Sweet potato chips have always been my absolute favorite thing.  Why?  Well, I absolutely love sweet potatoes.  Sweet potato fries.  Baked sweet potatoes.  Sweet potatoes have been my favorite type of potato for a long, long, long time.  So, when I spotted a bag of Popchips in a sweet potato flavor…I lunged for the shelf to snatch them off and drop them into my shopping basket.  After all…a nice, crunchy afternoon snack never goes amiss, right?  Right.

Well, today was the day I carried a serving to the office with me for my usual 3 p.m. snack.  All day I was anticipating that sweet potato flavor…sort of like what I’d get in Food Should Taste Good’s Sweet Potato chips, I assumed.  Because those chips are amazing.

And…these were Popchips.  And I love Popchips.  I have since they were first introduced to the market and I found them in the store.  I tried them, loving their non-greasy nature, their crunchy texture, and how light and guiltless they are.  I mean, they are never fried and never baked.  They are…popped.  Seriously.  Popped.  Popchips use the finest ingredients, add some heat and pressure, and make it go POP!…creating a light chip that doesn’t get soaked in oil or have the flavor baked out of it.  The first time I tried them, I was impressed.  They have a different texture from regular chips, but as a popcorn fan…that was fine with me.

Nutritionally speaking, Popchips are a great choice.  As stated before, they aren’t fried or baked.  They are light and airy.  This means you get more chips per serving than you would regular chips.  The serving size is still 28 grams, but that gets you around 23 chips.  Nice.  There are only 4 grams of fat per serving in the sweet potato chips.  They are free from trans-fat and saturated fat.  They are cholesterol free.  They are gluten-free.  They are low in sodium (115 mg).  And one serving is only 120 calories.  So…they do have their good side.

HOWEVER..for the first time since falling in love with Popchips, I fell out of love with one of the flavors.  And, oddly enough, it was the flavor that I thought I would rave about the most.  Yep.  Sweet Potato.

The Sweet Potato Popchips are rather…vile…to be honest.  I popped one of the chips into my mouth and immediately didn’t get that sweet/smokey/salty flavor I associate with sweet potato.  In fact, nothing about this chip reminded me of sweet potatoes.  What I did get was…marshmallow flavor.  I don’t want my chips to taste like marshmallow.  If I wanted to eat something that tasted like marshmallow, I’d get out the jar of Fluff in my pantry.  My chips should not taste like a Rice Krispie Treat gone wrong.  EVER!  And that’s all I got here.  Nothing sweet potato even reminiscent in here.  Unless they were going for sweet potato casserole flavor…but that’s one sweet potato dish I have never liked.  I don’t like or care for marshmallows on my starch and I certainly don’t want my chips to taste like marshmallow.  If I wanted salted Rice Krispie treats, I’d make them.  I don’t want that.  I want a healthy chip that gives me amazing sweet potato flavor.  Not sweet potato casserole.  Not Rice Krispies.  SWEET POTATO!

Nothing was right with these chips at all.  And, I am breaking a cardinal rule when it comes to food items that are purchased for the sake of trying them out.  I found these so unappetizing that I am tossing the rest of the bag away and moving onto whatever snack might be next in my gluten-free pantry.  I never trash food because of my tight budget, but the very thought of eating any more of these (I choked down today’s serving so I wouldn’t starve between now and dinner time) makes my stomach churn.  There is nothing redeeming about these chips.

At all.

So, take my advice, fellow Popchip and snack lovers…avoid these at all costs.  Your wallet, your stomach, and your taste buds will thank you.  These definitely have to rank as some of the worst chips I have ever eaten.

Crust perfection for vegan and gluten-free pizza at Annie May’s Sweet Café

Okay…two posts in a row dedicated to Annie May’s Sweet Café in Louisville, Kentucky?  Overkill?  Never.  Why?  Because I go here often.  And there is a reason I continue to return weekend after weekend after weekend.  The food they bake up and cook up is worth the trip over the river.  It’s one sweet or savory indulgence…and even if it means I only get it on Saturday morning’s due to living on the Indiana side of the Ohio River…than so be it.  One day of treating myself is worth every moment in that cozy little bakery on Frankfort Avenue.

Normally on Saturday mornings, I get my long run or my race in and then my roommate and I hurry over for some amazing breakfast food at Annie May’s Sweet Café.  I am truly addicted to their allergen-free donuts and their allergen-free and vegan breakfast sandwich.  Seriously.  It might be borderline unhealthy obsession…but I constantly am talking about breakfast at Annie May’s before the weekend even hits.  I guess that speaks highly of their breakfast service…so if you haven’t been in there for breakfast…get over there this Saturday.  I mean it.

But…this past Saturday we opted to do something…different.  And it completely threw off Annie May and Kenna at the shop.  But, they were more than happy to accommodate the change, of course.  We actually arrive shortly after 11 a.m., instead of our usual 9:30 a.m. time.  Why?  Well, I ran in the Papa John’s 10 Miler that morning and clocked a fantastic time.  Afterwards, instead of heading right to Annie May’s for breakfast, we did a little browsing at Half Price Books to kill off some time.  The reason?  Gluten-free pizza.

Yes, for their lunch portion of the fare offered on Saturday’s at Annie May’s…they cook up individual gluten-free and vegan pizzas.  With a variety of offered toppings.  As we had grown so accustomed to their baked goods and their breakfasts…Cathy and I chose to hit up the lunch service and see what the pizza was like.  Now, I had my usual pre-race fuel of a gluten-free pizza at The Mellow Mushroom the night before…but we were totally getting different toppings and I was quite curious to see what the pizza crust was like here.  They actually sell frozen pizza crusts at the shop, by the way.

So, we placed our order for one of the 9-inch gluten-free pizzas with vegan cheese ($9.99),  and added tomato and onion for our toppings ($0.50 each).  Kenna went ahead to get working on it and Cathy and I took a seat and anticipated our lunch.  We were both rather hungry at that point, having eaten breakfast long before my race, and splitting a banana afterwards to just get us through to when we could get to the café and order lunch.  For the pizza at Annie May’s…you can get a half (3 slices) or a full 9-inch pizza (6 slices).  As we were splitting the pizza, we got the full one as we knew it would be just enough.  We were right.

