Recipe: Gluten-Free Chocolate Scones with Dark Chocolate & Mint Morsels

I love scones.  Seriously.  I always have.  They are delicious little treats that are good for a snack…or better yet…breakfast.  I used a scone recipe off of the package for Pamela’s Products Baking & Pancake Mix…tweaked it…and came up with this recipe.  Try it out.  Enjoy!

Servings: 12
Time: 20-25 minutes

Ingredients:

  • 2 cups Pamela’s Baking & Pancake Mix
  • 1/3 cup cocoa
  • 1/3 cup sugar
  • 1 tsp baking powder
  • 1/2 cup Nestle’s Dark Chocolate & Mint Morsels
  • 4 tbsp butter
  • 1 egg, beaten
  • 2/3 cup milk (I use unsweetened almond milk)


Directions:

Preheat oven to 375°.

Mix the dry ingredients together.

Cut in the butter using two knives.

Add the milk and beaten egg.  Mix together with a fork.  Dough will be thick.

Drop large, tall dollops of dough (scones will spread when baking) onto lightly greased baking sheet.

Bake for 15-17 minutes.

Liz Lovely has done it again.

Literally.

On another visit to my favorite natural foods store, I followed through with tradition and picked up yet another gluten-free cookie as a treat to myself.  Because life without a little indulgence isn’t really life.  And who can beat a delicious vegan and gluten-free treat?  Not me.  Especially when it involves chocolate.

Chocolate is my kryptonite.  We all have weaknesses and I am not ashamed to admit this…at all.  Put chocolate in cookie form and I’m yours forever.  Especially these days when cookies I can eat are harder to come by…and way more complicated to bake (but I’m working on that!).

What wasn’t to love about Liz Lovely’s Gluten-Free Chocolate Fudge Cookie?  One bite…and I think I melted away with the goodness.  Honestly.  This one came close to beating out her Triple Chocolate Mint as my favorite.  Close.  These cookies have a bit of a crunch on the outside…but are crumbly and soft on the inside.  Dusted with a fine coat of sugar, these cookies are sinful…in all the best ways.  It’s like biting into a brownie…without the heaviness associated with that.  In fact, a nice added treat was that these cookies had little chocolate chips sprinkled throughout them…for an added chocolate bonus.  Not too filling…light…soft…chewy…oh, and trans-fat free!  WINNING!

Yes…I have a sweet tooth!  But treating myself to 1/2 of an amazing gluten-free and vegan cookie (the serving size) every now and again at the end of the day is a nice reward.  Everything in moderation is okay.  And, despite how amazing the Liz Lovely cookies are, I do manage to pace myself on consumption and stick to the serving size.  It just means I have more days to enjoy and savor the treat.

For moist, melt-in-your-mouth, soft, vegan, and gluten-free cookie goodness…find Liz Lovely cookies and take a bite of awesomeness.  Each variety I have tried has been amazing.  Gluten-free and vegan cookies that honestly do put brownies to shame.  Treat yourself.  Share with a friend.  Indulge a little.

For just one moment, I want you to discard all your preconceived notions of gluten-free foods.  They do get a bad rep.  From tasting like cardboard, to dry, to flavorless.  For one moment…or longer…I want you to enter the world of gluten-free baking with an open mind, a hungry stomach, and a sweet tooth.

Just because something is gluten-free (and in this case, vegan too) doesn’t mean that it’s not going to be amazing.  Liz Lovely proves this once again with another delicious gluten-free cookie from the company’s line-up of vegan, gluten-free cookies.

Every time I go into my natural foods store, I treat myself to a pack (which contains 2 cookies) of these cookies.  The vegan, gluten-free variety come in a variety of flavors.  But the German Chocolate Cake ones caught my attention that day.  They looked absolutely mouth-watering delicious.

And, as with the previous experience with Liz Lovely cookies…I was not disappointed.

Remember…a serving of these cookies is 1/2 of a cookie…but trust me…it’s the perfect amount.

The gluten-free German Chocolate Cake cookie was so moist and and rich.  Seriously, these cookies are soft.  I love that in a cake-like cookie.  You get the cookie appeal but the moistness of a cake.  It’s the perfect combination.  The chocolate base of these cookies is decadent and really just melts in your mouth with each bite.  The addition of the walnuts to the batter is nice, sporadic treat throughout the cookie.  But the key is the coconut on top.  It adds a great texture and quality to the cookie and really ramps up the flavor.  The gritty coconut texture pairs really well with the smooth, rich texture of the cookie.  It was a match made in heaven.  And I’m not even a big fan of coconut when it’s used as a topping.

