It’s been awhile since I’ve blogged about one of my favorite gluten-free companies out there.  I think the giant, larger than my arm, loaf of challah bread and a couple of goodies I got to go with it were the last thing to cross my freezer from Katz Gluten Free.  I have been moving away from processed foods, but that doesn’t mean I don’t splurge every now and again.

I forgot what took me over to the Katz Gluten Free Web site awhile back.  Perhaps I just wanted to take a browse.  Perhaps I had a feeling that they had added some new products that would immediately make me fill up my cart and then eagerly anticipate their arrival a couple of days later.

Whatever it was that drew me over there…it worked.  Because they did have new products on the site. And I did immediately order them.

What was it that grabbed my attention and made me need to have said products right then and there?  One word:

DONUTS!

I mean, yes, gluten-free donuts aren’t exactly difficult to come by these days.  In fact, my local allergen-free bakery, Annie May’s Sweet Café, offers them every Saturday morning.  They sell out rather quickly too.  You can find versions in freezers at grocery stores and (yes) natural food stores alike.  Believe me…I often think…”I could buy that one box of donuts…”

And I don’t…because I know I can get better…fresh from my very own local gluten-free bakery…or…from Katz Gluten Free.

Well, color me happy and surprised (which is apparently yellow and orange) when I just randomly darted over to their Web site and looked at their New Products page.  Lo and behold there…on the screen…were not one…not two…but THREE new versions of their fantastic, super-delicious, gluten-free donuts.  My heart skipped a beat, my hand reached for my credit card…and all three new varieties were purchased.  I didn’t bat an eye.  Hey, I love being healthy, but every girl deserves a donut every now and again.  And this Celiac really loves donuts!

The three new varieties offered by Katz Gluten Free are Pumpkin Pie Spiced Donuts, Triple Chocolate Donuts, and the Glazed Chocolate Donuts.

This is one of those days where a quick breakfast is more than appreciated…it’s necessary.  So, despite having these for a couple of weeks in my freezer, I have resisted diving in.  But today…was a good day for donuts.  I asked my roommate to pick a flavor and she immediately replied with the Katz Gluten Free Glazed Chocolate Donuts.  She is a sucker for glazed donuts.  So…I had a feeling that flavor would either be the first to go or the last one eaten. She went for it first.

I actually pulled the donuts out of the freezer last night and placed the two I needed (one for my roommate and one for me) into a plastic bag to thaw overnight.  The rest were returned to the freezer for another day.  I don’t need to eat them all right now?  I can savor them this way.  The following morning, all they required was a little zap in the microwave (although even that isn’t necessary, I just like to give them that “fresh & hot” feeling to them.  And then…brekkies was served.

As a child raised in Upstate New York…one of the best treats ever was a Dunkin Donuts Munchkin (aka: donut hole).  And, for as much as I can remember about how those tasted, that’s the memory these donuts drew up for me.  The donut itself is a rich chocolate cake donut that just melts…literally melts in your mouth.  Talk about a dream.  The glaze is this sugary sweet bonus that just ties it all together giving it that little bit of texture and that extra boost of flavor.  Just…beyond wow.  And, even more…it brought back memories of sitting down to one of my favorite treats as a kid…donut holes from Dunkin Donuts.  I mean…exact same flavor profile and texture to them.  It was almost like eating cake for breakfast.  Chocolate to the max…and just…Mmmmmmmmm….delish.  I am glad I pull these out ahead of time and eat them away from my apartment or I’d probably be tempted to go back and eat another one.  And maybe another one for good show.  It’s nice to have a treat every now and again.  These are a treat worth indulging in from time to time.  TRUST ME!

While this may not be the healthiest of breakfasts, you gotta treat yourself every now and again.  I love fitness and I love eating clean and healthy foods, but I also like to indulge every now and again.  Some mornings, you just eat a donut.

Let’s talk about ingredients.  Katz Gluten Free Glazed Chocolate Donuts are made from gluten-free flour (a blend of tapioca starch, white rice flour, and corn starch), water, palm oil, sugar, eggs, confection sugar, canola oil, cocoa, baking powder, salt, xanthan gum, natural vanilla extract, agar, calcium carbonate (anticaking agent), and calcium sulfate (stabilizer).  I know…I see the chemical sounding things on there too.  But…this is a treat this morning.  I definitely don’t eat donuts every day.  In fact, it is a rare thing these days.  These donuts are gluten-free, soy free, dairy free and nut free.

As for nutritional information…for donuts, these stack up rather well.  In fact, better than most donuts out there.  A serving is 1 donut.  Nailed that.  This one donut will provide you with 210 calories and 12 grams of fat.  Okay…the fat is high…but it’s a donut.  You will also be taking in 20 mg cholesterol, 220 mg sodium, and 12 grams of sugar.  And because these are donuts, and mostly comprised of sugar, they will definitely not be filling you up.  In fact, one donut has only 1 gram of fiber and 1 gram of protein.  I ate mine with an orange.

Balance.  HA!

I have only love for the products I have tried from Katz Gluten Free.  They were the first company to bring me gluten free donuts that tasted like…real donuts.  They have fantastic pies…good cookies…amazing bread…and I could go on.  But if you are really looking to treat yourself every now and again…buy the donuts.  Just…take a chance.  Because, trust me…you will want to keep a box of these stashed in your freezer for those “Mmmm…donut!” days.

And now, I have the Katz Gluten Free Glazed Chocolate variety to add to the mix.  And they have exceeded my expecations for sure.  I know that Katz Gluten Free only puts out quality products, but this was just exceptional.  For those days when only a donut will do…you better not be without the Katz Gluten Free Glazed Chocolate Donuts.  Stock up.  And savor.  These are definitely donut love for sure.  SO GOOD!

Yesterday, I had a great day of great eating.  No…I honestly mean it.  It started off at my favorite local allergen-free bakery, Annie May’s Sweet Café.  I had a delicious breakfast with my roommate and my good friend Patrick.  And then…we all went out shopping and spending the rest of the day together.  Around 1 p.m., however, our breakfast was gone and we were looking for a light lunch.