The pizza arrived after a short wait and I set to taking pictures for the blog while Cathy anticipated that first slice.  With the photos taken, I dished us each up a slice and we dug in.

First of all…I love that for the onion they used red onion.  It is my favorite onion, by far, and it works so well on pizza.  The tomatoes were nicely diced and scattered over the top.  The tomato sauce was light and flavorful, seasoned very well.  And they use Daiya cheese, which I am a huge fan of, when it comes to vegan cheese.  It melts to perfection and it totally complimented the rest of the toppings on this pizza.  But the true star of any gluten-free pizza is the crust.  So often gluten-free pizzas get relegated to that thin, cracker crust.  The type that is immediately crunchy coming out of the oven.  There is little to it.  And it often can’t stand the weight of the toppings.  I’ve eaten my fair share of cracker crust gluten-free pizzas.  And that crust is okay…but it’s not…the pizza crust I remember.

At Annie May’s Sweet Café, you get an actual pizza crust.  I mean, it’s no deep dish…but that’s good.  I don’t like deep dish.  But you get an actual crust.  A fluffy, actual pizza crust that you can slice of bite into and actually feel like you’re eating a real pizza.  It was such a nice change of pace from the norm of eating gluten-free pizza out.  I was so thrilled.  And everything about it just made my lunch that much more satisfying.  It was golden brown, baked to perfection.  The toppings were warm and the vegan cheese was melty, gooey, good.  Cathy and I made very short work out of our 3 slices each.

And we loved, and yes, savored, every bite!

And we split one of their chocolate chip cookies for dessert.  Because I love those cookies.  So.  Much.

This is how gluten-free pizza is done properly.  Totally impressed.  Maybe when the summer hours kick back in at Annie May’s my pre-race Friday pizza will be enjoyed there more often.  So glad we decided to give the pizza a try because I was beyond impressed.

Whether it’s for baked goods, specialty cakes, breakfast, lunch (served throughout the week), or pizza on Saturday…stop in to Annie May’s Sweet Café and treat yourself to some gluten-free and even some allergen-free treats and meals that will blow you away.  Anyone who says gluten-free is tasteless obviously has been dining and eating at the wrong place.  Annie May’s Sweet Café hits all the right flavor notes and makes everything to perfection.  Delicious perfection.

I know.  I know.  I’m an adult.  A responsible, reliable adult.

But when I saw Annie May’s Sweet Café in Louisville, Kentucky, announce their Easter boxes of goodies ($25.00)…I had to have one.  I’m like a kid in a candy store whenever I go in there for breakfast or to purchase an allergen-free/gluten-free treat.  I can’t help myself.  Everything I have had there has been a delightful party in my mouth.  Honestly.  I enjoy taking my non-gluten-free friends there because…you can’t tell that these products are allergen-free.  You just can’t.  Annie May and Kenna do amazing work.  And their box of Easter goodies is no exception.

I picked up my Easter box when I stopped in for breakfast on the Saturday morning before Easter.  Along with the Easter box, I went ahead and purchased two other items that I would enjoy on Easter.  Take-and-Bake Gluten-Free Cinnamon Rolls (with a vegan icing) ($12.00) and Take-and-Bake Allergen-Free Biscuits ($12.00).  Happiness is carby goodness in a delicious form that I can actually savor, enjoy, and devour.

So…what all was included in this Easter box that made me feel like a kid again?  Well, you basically got to assemble it yourself…as in, pick 5 items from a list that they provided.  So, after a little deliberation with my roomie, we made our final choices and I called in the order.  I chose to make my Easter box up with a 2-pack of allergen-free Chocolate Cupcakes, a 2-pack of allergen-free Chocolate Chip Cookies, 1 gluten-free Peter Rabbit Sugar Cookie, 1 allergen-free Sunbutter Candy Bunny, and a 4-pack of allergen-free Chocolate Boulders.  Also offered for these Easter boxes were an extra-large allergen-free sugar cookie on a stick (if you can’t have eggs…as the Peter Rabbit Sugar Cookie had egg in it) and an egg-shaped Whoopie Pie of your flavor of choice.

All week I was anticipating picking up my box of Easter goodies as well as my Easter day additions.  I went in for breakfast that morning (again, if you haven’t tried their breakfast sandwiches, you are missing out!) and then picked up my goodies.  I think I skipped happily out of the bakery that morning, carrying this box of wonderful goodness to my car.  Easter came early for me.  And I couldn’t wait to dive in.

So…where to start?

The first item from the basket that my roomie and I decided to try was the cupcakes.  Why not?  They looked absolutely sinful and decadent.  And…it had been awhile since I had a cupcake.  My attempts to make allergen-free cupcakes at home usually result in…my cupcakes getting soggy.  I haven’t figured out why yet.  So…cupcakes…it had to be cupcakes.

Annie May’s Sweet Café Allergen-Free Chocolate Cupcakes are a rich and moist treat.  I was so happy when I first bit into this item.  They often have cupcakes in their case, but I’m normally in there for breakfast and have yet to really just go in there and pick up a bunch of sweets to try.  It will happen.  So, this was my first ever taste of one of their cupcakes.  Let me tell you…I am hooked.  The cake was moist and soft and packed with rich chocolate flavor.  It was heaven.  I’m not much of an icing person, but the chocolate ganache icing was amazing.  It really elevated the richness and the sweetness of the cupcake to that perfect dessert level.  It wasn’t too much.  It was just enough to make you feel like you were truly indulging after dinner.  I savored every bite of it.  And even saved a chunk of the cupcake with the icing on it for last.  Which is very weird for me…but it happened.  Cupcakes were an epic and total chocolate win!  I must sample more cupcakes in the very near future.  YUM!

So, Easter morning rolled around…

I went for my morning run and returned home very excited and eager to get started on breakfast.  Why?  Because it was Easter Sunday, which meant the first treat I got would be popped into the oven and warmed to a golden, ooey-gooey goodness.  Ah…it would be the perfect start to the holiday.

