I finished.  I ran.  I walked.  I crossed the finish line of the Medtronic Twin Cities Marathon.  And after all the hullabaloo at the finish line…the gathering of essentials like finisher’s medal, finisher’s shirt, banana, water, photos, chocolate milk, salty snacks, and so on…I met up with my adoring public…Heather and Cathy.  They were at the designated spot at the runner reunion area.  And the night before we had made noises of checking out a pub after my run.

It has sort of become a thing…we either do a pub or Mexican food after I run a marathon.

You don’t mess with a thing.

Bad things happen when you mess with…a thing.

So, it just so happened that a great Irish pub in St. Paul, called The Liffey Irish Pub, wasn’t but a couple of blocks away from the finish area.  While I was getting some compressions socks on and a different pair of shoes, Heather called ahead to see what the wait would be like.  It turned out we were in between the rushes.  So, after I stretched for a moment, we decided to pack up and make the hike to the pub.  It was a slow hike…my foot, my ankle, my legs were killing me.  I had never felt like this after a marathon…but I’d been injured (still was) and couldn’t train.  It sucked, but my friends were more than willing to work with me.

Our good friend, Paul, whom we met through the big U2 summer of concert madness a couple years ago, met us there.  He had been one of the group at Mile 17 and had said he could join us for lunch.  I stepped inside and immediately was given a hug.  We were immediately seated by the hostess, but before hitting up the table, Cathy and I ducked into the bathroom so I could get out of my running clothes and into something more comfortable (yoga pants and a t-shirt!).  We found the table where Paul and Heather were seated and I started looking at the menu.

Usually it takes me awhile to be hungry, but at this point, I was hungry.  Amazingly enough.  And, also a plus, we knew from the Internet search, that The Liffey had a gluten-free menu.  And when our drink orders were taken (water for starters and then Heather and Paul got drinks with their food), we were given the opportunity to think about what to eat.  Easy here.  For the non-vegetarian and gluten-free (my dining compatriots), it seemed that Fish and Chips (Heather & Paul got the North Atlantic Cod – $14.00; Cathy got the Canadian Walleye – $15.00) was the pub grub of choice (naturally!).  For me…the Quinoa Salad ($9.75) sounded like the meal of choice.  Ideal for recovery too!

Orders in…and we started talking about everything we had been up to…and U2 stuff…and all that jazz.  In fact, we were so busy talking that it took us a moment to realize that the tray that came in a little later had our food on it!  I think we were all ready to eat.  Paul actually got his fish and chips with a Guinness and Heather got hers with a delicious Strongbow cider.  Mmmm.  I was feeling dehydrated so it was water only for me with my meal…this time.

The Quinoa Salad was a fantastic bed of spinach that contained quinoa, roasted sweet potatoes, broccoli, bell peppers, capers, basil, and avocado.  All these amazing vegetables and grains were tossed with a fantastic, and highly delicious lime vinaigrette.  The quinoa and spinach were great protein for after the run. And I loved the flavor.  I didn’t actually expect the sweet potatoes to be cold, but didn’t mind it in this salad.  While I’m not a huge fan of capers, the salty and vinagery flavor complimented the lime vinaigrette and the earthy vegetables in the salad.  I enjoyed this salad down to the last bite.  Amazing.  And it takes a lot to amaze me when it comes to salad.  This one hit all the right notes…and was like no other salad I’ve had before.

I like different.

I also like being able to enjoy a dessert when I go out to eat.  And there happened to be a few that I could indulge in here at The Liffey Irish Pub.  Oh, St. Paul…you’re winning me over with this gem of an Irish pub.  A fruit cup was an option.  Or the local Izzy’s Ice Cream (flavors unknown).  But the one that interested me was the gluten-free version of their S’more Pot du Crème.  We asked for four spoons.

The Gluten Free S’more ($5.50) was a rich chocolate custard with Izzy’s Vanilla Bean ice cream.  All of this was topped off with a fantastic marshmallow fluff brûlée.  It sounded beyond delicious.  And when it came out…all four of us dove in.  Seriously.  Four spoons dipped into the toasted marshmallow top, through that layer of vanilla ice cream and touching that decadent chocolate custard.

BEST. DESSERT. EVER.

We licked that bowl clean.  While I was glad there were four of us going after this dessert, I probably could have eaten the entire thing by myself without feeling any regrets.  It was so good.  The rich custard with the cold ice cream and the warm, fluffy nature of the fluff was the perfect combination.  It felt like I was eating a delicious s’more at a campfire.  But better.  This was just…the best campground treat elevated to restaurant quality.  High class.  Amazing.  I was wishing for one more bite once we polished it off.

It was unanimous, really.

I was way beyond satisfied when I shuffled out of their with my friends.  We each said our goodbyes and went our separate ways.  Paul one way, Heather to take us to our car and then meet up with us at my grandpa’s house so I could shower and then we could keep me moving by walking the Mall of America.

But, that’s of no consequence.  What is, however, is the fact that, without hesitation, without any doubt, I would eagerly return to eat at The Liffey, in St. Paul, Minnesota, whenever I happened to be in the area.  Forget any other pubs that might be more convenient to where I am in Minneapolis.  This one blew me away.  And, I of course would have to get another taste of the…BEST.  DESSERT.  EVER.

Yep…I’ll be back.  Count on it!

Recipe: Garden Chili

I have a lot of vegetables in my crisper drawer.  Like…a lot.  A whole lot.  Because…I get a CSA bin loaded up each Friday and sometimes I get through them, and other times…I don’t.  Well, last week with all the birthday insanity…I barely got through them.  It wasn’t without trying.  I just…had so much going on and a few dinners had to be really quick and simple and…not cooked from my fresh and delicious vegetables.  Hey…I did make an amazing salad though with a whole lot of them.

But, I digress.

With a trip coming up next week, I am determined to use up much of what is now in my crisper drawer.  I also had a new gluten-free and dairy-free recipe for cornbread that I really, really, really wanted to get working on…so…I thought…

CHILI!!