These vegan, gluten-free cookies are fantastic.  I always look forward to buying another flavor and seeing how it compares to the others I have tried previously.  With two of these cookie varieties under my belt, I look forward to my next sampling.  Vegan…gluten-free…delicious.  Yeah…life doesn’t get much better than that.

Hodgson Mill bakes up fantastic and moist gluten-free brownies with winning mix

Let’s start with that because it was how this chocolate treasure came into my life.  I had joined an online community doing some giveaways during Celiac Awareness Month and won a couple of giveaways.  One I knew about.  This one, however, arrived as a complete surprise.  But, when given gluten-free chocolate…a lady never turns up her nose.

I’ll be honest.  I was a bit reluctant to cook the Hodgson Mill gluten-free brownies up.  I was so enamored with the Betty Crocker mix, I didn’t think anything could top it.  But I was craving chocolate one day…and this was my next gluten-free treat in the pantry to cook up.  And so…that’s what I did.

So easy to make.  Very few ingredients.  Pop it in the oven, and soon my entire apartment smelled of delicious brownie goodness.  If these tasted anywhere near as good as they smelled, it would probably be difficult to keep to just one at a time.

Out of the oven to rest and cool.  The brownies cooked up amazing.  I mean, with a soft crust on the top and everything.  The PERFECT brownie just from the looks of it.  Once it cooled down enough for me to slice into it without making a mess…I plated up.  Because in my world, chocolate is priority.

Fudgy.  Creamy.  Amazing.  These blew the Betty Crocker ones away.  Honestly, one of the best brownies I have ever tasted.  So very moist and soft.  And they kept that way as my roommate and I worked our way through it for eight days.  Nothing went stale.  Nothing got hard.  They stayed moist and delicious.  No heating up in the microwave necessary.  Fall off your fork fantastic.  These gluten-free chocolate morals of goodness are, bite-for-bite, loaded with chewy, chocolate flavor.

I will never doubt the wonders of Hodgson Mill products ever again.  This is the second one I’ve tried.  But this one…by far…has been my ultimate favorite.  Chocolate done right in all it’s gluten-free brownie glory.  It’s hard to stick to a serving.  And…I discovered these are delicious on their own.  No need to dress it up with Chocolate Cool Whip or drizzle it with melted dark chocolate.  Although…we all indulge a little more every now and again.  But…it wasn’t necessary and that was the best part.  These brownies are so amazing they can stand on their own.  Why dress up perfection?

Hodgson Mill won me over again.  Gluten-free never tasted so sweet (or chocolatey).

Vegan and gluten-free cookies a “Lovely” guilty pleasure

I know…I know.  I thought it too.  Two 2-inch cookie rounds for $3.99?  Are you off your rocker?  But cookies are one of those things that seem to win out over price and logic at times when it comes to me.  My guilty pleasure is often some variety of cookie, savored slowly, bite-by-bite, while all of the flavors play over my palate.

Naturally…some cookies are better for my foodie tendencies than others.

What I noticed first about Liz Lovely’s cookies when I was in my natural food store…was that they were (OMG!) cookies!  Then I spotted that they were vegan (YAY!).  And then…some were certified gluten-free (DANCE OF JOY!).  Then I spotted the Triple Chocolate Mint variety and my wallet lost out to my tummy rumblies.

So, yes…the cookies are a bit pricey, but they are backed up by their standards and amazing taste.  Trust me.

Move over Girl Scouts.  If Liz Lovely has anything to say about amazing mint cookies, your Thin Mints are getting a run for their money.  Unlike the Girl Scouts offerings, Liz Lovely baked up a delicious vegan and gluten-free cookie that is brownie-licious and satisfying.  Honestly, it would be Cookie Monster’s vegan cookie dream.  If perfection could be captured in cookie form…the vegan and gluten-free Triple Chocolate Mint Cookies by Liz Lovely would set the bar and hold the standard.  Cookie heaven on Earth.

These cookies are chewy and full of dark chocolate flavor.  They should be, considering they are a chocolate base with chocolate chips and a chocolate drizzle.  But these amazing cookies don’t stop there.  No.  They get an added bonus with a hint of peppermint oil that just takes them to the next delicious level.  Each bite is soft, chewy, and has the perfect balance of dark chocolate and mint.  Nothing too overpowering.  Absolute cookie perfection.

I never took so long to eat a cookie when I bit into this one.  I savored every ounce of flavor, every little bite.  Every bit of chocolate was allowed to melt slowly as I savored it down to the last bite.  Cookie nirvana.