This treat, of course, is the Gluten-Free Cinnamon Rolls with the Vegan Icing that I purchased separate from the basket.  Now, I’ve indulged in Annie May’s Sweet Café’s Take-And-Bake Cinnamon Rolls before…but I was at a friend’s house and for some reason, her oven was on crack.  And despite baking these rolls longer than advised, they were still doughy in the middle.  Disappointment.  But…not in my house and definitely not in my oven.  Annie May stuck the sticker with the directions right on my cinnamon roll packaging.  I was to bake them in the oven at 325°F for 20 minutes.  Annie May did tell me that sometimes it does take longer to get them golden…it all depends on the oven.  Well, I stuck them into my oven for about 25 minutes total, and when they emerged…they were beautifully toasted to a golden perfection.  They smelled amazing.  And I gave each roll a healthy schmear of the vegan icing provided with them.  As I settled in, my roommate was already about halfway through one of her rolls, munching diligently and happily.  I took this as a good sign.  I sliced into one of the cinnamon rolls with my fork and took a bite of the hot roll.  Oh my goodness, oh my goodness.  Heaven in cinnamon roll form.  These were light, and had the right amount of cinnamon tucked inside each roll.  The pastry outside was crisp and golden, but that inside was soft and chewy and perfect.  I had to remind myself to chew slowly and enjoy or I might have devoured both of my rolls in seconds.  That is no exaggeration.  These were so delicious and very, very filling.  Which was good…because Easter lunch was going to be running about an hour and a half behind schedule…

After doing a bit of cleaning around the apartment and slicing up some fresh pineapple to take to Easter lunch, it was time to get to work on my other Easter treat for myself.  Those amazing sounding Take-And-Bake Allergen-Free Biscuits.  Annie May’s Sweet Caf­é had been talking about these on their Twitter and Facebook feeds for awhile…and I just never had a reason to pick them up…despite wanting to…desperately.  But, I figured these would be the perfect starch for me to bring to Easter lunch with me…as the bread that everyone else could eat would be off limits to me.  And much of the food being cooked up wouldn’t work with my food allergies or my vegetarian diet.  So, some hearty allergen-free biscuits sounded like just what I needed.  I decided to cook these up ahead of time at my apartment to not interfere with what my roommate’s sister was doing at her father-in-law’s house for Easter lunch.  Best to streamline and make things easier.  That kitchen can be hectic on the holidays as it is.  Why add to the insanity?  Besides, this ensured no cross-contamination.  Which is always a good thing.

So, into an oven at 325°F these little biscuits of dough went for about 40 minutes.  The instructions said 3o minutes, but Annie May told me that there was a chance they would have to bake a little longer.  Simply slice into one of them with a knife and check to make sure the center wasn’t still doughy.  I did that, and they needed only a bit more time.  Ten minutes, and they were perfection.  I covered the tray with aluminum foil and wrapped it in a towel.  Then, I drove to Corydon for Easter lunch.  And the plan to eat at noon turned into eating at 1:30…but my biscuits were still warm the way I packaged them up.  So that meant no reheating in the microwave.  WOOHOO!  I took two and Cathy took two and I immediately broke off a piece and popped it into my mouth.  I had been anticipating eating these all morning; I was wasting no time now.

These allergen-free biscuits are phenomenal.  Absolutely what I thought they should be.  I wish I had been able to slice into them and enjoy fresh out of the oven.  Next time.  Because I can only imagine how epic they are having not sat around for 2 hours.  BUT…given the circumstances of the holiday…what can you do?  Honestly, these are really delicious.  The inside bakes to this fluffy and soft consistency.  And the outside gets golden.  These have the best bread-flavor ever and would be awesome to build a sandwich with or…even use as a burger bun.  Seriously delicious.  And two of them filled me up.  I didn’t need the pineapple, green beans or boiled potatoes.  I would have been fine making a meal out of two of these biscuits.  Trust me…these will be purchased again…and eaten straight from the oven.  I can’t complain…even after 2 hours of sitting after baking…these were made of total win.

As full as I was on Easter, I didn’t get to eat any of the desserts I provided for the get-together.  One of them had dairy in it…so that wasn’t happening anyway (hello peanut butter cheesecake bars!).  The other was lemon bars, which I intended to eat a small square of…but I was just so full from dinner, dessert didn’t sound good at all.  So, I skipped it and when I returned home, went to work on cleaning the rest of the apartment.  Before I knew it, it was past 7 p.m.  And I was now ready for my dessert.  As I had this great Easter box of goodness…I went to decide what to have from it this time.

For Easter…it was the allergen-free Chocolate Chip Cookies.  Now, I’ve had these chocolate chip cookies before.  There was a morning when the waffle maker at Annie May’s was giving their dough hell, so for our wait, we were given free chocolate chip cookies.  And, in my post about it…I said that they were, perhaps, the best I had ever tasted.  We all know how much of a cookie monster I am.  Well, after having the chocolate chip cookies…again…I can honestly declare them my favorite gluten-free chocolate chip cookie I have ever eaten from anywhere.  Love is finding that right consistency for a cookie…and people can be so subjective when it comes to what the perfect cookie is.  Annie May’s chocolate chip cookies are sheer perfection.  They have this beautiful golden crust on the outside…but they are so soft and chewy.  The mini chocolate chips give the perfect amount of sweetness in each bite.  And they don’t crumble or crack when you bite into them.  I savored mine.  As much as I could.  Each bite was slow and I made sure I enjoyed every bit of that cookie until it was gone.  Oh, these cookies are going to be coming home with me more often.  That’s what happens when you fall in love.

Skip ahead two days.  Monday meant no treats from my Easter box because it was my group run with my running store.  That meant I get home at a non-dessert time, so these sweet treats had to wait an extra day.  No worries though.  Because I already knew the next item that was going to be up for noshing.  The extremely adorable gluten-free Peter Rabbit Sugar Cookie.  This cookie comes attached to a stick, which definitely makes me feel like a kid.  Which, I love.  It’s those little touches that bring out that giddy, kid-side, and I do enjoy showing that side of me.  I feel like I have to be so serious at the office most of the time, it’s nice to have something as simple as a cookie on a stick and feel like a kid in a candy store.  And these cookies are extra special…and here’s why.  That adorable image of Peter Rabbit in the icing…that’s hand painted.  Yes…hand painted.  Almost too cute to eat.  Almost.