Patrick, a vegan, recommended a place, saying he was feeling Asian food.  Korean food.  However, Asian can be a scary and rather…dangerous…territory for me.

However, he had a backup to his first choice.  He took Cathy and I over to a restaurant we had been meaning to try for a long while.  Roots…in the Highlands in Louisville.  Attached to it was Heart & Soy…but we were really feeling soup and he had quite a few suggestions for each of us.  Better yet…both places are both vegetarian, mostly vegan, and had tons of gluten-free options.

Asian food was just what the doctor ordered.  I had been craving it for awhile…and this was beyond anything I had in a long time.  Most Asian food in my life is P.F. Chang’s…which…let’s face it…isn’t “real” Asian cuisine.  So…this was a nice treat and the owner…she was adorable and so sweet.  She also knew what Patrick wanted.  Cookies. HA!

All of that aside, while I polished off my meal of a small Vegetarian Pho soup and my Sauteed Baby Spinach entrée, Cathy didn’t quite finish her Tofu Clay Pot…so she had some extra.  Patrick mentioned pouring it over rice…and Cathy seemed very interested in that idea.  I would need something else, as the Tofu Clay Pot wasn’t gluten-free…but I did have baby spinach at home and the idea to recreate the spinach dish I ate and put it with some brown rice.  Dinner would be amazing…but I thought it might need a little something more.

For Christmas, my adoptive aunt, Judi, gave me a $50 gift card to Whole Foods.  I am one happy girl because now I can start purchasing items I’ve been dying to try but haven’t really been able to justify with my budget.  While the three items I decided on today were relatively cheap (I still have over $37 on my card), I was able to not talk myself out of something for fear of not having enough for the basics at the end of the day.

One of my gift card splurge purchases were the Vegetable Egg Rolls made by Feel Good Foods.  Let me premise this by saying…I HAVE NOT HAD EGG ROLLS IN THREE YEARS!  Yes…three years.  Not since going gluten-free.  So, when I see the words “GLUTEN FREE” followed by “VEGETABLE EGG ROLLS,” you better believe that box is coming out of the freezer and hitting my shopping basket.  And, I had previously tried the Feel Good Foods Vegetable Pot Stickers (and LOVED them!), I felt good about this purchase.  I wasn’t going to go, “but what if it sucks…what if I don’t like it?”  I was confident it would be good.

Normally, I probably would have gone with the oven baked version of these egg rolls, however…I forgot I had them up until the rice was steaming in my pan on the stove.  WHOOPS!  So…in a panic, I opted for the pan fry option.  And, honestly, I’m so glad I ended up going that way.

But let me come back to that momentarily.

Feel Good Foods has the slogan: Don’t worry. Eat happy.  And, with the promise of having no added MSG, no preservatives, and no artificial flavors, I was already feeling good about my purchase.  Creators, Tryg and Vanessa met at a restaurant where he was the chef and she was working.  When he discovered that she couldn’t have the staff-created meals, he began creating gluten-free versions of the dish.  They created Feel Good Foods gluten-free frozen foods after they opened a gluten-free restaurant and were told that they needed to put their food out on the market.  Their foods are non-GMO, all-natural and completely gluten-free.  You see…Vanessa is a Celiac…so they take food allergies really seriously.

So…egg rolls.  It was an easy thing to prepare, thank goodness…since I totally forgot about them until the very last moment.  I already had spinach sautéing and wilting down.  Crap.  But, thankfully there was a simple pan fry method that would get the food done just in time.  I got a non-stick pan heating up on the stove with 1/4 cup canola oil.  I kept the heat around medium-high, and really let that pan get warm.  As it warmed, I opened up the package of egg rolls and placed them on a plate, microwaving them for 30 seconds.  Then, using some tongs, I eased each egg roll, flat side down, into the hot oil.  I allowed each one to kook until the side was turning a rich, golden brown, then would flip it over and keep each side browning evenly.  Once they were done, I removed the egg rolls from the pan and placed them on a paper towel while I served up the rice and topped it off with our perspective toppings…Cathy’s leftovers and my sautéed spinach.

Then…egg rolls were served…with a side of sweet chili sauce (which happened to be in my fridge).

Let me tell you, I will forever pan fry these egg rolls, which will forever have a place in my freezer for sure.  I was SO impressed.  First of all, by oven frying them, instead of baking them, I got this amazing golden wrap with the most amazing and perfect crispy texture.  The vegetables inside were warmed all the way through and packed with delicious flavor and seasoning.  I ate my main dish first and devoured the egg rolls, saying that next time I would just have egg rolls for dinner. Holy cow!  Most amazing thing ever.  Seriously, delicious.  It reminded me so much of the egg rolls I used to devour when I ate Chinese food.  This little side dish made me beyond happy.  I wanted more.  I still want more.  DELICIOUS!!

Let’s talk about the ingredients.  The Feel Good Foods Gluten-Free Vegetable Egg Rolls are made with all-natural ingredients.  The filling in these egg rolls is made up of cabbage, yellow onion, bean vermicilli, carrots, green onion, corn starch, sesame oil, and less than 2% of evaporated cane syrup, ginger, salt, black pepper, yeast extract and shiitake mushrooms.  The wrapper is made up from water, rice flour and less than 2% of eggs, salt and soy lecithin.  As for the batter…it is a mix of water, rice flour, corn starch, canola oil, eggs, evaporated cane syrup, baking powder, salt, and soybean oil.

As for nutritional information, the Feel Good Foods Gluten-Free Vegetable Egg Rolls aren’t bad at all.  Not really.  A serving is 1 egg roll, in a box that comes with 3 egg rolls inside.  One serving is only 90 calories and 2.5 grams of fat.  One serving dishes up 5 mg cholesterol, 400 mg sodium, and 3 grams of sugar.  One egg roll also delivers 1 gram of fiber and 2 grams of protein.

