I love, love, love, love pancakes and waffles.  No, for real.  I make pancakes sometimes in the morning before work and waffles…well, those tend to be my weekend treat.  So, finding a good mix in order to make these simple, but delicious breakfast treats is sometimes a challenge.  Especially when you have food allergies.

Now, I’m not saying that all gluten-free pancake mixes will fall short of expectations.  In fact, most of the ones I have tried have been decent enough to continue using…and…in some cases, purchase again.

Awhile back, I purchased a box of Gluten Free Pantry Brown Rice Pancake & Waffle Mix.  And, true to form, I used everything else ahead of it while this sat in my pantry…waiting…waiting.  I mean, the box is green and white…screaming at me to grab it and make some breakfast magic with it.  And…still…it sat.

But, that is no longer the case.  You guessed it…the expiration date was drawing close and I needed to use this mix…STAT!  This is a habit that I am truly working myself out of.  No more stocking up for the zombie apocalypse anymore (okay…not really why I have so much gluten-free goodness in my pantry…but it sounds good).  This expiration date, however, was so close that I told my roomie that we’d be having pancakes every day this week for breakfast.  Including gym mornings.  Reheated pancakes are never as good as fresh of the griddle…but you have to make sacrifices.

And then…as luck would have it…I flipped the box over to look at their directions for making pancakes with this mix…and spotted another recipe.  And this one utilized the entire box.

It was for Irish Soda Bread…and I just happened to have every single ingredient for it in my fridge and pantry.  Lucky, lucky me.  My mind was made up.  Irish Soda Bread for breakfast this week.  I’d make 12 slices out of it…and we would literally have one piece of it with some fruit for breakfast every day.  It would mean only one morning of baking…and the rest, as long as the results were delicious, would be ready for a light reheat on regular mornings and those mornings we hit the gym.

This recipe was super easy.  I just used the entire Gluten Free Pantry Brown Rice Pancake & Waffle Mix and to it added eggs, melted butter, unsweetened almond milk, raisins, and orange zest.  Caraway seeds were an optional ingredient and I chose not to add them.  I mixed all the ingredients together and poured the batter into a 8 inch cake pan.  Put it in an oven at 375°F for 35 minutes.  And when I pulled it out of the oven, just as my roommate was getting up on Monday morning for breakfast, it was golden brown.  I brushed the top with some more melted butter, let it cool for only a couple of minutes, and then sliced it up.

My roommate loves her bread with butter, so she gets a schmear of that.  I eat my bread plain most of the time and this was no exception.

I was really, really leery about turning a pancake and waffle mix into a loaf of Irish Soda Bread, but this…WORKED!  For real.  The result was amazing.  The wedges of bread were sturdy and dense, just like real Irish Soda Bread.  The raisins remained plump and juicy.  And the orange zest adds that needed zing to the actual bread itself.  The mix baked up beautifully, not becoming dry or brittle in the slightest.  This bread was so easy to slice through.  And the taste…well, you would never in a million years guess that this bread was gluten-free.  Nor would you know that it came from a pancake and waffle mix.

I am very happy with the way this mix created this delicious Irish Soda Bread.  If you are having some difficulty locating Gluten Free Pantry items…there’s a reason.  It’s Glutino, and they have changed their packaging.  So look for Glutino’s Brown Rice Pancake & Waffle Mix and you’ll be finding the same exact product that I used here.  Now you know how long I’ve had this mix.

KIND-ly enjoying a hit of dark chocolate and peanut butter in an amzing snack bar

Well, yesterday rounded out the sample box of KIND bars that I purchased with the help of a Groupon that came through awhile back.  And the final bar to get it’s chance to shine was none other than KIND Plus Peanut Butter Dark Chocolate + Protein Snack Bar.

Peanut butter and dark chocolate.  This sounded like a match made in heaven to me.  After all…that is exactly two of my most favorite ingredients in life.  Anything with dark chocolate.  Anything with peanut butter.  But put the two of them together…and you have made me one very, very happy girl.