Do mind the serving size, however.  These 2 cookies are good for 4 servings, so you eat half a cookie at a time.  Believe me…it’s not easy sticking to that once you have a taste.  But these are meant as a treat, so give yourself 4 days of sweet indulgence.  More time to savor every little bite.

Whether you gobble down cookies like Cookie Monster, or savor each little nibble to really soak in the flavors, these cookies make a rich, decadent dessert or treat.  And, the cake-like consistency will leave you feeling satisfied.  Trust me.

I haven’t been able to resist these cookies since finding them.  If I am in my natural foods store, one of the gluten-free varieties is coming home with me.  So, rest assured, the other flavors will get their time in my blog spotlight.  But, with all that said, these have been my favorite vegan and gluten-free offerings from Liz Lovely yet.

Who needs Girl Scout cookies (which I can’t eat anymore anyway)?  Tantalize your taste buds with these instead.  Trust me.  Two cookies well worth the price.

I love a good gluten-free deal.  Seriously.  Sales.  Manager’s Specials.  It’s one of the only ways I can afford to test out some of the products that I do.  But even more difficult at times is finding healthy gluten-free snacks that aren’t straight out of the produce aisle.

Don’t get me wrong…fresh produce is my favorite thing in this world.  I load up on fruits and vegetables religiously and snack often on apples, berries, and certainly bananas.  But sometimes the diet needs a bit of a shake-up and finding a gluten-free alternative often leads to cookies or high-calorie snack bars.

Then, on the Manager’s Special table at my local grocery store, I found a pack of Nature’s Path’s gluten-free line of products that are marketed to kids.  Envirokidz Organic Peanut Butter Crispy Rice Bars…sounded intriguing enough.  I  like peanut butter.  And when I didn’t have my gluten-intolerance, Rice Krispie treats were one of my favorite things in the world.  So…this sounded like a good way to change up the afternoon snack.  Not to mention, these are relatively healthy, low in calories and fat, and gives this vegetarian a bit of a protein boost from its use of organic peanut butter in the ingredients.

Here’s the good thing about buying products that are marketed towards children.  They often taste amazing.  Why?  Because kids are finicky eaters.  They are the biggest food critics out there and will not eat something that doesn’t taste good to them.

I ripped into one of these at work one afternoon when the 3:00 munchies hit hard.  And I became hooked immediately.  They are soft, chewy, and packed with peanut butter flavor.  They have the right amount of sweetness in each bite to counter any cravings for something sweet (and less healthy).  Not to mention, they are the perfect amount to act as a snack without ruining my appetite for dinner.  Let’s face it…I live to eat and cook, so this was my perfect go-to snack.  Who would have thought?

These bars are the perfect size (think granola bar size) to be filling, and easy to transport.  They have the crispiness in the initial bite, and the soft, melt-in-your-mouth affect that crispy rice bars should have.  And…they are flavored with peanut butter.  Salty meets sweet.  The best combination ever.

Nature’s Path knew what they were doing when they set out to market and make these delightful treats.  Kids will love the animals on the boxes.  But they will also love the product that is wrapped up inside.  Even better…adults will too.  And you don’t need to feel guilty about this little indulgence.

Recipe: Ghost Toast

What’s better than a gluten-free Halloween treat for everyone?  This is not only adorable…but really delicious too.  I should know.  I made it last night!

The recipe was supplied by my friends over at Rudi’s Gluten-Free Bakery.  And I now share it with you because anything this cute and epically delicious needs to be made by all of my dear readers!

Ghost Toast

Servings: 1
Time: 5 minutes

Ingredients:

  • 1 slice of Rudi’s Gluten-Free Cinnamon Raisin or Original bread
  • Powdered sugar or coconut flakes
  • Candy (the original recipe called for gluten-free candy corn, but I never have liked candy corn, so I used sliced almonds) – Candy Corn, M & M’s (or any nuts, raisins, chocolate chips, gluten-free pretzels, Tootsie Rolls…get creative to suit your taste buds!)
  • Butter or butter alternative

Directions:

Cut the edges off the top of the toast to round the top of the ghost.

Toast the bread.

Spread butter on toasted bread.

Sprinkle with powdered sugar.

Add toppings to complete the ghost.

Mmmmm…muffins!

Muffins are one of those easy, on-the-go, foods that you can just grab and take with you.  Either eat it at room temperature or warm it up in the microwave.  That’s the glorious thing about muffins…they travel well and are delicious.

As always, my good friend Jenn, was looking out for me one day while grocery shopping and picked up a box of Hodgson Mill Apple Cinnamon Muffin Mix, which just happened to be gluten-free (she is always on the search for products for me because she rocks like that!).  We figured, the next time I came up to visit, we’d bake up a batch for breakfast and give them a try.