Now, I have a TON of recipes for vegetarian chili…but I wanted one that I could use simply what I had in my kitchen.  And, it just so happened to exist in my Happy Herbivore Light & Lean cookbook.  Only thing I needed was…beans!  Simple enough, I was grocery shopping today anyway.  So…clocking in at 153 calories and 1 gram of fat, I give you…

Recipe: The Happy Herbivore’s Garden Chili

Servings: 2-3 (but I made 6 servings out of it)
Time: Prep 15 minutes; Cook 25 minutes

Ingredients:

  • 2 cups vegetable broth, divided
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1 green bell pepper, seeded and diced
  • 1 (15 ounce) can diced tomatoes (undrained) (I used fire-roasted low sodium diced tomatoes)
  • 1 cup sliced mushrooms
  • 2 celery stalks, sliced
  • 2 carrots, peeled and diced
  • 1/4 cup tomato paste2 tablespoons chili powder
  • 2 tablespoon Vegan Worcestershire Sauce (I used gluten-free liquid smoke instead!)
    1/2 teaspoon ground cumin
  • 1 tablespoon yellow mustard
  • 1 (15 ounce) can pinto or kidney beans, drained and rinsed (I used organic chili beans)

Directions:

Line a large pot with a thin layer of broth, and sauté onion and garlic over high heat until onion is translucent, about a minute.

Add the bell pepper, tomatoes with juice, mushrooms, celery, carrots, tomato paste, remaining broth, spices, and condiments.  Stir, cover, and bring to a boil.  Once boiling, reduce to low and simmer until the vegetables are fork-tender, about 10 minutes.  Add water or tomato sauce to make it more chili-like if necessary.  Add beans and serve.

Okay…confession…I totally missed the part where it said to cover the pot.  HAHA!  No wonder it took a little bit of time to get those vegetables fork-tender.  My total bad!  But, it still worked.  And what emerged was a fantastic spicy (but not too spicy…because the roomie didn’t even comment that her sinuses were running!) chili that celebrates vegetables.  Most vegetarian chilies seem to put so much emphasis on beans that this was, indeed, a nice change.  And serving this up with a couple slices of gluten-free and dairy-free cornbread made for one great, perfect fall meal.

It’s soup/chili season, folks!  Let’s get cooking!

It’s not my birthday…but my roommate and I have a tradition to treat each other to a birthday meal someplace new, interesting, or a personal favorite for each others special day.  Mine was pushed back to this weekend as my birthday fell on the start of the weekend and I already had Indian food on the mind at my favorite place in Louisville!

So, I had said that what I really wanted was…finally…some Chinese food.  We had read a review a couple years ago about a place called the Tea Station in Louisville that had gluten-free options.  However, after e-mailing them and not hearing anything back…then the roomie calling and basically being told they can give me rice and vegetables and tofu…and after seeing reviews about how the place has sort of been on a downward spiral…it was time for a second option.

The problem was…I really wanted Chinese food.  So, now, nothing sounded like something I wanted.

Perfect.

I tried to get some feedback from Cathy, but she kept saying it was my choice.  Which only stressed me out.  I narrowed it down to a couple of places…and after scanning the menu pages a few times, I settled…on The Grape Leaf.

Yep.  Mediterranean food!  I love everything about Mediterranean food…so I figured…why not try out somewhere new and different and interesting?  So…after work, we drove out to Frankfort Avenue…and attempted to find parking.  We finally managed to find a spot well up the road and made a bit of a hike to the restaurant itself.  The Grape Leaf prides itself on being a friendly, locally owned, pan-mediterranean neighborhood restaurant.  I loved everything about that statement, so I was pretty excited about it.  Not to mention, their chef, Nabil Al-Saba, is the real deal – serving up authentic cuisine since 1992.

We stepped into the restaurant and were greeted by the hostess.  We were taken to our table and seated.  One of the chairs had a balled up cloth napkin on it, but it was near the window and I was sitting in the seat nearest the aisle.  So, I set my purse down in the chair, away from the napkin, and settled in to look at the menu.  The hostess/waitress asked if we wanted any appetizers like hummus or grape leaves, but Cathy said this was our first time there so we were going to familiarize ourselves with the menu first.  So, she went to retrieve glasses of water while we perused the menu.

When she returned, she asked if we had any questions or if we were ready to order.  We had done a bit of discussion while sitting there…but finally settled on what we were going to eat.  Cathy went first, as she had the easier order.  She went with the Lamb Schwarma with her two sides being the Lentil Soup with Pita and the Cauliflower Rice ($13.25).

I was going with a couple of items on the Appetizer list.  I settled on a cup of the Organic Vegan Red Lentil Soup ($4.00) and the Vegetarian Grape Leaves ($7.50).  Order was in.

And just moments later, our appetizer soups arrived.  I had to take a picture for the blog, but Cathy dove in and said…”It tastes citrus-y.”  That made me giggle and once my photo was taken, I spooned up a bit myself and tasted it.  I didn’t get citrus at all, but I did get this smokey-sweet flavor from the paprika that was sprinkled on top.  The menu lists the ingredients of this sup as being organic red lentils, extra virgin olive oil, onion, and spices.  What it was was this thick and rich soup that had a gentle, tame flavor that was elevated by the dashes of paprika over the top.  It was warm and soothing and smooth.  And it was a good way to start the meal, for sure.

In fact, we had just polished off our cups of soup when the entrées arrived at the table.  Wow.  Fast.

The grape leaves looked like…grape leaves.  I mean, you can’t really dress those up, can you?  Except with spices…like that same sprinkling of paprika…everywhere.  I mean…everywhere.  I had six stuffed grape leaves on the plate with a dollop of tzatziki and lettuce in the middle.  The grape leaves themselves were wrapped around a blend of tomato, parsley, onion, Egyptian rice, and herbs.  I cut into one of them.  They looked really great.  I dipped my fork in the tzatziki and added it to the bite…and gave it a try.