Needless to say, the very thought of sinking my teeth into this bar prior to running on Saturday morning at the park was…mouth watering.  For real.

It was a chilly, foggy Saturday and my roommate and I were up quite early.  The reason being I wanted to hit up Cherokee Park to run some hills before a 5K race was scheduled to kick off at 9 a.m.  This meant we needed to be at the park about the time it was getting light outside.  So, breakfast that morning at home was a serving of our cereals…but for in the car, to provide some fuel for her trail hiking and my running…I packed the final KIND bar in my run bag.

Being that it was a colder morning (come on, Spring…it’s freakin’ the end of March!), this bar was a bit chilled.  So, the ooey-gooey texture I prefer over brittle and hard was not happening.  But, a little warm up in my toasty fingers and everything would be okay.  As we hit the highway, I busted out the KIND bar and split it in half, handing her one half while I kept the other.

Bite one…was, as I said, a bit hard.  Damn cold weather.  Messing with my snacks.  But after that, things started to get interesting…and flavorful.

The KIND Plus Peanut Butter Dark Chocolate + Protein Snack Bar is…just what it sounds like.  Dark chocolate and peanut butter crack.  Every bite bursts with this sweet and salty flavor that I love.  And the dark chocolate adds the right amount of sweetness to counter balance the peanut butter and nuts that are throughout the bar.  I loved it.  It, surprisingly, wasn’t my favorite bar.  That still has to be the Fruit & Nut Bar…but this one…this one comes close.

The KIND Plus Peanut Butter Dark Chocolate + Protein Snack Bar is a healthy and satisfying mix of a variety of nuts.  So, not just peanuts.  Nope.  They go all out and include peanuts, walnuts, almonds, cashews, macadamias, and Brazil nuts.  All of those are blended with peanut butter, honey, and soy crisps.  Then the bar is coated on the bottom with dark chocolate and a dark chocolate drizzle beautifully adorns the top.  This means every bite is guaranteed that sweet/savory taste.

Nutrition-wise, this bar isn’t too far off the mark.  Not for what it contains.  The entire bar will set you back 200 calories and 13 grams of fat.  Keep in mind, however, that the fat is derived from nuts, and therefore is at least the healthy kind of fat.  This bar is very low in sodium, only 50 mg, and relatively low in sugars, topping out at 10 grams.  And with all that peanut butter and nutty goodness, this bar offers up a dose of 7 grams of protein.  NICE!  These snack bars are also gluten-free

KIND offers up a variety of different flavors and nutritional benefits with their KIND Snack Bars.  The KIND Plus Peanut Butter Dark Chocolate + Protein was a nice addition to their satisfying and delicious line up.  I didn’t like every flavor in the box, but none of them were inedible.  And that is a great thing.  I intend to continue to sample flavors that were not offered in my cube of goodness and see what else KIND has to offer.

But so far…highly impressed.

A healthy, light snack from Real Foods Tasty Cheese Flavored Corn Thins

I admit it…I am an oddball.  I actually like rice cakes.  I always have.  I grew up eating them.  My mom kept them in the pantry, and I would eat them plain, or sometimes give the top a light schmear of peanut butter.  Rice cakes were one of my favorite snacks.  Still are.  As long as they don’t taste like cardboard.

My roommate and I have this bad habit.  It is a very, very bad habit.  We see a product labeled gluten-free that we haven’t seen before at any of our stores and we immediately pile it into our shopping basket and take it home…just adding to the stash.  That was what happened when we brought home Real Foods Tasty Cheese Flavored Corn Thins.

We weren’t actually seeking to buy more snack foods while out at Dorothy Lane Market in Dayton, Ohio.  We just ducked inside to see what the grocery store had to offer, as there were a few of them scattered throughout Dayton and we were killing some time.  Lo and behold, they have one of the most amazing gluten-free sections I have seen at a local grocery store.  I was blown away.  Local baked goods.  Products of which I have never seen before.  Awesome.