I really, really, really want to thank Tryg and Vanessa for these amazing frozen treats.  They cooked up perfectly.  They were packed with flavor.  They were, honestly, one of the best things I have had since having to go gluten free.  I wish I could hug them both.  Because now I can enjoy egg rolls again.  Asian food is coming back into my life…and this proves that I don’t have to it all from scratch.  Sometimes I just need a hot pan and a little sweet chili sauce…the rest…Feel Good Foods takes care of.

It truly is food that you can feel good about…and makes you feel good about eating.

Now…I’m craving more.

FINALLY!

Finally the gluten-free world gifts me with…gluten-free ramen!  I have been waiting a long time for this.

I know what you’re thinking…

“Really?  Ramen?”

Trust me…when you are faced with never being able to eat something again…finally is what comes to mind when you suddenly are given that something.  I never knew how much I missed ramen…until I was suddenly able to have it again.

And for this great pleasure, I once again have to credit the amazing Cuisine Cube!  Honestly, this is the best money I have ever spent each month.  It is always a surprise as to what is inside the cube that arrives in the mail.  And I am like a kid at Christmas when I open it up.  Back in October’s box…Cuisine Cube included not just one, but two, packages of Lotus Foods Gluten Free and Reduced Sodium Rice Ramen.

Two flavors: Millet & Brown Rice with Miso Soup as well as Forbidden Rice with Miso Soup.

Color me excited.  I was so ready to make some ramen.  After all, I studied Japanese all through college and ramen is a way of life in Japan.  Now…it was back in mine.

Let’s talk about Lotus Foods for a moment, shall we?  The products produced by Lotus Foods are recognized for their exceptional cooking quality, taste, texture, and superb nutritional value.  The ancient and new rices that compose their products are grown on family farms in limited quantities, on healthy, chemical-free soils.  The rice and rice products that are produced by Lotus Foods are found in specialty gourmet, natural food markets, grocery stores, white tablecloth restaurants throughout the United States, becoming a fast favorite of consumers who are seeking healthier options, as well as chefs and foodies across the country.

I decided to do an even mix when it came to the two packages of Lotus Foods Rice Ramen that I received from Cuisine Cube.  I’d prepare one package as is stated on the package itself.  The other…I would cook up in a recipe.

The one that I chose to shine on its very own was the Lotus Foods Millet & Brown Rice Ramen.  These traditional Japanese-style noodles are created using their specialty rice instead of wheat.  Not only are these gluten-free, but both millet and brown rice are some of the most nutritious and easily digestible grains.

Nothing could be easier to cook.  Simply bring 2 cups of water to a boil.  Add in the ramen and simmer for about 4 minutes.  Stir every now and again, breaking the noodles apart.  When the noodles are soft, remove the pot from the heat and mix in the contents of the enclosed soup package.  You can then add in any additional veggies and protein as you wish.  I added some corn…because I happen to have a lot of fresh corn in my freezer leftover from this summer.

So…what emerged was a hearty, but delicious miso soup.  One that is not only gluten-free, but also vegan and non-GMO.  All of Lotus Foods rice products are made from organic rice…and that includes the rice ramen.

So…how did it taste?  Fantastic.  I love that this is also reduced sodium, as a lot of ramen on the market is overflowing with unneeded sodium.  I was impressed with that stat on the nutritional information immediately.  But as for the taste…the millet and brown rice lend a rich and nutty taste to the noodles themselves.  And the soup pack provided a ton of flavor to the hot water.  I love the mix of spices that brought a slight bit of heat and sweetness to the entire dish.  It was simple to cook and fun to eat.  Chopsticks not included.

Let’s look at the ingredients in Lotus Foods Millet & Brown Rice Ramen.  The ramen is made from organic brown rice flour, organic millet flour, water, and organic white rice flour.  The soup pack contains red miso powder (cultured soybeans and rice, salt) tamari powder, salt, red onion powder, dried wakame seaweed, sugar, garlic powder, ginger powder, dried parsley, and dried chili peppers.  It is gluten-free, cholesterol free, organic, high in fiber and protein, non-GMO, low fat, vegan, and truly delicious!

As for the nutritional information…well…the Lotus Foods Millet & Brown Rice Ramen packs contain 2 servings, so a serving isze is 1/2 ramen with the seasoning.  This serving will provide you with 140 calories and 1.5 grams of fat.  This portion will also give you 460 mg sodium and 1 gram of sugar.  See how amazing that sodium level is?!  It has 25% less sodium than regular ramen soup.  This serving also provides 2 grams of fiber and 5 grams of protein.  It may not seem like much when you look at it…but trust me…you will feel full after eating your bowl of this ramen.

In addition to the Millet & Brown Rice variety, Cuisine Cube threw in the Lotus Foods Forbidden Rice Ramen as well.

Forbidden Rice is one of the most nutritious ancient grains.  It is made from Lotus Foods heirloom black rice instead of wheat.  I love the purple color that these noodles take on.  It’s really fantastic.  Instead of cooking these up according to the package, I incorporated these into a recipe.  But…I’m getting ahead of myself.  The forbidden rice ramen also has a delicious nutty taste and a great texture to them. In addition, these noodles are a natural source of antioxidants.  This package comes with a savory white miso broth  to create the noodle soup with.  I, instead, incorporated it with the recipe I made.  I added a ton of extra vegetables to create a delicious meal.  The recipe will follow the ingredients and nutritional information.

Taste was superb.  The noodles are amazing and perfect.  I wish Cuisine Cube had included more.  But, that’s why they have a Stock Up page on their Web site…to stock up.  I hope to do just that…because…YUM!

The Lotus Foods Forbidden Rice Ramen noodles are made from organic black rice flour, organic brown rice flour, and organic white rice flour, and water.  The soup pack is made from white miso powder (cultured soybeans and rice, salt), salt, white onion powder, tamari powder, soybean powder, mushroom powder, dried parsley, and dried carrots.  It is gluten-free, cholesterol free, organic, non-GMO, low fat, and vegan.  WOOT!