It was…pretty good.  It was okay.  The textures were great.  The grape leaves were cooked perfectly, kept soft.  The stuffing was creamy and had a bit of flavor.  Not a lot though.  In fact, the star of the entire dish was the tzatziki.  So, thank goodness for that.  I had Cathy try a bite and she liked the creamy inside…but just didn’t look like she was a fan at all.  And, sadly, being a schwarma lover…she was most impressed with her side of Cauliflower Rice.  I was also…really…really…concerned with how quickly the food came to the table.  I watch Kitchen Nightmares…I know how this works…

The food was just…okay.  Not meh.  Not gross.  But not something I would actively make a point to go back and try again.  Which…is so sad.  This was my birthday meal and it didn’t live up to expectations.  I feel cheated.  I feel like my going out on a limb…trying something different…was a letdown.  Do I get a do-over?  We left after paying the bill and decided we couldn’t end the night with food that we weren’t happy with…so we hiked just up the street to The Comfy Cow for kiddie scoops of their Strawberry Fields Forever ice cream.

So…The Grape Leaf…has an amazing reputation…but it wasn’t busy when we were there…nor was the food anything to scream from the rooftops about.  It was just…eh…good.

And I was hoping for great.  I was expecting great.

I don’t think I’ll be back.

Product Review: BeeFree Gluten Free Lemon Loaf

It was two weekends ago that I was walking around the Indiana State Fairgrounds at the Living Without Gluten Free Food Allergy Fest.  I had such a great time going up to the various booths, some from big name and well-known gluten-free companies and corporations.  And then…some of the booths belonged to local businesses…bakeries and sauce makers and the like.  It was an amazing variety and a great time.  I had a blast talking to the various vendors, from local and nationally acclaimed businesses and finding out more about their products and/or company.

One booth that I dropped by was BeeFree Gluten Free Bakery, based out of Noblesville, Indiana.  The bakery is owned and operated by Jennifer Wiese, the mother of four teenage boys, the eldest of which is on the autism spectrum.  She attended an autism conference a few years ago where she learned about the benefits of a gluten-free and casein free diet in helping to alleviate some of the behavioral issues associated with autism.  With a limited amount of good gluten-free and casein free food in Nobelsville, and an 8-year-old with limited patience for being asked to give up some of his favorite foods, Weise decided to get creative.  With the assistance of her mother, they eventually were able to put together a winning combination of rice, tapioca, coconut, and potato flours, with corn starch, as a base for her baking.

In the end, the diet had positive effects on her son.  And Weise wanted her son to be able to eat at social events, often meaning she had to bake a cake or pizza to be offered alongside the glutinous one that everyone else was eating.  When people started complimenting Weise on how good her creations were, she began to get asked to bake for their parties.

With the demand there, Weise decided that starting a business was the next step.  So, in 2010, BeeFree Gluten Free Bakery opened.  Weise rented out kitchen space in a restaurant after hours and would start baking.  After a year, she realized she couldn’t keep up with her orders and grow the business like she wanted to, so she rented a bakery and started producing her baked creations on a larger scale.  This meant she could do her baking in the morning while the equipment was freshly sanitized and there wasn’t any wheat flour wafting around the air.

Today, Weise’s entire family has gone gluten-free.  Now that Weise has more time freed up for working on business, she is interested in getting BeeFree Gluten Free Bakery carried more widely across the region and expanding her line.  She recently even developed a cereal for people on the Paleo Diet, which tends to avoid grains, legumes, dairy products, salt, refined sugar and processed oils.

So…here the bakery was, participating in a huge gluten-free expo.  As I strolled up to the table, they were offering samples of their Warrior Mix (which is a cereal).  But, for sale, I noticed one lonely loaf on the table…and it caught my attention for one reason – it was LEMON!

I love, love, LOVE lemon flavored things.  And so does my roommate.  Which, I immediately pointed the loaf out to Cathy and she nodded her head.  I spoke to the guy behind the counter and said that I’d love to take the Lemon Loaf off their hands.  He picked it up and informed me it was the last one they had.  WOOT!  Good timing.  Cathy passed over the $3.00 they were asking and we walked away with something lemon and delicious looking.

Upon returning home from our day in Indianapolis, Cathy and I sorted out our stash of free goodies and the items we bought, including ones that needed to be refrigerated.  The BeeFree Gluten Free Lemon Loaf went into the refrigerator.  I had every intention of busting into it before today…but we were working hard on polishing off the banana bread I had prepared from the mix I reviewed a couple of weeks ago. And then…we were heading out of town, and taking my own gluten-free zucchini bread loaves with me to my parents home.  So…with all of that finally gone…this morning’s after-gym breakfast had to be simple…and I had nothing.  NOTHING.  Until I recalled…the BeeFree Gluten Free Lemon Loaf.  Breakfast…was served.

That morning, before we left for the gym, I pulled out the Lemon Loaf and opened it up.  The serving size was 1/4 of the loaf, so I cut it in half, then cut that half in half…so that my roommate and I each had a serving.  I immediately noted the gorgeous lemon yellow color of the loaf.  However, I was a bit uncertain about the white layer of thick icing on the top.  I’m not big on frosting or icing…and the sheer amount of it was a bit…overwhelming.  But…I placed the slices into a container and we were off to face the cardio machines.

After going to the gym this morning, we hiked over to the office and I removed the two slices (or half of the loaf) from the cooler I bring on gym mornings.  I placed each slice on a plate and gave it a small warming (about 15 seconds) in the microwave before handing off one slice to Cathy and settling in at my desk with the other.

I cut through the top part, getting the huge chunk of icing with a little bit of the loaf.  I took a taste…and aside from the sweetness of the lemon-flavored icing…the loaf itself was moist, rich, sweet, sour, and just plain…delicious!  Yes…delicious.  I ended up breaking the icing away and cutting it up so that I could get smaller bits of it with each bite instead of having it just sitting on top.  Because…there was a lot of it.  By breaking it up like that, it definitely gave the loaf more depth as I got a bit of icing with a bit of bread with each bite.  Otherwise, I’d just get the icing and it was far too sugary sweet for a breakfast.  More like a dessert.  Maybe that’s what this was meant for.  Dessert for breakfast…it happens.  But…with the volume of icing, it was best eaten this way.  Trust me.