Sugar cookies aren’t usually my thing.  I’ve always been a huge fan of chocolate chip cookies.  Or snickerdoodles.  I love snickerdoodles.  But, these sugar cookies were really, really delicious.  The icing itself is more like a candy coating.  It’s sweet, but doesn’t take away from the sugar cookie itself.  And as for the cookie…perfect.  Not too sweet.  Not gritty.  Cookie perfection.  Honestly.  My roommate and I split this cookie in half (because there was only one in the basket) and we both agreed that, while we both loved the chocolate chip cookies more, this was really good.  It was just such a shame to eat all that beautiful handiwork that went into decorating it.  Well…not really.  It was delicious and perfectly balanced.  Who knew Peter Rabbit could taste so sweet?

So, naturally, the next goody that came out of the basket was the other item which we only had one serving.  The Sunbutter Candy Bunny.  Completely allergen free.  And super, mega, delicious.  Think of a Reeses Cup on crack.  Because that’s what this is.  The chocolate was a rich, dark coating.  Inside this cute bunny shape was a delicious helping of sunbutter.  Sunbutter, for those of you who may not know, is a peanut butter alternative made from roasted sunflower seeds.  And it’s really, really good.  Completely allergen free as well.  I have always loved the combination of chocolate and peanut butter (or a peanut butter substitute) because you get that sort of salty-sweet aspect working.  This was no exception.  This was to die for.  I sort of wish I didn’t have to split it in half and share it, because it was really that amazing and delicious.  I need to find out if Annie May’s creates other chocolate and sunbutter delights because I was blown away by this candy.  Melt-in-your-mouth good.  Oh…so good!

Which, naturally brings us to the final chapter of the Annie May’s Sweet Café Easter Box of Awesome™…the allergen-free Chocolate Boulders.  What are Chocolate Boulders, you ask?  At first glance, they look like dark chocolate covered cake balls.  I was…almost right on that assessment.  These rich, chocolatey balls of goodness are fudgey, on the inside and covered in a dark chocolate coating on the outside.  The result…a smooth, creamy, amazing bite.  My roomie and I had intended to eat one tonight and save the other one…but then…we each ended up eating two tonight for dinner.  We couldn’t help ourselves.  These were so delicious.  But, they are rich…in the best of ways.  If you’re going to do chocolate boulders of extreme yumminess…you go big or go home.  And Annie May’s really delivers with these.  If you have a major chocaholic in your family…this would be the treat to gift them.  I was in a state of chocolate nirvana with each tasty bite.

As I have now and forever dubbed the box of Easter treats from Annie May’s Sweet Café the Easter Box of Awesome­­­­­­™…it is safe to say that everything inside of it lives up to that title.  In one word: AWESOME!

If you live in or around Louisville, Kentucky…or if you find yourself just passing through…do yourself a favor and stop into Annie May’s Sweet Café for a treat or for lunch.  They have special Tuesday through Saturday.  And on Saturday, you can even grab some breakfast…and treat yourself to one of their amazing allergen-free donuts.  Trust me…the calories are totally worth the splurge.

Like I said…their products are AWESOME!  So are the two ladies in charge – Annie May and Kenna.  Drop in and pay them a visit…purchase some of their amazing products…and enjoy.  You’ll be so glad you did.

When I heard the brand name, Van’s Natural Foods, or just Van’s…I’ve always thought of one thing.  Breakfast.  Van’s actually delivered the first stunning gluten-free waffle to my breakfast plate back when I just went gluten-free.  I had tried another brand prior…and it was mushy and just…not what I was looking for in a waffle.  The moment I had one of Van’s gluten-free waffles…I was hooked.

Even my friend, Jenn, who doesn’t have to eat gluten-free, prefers Van’s gluten-free waffles to other brands such as Eggo.  That speaks very highly of quality, don’t you think?

Recently, however, it seems Van’s is delving into a little more of the breakfast food market.  While at my favorite grocery store, searching for a gluten-free cereal to have for breakfast, the top shelf boasted boxes of Van’s gluten-free cereals.

HELLO!  What is this?

There were two different varieties: Cinnamon Heaven and Honey Nut Crunch.

I currently was working on a cereal that had a strong honey flavor in it, so I opted for the Cinnamon Heaven cereal.

I think secretly I was longing for it to be reminiscent of the Cinnamon Toast Crunch cereal my sister claimed as one of her favorite cereals growing up.  We had it often.  And yeah…nothing quite beats a dose of cinnamon and sugar over little cereal puffs in the morning.  It’s true.  My sister was really onto something there.

Well, this morning marked the big occasion.  I had just used up my last gluten-free cereal (which was…just meh…so, it won’t make it into my pantry again), so the Van’s Natural Foods Gluten-Free Cinnamon Heaven was up.  Spotlight on.  Moment of truth.

I dished up a serving (yes…I actually do measure out serving sizes!) and grabbed a couple extra…just to taste on their own…before I poured any of my unsweetened almond milk over it.  Oh.  My.  Cinnagoodness.

So, the fact is…they taste nothing like Cinnamon Toast Crunch.  So those childhood fantasies were immediately quashed.  HOWEVER…let me finish…this is not to say that I was in the least disappointed by the cereal I had just eaten.  The opposite is actually true.  I was impressed.

First of all, this cereal is very light.  It’s not heavy like I remember the little toasties in Cinnamon Toast Crunch being.  These are little puffs of whole grain cereal.  In fact, this cereal boasts five whole grains.  Each one is lightly, very lighty, dusted and sweetened with real cinnamon.  Did you see that key word there?  REAL cinnamon.  And what results is a light, sweet, fantastic tasting cereal that makes you feel like a kid again, but has you eating like a responsible adult.  But this isn’t to say your little kiddliewinks wouldn’t love it as well.  The hint of cinnamon is what makes it.  You aren’t overwhelmed by it.  So, you still get to taste the cereal, without it being masked behind a lot of sugar or additives.

With that mention, let me also say this about Van’s Cinnamon Heaven cereal.  Not only is this product gluten-free, but it is certfied kosher, completely dairy-free, corn-free, all natural, low in sodium, high in fiber, contains no artificial colors of flavors, contains NO high fructose corn syrup, and contains a full serving of whole grains.  So, you’re eating well without pumping a lot of unknowns or chemicals into your body.

