cheese can melt).  The buns were toasted, so I pulled them from the oven.  I topped them off with gourmet ketchup (because every burger needs gourmet ketchup), the lettuce, the patty itself (which was crusted on the outside…and soft on the inside), and capped with the tomato, caramelized onion, and sliced avocado.  I served this up with some gluten-free potato chips.  Dinner was easy, early, and served with a side of World Cup!!

I went for the burger first, of course.  The Hilary’s Eat Well Adzuki Bean Burger is the perfect size for a veggie burger patty.  Sometimes they can skimp on size, but not on fat and calories and that’s a problem.  But this was a really great sized patty.  It was a perfect circle of bean and grain goodness.  And yes…you can visibly see the ingredients.  Nothing hidden.  Love it.  One bite…and it was love.  Again.  I raved about the Hilary’s Eat Well World’s Best Veggie Burger…but this…this one might even top that one.  As I mentioned, when I cooked it up in my skillet, it got this perfect crispness to the outside and remained soft (not mushy…just soft) on the inside.  A perfect burger bite.  It browned up beautifully and maintained amazing flavor throughout.  Even better…the taste.  Oh…my…god!  Seriously…this burger isn’t trying to replicate a beef burger.  It’s trying to let the grains and beans be the stars of the patty.  And I applaud Hilary’s Eat Well for that.  Fantastic flavor.  There is a slight hint of spice from the green chilies as well as the chipotle and chili powders, but it doesn’t overpower and it’s not hot.  Trust me…my roommate never said a word about the “heat” level or it being “spicy.”  You can just taste it.  The millet and quinoa add a bit of a nutty flavor to each bite.  And the beans…that creates that amazing texture!

So…let’s look at nutrition.  And far as ingredients go, this is a fantastically constructed veggie burger.  For real.  Hilary’s Eat Well prides itself on using real-food ingredients that nourish the body and support a healthy ecosystem.  So…the Hilary’s Eat Well Adzuki Bean Burgers are made from a combination of water, millet, adzuki beans, quiona, expeller-pressed coconut oil, sweet potato, onion, mild green chilies, psyllium husk powder, arrowroot, real salt, apple cider vinegar, garlic, cumin, chili and chipotle powder, and lime juice.

I recognize everything listed above.  I love it when food is made from real food.  These burgers are also non-GMO, gluten-free, dairy-free, soy-free, corn-free, egg-free, yeast-free, and nut free!

As for the nutritional information, a serving size is 1 veggie burger patty.  One of the Hilary’s Eat Well Adzuki Bean Burgers will serve you up 190 calories and 7 grams of fat.  This burger will also be giving you 290 mg sodium.  These burgers are cholesterol and sugar free.  LOVE!  Finally, you will be taking in 5 grams of fiber and 5 grams of protein.  I consider this to be a very healthy burger with trusted ingredients.

So, even though Uruguay lost to Costa Rica, my taste buds were engaged and happily savoring every bite of the Hilary’s Eat Well Adzuki Bean Burger.  Delicious!  I can’t wait to try the other burgers that the few stores that carry these have in stock.  Super delicious!!

It’s no secret around here…my go-to food for…whatever emotion I’m feeling…is peanut butter.

PEANUT-FREAKIN’-BUTTER!  When I’m stressed, sad, lonely, hungry, angry, confused, and yes…even happy or content…I have a jar…and a spoon…and I eat all the peanut butter.

Well, that’s not what I set out to do…but that’s normally what happens because when it comes to the creamy, rich, sweet and salty flavor of peanut butter…I sometimes can’t stop myself.  Honestly, it would be best for me if I had Cathy hide the peanut butter.  This may have to happen.

That being said, this morning I opened up a new dreamy jar of a new kind of peanut butter.  My friend Jenn found a jar of PB Crave (my local World Market seems to be the one place locally I can get this!) and was kind enough to pick one up for me.  The flavor – Cookie Nookie.  As in…cookie flavored peanut butter.  And, before you fret, it is gluten-free!  It’s been sitting, standing on it’s lid (it’s all natural, so the ingredients separate), in my pantry, since I brought it home from Columbus, Ohio.  But the time had come.  I didn’t want to wait any longer.  That and Cathy really seemed to want the gluten-free bagel thins instead of eggs this morning…and I needed something to schmear on them.  Congratulations PB Crave…your time to shine.