So…that’s exactly what we did.

These are so easy to make.  Preheat oven as instructed and line a muffin pan.  Then melt two tablespoons of butter.  Pour the mix into a bowl, add sugar and melted butter.  Then add milk and an egg.  Mix well and then spoon into the prepared pan.  Bake for 15-18 minutes, or until the tops spring back when you touch them.

Easy enough.  I loved the chunkiness of the batter, in part due to the presence of apple slices.  We managed to get 8 muffins out of our mixture.  And as they baked, the kitchen smelled absolutely divine.  It made me want to go buy apple cider and hit up an apple orchard.  Honestly.  These smell SO amazing when you bake them up.  I took that as a good sign.

We took them out of the oven, surprised by how pale they still seemed (not the golden brown we imagined), but the tops sprung back so they were done.  We allowed them to cool for a few minutes before we each took two and settled in for a light breakfast.  Aside from the muffins sticking to the muffin liners, these muffins were absolutely delicious.  Fresh out of the oven, they are still warm and soft on the inside.  One little spread of butter and it all comes together.  The hint of cinnamon, the sweetness of the apples.  And since the mix is made with milled flax seed, these are also a healthy choice for either a breakfast or a snack.  Absolutely delicious.

Jenn sent my roommate and I home with the two that were left, which we ate as a snack on the road.  They were far more delicious fresh from the oven and warm, but what baked good isn’t?  I can’t wait to try to bake these up here and hopefully will have better luck with the muffin pan liners not sticking.

Taste is what I go for, and these had just the right levels of apple and cinnamon flavor.  Nothing overpowered the other.  It was perfectly balanced, making a perfectly delicious breakfast and snack that day.  The box also gives a recipe for using the mix to make pancakes, which just sounds heavenly, so I think I might need to give that a go.

This mix just happened to provide the first muffins I was able to eat since needing to go gluten-free.  What a fresh and great start indeed.  I now have a couple boxes of this mix in my own pantry, as well as a couple other Hodgson Mill gluten-free products because these were so good, I now trust the brand.  This allergic chef is looking forward to getting in that kitchen and baking up some more gluten-free goodness.

Udi’s cookies a chip off the ol’ gluten-free block

Just call me a real-life cookie monster.  They are my second favorite treat.  Ice cream will always be my first.  So, one day while perusing my local grocery store for manager’s specials, I found Udi’s brand cookies on a table in the bakery.  These were not on sale, but I knew I had to try them.

Why?

Because Udi’s was the first really delicious gluten-free brand I tried after having to go gluten-free.  I was in Boulder, Colorado…and eating out at a restaurant called The Buff.  I was prepared to, as I normally have to do now, order something without the included toast, but I noticed on the menu the option for gluten-free toast.  SOLD!  And it just so happened to be Udi’s bread.  Back at the hotel in Denver, I had purchased a loaf of Udi’s bread for my roommate and I to use for our breakfast/lunch so we wouldn’t eat out all the time.  I loved what I tasted at The Buff…and so, my love affair with Udi’s began.

And it has never stopped.  I’ve tried two types of their muffins, I’ve had their bagels, and, of course, I’ve had their bread.  But the cookies…this was the first I had seen of them in the area.  The store only had a few packages…and they were all chocolate chip (which is my favorite type of cookie anyway so…that didn’t matter!), so I picked one up and actually paid full price for them.  Don’t judge.  I’m a woman with a gluten-free sweet tooth.

The package made it as far as the car before I had it open and my roommate and I were each trying one out.  Instant cookie heaven.  These look like they would be hard and crumbly, but they are actually the perfect cookie texture.  A little crunch, but soft.  And sweet.  They are flavored with molasses, vanilla,  and evaporated cane juice.  It was the perfect level of sweetness and the chocolate chips were the star.  Honestly…great chocolate chip cookies to munch on!  I only wish they were bigger.  These cookies are, honestly, about the side of a half dollar.

But the flavor does make up for the lack in size, and the serving size is two cookies.  So it really is the perfect amount in the end.

The difficult thing now is finding them.  That grocery store no longer carries them.  My local Whole Foods and Rainbow Blossom don’t carry them.  My other go-to grocery stores stock different varieties of gluten-free cookies…but not Udi’s.  So, I found a delicious treat, but now I can’t buy it.

Hopefully they will work their way back into the products stocked by my local grocery store.  Thankfully, they are a bit more plentiful in other places.  Next time you feel like a cookie monster, reach for Udi’s gluten-free chocolate chip cookies.  They are…cookie perfection!