I was rather impressed with the texture, taste, density, and flavor that came in the BeeFree Gluten Free Lemon Loaf.  It was light, and airy, not dense and heavy.  Like I said, my only complaint is that the ratio of loaf to icing was…way off, in my opinion.  It was a little overwhelming with that thick layer of icing on top, but I made it work.  Truth is, the loaf would have been just as delicious even without the icing.  And probably would make it feel like less of a dessert too. But, to each their own, and this is truly just a personal preference.

The BeeFree Gluten Free Lemon Loaf is made from sugar, organic enriched rice milk, corn oil, eggs, white rice flour, tapioca flour, corn starch, organic lemon juice, organic lemon peel, coconut flour, potato flour, xanthan gum, baking powder, and sea salt.

As for nutrition, a serving of the the BeeFree Gluten Free Lemon Loaf is 1/4 of the loaf.  In this serving, you will be consuming 250 calories and 11 grams of fat.  You will also be consuming 125 mg sodium and 22 grams of sugar.  And finally, you will be taking in 1 gram of fiber and 2 grams of protein.  It isn’t filling…but it is one sweet treat in the morning.

I love supporting a local business, so I was excited to tear into my BeeFree Gluten Free Lemon Loaf this morning.  Fantastic flavor and just the right amount of lemon.  For my own tastes, I find the amount of icing a bit of overkill, but it does add great flavor to the loaf.  I was one happy lemon lover this morning.  And this loaf gets another eating on Thursday.  Already anticipating.

When it comes to food, there are certain cuisines that I absolutely love.  Seriously.  From Italian to Indian to Greek and more…there is something about the various tastes, seasonings, and textures of each different type of food that just awakens my palate every time.

One such cuisine that I love to eat, but haven’t had much of it in the past…oh…8 years…is Cajun!

I love Cajun food, and not just because it famously is known to be spicy.  I mean, we all know that I like it hot and spicy…but there is something so comforting and simplistic, even when the dish is anything but easy.  As a vegetarian, a lot of Cajun food doesn’t fall into my diet.  As a Celiac…it makes it even harder.  We have a couple of small chain Cajun places around here, but they aren’t making the real deal.  I forgot just what I was missing up until Saturday afternoon, when Cathy and I followed up our Gluten Free Food Allergy Fest with a lunch date with our good friend, Greg.

As you guys know, Greg can be quite particular about the places and foods that he eats.  Well, for years now he has been raving about the food at a local Cajun place called Papa Roux.  And he always pointed out that this particular place had plenty of vegetarian options…as well as gluten-free.  While we are in Indianapolis quite often, we never seem to be there at a decent time to actually go to Papa Roux.  So, we default to a personal favorite – Cheeseburger in Paradise.

But…NOT. THIS. TIME.

I was excited to try out Papa Roux.  With all that Greg had talked it up to be, I was happy that he decided that would be our place to meet and eat that day.  Cathy and I arrived just as Greg had pulled in.  So we had good timing.  Papa Roux may not look like much from the outside, but don’t let the dive atmosphere turn you off or away. Go inside.  And you’re in for a treat.

Upon entering, you are greeted at the counter where you place your order.  I had to look at the options for me, and finally decided that I was going to get the Spicy Tomato Creole ($8.00).  I ordered an unsweetened iced tea with that (that’s free, by the way!) and then let Cathy get her order in.  Cathy opted for the Chicken Po-Boy ($9.00) with a handcrafted lemonade to drink ($2.00).  And Greg went for the Spicy Bean Chili ($8.00) with an unsweetened iced tea as well.  You pay there, put a name on the order, and go find a table.

At the table, you get to choose your sides.  This was exciting.  You can choose as many as you want and as often as you want.  When you dine-in at Papa Roux…the unlimited sides are free and unlimited.  Honestly.  I knew my creole was going to be spicy, so I went with something soothing and refreshing.  Applesauce.  Greg got the Coleslaw and something else, which I don’t recall.  And Cathy opted for the Red Beans and Rice.

Our drinks arrived and we were invited to sign the autograph wall.  Yes…the walls inside Papa Roux are covered in signatures.  It’s a really cool, very nice touch.  So, both Cathy and I added our signatures to the graffiti.  And, after a little bit of a wait (they cook to order!), our food was soon arriving.

The first thing I noticed…Cathy’s Chicken Po-Boy was bigger than her head.  She said she’d be lucky to make a dent in it.  But after she pulled it apart, ate the chicken with the spicy mustard and coleslaw mixed in and not much of the bread, she managed a bit more than expected.  The star was the stuff inside, not the giant, thick bread, for sure!  Greg let me try the chili that he ordered, as he had raved about it for as long as he’s raved about the restaurant itself.  He said it wasn’t as spicy as usual, and I had to agree…because my Spicy Tomato Creole was spicier than his chili.

So…how was the Spicy Tomato Creole?  Spicy!!  And that’s a good thing.  It had this nice, rich flavor…like an amazing marinara, with a kick.  The heat was perfect…for me.  Some might have said it was too much, but I didn’t find it to overwhelm or completely kill my palate.  Nope.  This was amazing.  Before I was a vegetarian, my mom would make a fantastic shrimp creole for Thanksgiving each year…so the creole definitely caught my attention.  I loved the chunks of tomato and onion that were throughout, lending a bit of texture.  And the spice definitely didn’t overwhelm but I wasn’t underwhelmed either.  It said “spicy” in the title, so I wanted spicy.  And it delivered, for sure.  I was impressed.  The stew, itself, came with small servings of rice that were dished on the side…just the right amount.  The applesauce was delicious too…not sure if they make it, but the cool, soothing nature of it was a nice compliment to the spicy creole stew I was devouring.