I uncapped the jar this morning and got out a butter knife to begin the task of stirring the ingredients together.  Hey…I don’t mind working for my peanut butter.  Honestly.  It smelled amazing…like peanut butter cookie dough, so I couldn’t wait to get it on that bagel.  I worked for about 5 minutes, making sure the oil was mixed in well and that there were no clumpy bits.  I hate clumpy bits in my peanut butter.  Then, I recapped it and got the bagels out to toast in the oven.  They were lightly toasted and I was ready to top them off.

PB Crave is the brainchild of Curt Riess, who was raised on traditional peanut butter and (gasp) hated it!  But that all changed one day when he tried a combination of peanut butter, raspberries, and chocolate.  The new twist on an old classic was what sparked the idea to begin his own peanut butter company.  Curt’s Peanut Butter Company was born and soon developed four very unique flavors for their line PB Crave.  The company is based out of Cannon Falls, Minnesota, and they believe in quality, citizenship, and innovation.  They are not only re-inventing peanut butter (and doing a fine job of it too!), and focusing on quality products, they are setting out to change the world.  No joke.  Their Web site has a link to Project Peanut Butter, where the company donates a minimum of 2% of the profits from every jar of PB Crave to Project Peanut Butter, a non-profit organization that focuses on treating malnourished children.  So, PB Crave is actually setting out to make a difference.  You gotta love that!

But, I digress…

So, the gluten-free bagel thins were now dressed up in PB Crave Cookie Nookie Peanut Butter and ready for their first taste test.  I handed Cathy her plate and went to clean up a little and pour myself some coffee.  As she is fighting off a cold, I didn’t bother to ask her what she thought of it.  I always get the same response anyway these days and I grow weary of hearing it every time.  So, I settled in with my own plate and took a bite.

Rich.  Creamy.  And it tastes like peanut butter cookie dough with chcolate chips in it.  It’s like…eating dessert on my bagel.  Man…it was amazing.  And really fantastic with the texture.  It stirred together well and just became this smooth spread with chocolate chips throughout.  And…that’s exactly what it should taste like.  The PB Crave Cookie Nookie Peanut Butter is a delicious combination of chocolate chips, cookie dough flavor, wild honey, and premium peanut butter.  So…cookies…peanut butter…chocolate chips…honey…did I die and go to peanut butter heaven?  This was one rich, sweet treat to have on my bagel this morning.  I fell in love with first bite…and then wanted to lick the plate.

For those of you, who, like me, were diagnosed with Celiac later than life…raise your hand if you remember the simplicity, the ease, and the not-really-so-tasty-but-you-thought-it-was days of yore when you could pull something called a Hot Pocket out of the freezer, slide it into a little heat envelope thingy, and nuke the hell out of it…the filling oozing out of the edges and baking to that microwave safe, dish.

Mmmmm…

Yeah…those were the days.

There was, honestly, a time when those were my lunch.  Every.  Single.  Day.

Sometimes dinner.

Those were the days I lived out of my freezer.

Like…I sort of am now because I hit a low point in my life and went on a buying spree of things I didn’t really need…but at the time, apparently had to have…in my freezer…which I had emptied out of processed foods and is now packed full of them once again.  This is what happens when a runner sprains her ankle.  She falls off that wagon.

That being said…simplicity and ease shouldn’t be eliminated completely.  And while I don’t like dining on processed foods, they do play their part.

As I mentioned, Aldi put out a test line of gluten-free products, branded as liveGfree, and spanning everything from cookies to crackers to snack bars to frozen meals to ready-made frozen pancakes (2 flavors even!) to…things like baking mixes.  Yes…Aldi has jumped on the bandwagon and has offered those of us who must eat gluten-free a more affordable option than what we get at all the grocery stores and natural food stores where we have to shop.