One of the products we grabbed, for reasons I still don’t know, were the Tasty Cheese Flavored Corn Thins from Real Foods.  I actually forgot about them.  Whoops.  But I was checking the pantry list and noticed them under crackers…and that was why I overlooked them.  Wrong category.  Definitely not crackers.  But since the expiration date was approaching, it was time to use them as my afternoon snack.

Corn Thins are amazingly good for you.  Yes, even the Tasty Cheese Flavored ones.  These little rice-cake like thins (they are about 1/3 the thickness of a rice cake), made from corn and rice that are popped under high pressure, are honestly a guilt-free snack.  I was shocked that I liked these, despite being such a fan of rice cakes.  I don’t know why I was so worried.

Anyway…these little cakes have a rice cake texture, but are sweeter thanks to the addition of the popped corn.  The cheese flavored topping is lightly dusted on top, not overpowering the corn cake itself.  I loved how thin these are cut, because it makes them easy to handle and very light.  They have this gentle crunch when you break into them or bite into them.  I was very impressed with these.

And yes…guilt-free my friends.  Real Foods Tasty Cheese Flavored Corn Thins are 28 calories per cake.  For my snack, I took 3 of them, racking up a total of 84 calories for my snack.  Not bad.  And only 1 gram of fat in that serving.  NICE!  These are very low in sodium, have no preservatives, no artificial or nature identical flavors, made with all natural ingredients, are gluten-free and non-GMO.  My three corn thins gave me 3 grams of protein and 1.5 grams of fiber.

But the true surprise was just how much I enjoyed these.  Texture-wise, they are awesome.  Just the right amount of crunch.  And taste-wise…they are quite tasty.  After all, with a name like Tasty Cheese…you better live up to your name.

I hope I can find more flavors that are offered in stores around here.  I’ll be searching high and low.  And if not…next time I’m in Dayton…you better believe that I’ll be stopping into Dorothy Lane Market.

In the realm of gluten-free cookies…these are by far the most adorable.

And yes…food outside of Japan can be adorable.  Trust me.  When I opened up my package of Ian’s Gluten-Free/Wheat-Free Chocolate Chip Cookie Buttons, I wasn’t expecting little dime-sized cookies.  But…that’s what I got.  Mini-mini-mini chocolate chip crunchy cookies.  No wonder an entire serving was 23 cookies.  Now I understand why.

Well…you know how I am about cookies.  And I spotted these on a shelf at Publix while I was in Birmingham, Alabama for the Making Tracks for Celiacs event.  Yes…I realize how long ago that was…but I’ve had a lot of food to cypher through since then.  Trust me, it was never my intention for these to make a home in my pantry.  And that’s why tonight…they became dessert.

A little bit about Ian’s, first and foremost.  Ian’s, as a company, set out with a mission to provide high quality, all-natural and allergy-friendly foods to the market that consumers can trust.  The company takes great pride in providing quality foods they feel customers will enjoy.  And they are always experimenting and coming up with fun and delicious allergy-friendly items to bring to the table.

Fun…I think cookie buttons fall under that category.

So, what are cookie buttons?  Well, they are miniature chocolate chip cookies.  Honestly.  That’s all they are.  These crunchy little cookie buttons are the tiniest chocolate chip cookies I have ever seen.  And I’ve seen a lot of chocolate chip cookies.  I’ve eaten a lot of chocolate chip cookies too…but that is beside the point.  These itty-bitty Chocolate Chip Cookie Buttons are one of those snacks that just call out to be fed to children.  I mean, they are bite-size and perfect for snacking.  They are sweet without being overly sweet.  The crunchy texture is perfect, not too hard, not too soft.  And they are just one of those snacks your fingers will find and pop in your mouth.  The chocolate chips give each cookie a nice hint of sweetness, and the cookie part itself is sweetened just enough without it being too much.

A serving of Ian’s Chocolate Chip Cookie Buttons is 23 cookies (or 30 grams).  This serving will set you back only 130 calories and 4.5 grams of fat.  That’s awesome for a cookie treat, yes?  This serving also provides 11 grams of sugar, which isn’t bad considering…these are cookies.  While these cookies do contain soy, egg, and milk, they are completely gluten-free and wheat-free.