I scream (and you should too) for ice cream from The Comfy Cow

There was a gem right in my backyard and I didn’t even know about it.  I had no clue it even existed until I saw it was being featured on Man v. Food Nation on The Travel Channel.  And it involved ice cream.  ICE CREAM.  Only my most favorite thing in this world and I didn’t know about this place!!  Thank God for Adam Richman and those crazy food challenges!

The place I am speaking of is The Comfy Cow, Louisville, Kentucky’s very own ice cream destination.  It’s here that customers get to sample and enjoy creative flavors of handcrafted, super-premium ice cream that is made right there on location.  In fact, the Web site states that only the freshest and finest ingredients are used in each of their flavors.  I can assure this is true, because on my last visit there, I saw staff hauling in the fresh ingredients to take to the back of the Westport Village location to begin making more of their delicious flavors.

One big draw to The Comfy Cow is the food challenge.  Called The Comfy Cow, this sundae comes with fifteen scoops (or 90 ounces) of any of their signature flavors, which are then covered in fresh whipped cream, maraschino cherries, and served with four sidecars of any of their sauces and toppings, and finally finished off with chopped nuts.  I learned from someone who actually ate this to choose the flavors wisely…as they were so excited about a bourbon flavor and a lemon flavor, that they had those added first, so they were the last to get eaten, and after she and her friends consumed the other flavors, all that was left was a melting bourbon lemony mess.  But they managed to finish, despite the odd flavor at the end.

But what drew me to The Comfy Cow was a different sort of sundae.  It has always been my go-to treat when it comes to ice cream.  The Banana Split.

At The Comfy Cow, this treat is listed as A Monkey’s Delight.  Gotta love the clever names on their menu!  And what it includes is three scoops of their signature ice cream flavors: Chocolate, Vanilla, and their “Strawberry” Fields Forever (MY FAVORITE!).  These are then topped with a different topping (chocolate – hot fudge; vanilla – pineapple, strawberry – strawberries), covered with whipped cream, sprinkled with chopped peanuts, and then topped off with a maraschino cherry…all laden on top of one split banana.

It was the most exciting thing to eat.  The flavors explode in your mouth.  You can tell the ice cream is handcrafted and fresh.  And I cannot say enough good things about their Strawberry Fields Forever flavor.  Honestly…the best freakin’ strawberry ice cream I have ever eaten.  Anywhere.  Ever!  Pair it with the vanilla and chocolate and you have Neapolitan Dynamite (heh…I made that up!), because they are the richest, finest flavored ice creams.  Paired with the toppings and the ripe banana, this is simply one of the best sundaes you will ever consume.  Fresh.  Cold.  Amazing.  And save the Strawberry Fields Forever flavor as your last bite.  Trust me.  It’s awesome!  But bring a friend or two…these sundaes are not meant to be consumed alone!

But why just go there for sundaes?  This is an ice cream shoppe.  There is so much more to try and I intend to work my way down the menu however I can.  With my food allergies, however, anything with a cookie, cake, brownie or bar is off my radar.  But that’s why I have friends!

This last visit, my parents were in town visiting, so my roommate and I decided to bring them here to try this ice cream that we’d been raving about.  We all decided to go for regular scoops…and then sample each others.  My mom got the Black Raspberry Chocolate Chip.  My dad took my advice about the Strawberry Fields Forever flavor and stuck with that.  My roommate went for Peanut Butter Chocolate Chip, and I got the Lemon with Raspberries flavor.

OMG…mine was fantastic.  So fresh and creamy.  The lemon and raspberry flavors really meshed well.  It was a delightful treat and just so packed with fresh flavors.  I couldn’t get enough of it.  I did sample everyone’s ice cream as well and they were all AMAZING!  But my lemon one was so delicious, I’m going to have to make myself try another flavor and not just stick with it or go with the Strawberry Fields Forever.  Yeah…amazing, vibrant, light, and delicious!

The Comfy Cow is Louisville, Kentucky’s best ice cream shoppe around.  Hands down.  You can’t beat the atmosphere, the customer service, and the flavors that this place has to offer.  How I didn’t know about it before, I’ll never know.  Now that I do know about it…I’m hooked.  And I’m always looking forward to going back and trying something else.

And maybe one day…me and about 15 other people will tackle that Comfy Cow Sundae (with flavors that won’t taste odd when melting together at the end).  Maybe.  Until then, I’ll happily share a sundae with a friend or lap up one of their fine scoops of ice cream.  Calories don’t count when something makes you this happy.

And ice cream…good hand-crafted ice cream at a local location…makes me stupid happy!