I won’t lie…I pretty much snagged one of everything when I went into Aldi.  Thankfully, I took a stroll around the store and found more items in the freezer section.  YAY!!  Jackpot.  Because in among them were the liveGfree Gluten Free Southwest Veggie Stuffed Sandwiches.  Yeah…happiness can be achieved with stuffed sandwiches…because they really don’t exist in the gluten-free world.  Well, Glutenfreeda makes a version of them, but none of theirs are also vegetarian.  BOOO!  So the fact that Aldi’s liveGfree brand has a vegetarian option…hell yeah…that was coming home with me.  This was meeting my freezer.

And, as I was going running with my friend Natalie yesterday…I needed a simple dinner to heat up so I could change, slather on some sunscreen, and head through the mess of Louisville traffic to her apartment.  We wanted to do something out-of-the-box instead of our normal Monday run.  And it meant some ice cream at the end of it (I had Fudgesicle sorbet!).  So, I really had nothing already prepared…so I opened up my freezer and spotted the liveGfree Gluten Free Southwest Veggie Stuffed Sandwiches.

Perfect.

I got out some plates, pulled the stuffed sandwiches out of the box, slid them into the sleeve, put them in the microwave for just over 2 minutes…and gave them their quick nuking.

Dinner was served…conveniently speedily.

But was it any good?  Well, I served up Cathy first and she was delicately nipping at the sandwich while mine was heating.  I asked her how it was.  She did the high-pitched, “It’s…okeedokey.”  That means…eh….not so good.  So, I asked her to elaborate.  She found the crust to be dry and the filling to be spicy.  She’s a spice wimp.  I can’t remember (because it has literally been ages) if Hot Pocket’s crusts were dry to the taste…so I can’t really compare as far as that is concerned.  When mine finished up it’s cookery in the microwave, I dumped it onto my plate, cut it in half, took a picture, and then took a bite.

Yes…the crust was definitely dry.  In fact…it was distractingly dry.  I felt that the stuffing was lacking.  I loved the spice and I loved the brown rice and black bean combination, but it was seriously lacking.  I felt it wasn’t truly “stuffed,” if you know what I mean.  And while rice and beans are great fillers…and filling…these are Soutwest Veggie sandwiches.  And I found the veggies to be really lacking on the inside.  It was mostly rice and beans.   Bummer.  Actually, so far…of all the items I’ve tried from the liveGfree brand, this is the one I am least likely to purchase again.

So, let’s talk ingredients.  The crust and filling of the liveGfree Gluten Free Southwest Veggie Stuffed Sandwich is made from gluten-free millet flour, water, gluten substitute (rice flour, corn starch, maltodextrin, pea fiber, guar gum), brown rice, salsa (diced tomatoes, tomato puree, salt, diced jalapeno peppers, diced Anaheim peppers, dehydrated onions, spices, dehydrated garlic and citric acid), water, black beans, roasted corn, green chilies, pepper jack cheese with jalapeno peppers, sugar, honey, soybean oil, xanthan gum, dry yeast, deli seasoning, baking powder, baking soda, salt pasteurized dried egg yolks, low moistere part skim mozzarella cheese, southwest style seasonings (spices, red chili pepper, paprika, salt, garlic powder, citric acid, modified food starch (NOOOO!), and cornmeal.  As for the topical ingredients, these include BBQ seasoning, fructose, paprika and paprika extract, tomato powder, natural smoke flavor, and spice.  These are gluten-free, nut-free, and wheat-free.

Nutritionally speaking, a serving size is one of the two included stuffed sandwiches.  This stuffed sandwich will provide you with 270 calories and 6 grams of fat. You will also be taking in 2 grams of saturated fat, 5 mg cholesterol, 440 mg sodium, and 8 grams of sugar.  Not impressed.  And, you will also be taking in 5 grams of filling fiber and 7 grams of protein.  These, surprisingly, were filling…but they just weren’t all that good.  LOVED the spice…but it just lacked…flavor.

While I know some of my gluten-free friends have raved about these, I wasn’t as high on them, nor as impressed.  I don’t think I’ll spend my money on these again in the near future.  I was underwhlemed and a bit disappointed, since these had really gotten me pretty excited when I saw them in the freezer at my local Aldi.  A bit of a letdown…but…I am glad I at least tried it.