I admit…they are nowhere near being the best gluten-free cookies I have ever tasted.  They don’t even slot into my top 10.  But…there is something very…intriguing about these.  Would I buy them again?  Eh…perhaps.  I’ve had one too many amazing gluten-free cookies out there to really just settle on these…but they aren’t bad.  And the size of them makes them fun and easy to travel with.  So, they aren’t fantastic for kids or for a quick snack if you are on the go or just in a hurry.  And…come on…they are mini chocolate chip cookies.

Cuteness counts for something, yes?

Making a snack out of Trader Joe’s Queso Cheese Dip and Organic Corn Chip Dippers

I wish I could write a love letter to Trader Joe’s.  Quite honestly.

So often, the snack foods or vegan/vegetarian foods that most people can eat…I can’t.  Because I can’t have gluten.  And so often, some sort of gluten containing ingredient works its way into said snack foods or food items.

But…Trader Joe’s seems to hold the market…and that’s what keeps me coming back time and time again.  While normally I don’t do queso dip…my roommate spotted this awhile back at Trader Joe’s…and as it was clearly marked gluten-free…she asked if we could go ahead and get it.  For blog purposes, of course.  Which is easy for her to say…because she’s not the one who has to type it.  But…she rarely asks for a product while we are out grocery shopping, so I agreed and promised I would come up with something to use it with.

And then it sat in the pantry.  And sat.  And sat.  And every time I contemplated using it in something, I would find something else to use.  And so…it continued to sit on the pantry shelf.

A couple weeks ago, my roommate spotted yet another item while we ducked into Trader Joe’s.  This time, the Organic Corn Chip Dippers.  Basically, organic Fritos.  They were even labeled gluten-free, so once again, who was I to say no.  I was certain I could find a dish to pair them with.

And then…I didn’t.

Until tonight.

My roommate is now obsessed with sliders.  Why?  Because I made these little mini meatball sub sliders and now…everything she wants this week is in slider form.  It’s a fun way to use some produce and get a bit creative in the kitchen.  Tonight, I was making a gluten-free black bean and soy chorizo (using Trader Joe’s vegan and gluten-free chorizo) sliders, which I placed on toasted Udi’s Seeded Whole Grain Dinner Rolls with some fresh vegetables from my CSA bin.  But, two little sliders, while still a decent dinner…needed something to go with it.

And after some quick thinking and a peek into the pantry…Trader Joe’s took over my dinner plates.

I’ll start with the Organic Corn Chip Dippers.  As I stated before, these are basically a healthier and more natural Frito corn chip.  The difference between these and Fritos is that Trader Joe’s version of these corn chips have no preservatives, no trans fats,  and no chemicals baked into them.  They aren’t greasy like Fritos are, leaving no oily residue behind on my fingers.  And the ingredients list is super short: corn, sunflower oil, salt.  Three ingredients.  That’s all.  So right there, they won me over.  These chips are perfect for dipping, sturdy enough to hold a goopy scoop of queso cheese dip without busting apart or crumbling under the weight.  And they aren’t overly salty either.  Which, I do appreciate, because it lets the crisp, earthy flavor of the corn in these chips really shine.  Perfectly flavored and great tasting.

As for nutritional information on the Trader Joe’s Organic Corn Chip Dippers, a serving is 28 grams (or about 10 chips).  This serving will set you back only 160 calories.  You will be taking in 10 grams of fat in this serving, which is a bit high, but these are chips…so keep that in mind.  And much of that fat is a result of the sunflower oil, so at least it is a healthy fat.  These chips also have only 160 mg of sodium.  Not bad for a chip, right?

So, just because they are organic doesn’t mean they are healthy.  Stick to a serving, and you’ll be enjoying a better-for-you corn chip dipper.  Way better and way more flavorful than Fritos.

And, naturally, I decided to pair these chips with the Trader Joe’s Queso Cheese Dip that had just been begging for me to open it up since I bought it.  And now I wonder why I had waited so long to do so.