We were all quite happy with the food, the prices, and the experience overall.  I can see why Greg raves about Papa Roux all the time.  I already want to go back and try more of their gluten-free and vegetarian stews.  Really fell in love with the place.  The atmosphere is great.  The service is good.  And the food…beyond fantastic.  And any reservations I might have had about just how gluten-free the food was going to be was put to rest when the person who took our order at the counter asked if it was a dietary preference or an allergy.  YES!  A place that truly gets it.

Thank you, Greg…for finally getting us to Papa Roux to try the amazing food and take in the place in person…instead of through your mouthwatering stories of what you’ve had there.  Thank you, Papa Roux, for giving me a safe, delicious, and spicy meal that day.  It was just what I needed.

Forget hitting up the grocery stores on Saturday.  I think all I need to do now is hit up that new freezer at Annie May’s Sweet Café on Frankfort Avenue in Louisville, Kentucky.  Honestly.  Because, for me, it’s a one-stop shopping extravaganza of everything I have ever loved to eat at her bakery…or taken home with me.

And that was the entire point of the newest feature in Annie May’s Sweet Café.  Simple, safe, gluten-free take-n-bake items that are prepared and frozen…and all you have to do is follow the simple instructions on the label to cook up all the deliciousness in the comfort of your own home.  Let me tell you, I was thrilled to hear that this was being added to the bakery…and now that I have bought a few items from the freezer…let me tell you…I hope this catches on and they have to expand.  Because…with the garlic bread, the mac and cheese, and the pizza crust…I was set for three meals this week.  Simplicity…yet with the high quality and amazing flavor you get in all of Annie May’s products.

Having already feasted on the Vegan Garlic Bread and the Macaroni and Cheese earlier this week…that left one of the take-n-bake purchases in my freezer.  And tonight…it was dinner.  I’m talking about the best pizza crust in the world.  No exaggeration there either.  And not just a gluten-free pizza crust…but THE BEST in the world.  Seriously.  I’ve eaten a lot of regular…and now a ton of gluten-free crusts and nothing has topped this one.  Nothing.  Nowhere.  No way!  I don’t think it will ever happen.

Want to know why?  Because…it is not a cracker crust or some thin little sheet of dough that ends up soggy.  This is a substantial, it can hold any and all toppings, sort of crust.  It is the crust to end all crusts.  It is the Godzilla of gluten-free pizza crusts.  It is…REALLY amazing.  And I don’t know how she does it, but I’m glad she does.  Because whenever I eat a pizza at Annie May’s…my day just gets better.  My life just gets better.  This crust is legendary.  Honestly.  You’d never even know it was gluten-free.  And now…now…I can make it in the comfort of my own home!

And that’s what I did tonight!

I had a request from Cathy…for a pizza I haven’t made in forever.  She wanted…the Meditenuttian Pizza.  I know what you’re thinking…”What the what is a Meditenuttian Pizza?”  Well, let me explain.  It’s a pizza crust, that is given a brushing of olive oil, then a sprinkling of black pepper, then a drizzle of honey.  Then, I top mine with vegan mozzarella shreds, caramelized onions, walnuts, and then…I wilt something green over the top in the last minute or so of cooking.  Tonight…it was kale.  If you can handle dairy…feta or goat cheese is good crumbled over the top as well.

So…here it is.  I preheated the oven to 450°F and prepped the pizza crust per instructions, placing it and the parchment paper that is included on a baking sheet.  I topped it off with everything (except the kale) and popped it in the oven for about 15 minutes.  I pulled it out to put the kale on top and popped it back in the oven for about another minute.  Then…just like that…dinner was served.

And, let me tell you…the frozen crust you take home to bake is just as delicious as the pizza crust served when I order in the café on either Friday or Saturday.  It has this doughy, thick texture to it, much like the “real” crusts everyone else can get in restaurants.  I’ve never had gluten-free crust like this.  When it is so reminiscent of the pizza I used to be able to eat…that is saying something.  No cracker crust.  Nothing that crumbles.  This is honest-to-goodness damn good pizza crust.  Not only can you buy a plain crust, but you can also purchase frozen already done up vegan and gluten-free pizzas that you can pop into your oven.  No need to add your own toppings…she has done it for you.  I might try that next time.  But…for me…it’s all about that crust.  That amazing Annie May’s pizza crust.

For the record, Annie May’s pizza crust is completely allergen free.  According to the label, it contains millet flour, sorghum flour, tapioca starch, quinoa flour, water, egg replacer, agave nectar, xanthan gum, salt, and cream of tartar.

This is a 9 ounce pizza crust.  My roomie and I split the pizza (as we do at the bakery whenever we order a pizza) and it is filling.  Filling…but heavenly.  A slice of gluten-free pizza heaven.  I guarantee you won’t find a better crust out there.  And I’m glad I can now take it home with me!  And I just might…weekly!

I love that my local gluten-free bakery is growing.  I love that they are getting enough business to even offer more of their business aside from their daily lunch specials and daily specials in the case.  This makes me insanely happy.

On Saturday, on the third anniversary of the opening of Annie May’s Sweet Café on Frankfort Avenue in Louisville, Kentucky, I finally got to partake in the newest feature of the bakery…

Take-n-Bake goodies from their freezer.  I am talking their (FAMOUS AND DELICIOUS) pizza crusts, garlic bread, vegan garlic bread, cinnamon rolls, and even some of their pastas…(like the best mac & cheese ever).  All items are gluten-free and most are allergen-free.  They make a point when doing gluten-free to also try to do allergen-free.  But some items (like the regular garlic bread and the mac and cheese) contain dairy.

I had stuck my head in the deep freeze earlier in the week when I was in for Soft Pretzel Wednesday (because pretzels on a Wednesday make the best lunch ever!).  The key words that made me happy was…Vegan. Garlic. Bread.  Short on money in the middle of the week, and knowing I was stopping in for the celebration of three years at that location on Saturday, I vowed to make a purchase then.  Little did I know I’d walk out of there with not just the Vegan Garlic Bread, but also the Mac & Cheese, and the Pizza Crust (seriously…best gluten-free pizza crust on this planet…hands down!).  I might have also walked out with an Allergen-Free Banana Spice Muffin (of heaven!).