One of my favorite little things on this box was right on the ingredient panel.  Right after the bold word, INGREDIENTS, there is this addendum typed in parentheses that mad me smile and believe more in this company.  It simply reads: (That We Are Proud Of!).  Only ingredients that this company is proud of and backs goes into this cereal.  That being said, you will recognize everything on that panel.  And the list is short.  It includes Van’s gluten-free whole grain blend (which is oats, brown rice, millet, quinoa, and amaranth flours), cane sugar, oat fiber, inulin, invert cane sugar, non-GMO canola oil, cinnamon, and salt.  Simple.  Recognizable.  Trustworthy.

The fact of the matter is, this cereal is delicious.  It was love at first bite for me.  Light, yet filling.  And with 17 grams of whole grains and 5 grams of protein, it’s no wonder you’ll feel full after eating this cereal.  A serving size of 3/4 cup will only feed you 120 calories of your daily intake and 1 gram of fat.  How about that for starting your morning right?  With only 8 grams of sugar, you won’t feel bad about eating this cereal either.  It is more like breakfast than dessert.  I like that.  A serving will also dish up 2 grams of protein as well.  You can’t argue with this being a nutritious way to start your day.  But keep in mind, cereals like this are so versatile.  Throw it into your morning parfait, take it as a snack on-the-go, or eat it at midnight after a concert (cereal always tastes better at midnight!).

I really want to congratulate Van’s Natural Foods for this important, delicious, and healthy breakfast cereal.  I’m hooked.  I was hoping that I’d love it…but I ended up falling in love with it…at first taste.  And that, my dear friends, is how you can not only see and taste the quality of the product, but appreciate the quality of the company too.  I trust Van’s.  They brought me amazing gluten-free waffles.  Now, they not only fill my freezer, but my pantry too.

Recipe: Baked Potatoes with Balsamic Caramelized Onion and Mushrooms

Oh, my dear time-suck that is Pinterest.  Sometimes…just sometimes…I stumble across some of the best recipes that have ever happened to me.  Sometimes…they are elaborate and something I could never, reasonably, undertake.  Especially in my kitchen…with my limited space and limited cooking appliances.  However, there are times that I find something so incredible…that I know I have to make it that very week.  Even better when I just happen to have all the ingredients on hand.

That is what happened when I stumbled across a very broad recipe pin for 23 Amazing Ways to Eat a Baked Potato for Dinner.  I scoured the list.  And this one…this very recipe was the one that stood out to me the most.  It sounded…awesome.  Mouthwatering.  Amazing.  So, yesterday…after a a 10K race, some grocery shopping, and an ongoing battle with bronchitis…I decided this was going to be dinner.

It was super easy to make…and super delicious.  I am going to make this again and again and again.  Because I’m always looking for new ways to enjoy a baked potato.

The original recipe comes from Katie Goodman on Makezine.  I changed out her choice of Gorgonzola cheese for Daiya vegan mozzarella shreds.  But, I bow down to her palate…because this was fantastic.

Recipe: Baked Potatoes with Balsamic Caramelized Onion and Mushrooms

Servings: 4
Time: Prep 20 minutes; Cook 1 hour

Ingredients:

  • 4 large baking potatoes, baked according to your preference (I coated with olive oil and sea salt and baked for an hour)
  • 2 tbsp olive oil
  • 1 medium onion, yellow or red
  • 1 clove garlic
  • 16 oz crimini mushrooms
  • 8 oz red wine
  • 3 oz balsamic vinegar
  • 1/8 tsp sugar
  • 3/4 tsp cornstarch
  • 2 tsp fresh parsley, minced
  • Salt and pepper, to taste
  • Daiya mozzarella shreds
  • Chives, sliced for garnish

Directions:

Wash and pat dry the baked potatoes.  Lightly coat with olive oil and sprinkle with coarse sea salt.  Place in an oven at 425°F for about an hour.

While the potatoes are baking, clean the mushrooms and remove the stems.  Slice the mushrooms thinly, about 1/4 of an inch thick.

Cut the onion in half from end to end. Remove the skin and discard.  Cut the onion into slices.

Combine the red wine, balsamic vinegar, sugar, and cornstarch.  Whisk to mix well and set aside.

Heat olive oil in a large cast iron skillet or sauté pan over medium-high heat until the oil is shimmering.  Add the onion slices to the pan, tossing to coat with oil on all sides.

Evenly spread the onions out in the pan and continue to cook, stirring just occasionally for about 15 to 20 minutes.

Grate one clove of garlic over a microplane grater and add to the pan. Stir in the mushrooms and sauté until tender and golden.

Add the red wine and vinegar mixture to the pan.  Bring to a boil over high heat, then reduce to medium and cook until thick and syrupy.  Stir in the parsley and season to taste with salt and pepper.

Remove potatoes from the oven.  Turn on the broiler.

Slice each potato open and fill with the mushroom mixture.  Top with sliced chives and mozzarella cheese crumbles.

Place potatoes under the broiler for about a minute, just enough to let the cheese melt.

Serve and enjoy!

I loved how full of flavor these were.  The potatoes were a nice starchy base for this sweet and savory mushrooms and onions, and the syrup that they cooked in.  The cheese gives it a nice additional flavor which all rounds out to form the most epic baked potato ever.

Seriously.  If you love caramelized onions, mushrooms, and potatoes…then this recipe is definitely for you.

Just when I thought I had tried every gluten-free, vegan Liz Lovely cookie out there, I find one that I missed.  Or that is new.  But whichever is the case, this cookie monster somehow needed to have this new variety in my life…and my belly.

I was out at our local natural food store.  It’s the only place in the area where I have found Liz Lovely cookies.  Which, is too bad, really, because these cookies are beyond awesome.  I’ve tried every variety that I could find…and according to the Web site…I had tried them all.

That is up until a couple weeks ago, when I stopped in to see if they had an item I’ve been searching for…and lo and behold…this little cookie was staring up at me from its little basket.  I wanted to buy it then and there, but I was on a budget.  I had a Groupon for this food store and vowed to return the following week to shop there.  And, naturally, that flavor cookie was gone.