Trader Joe’s Queso Cheese Dip is the perfect dip for nachos.  It’s super cheesy flavored with a nice spicy kick that isn’t too much.  Even my roommate, who is a spice wimp, raved about the queso.  I think she liked it better than my black bean and soy chorizo burgers, to be honest.  Bold flavors and a hint of spice make any queso amazing.  But what really makes Trader Joe’s queso stand out is that a serving of 2 tablespoons has…are you ready for this?…only 15 calories.  This is NOT a joke, my friends.  Only 15 calories.  For cheesy queso dip.  I swear to the food gods!  Don’t believe me?  Go to your local Trader Joe’s and find this cheese dip and see for yourself.  You realize, then, that the entire jar only would set you back 165 calories…which is what usually 2 tablespoons of regular queso would set you back.  Um…AWESOME!  That being said, a 2 tablespoon serving will only contains 0.5 grans of fat and 130 mg of sodium.  This is beyond amazing.  If you are tired of salsa and guacomole isn’t what you’re craving, then do pick up a jar of Trader Joe’s Queso Cheese Dip because with these nutritional facts, paired with the amazing flavor…you can’t go wrong.

Addictive.  And a perfect snack or side dish to a meal.  That’s what Trader Joe’s provides with Organic Corn Chip Dippers and Queso Cheese Dip.  I was blown away.  So, if I were to pen a love letter to Trader Joe’s…it would simply say:

I love the food you are able to provide for me when other stores fail to do so.

It’s the truth.  And when the food is beyond my expectations and tastes amazing…even better.

Not just waffles anymore – Van’s Natural Foods dishes up delicious Cinnamon Heaven cereal

When I heard the brand name, Van’s Natural Foods, or just Van’s…I’ve always thought of one thing.  Breakfast.  Van’s actually delivered the first stunning gluten-free waffle to my breakfast plate back when I just went gluten-free.  I had tried another brand prior…and it was mushy and just…not what I was looking for in a waffle.  The moment I had one of Van’s gluten-free waffles…I was hooked.

Even my friend, Jenn, who doesn’t have to eat gluten-free, prefers Van’s gluten-free waffles to other brands such as Eggo.  That speaks very highly of quality, don’t you think?

Recently, however, it seems Van’s is delving into a little more of the breakfast food market.  While at my favorite grocery store, searching for a gluten-free cereal to have for breakfast, the top shelf boasted boxes of Van’s gluten-free cereals.

HELLO!  What is this?

There were two different varieties: Cinnamon Heaven and Honey Nut Crunch.

I currently was working on a cereal that had a strong honey flavor in it, so I opted for the Cinnamon Heaven cereal.

I think secretly I was longing for it to be reminiscent of the Cinnamon Toast Crunch cereal my sister claimed as one of her favorite cereals growing up.  We had it often.  And yeah…nothing quite beats a dose of cinnamon and sugar over little cereal puffs in the morning.  It’s true.  My sister was really onto something there.

Well, this morning marked the big occasion.  I had just used up my last gluten-free cereal (which was…just meh…so, it won’t make it into my pantry again), so the Van’s Natural Foods Gluten-Free Cinnamon Heaven was up.  Spotlight on.  Moment of truth.

I dished up a serving (yes…I actually do measure out serving sizes!) and grabbed a couple extra…just to taste on their own…before I poured any of my unsweetened almond milk over it.  Oh.  My.  Cinnagoodness.

So, the fact is…they taste nothing like Cinnamon Toast Crunch.  So those childhood fantasies were immediately quashed.  HOWEVER…let me finish…this is not to say that I was in the least disappointed by the cereal I had just eaten.  The opposite is actually true.  I was impressed.

First of all, this cereal is very light.  It’s not heavy like I remember the little toasties in Cinnamon Toast Crunch being.  These are little puffs of whole grain cereal.  In fact, this cereal boasts five whole grains.  Each one is lightly, very lighty, dusted and sweetened with real cinnamon.  Did you see that key word there?  REAL cinnamon.  And what results is a light, sweet, fantastic tasting cereal that makes you feel like a kid again, but has you eating like a responsible adult.  But this isn’t to say your little kiddliewinks wouldn’t love it as well.  The hint of cinnamon is what makes it.  You aren’t overwhelmed by it.  So, you still get to taste the cereal, without it being masked behind a lot of sugar or additives.