Product Review: Lucky Clover Farm Gluten-Free Blueberry Muffin

Yeah…after the mention of the Gluten-Free Blueberry Muffin from Lucky Clover Farm in my previous post, I wasn’t going to leave you hanging.  Seriously.  I think I’m in love with the gluten-free baked goods this local business is putting out.  I am so glad that I went to the Buy Local Fair in Louisville on Sunday because I don’t think I would have found them otherwise.

Happiness…is being able to eat baked goodies!

Because unless I go to a specialty bakery or buy them in the store or make them myself…I go without.

That’s how it works when you are a Celiac.

That being said…when I literally turned around and walked back to the booth at the Buy Local Fair that was advertising gluten-free breads, muffins, cakes, etc…I didn’t know what I was in for.  I ended up purchasing more than what I initially intended.  I wanted the gluten-free carrot cake…but it’s hard to sell that on my roomie.  She was intrigued by the herb bread…and I just blogged on that.  We also picked out three of the jam varieties they had for sale as well.  We are jelly and jam lovers here.  Seriously.  I kept eying that carrot cake…but ended up leaving it and going for the Gluten-Free Blueberry Muffin instead.

First of all, I have never seen such beautiful muffins.  It was shaped like a giant flour.  Seriously.  I picked up one of the individually wrapped muffins and found it soft, light, and smelling of fresh blueberries.  It smelled sweet.  And fresh.  And…yeah…I supposed I could leave the carrot cake behind this time if this was what I got to have instead.

On Monday morning, after my spin class, I returned home and got to work on a quick and easy breakfast.  This was going to consist of some of the aforementioned gluten-free herb bread from Lucky Clover Farm…and Cathy and I were splitting the Gluten-Free Blueberry Muffin.  I decided to toast the slice of bread, tossing it on a pan and then into the oven while I went and showered.  When I was dressed and back in the kitchen, the bread was finishing up…so I unwrapped the blooming Gluten-Free Blueberry Muffin from Lucky Clover Farm, placed it on a plate, and then placed it in the microwave for about 20 seconds.

It smelled so amazing as it emerged out of the microwave, warm all the way through.  I sliced it in half…then into quarters.  Cathy loves her muffin buttered, so I added a light schmear of real butter to her muffin slices and then plated it with the toasted gluten-free herb bread.

I never have buttered much of anything I ate…including bread and muffins, so mine was simply plated.  I settled in with my coffee and my tasty (and easy and quick) breakfast that morning.  I already knew the bread was good, so I immediately turned my attention and appetite to the Gluten-Free Blueberry Muffin.

It was so soft and light.  It was not dense at all.  Just fresh and baked to a golden perfection on the outside.  The blueberries added a great amount of fresh sweetness.  And it wasn’t laden with sugar, making it seem more like cake.  This was a muffin through-and-through.  It was soft and chewy and perfect.  I think angels might have baked it…because I love a muffin that isn’t heavy.  And this was just what I needed that morning.  They seem to make different varieties of their gluten-free muffins throughout the year and where they end up at different fairs and festivals and markets.

I can’t say enough good things about Lucky Clover Farms.  In fact, these gluten-free baked goods were such a hit with me and Cathy that we can’t wait to try the jams out.

This might have been my favorite Gluten-Free Blueberry Muffin to date.  I mean…it looked like a flower and tasted like a dream.

This past weekend, I was happy to attend the Buy Local Fair in Louisville, Kentucky.  That’s one thing I have to give to Louisville…they are very supportive of their local businesses.  I first attended this event last year, so when I heard that it was happening again, I was just thankful my half marathon ran on Saturday, as this event happened on Sunday.

My main purpose for attending the Buy Local Fair was purely selfish.  I wanted a gluten-free crepe from Sweet ‘N Savory.  My favorite food truck disappeared over the winter but have been back in town since April.  I, however, have been out of town or very busy hosting friends and doing what I do best.  So, my entire purpose was to eat lunch there…which I did.  A delicious savory crepe, which I’ll blog about in a separate post.  After that, I purchased some dairy-free gelato from Sweet ‘N Savory and Cathy and I set about to check out the local businesses that had set up booths and tents at the event.