As far as nutrition goes, Lotus Foods Forbidden Rice Ramen serves 2 people per pack, so a serving size is 1/2 of the package with the seasoning.  This serving will provide you with 140 calories and 1.5 grams of fat.  In addition, this portion gives you 400 mg sodium and 1 gram of sugar.  Yes, the Forbidden Rice Ramen contians 33% less sodium than regular ramen.  That’s fantastic.  And, finally, you will have less than 1gram of fiber and 3 grams of protein.  With less of these final two nutritional factors, load this up with hearty vegeatbles or your protein of choice.

Recipe: Ramen Noodle Soup with Sugar Snap Peas, Mushrooms and Corn

Servings: 4-6
Time: Prep 15 minutes; Cook 20 minutes

Ingredients:

 

  • 2 Tbs. olive oil
  • 2 shallots, chopped
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 packet of Lotus Foods Forbidden Rice Ramen noodles (dried ramen noodles)
  • 1 can diced tomatoes
  • 1-1/2 cups sugar snap peas, trimmed and halved diagonally
  • 1/2 cup corn
  • 1/2 cup crimini mushrooms, sliced
  • Salt and freshly ground pepper
  • Hot sauce, such as Sriracha, for serving

 

Directions:

In a large, heavy pot, warm the oil over medium-high heat.

Add the shallots and garlic and saute for 3 minutes.

Add the mushrooms and saute for another 3 minutes.

Add the broth and bring to a boil.

Add the ramen noodles and tomatoes and cook, stirring occasionally, for 5 minutes.

Add the sugar snap peas, corn, and the seasoning packet from the Lotus Foods Forbidden Rice Ramen and cook for 2 minutes.

Season with salt and pepper and serve.  Add hot sauce, if desired.

Let me tell you, I was amazed with how good this recipe was.  And thanks to Lotus Foods Forbidden Rice Ramen Noodles…I was able to create this and cook it up.  It had rich depth of flavor.  The Forbidden Rice Ramen noodles added a nice hit of bold color.  And the soup itself had this great umami flavor.  It was rich and loaded with nutrients and fresh vegetables.  It was love at first slurp.  And there was a ton of slurping going on.

If you haven’t looked into a subscription to Cuisine Cube, I do highly recommend it.  In addition, I encourage you to seek out or order Lotus Foods Rice Ramen and give it a try.  Especially, if you’re like me, and didn’t even remember what you were missing.  It was so delicious.  Or, as they say in Japan, “Taihen Oishikattadesu!”

Recipe: Fresh Corn with Avocado, Onion, and Spiced Vegan Scallops

I’m doing my best to make do without my CSA bin for the past month.  And that means I’ve been doing a lot with some products and foods that I have in my fridge and freezer.  My freezer happened to have an open box of Sophie’s Kitchen Gluten Free Vegan Breaded Scallops and this amazing corn that I cut off the cob and froze for later use.  My fruit bowl is holding one of my favorite things in life…avocados.  And yesterday, I purchased an onion for use in my previous recipe.

So, when I spotted a recipe on Health.com for a meal that involved fresh corn, avocado, scallions and scallops, I knew I could easily adapt the recipe to use ingredients I had on hand, and keep it vegan.  Of course, if you eat seafood, feel free to use regular scallops.

With the seasoning and the fresh vegetables, this was one fantastic meal.

Recipe: Fresh Corn with Avocado, Onion, and Spiced Vegan Scallops

Time: Prep 10 minutes; Cook 5 minutes

Ingredients:

  • 1 medium diced peeled avocado
  • 1 tablespoon fresh lime juice
  • 1-1/4 pounds sea scallops (I used Sophie’s Kitchen Gluten Free and Vegan Breaded Scallops)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon ground cumin, divided
  • 2 teaspoons olive oil
  • 2 cups fresh or frozen corn kernels, thawed
  • 1/2 cup chopped yellow onion
  • 1/4 cup dry white wine (I used 2 tablespoons white wine vinegar and 1 tablespoon lemon juice)

 

Directions:

In a small bowl, toss avocado and lime juice.

Sprinkle scallops with salt, pepper, and 1/2 teaspoon cumin. Heat oil in a large nonstick skillet over medium-high heat. Add scallops; cook, turning once, until golden and cooked through (about 3 minutes).

Transfer scallops to a plate.

Add corn, scallion, white wine, and remaining cumin to skillet; cook corn until tender, stirring constantly (about 2 minutes).

Spoon corn mixture onto 4 serving plates, add avocado and top each with half of the scallops.

This was one fantastic meal.  I loved the healthy fat that came into the dish with the avocado.  The seasonal corn was an amazing ingredient on its own, but when seasoned and cooked with all the other ingredients, it became elevated.  The scallops, simply seasoned with salt, pepper, and cumin made the perfect protein and topper for this dish.

Give it a try!  Vegan, vegetarian, or pescatarian…you’ll really enjoy this meal.  I’ll definitely be making this again!

 

Recipe: Sweet Chili Vegetable Quinoa Bowl

On Friday, I was quickly scrolling through the blogs I follow on WordPress and came across a blog from Clean Eating Veggie Girl, who posted this amazing recipe for a quinoa bowl, inspired by her friend Molly.  I had virtually everything necessary to make this meal, save for an onion and some frozen stir-fry vegetables, which I could easily pick up at the store over the weekend and prepare this for dinner Sunday evening.

I actually spent most of my day helping my roomie’s sister paint some of her house…so grocery shopping actually didn’t get completed until much later, and it was past 6 p.m. by the time I back to my apartment to cook.  Thankfully, this is a super-easy and super-fast meal to create.

Oh…and super delicious too!

Sweet Chili Vegetable Quinoa Bowl

Servings: 2
Time: Prep 10 minutes; Cook 20 minutes

Ingredients:

  • 2 cups cooked quinoa (1/2 cup dry + 1 cup water)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced (I used 1/8 teaspoon ground ginger)
  • 1/4 medium yellow onion, chopped
  • 16 oz bag frozen stir-fry vegetables
  • 1/8 cup Bragg’s liquid aminos (I used San-J Gluten Free Low Sodium Tamari)
  • 1/3 cup sweet chili sauce
  • Sriracha sauce, optional
  • 2 to 3 large eggs, optional*

*Recipe is vegan without the eggs

 

Directions:

If you do not already have the quinoa cooked, prepare according to package directions.