But, I digress with the muffin.

Let me focus on the entire reason I pulled open that freezer in the first place…

What you get is a half of a half loaf of bread that has been slathered down with a vegan butter and garlic topping.  Then…wrapped and frozen with baking instructions on the label.  Talk about easy.  Just preheat the oven and place the garlic bread on a pan and into the oven and allow to cook for allotted time.  Once done…enjoy.

That’s what I did tonight (and served it up with the Mac & Cheese which I baked at the same time!)

I cried when I took my first bite.  Tears of happiness.  Tear of joy.  Because I haven’t had garlic bread in a very long time.  I tried to order some gluten-free garlic bread from a pizza place in Denver, but they wouldn’t deliver to the hotel (which was only 4 miles away).  So…unless I make it out of gluten-free sandwich bread, it hasn’t happened.  And trust me…that’s not the same.  Annie May’s Vegan Garlic Bread was amazing.  Delicious.  The crust got all golden and crunchy and the middle…soft…chewy…garlic and vegan buttery goodness.  Honestly.  Seasoned perfectly.  Tears.  When a food makes me cry…then it’s damn good.  We only ate half the loaf tonight with dinner…I almost cooked up the second half.  I think this will become another staple that I always purchase from Annie May’s when she has it in stock…much like her cinnamon rolls and her macaroni and cheese!  This…is one of my favorite things I have ever eaten since going gluten-free.  Real food.  Really good.  Make you cry good!  Even my roomie was blown away.  She had taken a bite before I had and she gave me the saddest eyes.  When I took my bite…I understood why.  She liked it better than the garlic bread she has been able to eat.  I liked it better than any I had prior to having to go gluten-free.  Honest…good…food!  That’s what Annie May’s bakes up every single time!

Annie May’s Sweet Café has literally changed my life.  With all the restaurants in Louisville’s blossoming foodie areas, all I want is Annie May’s!  Why?  Because not only can I get safe treats and meals there, but now…I can take a whole lot of their good stuff home to bake up myself when it is convenient.  I hope that the take-n-bake freezer takes off for them and expands, because I would be totally willing to purchase these convenient meals and items every week…just to make one day of my life (if not more) a lot easier.

Product Review: Annie May’s Sweet Café Easter Basket 2014

I am a little late on posting this blog because…life has been crazy-busy as of late.  But…I didn’t want anything to fall by the wayside, especially when it is my favorite allergen-free bakery.  Lucky me…it’s in my own hometown.  And every year, around Easter time, Annie May’s Sweet Café offers people the chance to have their own individually wrapped items for an Easter basket.  This year’s Easter Holiday Menu was enticing.  And…I told my roomie to order for me…and surprise me with what she chose for us to try.

This year brought a change to the standards normally seen on the menu.  Due to a chocolate shortage at the wholesale level, Annie May’s Sweet Café announced they would NOT be making the chocolate bunnies or chocolate candy this year.  Bummer…because that sunbutter bunny I ate last year was beyond amazing.  But…with the rising cost and lack of availability, I can’t blame them.

So…the weekend before Easter, Cathy placed an order at the bakery…and I didn’t listen in or anything.  I was so excited about being surprised with what I would find inside.  The only thing I was aware of was the 1 Dozen Gluten-Free Lemon Bars that Cathy and I had discussed purchasing, because I had been eying these on the menu every time…but they were never in the case.  And Lemon Bars are one of Cathy’s favorite thing in life.

Mine too, honestly.

So…

The Saturday before Easter, we stepped into Annie May’s Sweet Café for breakfast.  After we ate, Cathy went to get all the goodies for the Easter Basket she ordered.  We got a large pink box containing the one dozen Gluten-Free Lemon Bars.  But it was the surprises that I was ready to discover.

Turns out, Cathy put in an order for one of everything…save the Gluten-Free Double Chocolate Brownie as that item is always in the case at the bakery.  Always.  Trust me…our friend Greg always orders at least two of them.

So…here’s a review of everything inside my Gluten-Free Easter Basket of Awesome!

Gluten-Free Lemon Bars – $38.50

One big pink box is what we brought home and immediately stuck in the refrigerator.  Because lingering inside was 12 bars of lemony goodness.  For real.  And these weren’t small bars either.  This dozen lemon bars could easily have been split in half and been enjoyed for much longer.  But where is the fun in that?  Needless to say…Cathy and I didn’t do that.  Not at all.

These bars had this delicious shortbread-like crust.  Then…the lemon curd in the center.  And a delicious sugary crust on top.  It was heaven.  Heaven with each bite.  The lemon was fantastic and refreshing.  The curd inside was soft and lemony, without being overwhelming.  That sugary crust on top added a bit of texture.  And…I think I have declared these the best gluten-free lemon bars I have tasted.

And yes…I have had a few…some from Cherbourg Bakery in Columbus, Ohio…and some from Sinfully Gluten Free in Dayton, Ohio.  But these…these from Annie May’s were the best ever.  I hope she starts putting them in the case for Saturdays…because I will literally buy them all.  Yes…they are that delicious.  Trust me…I can’t make this up.  I looked forward to dessert for six days straight!  Lemony goodness indeed!

Allergen-Free Mini Oatmeal Cream Pie – $3.50

Annie May’s Sweet Café is known for their Oatmeal Cream Pies.  The thing is…these things are so huge at the bakery…that they can be quite daunting to eat.  This is often the treat my guests choose to eat…and then they end up taking more than half of it with them.  Oh…they are good.  Just…sometimes a bit much.

So, for Easter, Annie May’s Sweet Café downsized them.  And this…was absolutely perfect.  You know those oatmeal cream pies you’d buy at the grocery store and devour as a child.  These are sort of like that…but better.  Two soft mini oatmeal cookies surround a thick layer of frosting.  It’s sweet…with a hint of that savory oatmeal cookie appeal.  I love texture of the cookies and the way they pair well with the filling.

It might just remind you how sweet some of life’s simplest pleasures really are.  Like…cookies and icing.  Simple…but oh…so good.  And since this is one of their signature items…it’s totally worth the purchase!