But on Saturday afternoon, when my roommate and I stopped in for some gluten-free dinner rolls…it was back.  And I grabbed it and made sure this time I didn’t leave without it.

What made this cookie so…intriguing to me?  Well, it was the simple combination of two of my favorite things in life: peanut butter and dark chocolate.

Oh yeah…you read that right.

Liz Lovely’s Gluten-Free and Vegan Peanut Butter and Dark Chocolate Cookies turned out to be dessert that very night.  I mean…come on…you know that wasn’t just going to sit around the apartment.  Heck no.  Peanut butter and chocolate never lasts long in this place anyway…put them together…and…yeah…gone in a blink of an eye.

First…the basics of these cookies.  A serving size is…half of a cookie.  Yes…you only get half.  This works out great for my roommate and I because we just split one cookie in half and then eat the other one for dessert the following day.  That half of a cookie will set you back 170 calories and 8 grams of fat.  Yes…for a half of a cookie that seems a bit steep, but these cookies are rather large anyway in the grand scheme of things.  So…just remember that this is a treat.  And, like most desserts, you only need a taste.  You might be tempted to eat the entire cookie…and I wouldn’t blame you or judge you.  They are awesome.

Here’s why…

Liz Lovely cookies are soft, chewy, and taste like they are fresh from the oven.  No joke.  I mean, minus the whole piping hot part.  But…they still have that doughy taste and feel to them, which I absolutely LOVE in a cookie.  The base of this cookie is a soft, gooey peanut butter cookie.  The bottom of the cookie is coated in a nice layer of dark chocolate.  And then the top of the cookie is drizzled with more dark chocolate.  It’s captivating to the eye.  It makes your mouth water.  You eagerly take that first bite…and chewy heaven.  The chocolate on the bottom of the cookie is adding not just sweetness…but texture.  And the salty-sweet combination of the dark chocolate and the peanut butter is God’s gift to gluten-free cookies.  For real.  This cookie is, by far, one of the best gluten-free and vegan cookies I have ever eaten in my life.  Perfectly balanced, perfectly made, and perfectly delicious.

According to the Web site, the peanut butter cookies were discontinued prior to the release of this cookie because the peanut butter and the gluten-free ingredients were not playing nicely together.  With some recipe tweaking, and a little luck…this cookie is what emerged.  And the gluten-free cookie world celebrates this creation.  I know I’m not the only cookie monster out there applauding this.  Or devouring it.

I’m kind of sad that they’re gone.

Salted.  Caramel.

It doesn’t get much better than that salty-sweet richness of caramel speckled with flakes of salt.  There is just something so tantalizing, mouthwatering, and sinfully delicious about anything that remotely involves something salty and caramely…especially when mixed together.  That is heaven.  Heaven in whatever salted caramel form said delicacy takes.  Pure and simple.

Over the holidays, my friend Shana, directed me to Target in search of this amazing sounding (and it was super yum, btw) holiday popcorn – Holidrizzle Dark Chocolatier Sea Salt Popcorn by Angie’s.  I searched, I hunted, I discovered, I took home and devoured.  Seriously epic.  My coworker bought the other Holidrizzle flavor – White Chocolatier Peppermint and it was super delish as well.  It made for good eats while at the office.  Trust me.

Upon discovering this epic popcorn, however, I needed more of it.  I got online and looked up Angie’s Web site.  And there I found a plethora of flavors just awaiting my discovery.  The only problem was…finding the regular flavors.  I couldn’t.  Not anywhere.

Until the New Year rolled around and I was in Columbus, Ohio visiting my friend Jenn.  We all piled into the car one snowy morning and took a road trip down to Cincinnati to visit Jungle Jim’s…the most epic grocery store in the world.  Seriously…foodie heaven.  No joke.  And the gluten-free section.  HA.  The gluten-free section was HUGE!!  No joke.  And waiting for me on a few shelves…were a variety of flavors of Angie’s Popcorn.

OH. MY. POPCORN. GODDESS!

I knew my pantry was already stocked, so I settled on one flavor…and only one flavor…this time.  And the winner of said luck-of-the-popcorn-draw: Angie’s Uncommonly Salted Caramel Popcorn.

I had a few (okay…a lot) of products to work through before I could get to this popcorn.  And it sat in my pantry up until yesterday…mocking me.  Begging me to open it up…take a taste…fall in love.  I behaved.  I resisted.  But I polished off the protein bars that were nearing their sell by date and this was the next item up on my pantry list.  I couldn’t have been more excited.  I might have squeed in anticipation.

I dished up a serving of the popcorn, which is 1-3/4 cup (or if you weigh your servings like I do…28 grams).  I packed it up to haul to work with me and then had to eagerly wait for my 3 p.m. snack time to roll around.  I was ready for it when it did, and out of my drawer this popcorn came.  I opened it up, grabbed a light, fluffy kernel, and popped it in my mouth.

Amazing.  It is sweet, without being too sweet.  The saltiness isn’t overwhelming at all.  In fact, it’s more sweet than salty.  The darker bits of popcorn is where the flavor magic happens.  Those are the popped kernels that are harboring the golden caramel flavor with that burst of saltiness.  It is fantastic.  It’s much lighter than you would expect caramel corn to be.  And I found that the sweet and salty flavors were rather balanced…more sweet than anything.  The interesting part of this popcorn is that you will feel satisfied after eating a serving, but you won’t feel like you gorged on something bad.  No kidding when I say how light this popcorn is…even when coated with that golden caramel.

A serving of this popcorn will set you back 140 calories and 8 grams of fat.  The fat content seems a little high…but this is caramel corn, right?  Let’s not dwell on that.  A serving of Angie’s Uncommonly Salted Caramel Popcorn has only 70 mgs of sodium, 2 grams of fiber, and 1 gram of protein.  As for the sugar content – only 8 grams.  Not too bad for a sweet treat, yes?

And the ingredient list is so recognizable it’s craziness.  Popcorn, sunflower oil, evaporated cane crystals, invert cane syrup, natural flavor, sea salt, caramel, and annatto (a seed used in South America for cooking and body paint), which is added for colors.  LOVE that.  This popcorn is also made from whole grains.  It is all-natural, non-GMO, vegan, kosher, gluten-free, cholesterol free, contains no trans-fat, and no high fructose corn syrup.  AWESOME!