Line a large skillet with a thin layer of water.  Heat over medium-high heat until very hot.  Once hot, lower the heat to medium and add garlic, ginger, and onions to the pan.  Cook for approximately 5 minutes, adding additional water as necessary.

Add frozen stir-fry vegetables to the skillet.  Cover with a lid and cook for approximately 5 minutes.

Once the vegetables are cooked through, turn the heat to low and stir in cooked quinoa.

Add liquid aminos/tamari sauce and sweet chili sauce to the skillet.  Stir until well-combined.  Cook an additional 3 to 5 minutes, or until your vegetable and quinoa mixture is hot.

If you are adding an egg to the bowls, cook each one to your liking during the last 3 to 5 minutes of cooking time.  I poached mine, but fried or scrambled would work as well.

Scoop the vegetable and quinoa mixture into bowls and, if desired, drizzle with sriracha sauce and top with an egg.

This quinoa bowl is fantastic.  It’s a little bit sweet and a little bit spicy.  And if you love eggs, the runny yolk from a poached egg just really ties the entire meal together.  I was beyond impressed.  It was nice to create a healthy, protein-rich meal for dinner after such a busy day.  I also appreciated how quickly the entire meal came together.  Fantastic.

My friend Jenn knows me.  She knows me very well.  So, it should not come as a surprise that my friend who might be a bigger chocaholic than I would, would pack me up a delicious birthday goodie bag complete with different flavors and brands of gluten-free cookies.  Cookie Monster…he has nothing on me.

Mmmm…cookies!

I have tried a couple of varieties from Dr. Lucy’s line of cookies…but not the Maple Bliss.  I was unimpressed with the crispy sugar cookies, finding the bean flowers used in her flour mix a little overpowering.  However, the chocolate chip cookies were really good.  So, I was on the fence when I opened up the box of Lucy’s Gluten Free Maple Bliss Cookies the other night to enjoy for a light, sweet dessert.

Every day should end with dessert.  Just sayin’.

So…with one hit and one miss, I bet you’re wondering about how these cookies stacked up.

Honestly…I like them!  I mean, I’m not falling all over myself to praise them to the sky, but this is a very good cookie.  The flavors are there…sweet maple with the added sweetness of sugar and all packaged in a crispy two-bite cookie.  That’s a good blend.  They were a little dry, I think…but I’m also used to soft cookies more than crunchy ones…so maybe it’s just a thing.  My roommate also loves the flavor but also thinks they are a bit dry.  Nothing a glass of almond milk can’t help, right?  Right!  While also made with that signature bean flour, the flavor isn’t as strong, probably thanks to that maple syrup shining through.  Overall…I’d buy these again.  And turn them into a base for S’mores.  Seriously…that would be awesome.  Seriously, these do strike that balance of crunchy without being just…sawdust.  The natural sweetness does allow for a great amount of flavor and keeps everything in balance.  If you love crunchy cookies…this is a great gluten-free option for sure.  Remember though…bean flours do make things taste like…well…beans.  But the sweetness helps to balance it out.

Let’s talk about what goes into the Lucy’s Gluten Free Maple Bliss Cookies, shall we?  These cookies are made with Dr. Lucy’s Flour Blend (gluten-free oat, garbanzo/chickpea, potato starch, tapioca, sorghum, and fava flours), organic cane sugar, gluten-free oat flakes, soy milk, molasses, sustainable palm fruit oil, expeller pressed canola oil, olive oil, filtered water, citric acid, and flavoring from non-GMO corn, sunflower lecithin, non-dairy lactic acid, baking powder, baking soda, potassium bitartrate, vanilla extract, salt, xanthan gum, calcium carbonate, annatto, extract color, maple syrup, and cellulose gum.

It feels like a lot of ingredients and some of them do sound a bit more “chemical” than others.  But…put them together and you do get a good cookie.

As for nutrition…a serving of Lucy’s Gluten Free Maple Bliss Cookies is 3 of the 2-3 bite cookies.  This serving will provide you with 120 calories and 4.5 grams of fat.  That, honestly, is GOOD for cookies.  That actually impresses me!  A serving of these cookies also provides 170 mg sodium and 9 grams of sugar.  And finally…you will be taking in 1 gram of fiber and 2 grams of protein, making these a non-filling sweet treat.

Cookies are not created equally, but if you love a crunchy, crumbly cookie…and if you love the flavor of maple syrup…these are a fantastic choice.  For me…they fall in the middle of the cookie scale.  A great cookie for flavor…but I sort of like a bit of softness to my cookies.  Like I said…these just seem dry.  But overall…not bad.  Not bad at all.

It all began at Expo West…which I always dream about attending but know that it is highly unlikely.  The best part about Expo West is that all the companies who are in attendance usually announce and promote their new products that are set to hit stores throughout the coming year.  I try to follow my Twitter feed closely while Expo West is happening, just waiting for one of the gluten-free companies or a gluten-free blogger who is there to post what they are releasing or what they have seen at the booths of certain gluten-free companies.

So, when I saw not only freezer meals but also gluten-free burritos pop up from Udi’s Gluten Free…you better believe I perked up and took interest.  Of course, it took until now for me to find the burritos in my area…but it happened yesterday.  I made a random stop off at my local Meijer and discovered these little delights hidden in the freezer section.  I scanned the boxes…seeing so many of them to choose from, but most of them with meat.  And then…I spotted the two versions that did not include meat.

YAY!!

One was a breakfast burrito and the other one for lunch/dinner.  My roommate spotted the Udi’s Gluten Free Chicken Apple Sausage Breakfast Burrito, so it was decided that today, after we went swimming, we’d come home and have breakfast burritos for breakfast before running some errands and whatever else needed to be done.  So, I grabbed the vegetarian version – the Udi’s Gluten Free Spicy Southwest Veggie Breakfast Burrito, and we checked out.