With that mention, let me also say this about Van’s Cinnamon Heaven cereal.  Not only is this product gluten-free, but it is certfied kosher, completely dairy-free, corn-free, all natural, low in sodium, high in fiber, contains no artificial colors of flavors, contains NO high fructose corn syrup, and contains a full serving of whole grains.  So, you’re eating well without pumping a lot of unknowns or chemicals into your body.

One of my favorite little things on this box was right on the ingredient panel.  Right after the bold word, INGREDIENTS, there is this addendum typed in parentheses that mad me smile and believe more in this company.  It simply reads: (That We Are Proud Of!).  Only ingredients that this company is proud of and backs goes into this cereal.  That being said, you will recognize everything on that panel.  And the list is short.  It includes Van’s gluten-free whole grain blend (which is oats, brown rice, millet, quinoa, and amaranth flours), cane sugar, oat fiber, inulin, invert cane sugar, non-GMO canola oil, cinnamon, and salt.  Simple.  Recognizable.  Trustworthy.

The fact of the matter is, this cereal is delicious.  It was love at first bite for me.  Light, yet filling.  And with 17 grams of whole grains and 5 grams of protein, it’s no wonder you’ll feel full after eating this cereal.  A serving size of 3/4 cup will only feed you 120 calories of your daily intake and 1 gram of fat.  How about that for starting your morning right?  With only 8 grams of sugar, you won’t feel bad about eating this cereal either.  It is more like breakfast than dessert.  I like that.  A serving will also dish up 2 grams of protein as well.  You can’t argue with this being a nutritious way to start your day.  But keep in mind, cereals like this are so versatile.  Throw it into your morning parfait, take it as a snack on-the-go, or eat it at midnight after a concert (cereal always tastes better at midnight!).

I really want to congratulate Van’s Natural Foods for this important, delicious, and healthy breakfast cereal.  I’m hooked.  I was hoping that I’d love it…but I ended up falling in love with it…at first taste.  And that, my dear friends, is how you can not only see and taste the quality of the product, but appreciate the quality of the company too.  I trust Van’s.  They brought me amazing gluten-free waffles.  Now, they not only fill my freezer, but my pantry too.

Recipe: Baked Potatoes with Balsamic Caramelized Onion and Mushrooms

Oh, my dear time-suck that is Pinterest.  Sometimes…just sometimes…I stumble across some of the best recipes that have ever happened to me.  Sometimes…they are elaborate and something I could never, reasonably, undertake.  Especially in my kitchen…with my limited space and limited cooking appliances.  However, there are times that I find something so incredible…that I know I have to make it that very week.  Even better when I just happen to have all the ingredients on hand.

That is what happened when I stumbled across a very broad recipe pin for 23 Amazing Ways to Eat a Baked Potato for Dinner.  I scoured the list.  And this one…this very recipe was the one that stood out to me the most.  It sounded…awesome.  Mouthwatering.  Amazing.  So, yesterday…after a a 10K race, some grocery shopping, and an ongoing battle with bronchitis…I decided this was going to be dinner.

It was super easy to make…and super delicious.  I am going to make this again and again and again.  Because I’m always looking for new ways to enjoy a baked potato.

The original recipe comes from Katie Goodman on Makezine.  I changed out her choice of Gorgonzola cheese for Daiya vegan mozzarella shreds.  But, I bow down to her palate…because this was fantastic.