We first just perused…seeing a few different things that caught our eyes.  One thing that one particular booth did was advertise, quite boldly, gluten-free baked items.

REWIND.

I honestly think that’s what it looked like.  Because I backpedaled and then quickly ducked into the tent to check out what items they had for sale.  I mean, it never hurts to look, right?  In my case…it hurts the budget, but it’s supporting a local business.  I really wanted the gluten-free carrot cake, but it’s hard to sell carrot cake on my roomie…so we both agreed to pick up three varieties of their jams, one of the Gluten-Free Blueberry Muffins (next blog!) and a loaf of the Gluten-Free Herb Bread.  It looked really good.  A light brown crust and you could see the variety of herbs that was baked into it.  It wasn’t dense to hold and it smelled fantastic!

Yeah…that was totally coming home with us.

And…it totally became dinner too.  After a light breakfast, but a crepe-filled lunch, I figured we’d keep dinner a little light.  So, that evening I sliced into the bread, cutting two pieces for each of us.  We had an odd number of my gluten-free minestrone soups in the freezer, so I figured we could split that and have some toasted bread with it.  I turned on the oven, gave the bread slices a little drizzle of olive oil (after we split an end piece to eat without toasting!) and put it in the oven while I heated the soup in the microwave.

The slice we had without toasting was amazing.  As I said before, this bread was not dense at all.  I loved the light feeling it had.  And I loved the flavorful herbiness that came in each bite.  Seriously.  I was drooling just thinking about having more bread with the soup.  And it was a task not to go slice more off the loaf to devour while waiting on the bread to toast and the soup to heat all the way through.  Somehow, I resisted.

The toasted slices of the Gluten-Free Herb Bread filled the apartment with the most amazing aroma.  I pulled them out of the oven, now a golden color and toasted to perfection.  I plated the bread and dished up the soup and we both settled in for dinner.

Oh. My. God.  This bread was some of the best I have ever tasted.  Honestly.  Toasting it only drew out the flavors more, if that was even possible.  I was in love with the different herbs that would dance across my palate with each bite.  It paired so well with the soup too.  In fact, the following night, I heated up the last of the soup, and made grilled cheese sandwiches with this bread to go with it.  I mean…it was so versatile.  I used the last of it this morning, serving it up with some roasted vegetables and a poached egg on top.  It goes good with practically anything and everything.  And I kept wanting to cut smaller slices just to make it last.

Of course, now I’ll be looking for Lucky Clover Farms in other fairs and markets, hoping to pick up more of their items.  From what I’ve been reading, it sounds like the carrot cake I didn’t get is one of their best sellers.  Next time, I’m getting the damn gluten-free carrot cake.

For now, as the loaf is gone, I will dream of the next time I get to enjoy a slice of Lucky Clover Farm Gluten-Free Herb Bread.  Because, yeah…it really is that good.  Gluten-free baking is a science in and of itself…and they have mastered this bread for sure.  Soft.  Flavorful.  And absolutely delicious…however you slice it and serve it.  Highly recommended.  So glad to have them in the area…because I’m going to be dreaming of that bread until I can get another loaf!

Twas the night before a half marathon…

…so…in other words…gluten-free pizza night!

About a week before setting out to Fishers, Indiana, to run the Geist Half Marathon (for training), I started a full-on search for good gluten-free pizza in that area.  I’m spoiled rotten by my local allergen-free bakery, Annie May’s Sweet Café, because her pizza crust is actually a thick crust…not this thin cracker crust you get everywhere else.  I always crave her pizza and went on a search to, perhaps, find a place that was comparable to the one she makes.

So…I tossed it out on my Facebook page for some suggestions.  I wanted to try somewhere new…somewhere I couldn’t easily go here in Louisville.  So no Puccini’s and no Mellow Mushroom (although…yum to Mellow Mushroom!).  I didn’t want to go somewhere I already had gone up there to try…so no Monical’s or Jockamo’s.  Some of my friends in my running group were, unknown to me at the time, also running Geist…and Laura said they were going to hit up Rockstone Wood Fired Pizza & Pub in Fishers on Friday night for their dinner.  And she saw they had a gluten-free menu as well.