And I was excited.  My laps in the pool couldn’t end soon enough.  And when they did…I changed…I drove home…and I was totally ready to eat.  For real.

Preparing the Udi’s Gluten Free Breakfast Burritos is super easy.  Remove from the freezer, and take out of the wrapper.  Wrap the small (it is small) burrito in a moist paper towel and microwave for 1 minute and 35 seconds on high.  My microwave is old…so I did it for 2 minutes to ensure they were warm all the way through.  Allow the burrito to sit for 1 minute before removing it from the paper towel and devouring.

My roommate had hers done first.  And as I threw mine, wrapped in a paper towel, into the microwave, I asked her what she thought.  She said that the tortilla was nothing special but the filling was phenomenal.  So, that was good.  YAY!  Made me feel good about mine as it cooked through.  When mine finished up, I allowed it to sit, and then, for blogging photo purposes, I cut mine in half.  It was still a little frosty on the inside, so I tossed it, now unwrapped, back into the microwave for an additional 30 seconds.  That worked.  Time to eat.

I sliced into my burrito, having not had a burrito in ages.  Seriously.  Ages.  Years.  Since I have been a Celiac.  So…I was just…dying to try it.  I took my first bite and was…slightly underwhelmed.  It wasn’t bad at all.  It just…didn’t have much flavor to it.  It felt like it was lacking seasoning or something.  A dash of something just to elevate the flavors.  But…it wasn’t bad.  I could taste all of the vegetables that were inside, and loved the various textures that they brought to my palate.  But, I actually think the tortilla was my favorite part of mine.  If I had thought about it while eating, I would have put some hot sauce on the burrito…but it didn’t even occur to me.  Weird, because I always put hot sauce on breakfast things that involve veggies and potatoes and eggs.  I guess I was focusing on eating it…seeing what I liked and what I didn’t.  The tortilla was soft and delicious.  The inside was stuffed, for sure, with all the egg whites, vegetables, potatoes, and even some cheese.  It was a good breakfast, for sure.  Filling and ultimately good…but I just thought a little dash of something…cayenne or salt or something…might just make it great.  And…I found this more mild than spicy for sure.  No spice at all.  Hence…add your own hot sauce.  For real.

So…let’s talk ingredients, shall we?  The Udi’s Gluten Free Spicy Southwest Veggie Breakfast Burrito is best examined in two parts.  The filling of the burrito is made up from cooked egg whites, roasted potatoes, cheese sauce, heavy cream, butter, water, potato flour, onions, rice starch, parmesan cheese, tomatoes in juice, poblanos, corn, cheddar cheese, jalapenos, tomatoes, bell peppers, onions, garlic, corn starch, lime juice, salt and spices.  The tortilla is made from water, tapioca starch, modified food starch, sweet rice flour, powdered cellulose, tapioca syrup, palm oil, egg whites, pea protein, tapioca maltodextrin, cane sugar syrup, glycerine, gum, cellulose gum, cultured corn syrup solids, citric acid, lactic acid, salt, enzymes, fumaric acid.  Whew…it’s a laudnry list of ingredients…and not all of them sound like real food, right?  So…yeah…there are some chemical-ish sounding things in there…but a majority of the ingredients are real food.

As for the nutritional information, a serving is 1 burrito.  This burrito will provide you with 200 calories and 5 grams of fat.  Not bad for a breakfast burrito, right?  You will also be consuming 5 mg cholesterol, 400 mg sodium, and 4 grams of sugar.  Finally, you will be eating 5 grams of fiber and 8 grams of protein.  Like I said…filling!

So, the filling wasn’t much to scream about, but the tortilla was delicious and cooked up to perfection, without getting dry and hard in the corners or anything.  Love that.  Would I purchase this product again…maybe…if I needed something easy and fast.  But next time, I’ll have my own hot sauce ready.  Don’t believe for a moment that these flavors bring any sort of spicy heat…but that is really my only complaint.  A little more flavor will bring this to breakfast perfection!

Restaurant Review: Izzy’s Ice Cream, St. Paul, Minnesota

There are a few traditions that I keep when I run.  The first thing is…after a big race, I hit up a pub or a Mexican restaurant.  Don’t ask me why or how this became “a thing” as mentioned in the previous review…it just did.  But the other thing I do is treat myself to something creamy, cold, and delicious.  Mainly…ice cream.

Here is the sudden caveat, however.

While I have, in the past, been able to tame the lactose intolerance by taking a lactase supplement…it hasn’t been working out so well for me in the recent weeks.  Frustrating.  Because I am an ice cream nut.  Oh…and this is one tradition I refuse to let up on.

Before leaving for Minneapolis, Cathy was already on the hunt for a place to uphold this long-standing tradition.  And so…she found Izzy’s.  And what made Izzy’s Ice Cream (aside from being a local specialty ice cream shop in the Twin Cities) stand out from the other options was…they had soy ice cream flavors.  YAY!  No dairy to wreak havoc on my tummy.  This…made me happy!  So…so…so very happy!

What made the Izzy’s experience even better was, that day, I was spending the afternoon with my grandpa.  Yes…the very man who got me interested in running.  Cathy and I took him out to lunch at The French Meadow Bakery & Café in Minneapolis.  Then, afterwards, I told him that we were going to get celebratory ice cream at Izzy’s Ice Cream.  If he was interested, I’d love for him to come along.  He was certainly interested!  So, we made the short 10 minute drive from our lunch spot over to St. Paul.  Izzy’s Ice Cream awaited…and we entered and couldn’t wait to get started.

As I was the goofy one, Cathy made me order first.  I asked about the soy ice cream flavors, hoping that there was a chocolate or peanut butter option here.  But, alas…my options today were either Soy Strawberry, Soy Mango, Mango Sorbet, or Strawberry Sorbet.  I was just a little disappointed.  A little.  At least they had other options instead of just sorbets though.  So, without chocolate to fulfill my craving…I opted for the best option available.  Strawberry.  Because I am not a fan of mango.  Not really.