What you get from Angie’s popcorn is a natural goodness.  Bite-for-bite you will fall in love with the amazing flavor, the lightness of the popcorn, and just how delicious it is.  I recommend you portion it out into serving sizes, less you risk eating the entire bag in one sitting.  It really is that good.  There is nothing uncommon about Angie’s Uncommonly Salted Caramel Popcorn.  The only anomaly here is that you have yet to try it.  Go.  Find it.  Eat it.  Enjoy it.  Devour.  Start again.

Oh yeah…I’ve fallen hard for popcorn.  And Angie’s fits my taste profile perfectly.

My friend Jenn loves me.  No…really she does.  Every now and again when I go to visit her, she drops a product that she found while out and about on the table for me.  This protein bar is one of those little Jenn surprises.

I had never actually heard of The GFB (Gluten Free Bar) before she handed me one.  She had spotted them at her local Meijer and thought of me (Awwww!) and decided to pick one up for me to try.  After all, I often down protein bars prior to runs and I often visit her and drag her to my early morning races…so she is very well aware of this fact.  But, while I had never heard of this brand before, The GFB came into existence back in 2010.  The creaters were on a mission to create the world’s best gluten-free protein bar, focusing on ingredients and taste.

Jenn picked up The GFB (Gluten Free Bar) Peanut Butter Chocolate Bar for me.  And why not?  I love peanut butter and chocolate!  And she is very, very, very aware of this fact.  So, this has been in my snack drawer for a little while…but after working through the bars that came before it, this one got it’s chance to shine this past Sunday evening.

I was at a race in Frankfort, Kentucky.  There aren’t a lot of places I can safely eat in Frankfort…so my roommate and I each packed protein bars to enjoy prior to the race.  I grabbed The GFB (Gluten Free Bar) Peanut Butter Chocolate Protein Bar from my drawer and tossed it into my race day bag and headed out…in the cold, rainy weather.

We arrived in Frankfort, Kentucky and after killing some time with race packet pick-up, we ducked into the local coffee shop and took a seat in the corner.  It was about 30 minutes before the race and we figured that it was time to eat something.  We each pulled out our respective bars (she had a Luna Bar as she is not gluten-free) and I prepared to take my first taste of this latest protein bar in my collection.

The GFB (Gluten Free Bar) Peanut Butter Chocolate Protein Bar looks like a flattened Lärabar, honestly.  Upon unwrapping it, I could easily make out the peanuts, brown rice, chocolate chips and flaxseed, all stuffed into the binding, which looks to be made up of dates, and sweetened with agave nectar.  So, in a lot of respects, it is exactly like a Lärabar…but with a few more ingredients.

And…that’s what these tasted like too.  If you like Lärabar’s, you’ll probably enjoy The GFB (Gluten Free Bar) as well.  The Peanut Butter Chocolate one doesn’t exactly taste like peanut butter and chocolate…so if you are expecting something as amazing as a Reese’s…think again.  My roommate tried a piece of it and said it reminded her of the treats she fed her horse when she used to ride.

I don’t know what that means…or what that says about her eating horse treats…but to me, these had a good texture.  They were sturdy, but not solid.  They were chewy without being too soft.  And the flavors were like a mild Lärabar…perhaps with a little less date flavor.  I liked being able to see some of the ingredients in the bar itself.  And I love looking at ingredients on the bar and recognizing all of them.

But that was the point.  The creators of The GFB (Gluten Free Bar) wanted to create a great-tasting product that people would look forward to eating and that didn’t pump you full of chemicals.  You have to appreciate that sort of dedication.  So, using simple ingredients, they provide a simple protein bar that you can feel good about eating and provides you with energy.

The GFB (Gluten Free Bar) Peanut Butter Chocolate Bar is 2.05 ounces of protein packed goodness.  It is gluten-free, wheat-free, casein-free, dairy-free, all natural, vegan, low-sodium, and cholesterol free.  These bars have no additives and no preservatives.  There are no trans fats.  They are a fantastic source of protein and Omega-3.  The entire bar is 240 calories and has 10 grams of fat, mostly from nuts, so at least it is the healthy kind of fat.  Unfortunately, this bar, probably due to the inclusion of chocolate, packs 14.5 grams of sugar.  I try to keep my sugar consumption lower…so, this seems high for such a small bar.  However, on the flip side, you are provided with 2.5 grams of fiber and 12 grams of protein.  So, that will help you feel fuller longer.

And it did do it’s job.  After eating the bar, I wasn’t hungry…even after the race.  So, it succeeded in doing its job.  Perfect fuel for the haul, that’s for sure.  The flavor…isn’t the best I have ever tried, but it isn’t at the bottom of the list either.  Would I purchase this again…yeah…I probably would at some point.  But, while they set out to create the best tasting protein bar…it falls short when compared to other gluten-free options out there.

A decent protein bar though, when all is said and done.  Not bad.  Not bad at all.  I would definitely be interested in trying the other flavors from The GFB (Gluten Free Bar).

Something fishy this way comes when Sophie’s Kitchen bakes up gluten-free and vegan breaded fish filets

FISH FILETS??!!

That, my dearest friends, is not a typo.  Not at all.  And to blame for this discovery is none other than grocery store heaven, Jungle Jim’s in Cincinnati, Ohio.  Because it was as I was perusing the freezer section that this box jumped up and flagged me down.

But…but…vegan seafood?

Oh…it has been done before.  Yves put out a Shrimp Scampi that I tried years ago…and couldn’t eat.  It was disgusting.  But this…this looked absolutely mouthwatering on the box.  Which, I know is the entire point of marketing said items…but…really…

And since going vegetarian and then gluten-free…breaded fish filets with…I don’t know…maybe some hand cut fries…they were just a dream.  A memory.  A figment of my past.

NOT ANYMORE!  You better believe upon spotting this box it made it’s way into my shopping basket, to the register, and then to my freezer.  And for quite a few incidents, I had plans to cook them up for dinner for my roommate and I.  But then…found something else to do.  Something that wouldn’t require writing up a review.  So, instead, I choose one of my busiest weeks to give these a try.  But why not?  I busted these precious little filets out in honor of St. Patrick’s Day.   It was time for some oven-baked fish and chips.  Good ol’ Irish fare if I do say so myself.