Allergen-Free Mix & Match Petit Four Pack – $4.00

Mmmm…little bite-size cakes of goodness.  I love petit fours.  Before I had to go gluten-free, I was often sent little petit fours at Christmas time from Swiss Colony.  So, I totally missed these little one-bite goodies.  But…not anymore.  Not at Easter.  Thanks to Cathy!

Annie May’s Sweet Café did up a four-pack of Petit Fours, two chocolate with a chocolate ganache topping, and two vanilla with a vanilla icing.  And…boy, were these ever moist.  I actually found that the vanilla was my favorite.  Not a surprise.  While I am a choc-o-holic, I also find that I prefer vanilla in some cases.  Especially when it comes to cakes.  I don’t know why…I just do.

I loved how the icing complimented the moist and sweet cake beneath.  I enjoyed having a dessert I could just pop into my mouth and not feel guilty about the little indulgence.  Not that I ever feel guilty about enjoying a dessert…but you get what I mean.  These little cakes made me so happy.  They didn’t last long if that tells you anything.

Gluten-Free Decorated Sugar Cookie – $5.00

Mmmm…sugar cookies.  I never make sugar cookies.  Ever.  Well, I tried a couple of times.  It never ends well.  Ever.

So…when I see gluten-free sugar cookies in the wild…you better believe I want one.  It doesn’t get much better than a sweet, sometimes a bit gritty (mmmm…sugar!), soft cookie.  It is one of the simplest…but most amazing cookies ever made.  Almost always, sugar cookies have some sort of decorative flair to them.  Last year, Kenna (co-owner of Annie May’s Sweet Café) hand painted Peter Rabbit on the cookies.  This year, the cookie was shaped like an egg and decorated with white icing and various designs to make it look like an Easter egg.

I almost hated to cut it in half and devour it with Cathy’s assistance.  But, my sweet tooth wins out over the artistic beauty of the cookie in the end.  This sugar cookie was soft and sweet, without it being too sweet.  Even with the icing, it found a nice balance.  And it really was a beautifully decorated cookie.  Hands down one of the best, and softest, gluten-free sugar cookies I have had to date.

Two words.

Homemade Caramels.

I actually saved these for last.  Honestly.  I had to.  I wanted them to be last because caramel is one of my favorite things in the world.  Especially if it’s salted.  This wasn’t…but that’s okay.  Seriously.  Because caramel is the thing that delicious dreams are made of.

Always.

The caramels that Annie May’s Sweet Café put together for Easter were chewy and soft…and sweet.  I loved how stretchy it was.  But it didn’t attach itself indefinitely to your teeth either.  I could taste the sugar, and how it caramelized down into the soft candy.  These were so amazing.  They practically melted in your mouth when you took a bite.

These were love.  Soft, chewy, caramel-y love.

I’m addicted.  And the three days I had these in my life were some of my best.  More, please!

So…there it is…

Another Easter has come and gone…and for the second year in a row, Annie May’s Sweet Café provided me with a safe and epically sweet and delicious Easter basket.  Their Easter menu was out of this world this year.  I didn’t even miss the chocolate candies and chocolate bunny.

And seriously…if they ever start putting the lemon bars in that case…I’ll buy them all.

I’m already craving them again.

Maybe I can see about getting these for my birthday this year…

Maybe.

They are BACK!

YES!!  Finally!!

After a long, harsh winter without much action of the food truck scene…especially for me…because of my food allergies and all…I was so happy when Sweet ‘N’ Savory Food Truck returned from their hiatus (the owners spend the winters in New Orleans, Louisiana).  Unfortunately, I didn’t get out to them for a few weeks.  I was either out of town or the weather was bad.

But that was not the case this past Sunday afternoon.  Louisville was having their Buy Local Fair and the food trucks were out and serving.  I went to this event last year and walked away with tons of local products from local businesses and farms.  So, I was excited that I would be in town for this year’s event as well.  It was a near thing though.  I was in Indianapolis the day before for a half marathon…so thank goodness this was a Sunday event.

After an easy time getting to the site of the Buy Local Fair and with no problems parking…I was more than primed to find the food trucks and get my crepe on.  Because that…my dear readers…is what Sweet ‘N’ Savory is all about.  They do amazing gluten-free crepes, gelato, smoothies, coffee, tea…ahhhh…life’s simple but best pleasures, if you ask me.  And you’re reading this…so technically…you are.

Sweet ‘N’ Savory was right on the end of the row of food trucks as we turned the corner.  I think I bounced up and down when I saw them…already with a line.  YAY!  I was so ready for this.   My crepe craving has been out of control lately.  And despite having a gluten-free crepe place in Columbus, Ohio…and now one in Denver, Colorado…nothing…NOTHING compares to those that are served up by my local food truck, owned by Richard and Ashley Giannini.  He mans the crepe stones and she takes the orders and dishes up everything else…including their rich, creamy gelato.  But I’ll get to that momentarily.

Richard and Ashley are the two who got me hooked on savory crepes.  I never cared for them much before…until they came along.  And…still…I hardly order them from anywhere else…because they don’t compare to the flavor combinations that I can get from Sweet ‘N’ Savory.  I looked over the menu…and contemplated going sweet.  But it was lunch…so…the savory sort of had my attention.  I was going back and forth between two of them…and finally settled on…

This savory crepe contained caramelized onions, figs, honey, and goat cheese, folded up in the gluten-free crepe and served toasty and warm and…mouth watering.  Holy cow.  I put in my order and Cathy placed hers (opting for the one with ‘all the meats’ as she never gets to eat meat at home since I am the cook).  While we waited, we chatted with both Richard and Ashley about how we’ve been and what’s been keeping us busy.  They apologized for missing me the weekend before at The Flea Off Market (severe weather shut it down early and they packed up 10 minutes before I finally arrived…SO not their fault.  Just really bad timing!).  We laughed about the strange weather and soon…both Cathy and I were receiving our delicious gluten-free crepes.