So…order in.  On a gluten-free ice cream cone (because…yeah…they have those and…yeah…I wanted one because I never get ice cream cones!), I ordered a regular scoop of Izzy’s Soy Ice Cream ($3.75) with the Izzy Scoop (a 3/4 ounce scoop) of the Strawberry Sorbet on top.  Because that’s what Izzy’s does.  You get this cute little scoop atop your scoop.  And it’s like…an added bonus of ice cream awesomeness.  And…I GOT AN ICE CREAM CONE!  I might be 34, but sometimes I want to be 5 and eat my ice cream out of an ice cream cone.  Added bonus, because she knew of my gluten-free and lactose intolerance, she wrapped the scoop in paper before she dished up my ice cream.  How fantastic is that?!  Guaranteed not to give me a tummy ache!

Cathy ended up getting a regular scoop on a regular sugar cone of Izzy’s Lemon Custard with the Izzy Scoop of Ricotta Ice Cream ($3.75).  And grandpa…grandpa went classic.  Traditional.  As grandpa’s tend to do!  He was torn between the vanilla and the chocolate, but ended up getting a kiddie scoop of the Chocolate Ice Cream on a cake cone.  Oh…and they topped it off with a little chocolate candy on top.  Nice touch!

The verdict?

Really good.  Really solid (as in it had good taste and texture…not that it was rock hard!) ice cream.  Cathy thought the ricotta flavor was interesting, but, naturally, loved the lemon custard.  Seriously, if you give this girl a choice between ice cream or custard, she’ll choose custard…which is awesome.  And if there is lemon involved…she is all over that.  Grandpa really enjoyed his cone of chocolate ice cream.

And my choice…was good.  I loved the creamy nature of the soy strawberry ice cream.  I loved tasting the real bits of strawberry inside.  And the topper of strawberry sorbet made it a berry-licious treat indeed.  But, even more than the ice cream, I was happy when I got to crunch and munch on the gluten free sugar cone.  I love ice cream cones more than most adults should…but when you really can’t have them, you tend to appreciate them more when you can.  It’s the little pleasures in life…like soy ice cream and…gluten free sugar cones at an ice cream shop.

Life was good that day.  I had a great afternoon with my grandpa.  We had great eats and treats.  And he even loved the ice cream.

A great place to go…with spots in Minneapolis and St. Paul.  You better believe I’ll be back.  And maybe this time they’ll have some Soy Chocolate for me.

Product Review: Udi’s Gluten Free Rich & Creamy Penne & Cheese

You know…there are certain names that I commonly trust in the gluten-free food world.  And, with the exception of a couple of things (holy and small bread loaves and the original cinnamon roll recipe), one name that I have always been able to trust to serve me up something not only delicious but a close equivalent to the “real” and glutinous food is Udi’s.  After all, they were the game changer when it came to bread.  I hate really small bread slices though, so I normally don’t purchase their loaves.  I do, however, always have Udi’s Gluten Free Bagels in my freezer.  Never had a better gluten-free bagel, for sure!

So, imagine my glee when I found out that Udi’s Gluten Free was introducing some frozen meals to the market.  And while these new products usually take forever and a day to reach my area, that wasn’t the case with these.  I can find them in most of my natural food stores.  The one I have, however, I purchased out of town and returned to my freezer in a cooler.  That’s how I roll when I’m a gluten-free girl on the go!

And by on the go…I mean I drive to a lot of places that have items I don’t always see in my area.  The road is my home a lot of the time.

But when I am home…when I have a rough day or am just tired…cooking something from scratch isn’t always an option.  BAH.  That was the case tonight.  I consulted my roommate and she asked if there was anything in our crisper drawer that was in dire need of being used up.  I listed off a couple of things that we had until Thursday to use.  Since there was no real rush…she said to just grab something out of the freezer…either the gluten-free pizza or the mac and cheese.  The pizza is from my local gluten-free bakery…and we almost went that way.  But…when I said it was the pizza or splitting the mac and cheese and having it with the gluten-free and vegan garlic bread still in the freezer…she immediately wanted the mac and cheese meal because the bread was the tipping point.  HA!  She loves her bread.  And, yes, she only eats gluten-free bread.  She’s awesome like that.

So, after getting home, I tossed the gluten free and vegan garlic bread into the oven to toast.  And as that was about to finish up, I pulled out the mac and cheese meal I knew we had in the freezer.  Actually…what we had one box of the Udi’s Gluten Free Rich & Creamy Penne & Cheese in the freezer.  Close enough to mac and cheese.  I brought it back from The Raisin Rack in Columbus, Ohio, and was keeping it around for an evening such as this.  Lots to do, and not enough time to spend a long time in the kitchen.  This was easy.  This took a total of 7 minutes to cook.  I loved that.

Simple preparation.  Remove tray from box and cut a whole in the plastic that surrounds it.  Place in the microwave for 2 minutes.  After those two minutes are up, remove the plastic and stir.  Place back in the microwave for another 2 minutes and 45 seconds.  Allow to sit for 2 minutes before serving.  I did that…then split the tray between the two of us.

I settled in to an episode of Chopped on Food Network and took my first bite.

And was highly disappointed.  While the actual dish itself is loaded with rich and creamy unnaturally orange cheese…it didn’t actually live up to its looks.  In fact, while it looked like something I could have cooked up, the first bite was just…bland.  BLAND!  Penne & Cheese should not be bland.  Gluten free should most definitely not be bland.  I was just…so let down.  While I could see the black pepper scattered through the cheese sauce, the cheese sauce really lacked flavor.  And, with most cases of microwave pasta…some of the noodles didn’t cook to soft goodness and were left sort of crunchy and crisp.  BOOOOO!!  This just left me feeling deflated because I love mac and cheese…but this was just…no good.  Not one bit.  When I eat something, I want it to taste like something.  I want seasoning.  I don’t care if it’s a frozen dish or something that comes out of a professional kitchen, it has to taste good!  Or…taste like…something.

The Udi’s Gluten Free Rich & Creamy Penne & Cheese is made from gluten free penne pasta (made from corn flour and rice flour), pasteurized milk, water, cheddar cheese, butter, cheese flavor, monterey jack cheese, rice starch, flavor, citrus fiber, kosher salt, black pepper, annatto extract, and mustard flour.