Recipe: Baked Potatoes with Balsamic Caramelized Onion and Mushrooms

Servings: 4
Time: Prep 20 minutes; Cook 1 hour

Ingredients:

  • 4 large baking potatoes, baked according to your preference (I coated with olive oil and sea salt and baked for an hour)
  • 2 tbsp olive oil
  • 1 medium onion, yellow or red
  • 1 clove garlic
  • 16 oz crimini mushrooms
  • 8 oz red wine
  • 3 oz balsamic vinegar
  • 1/8 tsp sugar
  • 3/4 tsp cornstarch
  • 2 tsp fresh parsley, minced
  • Salt and pepper, to taste
  • Daiya mozzarella shreds
  • Chives, sliced for garnish

Directions:

Wash and pat dry the baked potatoes.  Lightly coat with olive oil and sprinkle with coarse sea salt.  Place in an oven at 425°F for about an hour.

While the potatoes are baking, clean the mushrooms and remove the stems.  Slice the mushrooms thinly, about 1/4 of an inch thick.

Cut the onion in half from end to end. Remove the skin and discard.  Cut the onion into slices.

Combine the red wine, balsamic vinegar, sugar, and cornstarch.  Whisk to mix well and set aside.

Heat olive oil in a large cast iron skillet or sauté pan over medium-high heat until the oil is shimmering.  Add the onion slices to the pan, tossing to coat with oil on all sides.

Evenly spread the onions out in the pan and continue to cook, stirring just occasionally for about 15 to 20 minutes.

Grate one clove of garlic over a microplane grater and add to the pan. Stir in the mushrooms and sauté until tender and golden.

Add the red wine and vinegar mixture to the pan.  Bring to a boil over high heat, then reduce to medium and cook until thick and syrupy.  Stir in the parsley and season to taste with salt and pepper.

Remove potatoes from the oven.  Turn on the broiler.

Slice each potato open and fill with the mushroom mixture.  Top with sliced chives and mozzarella cheese crumbles.

Place potatoes under the broiler for about a minute, just enough to let the cheese melt.

Serve and enjoy!

I loved how full of flavor these were.  The potatoes were a nice starchy base for this sweet and savory mushrooms and onions, and the syrup that they cooked in.  The cheese gives it a nice additional flavor which all rounds out to form the most epic baked potato ever.

Seriously.  If you love caramelized onions, mushrooms, and potatoes…then this recipe is definitely for you.

San-J finds balance between sweet and spicy with gluten-free Sweet & Tangy Sauce

When it comes to sauces that I can trust, I often turn to San-J.  San-J has an entire line of gluten-free sauces with an Asian flair.  And, since it is nearly impossible for me to eat any sort of Asian food outside of the stuff I prepare…it’s nice to know there is a variety of sauces and marinades out there than can help enhance my own homemade dishes.

Well, awhile back I picked up the San-J Gluten-Free Sweet & Tangy Sauce at the grocery store.  I think I had some gluten-free and vegan nuggets in my freezer that I had hoped to use it with.  And then…as it sat in my pantry, I ate the nuggets with bar-b-que sauce instead.  D’oh!  And then…as the expiration date grew closer and closer, my gluten-free and vegan chickenless nuggets were no longer being carried by my grocery store.  So, I was out of luck.  And now…I needed a new plan.  I needed to come up with something to use this sauce with.

And I was drawing a blank.

Until…it occurred to me.

TOFU.

HA HA!  Yes.  I’ve become well versed in the various ways of properly making tofu.  Whether it’s marinading it to grill it, stir-fry it, or just playing around with it…I have been quite successful in incorporating tofu into various dishes.  So…tonight…I was determined to use this sauce.  I don’t like things to expire without at least having been tried.

That being said, this past weekend I made sure we stopped in at Whole Foods for some Twin Oaks Tofu…because it’s the best…so that I could make something with this sauce.  I decided that it would be best to go ahead and do it up tonight.  It’s a Sunday night, which means I had time to mess around with dinner and not feel so rushed, as I often do on weeknights.  So…I decided to make Crispy Tofu Nuggets and serve it with the San-J Sweet & Tangy Sauce as a dipping sauce.

Perfect.