I went to check it out, along with two other places that I researched via Find Me Gluten Free.

In the end, due to being conveniently close to the hotel…Rockstone Wood Fired Pizza & Pub was where Cathy and I decided the night-before-the-race pizza would happen.  And…as an added bonus, my good friend, Julia, was going to meet us there for dinner.  YAY!

I’ve had a lot of misses on the gluten-free pizza as of late while on the road.  So, I was desperately hoping that this pizza was good.  And…after getting caught in some storms on the drive up to Fishers, then getting stuck in traffic, hitting up the race expo for packet pickup, and then getting caught in more traffic, we finally made it to the restaurant, where Julia got us a table in the bar and was patiently waiting…and had been for about 30 minutes (damn traffic).  Lots of hugs and a quick browse of the menu…and we were set.

The inside of Rockstone Wood Fired Pizza & Pub is dark…but beautiful.  It’s very rustic chic.  And I thought the ambiance was perfect for a pizza/pub.  It just felt right and comfortable.  Our waitress came over…and I gave her fair warning of my food allergies.  She put any of my fears to rest and assured me that they would cook me up a good pizza.  So, with our minds made up…the order was placed.

Cathy and I were going to split the 10″ Gluten-Free Vava Veggie Pizza ($12.00 – which includes the $1.50 up-charge for gluten-free crust).  Julia was on the same wavelength and got the regular wood fired version of the Vava Veggie Pizza ($10.50).  With the orders in, we were able to sit and talk while we waited for out food.  A short time later, our pans of pizza were being settled in front of us.

The Rockstone Wood Fired Pizza & Pub’s Gluten-Free Vava Veggie Pizza is done on a custom gluten-free cracker crust.  Very thin crust…crunchy…you know the drill.  The pizza itself is topped off with roma tomatoes, fresh basil pesto, crimini mushrooms, red and green bell peppers, broccoli, house tomato sauce, and mozzarella cheese.  It was very colorful and smelled absolutely delicious.

Our pizza, however, was a little lopsided.  One half was coated with veggies, the other half had a lot of plain cheese.  As I don’t handle dairy too well, I took a supplement and then took the slices with more veggies than cheese showing.  That was fine by Cathy.  I think sometimes she only tolerates the veggies that I get on my vegetarian pizzas.  But…she dug in first.

First of all…the crust was cooked all the way through.  That…was a huge plus.  YAY!  It had a nice crispness to the crust.  The vegetable were fresh and added both savory and sweet aspects to the slices itself.  I loved the mushrooms, finding them cooked perfectly through.  Cathy fell in love with the pesto that was on the pizza.  And each slice was packed with fresh veggie goodness, which I appreciated.  But…I did notice how wet the pizza got soon after we dove into our first slices.  I think it was the blend of tomatoes with the tomato sauce and basil…but it got a bit soggy after a short time.  Which…made me sad. I love that crispness to the crust that pizza should have.  Ah well…I polished off my half of the pizza regardless, giving each of my slices a liberal sprinkle with the crushed red pepper flakes.  Mmmm.

All-in-all, not bad.  Really.  Not bad.  In fact, I’d be more than happy to eat here again and try something else.  I hear the gluten-free bread they make their sandwiches on is fantastic (thanks for the insight, Tammy!).  If anything, I was most disappointed by the appearance (veggies were SO off-kilter!) and the way it just sort of got soggy after a moment of sitting while we ate.  But…it was cooked through.  The cheese was melted.  The veggies were cooked to perfection and tasted fresh.  I was content.  I felt good.

And…it must have worked because this gluten-free pizza fueled me all the way to a new half marathon personal record!

Julia seemed really happy with her wood-fired pizza…and the crust looked absolutely fantastic on her slices.  I admit…I had crust envy.

If you find yourself in the Fishers area, I highly recommend Rockstone Wood Fired Pizza & Pub for your lunch or dinner plans. They have everything from salads to pizzas to sandwiches…and even dessert.  I toyed with the idea of getting gelato…but I opted against it in the end.  But…trust me…this is a great place and they were very careful with the preparation of my food.  And for that, I am eternally grateful.

I will definitely be back.  Next time…I think I’ll try a sandwich!