As for nutrition information, the Udi’s Gluten Free Rich & Creamy Penne & Cheese serves 1 person per container.  My roommate and I split it.  I’m sort of glad we did…

Anyway, one serving (about 1 cup) will serve up 430 calories and 13 grams of fat.  You will be consuming 90 mg cholesterol, 480 mg sodium, and 4 grams of sugar.  In addition, you will take in 3 grams of fiber and 12 grams of protein.  You’ll feel full…but you won’t feel like you actually tasted anything.

It’s too bad that this dish was so bland.  I was really let down.  Udi’s is usually so spot-on with their products, but this one just left me feeling cheated out of what should have been a delicious meal.  I think I’ll stick to my homemade mac and cheese from here on.

Product Review: Tonya’s Gluten Free Kitchen Original Soft Pretzel Bites

There was a time in my life, when I worked retail at the mall, that at least one of my meals consisted of a soft pretzel from Auntie Anne’s Pretzels.  Because, really, there is nothing quite like feasting on a soft pretzel with that delicious buttery and salty flavor.  Mmmm…

Don’t make me crave…

Or, actually…go ahead.

Because, with a little help from The Raisin Rack in Columbus, Ohio, I was introduced to the most amazing and fantastic convenience gluten-free soft pretzels ever.  Now, they aren’t my local bakery’s soft pretzels (which they offer only in July and September…on Wednesdays only), which are freakin’ fantastic.  But for something that I can dig out of my freezer and feast on whenever I want…well…these are where it is at, my friends!  Just…trust me!

On one of my many trips to Columbus, Ohio, and one of my many stops at The Raisin Rack, I have snatched up some items that I can’t find anywhere else around where I live (and I shop at 5-6 different stores each week).  I often crave soft pretzels (especially when Annie May’s Sweet Café in Louisville, KY, isn’t doing Soft Pretzel Wednesday), as is bound to happen each time I go to a shopping mall and have to walk by Auntie Anne’s Pretzels.  Because…they flood the mall with their delicious smelling pretzels…and I can’t have them.  Not one.  Not even a sample.  It’s sheer torture.  TORTURE!

But…now I know…there can be pretzels whenever I want.  When those weird cravings hit.

Because of Tonya’s Gluten Free Kitchen!

Tonya’s Gluten Free Kitchen was created when Tonya and her daughter were diagnosed with celiac disease.  Tonya began searching for gluten-free bakery foods that tasted up to par with their gluten equivalents.  After many disappointments and a lot of frustration, she set out to create her own recipes.  She started simply by baking in her home kitchen for friends and family and even fellow Celiacs in Central Pennsylvania.  Soon, they expanded to selling to local grocery and health food stores.  Then they outgrew the home kitchen in 2010 and opened up a gluten-free bakery in Newmanstown, Pennsylvania.  Tonya and her company believe that quality and taste do not need to be sacrificed in order to make something gluten-free.  They take great care, using a dedicated gluten-free facility to make their products, to ensure that everything they churn out is of the highest standards.

I can get on board with that.

So, after a day of grocery shopping and walking around the farmer’s market and shopping malls, I wasn’t really feeling standing around in the kitchen and cooking something for dinner.  So, I opened up the freezer and decided that what this day called for was…soft pretzels.  And, yes, I happened to have a box of Tonya’s Gluten Free Kitchen Original Soft Pretzel Bites in my freezer.  I opened up the package and laid out the bites on a baking sheet to cook up.  I patted each bite down with water and gave them a light sprinkle of the enclosed pretzel salt.  Then, they were placed in a  pre-heated oven to allow to cook.  These can be done in the microwave, but to get crustier pretzels, the oven is the way to go.  And I like that initial crispy outside with the doughy and soft middle.  As my oven never heats right, the normal 5-7 minutes these would cook was actually 9-10 minutes for me.  I left them in for 9 minutes.  And when I removed them from the oven…they looked like pretzel perfection…and smelled like the buttery good aroma that comes from Auntie Anne’s.

My mouth was watering.

I split the entire box with my roommate (this was dinner…not a snack) and served them with some vegan cream cheese for dipping.  Because, seriously, soft pretzels and cream cheese are a match made in heaven.  Delicious heaven.

I served up my roommate’s plate first.  And as I was just getting back to the kitchen, she had already taken a bite and said, “OH MY GOD!”  I wasn’t sure if this was a good thing, so I had to ask.  She told me to take a bite and look at the center.  I did just as she said.

OH MY GOD!

Seriously…OH MY GOD!

The Tonya’s Gluten Free Kitchen Original Soft Pretzel Bites are JUST like the Auntie Anne’s Pretzels I ate almost every day I worked in retail.  Holy goodness.  The pretzels themselves are rich and buttery on the outside and soft and chewy on the inside.  The inner part of the pretzel are a thick white middle…nothing that looks dense or heavy or packed with bubbles of air.  They were perfection.  Soft…gorgeous centers surrounded by the golden crust with the dash of salt on the top.  Yeah…these were fantastic.  These were light and buttery and amazing.  AMAZING!!  These made me happy on so many different levels.

So, let’s talk ingredients.  At Tonya’s Gluten Free Kitchen, they believe in using all-natural ingredients.  And these amazing Original Soft Pretzel Bites are made from rice flour, cornstarch, tapioca flour, milk, sugar, butter, eggs, potato flour, baking soda, xanthan gum, yeast, and salt.  They are all-natural, gluten-free and wheat-free.

As far as nutrition goes…well…they aren’t bad.  Not at all.  A serving of Tonya’s Gluten Free Kitchen Original Soft Pretzel Bites is 5 of the little pretzel nubs.  Now…I ate half the box and I feel no shame.  HA!  A serving contains 220 calories and 8 grams of fat.  One serving would also provide 35 mg cholesterol, 230 mg sodium, and 7 grams of sugar.  Also, you will be consuming 1 gram of fiber and 2 grams of protein.