And I do.

So…after slicing up (by hand…no mandolin slicer here) some fingerling potatoes into shoestring fries, I got those working in the oven and pulled out this box from the freezer.

Sophie’s Kitchen.  Apparently, Sophie’s Kitchen has a wide variety of vegan seafood options out there, most of which are also gluten-free.  So, if this was actually edible…maybe even delicious…then perhaps I could indulge a little more.  I’ve found two stores in the area that carry Sophie’s Kitchen products…and of which at least half in the freezer are gluten-free and vegan.  YAY!!

These were actually really simple to prepare.  Place filets on baking sheet.  Put in oven set for 375°F.  Bake for about 10-15 minutes, or until the filets are a golden brown on top.  Nothing could be easier.  And I couldn’t believe when I took two of the four patties in the package out…how much they truly resembled fish filets.  Very reminiscent of my seafood days.

I can tell you this as well…they smelled amazing as they baked up in the oven too.  It was amazing.  I was actually anticipating eating these.  It was the first time since the Yves incident that something vegan seafood-ish actually appealed to me.

After 15 minutes, the filets were a beautiful golden color, so I removed them from the oven, along with my shoestring fries.  I plated each item on two plates, one for myself, and one for my roomie, and dinner was served.  She took the first bite…and I couldn’t tell what she made of the actual filet itself.  So, I took my own bite.

It’s…different.  Stringy at times.  The taste is really good, but the texture is…well…it reminded both my roommate and I of those cheap fish sticks you eat growing up as a kid, not really noticing the odd texture because, they’re fish sticks…they’re fun…and you can drown them in ketchup.  That’s what these reminded us of.  And yes…we ate them with ketchup.

Needless to say, I wasn’t exactly jumping up and down with delight over these…but they weren’t bad either.  If you can get past the texture of it, then you’re golden.  Flavor-wise…these are awesome.  No strange fishy flavor.  The breading is light, and the “fish” is basically TVP (textured vegetable protein)…which is something I’ve wanted to try now for awhile.  These filets are also composed of canola oil, potato starch, organic agave nectar, sea salt, rice flakes, turmeric, white pepper, ginger, powdered cellulose and konjac powder.  It actually is more appetizing than it sounds.

Nutritionally speaking, one filet will only set you back 180 calories and 8 grams of fat.  Each filet packs an 8 gram protein punch and serves up 3 grams of fiber.  These are also very low in sodium and totally cholesterol free.  You can’t argue with those numbers.

Sophie’s Kitchen totally is ruling the vegan seafood market.  Trust me.  While these did have an odd texture, it was actually very nice to sit down for a meal of “fish” and chips for St. Patrick’s Day.  I even made it again for dinner tonight.  So, as you can see, it wasn’t overly offensive.  The seasoning helps and the texture isn’t bad…it’s just…different.  Stringy rather than flaky like seafood.

But…I could totally look past that.

I give major props to Sophie’s Kitchen for stepping into a niche that definitely needed some help.  I can promise you this…they were successful in filling it.  I hope to seek out more of their gluten-free and vegan products very soon.

Sunrise is way too sweet when it comes to Nature’s Path Gluten-Free Sunrise Crunchy Vanilla cereal

Cereal.  It’s the most basic breakfast item out there.  It’s also an easy go-to lunch, dinner, or midnight snack.  Trust me…I have eaten it for every meal occasion out there.  But…mostly for breakfast.  Especially on race mornings or gym mornings.  Why?  Because it’s simple, easy, and not something that requires a lot of preparation or clean up.

I love the simplicity of a bowl of cereal.  But cereal can either be good…or not so good.  And sometimes…it can just be bad.

A couple days ago, I opened up a box of cereal I had never tried before.  But I found it at my grocery store and decided to give it a go.  After all, sometimes you need a different flavor, texture, brand, or just…something different to brighten up your mornings.  So, instead of getting one of my Envirokidz cereals, I opted for Nature’s Path Gluten-Free Sunrise Crunchy Vanilla Cereal.

I would put this one in the second category.  The Not So Good.

It’s not that this cereal is at all bad.  In fact, nutritionally speaking, this is one of the better ones out there.  Especially for the gluten-free crowd.  Let’s take a look, shall we?

A serving of Nature’s Path Sunrise Crunchy Vanilla cereal is 2/3 cup.  This serving will only set you back 110 calories (without milk…I use a splash of unsweetened almond milk, so I probably total 120 calories with mine).  Not bad for a breakfast cereal.  A serving only has 1 gram of fat, 6 grams of sugar, 3 grams of fiber, and 2 grams of protein.  The Sunrise Crunchy Vanilla cereal also contains 12 grams of whole grains.

This cereal is chock-full of a variety of crunchy textures from flakes to puffs to crispies.  So, at least it keeps the palate interested.  But…stop right there.  For me…depsite being lower in sugars for a breakfast cereal…I found this one WAY too sweet.  Oh…wow…is it ever sweet!

Thank goodness I use unsweetened almond milk to top off my cereal because without it…this might be an big fail.  It’s tolerable, flavor-wise…save for that vanilla sweetness that stings your taste buds and keeps on going from there.  It just tastes off to me.  Perhaps I’m used to milder flavors in the morning.  This one definitely sucker-punches your taste buds with an abundance of vanilla flavor.  It’s way too much for my liking and tends to take away from the otherwise pleasing textures of the cereal itself.

Oh, I was so disappointed with this one.  As it isn’t offensive, I’m still eating it.  Going to use it up and move on…never to purchase this one again.  I think, in my mind, I was hoping it would be a lot like the Kay’s Naturals Gluten-Free cereal I tried last year.  But this one was nowhere near that caliber of deliciousness.  Like…completely went in the opposite direction.

While we all crave something sweet some mornings, this is just too much all at once.  Thank you, Nature’s Path, for changing up the offerings for the gluten-free crowd…but this one just doesn’t suit me at all.  Maybe take that vanilla sweetness down a notch.  Then we’ll talk.  Until then…back to Envirokidz.