The seating area was on the other end of the food truck area, so we took a small stroll over to a picnic table and settled in.  I quickly took the mandatory food shot for the blog and then picked up my plastic utensils and readied myself for my first bite of one of Sweet ‘N’ Savory’s crepes in a L-O-N-G time.

It was just as good as I always remembered.  The savory Sweet Onion Crepe was the perfect blend of everything.  You get sweetness from the caramelized onions…plus some great flavor and texture from the chopped up figs that are inside.  The honey binds everything together.  But the real magic in this crepe falls to the goat cheese.  You get this nice balance of saltiness and creamy texture to counter the onion and fig mixture.  Heaven.  I cut off a piece for Cathy to try and she agreed…it rocked!  And her crepe was apparently good too, because we polished them off in record time.  For real!  The crepe itself was toasted to a perfect golden brown and tucked neatly around the filling.  It was heaven on a paper plate.  And I was all smiles…in between chewing, of course.  I have yet to have something from Sweet ‘N’ Savory that I didn’t like.

As we had been waiting in line, Ashely had mentioned their gelato flavors.  She had done up a Brownie Batter Gelato that morning that she said was amazing.  Lick-the-bowl good, I believe.  She also said that it would pair perfectly with, my personal favorite, Salted Caramel.  And they did have the salted caramel flavor.  But she enticed me with something else…

A Dairy-Free Raspberry Gelato.  So, Cathy and I abandoned our plans to celebrate my fastest half marathon time with our traditional Sundae Sunday at The Comfy Cow…and instead…went for Sweet ‘N’ Savory’s gelato.  Cathy got the Brownie Batter.  I was enticed to the Raspberry.  Ashley served it up…and we happily paid and walked away with our refreshing sweet treat in hand.

Cathy fell in love with the rich, sweet, very-brownie flavor of the Brownie Batter Gelato.  I took a spoonful and…WOW!  Yeah…it was like eating rich, delicious, dark chocolate brownie batter.  REALLY good.  But, I was over-the-moon for my choice.  Light, airy, and tangy…the zippy flavor of Sweet ‘N’ Savory’s Dairy-Free Raspberry Gelato won me over at first bite.  Cathy, who doesn’t even like raspberry, took a taste and said, “WOW…that’s GOOD!”  So, we perused the Buy Local Fair, buying products from local farms and businesses, while eating our little bowls of homemade, rich, creamy, light…gelato.  I was in a good place.  A very, very happy place.

So, I want to take a moment to welcome back my favorite Louisville, Kentucky food truck, Sweet ‘N’ Savory.  I have missed you so much.  And you totally have brought the flavor-factor back once again this year.  I can’t wait to turn up at other events and try other crepes that you create and put together.  Honestly…you’ve been missed.  And next time…it might be a two-scoop gelato kind of day.  Your food is love…and I love your food!

Yeah…after the mention of the Gluten-Free Blueberry Muffin from Lucky Clover Farm in my previous post, I wasn’t going to leave you hanging.  Seriously.  I think I’m in love with the gluten-free baked goods this local business is putting out.  I am so glad that I went to the Buy Local Fair in Louisville on Sunday because I don’t think I would have found them otherwise.

Happiness…is being able to eat baked goodies!

Because unless I go to a specialty bakery or buy them in the store or make them myself…I go without.

That’s how it works when you are a Celiac.

That being said…when I literally turned around and walked back to the booth at the Buy Local Fair that was advertising gluten-free breads, muffins, cakes, etc…I didn’t know what I was in for.  I ended up purchasing more than what I initially intended.  I wanted the gluten-free carrot cake…but it’s hard to sell that on my roomie.  She was intrigued by the herb bread…and I just blogged on that.  We also picked out three of the jam varieties they had for sale as well.  We are jelly and jam lovers here.  Seriously.  I kept eying that carrot cake…but ended up leaving it and going for the Gluten-Free Blueberry Muffin instead.

First of all, I have never seen such beautiful muffins.  It was shaped like a giant flour.  Seriously.  I picked up one of the individually wrapped muffins and found it soft, light, and smelling of fresh blueberries.  It smelled sweet.  And fresh.  And…yeah…I supposed I could leave the carrot cake behind this time if this was what I got to have instead.

On Monday morning, after my spin class, I returned home and got to work on a quick and easy breakfast.  This was going to consist of some of the aforementioned gluten-free herb bread from Lucky Clover Farm…and Cathy and I were splitting the Gluten-Free Blueberry Muffin.  I decided to toast the slice of bread, tossing it on a pan and then into the oven while I went and showered.  When I was dressed and back in the kitchen, the bread was finishing up…so I unwrapped the blooming Gluten-Free Blueberry Muffin from Lucky Clover Farm, placed it on a plate, and then placed it in the microwave for about 20 seconds.

It smelled so amazing as it emerged out of the microwave, warm all the way through.  I sliced it in half…then into quarters.  Cathy loves her muffin buttered, so I added a light schmear of real butter to her muffin slices and then plated it with the toasted gluten-free herb bread.

I never have buttered much of anything I ate…including bread and muffins, so mine was simply plated.  I settled in with my coffee and my tasty (and easy and quick) breakfast that morning.  I already knew the bread was good, so I immediately turned my attention and appetite to the Gluten-Free Blueberry Muffin.

It was so soft and light.  It was not dense at all.  Just fresh and baked to a golden perfection on the outside.  The blueberries added a great amount of fresh sweetness.  And it wasn’t laden with sugar, making it seem more like cake.  This was a muffin through-and-through.  It was soft and chewy and perfect.  I think angels might have baked it…because I love a muffin that isn’t heavy.  And this was just what I needed that morning.  They seem to make different varieties of their gluten-free muffins throughout the year and where they end up at different fairs and festivals and markets.

I can’t say enough good things about Lucky Clover Farms.  In fact, these gluten-free baked goods were such a hit with me and Cathy that we can’t wait to try the jams out.

This might have been my favorite Gluten-Free Blueberry Muffin to date.  I mean…it looked like a flower and tasted like a dream.

Doesn’t get much better than that!