San-J’s Gluten-Free Sweet & Tangy Sauce is a throwback to a Polynesian sauce.  It is a blend of honey, fruit juice, gluten-free Tamari, and some spices, which give it that sweet yet spicy flavor that is just awesome.  It looks like a thin bar-b-que sauce.  And…back when I used to eat meat, the Polynesian sauce was my sauce of choice at Chick-Fil-A when it came to a dipping sauce.  So, it only makes sense that this would be a good pairing for crispy tofu nuggets.  It even tastes like a sweeter bar-b-que sauce.  It was really tasty.  Now I’m trying to come up with other dishes to use it on.  Perhaps I will have some ideas come to me this week as I play around with some homemade veggie burger varieties.

What I loved about this sauce was that it wasn’t too much spice or too much sweet.  It’s the right level of both.  So that it doesn’t detract from whatever you use to dip into it.  San-J is so good about this when it comes to their sauces.  They make the sauce work for the ingredient.  The ingredient still gets to shine and is not outdone by the sauce.  It’s a nice quality of their sauces.  This one, in particular, really stands out.

San-J’s Gluten-Free Sweet & Tangy Sauce serves up 50 calories per 2 tablespoon serving.  This sauce is fat free!  In addition, the Sweet & Tangy Sauce has only 320 mg sodium and 11 grams of sugar.  Given that much of this comes from the ingredients itself…and is not added in…I’m impressed.  Not a bad showing for a sauce.  Especially a sauce of this nature.

So, if regular bar-b-que sauce has you longing for something more, or perhaps you have a dish that needs a great marinade or dipping sauce…I highly recommend the San-J Gluten-Free Sweet & Tangy Sauce.  It is full of flavor and really tastes amazing.  I can’t wait to pair it with something else and use it all over again.  Perhaps some spring rolls should be next on the menu…

Liz Lovely perfects gluten-free peanut butter cookies…and coats it with dark chocolate love

Just when I thought I had tried every gluten-free, vegan Liz Lovely cookie out there, I find one that I missed.  Or that is new.  But whichever is the case, this cookie monster somehow needed to have this new variety in my life…and my belly.

I was out at our local natural food store.  It’s the only place in the area where I have found Liz Lovely cookies.  Which, is too bad, really, because these cookies are beyond awesome.  I’ve tried every variety that I could find…and according to the Web site…I had tried them all.

That is up until a couple weeks ago, when I stopped in to see if they had an item I’ve been searching for…and lo and behold…this little cookie was staring up at me from its little basket.  I wanted to buy it then and there, but I was on a budget.  I had a Groupon for this food store and vowed to return the following week to shop there.  And, naturally, that flavor cookie was gone.

But on Saturday afternoon, when my roommate and I stopped in for some gluten-free dinner rolls…it was back.  And I grabbed it and made sure this time I didn’t leave without it.

What made this cookie so…intriguing to me?  Well, it was the simple combination of two of my favorite things in life: peanut butter and dark chocolate.

Oh yeah…you read that right.

Liz Lovely’s Gluten-Free and Vegan Peanut Butter and Dark Chocolate Cookies turned out to be dessert that very night.  I mean…come on…you know that wasn’t just going to sit around the apartment.  Heck no.  Peanut butter and chocolate never lasts long in this place anyway…put them together…and…yeah…gone in a blink of an eye.

First…the basics of these cookies.  A serving size is…half of a cookie.  Yes…you only get half.  This works out great for my roommate and I because we just split one cookie in half and then eat the other one for dessert the following day.  That half of a cookie will set you back 170 calories and 8 grams of fat.  Yes…for a half of a cookie that seems a bit steep, but these cookies are rather large anyway in the grand scheme of things.  So…just remember that this is a treat.  And, like most desserts, you only need a taste.  You might be tempted to eat the entire cookie…and I wouldn’t blame you or judge you.  They are awesome.

Here’s why…

Liz Lovely cookies are soft, chewy, and taste like they are fresh from the oven.  No joke.  I mean, minus the whole piping hot part.  But…they still have that doughy taste and feel to them, which I absolutely LOVE in a cookie.  The base of this cookie is a soft, gooey peanut butter cookie.  The bottom of the cookie is coated in a nice layer of dark chocolate.  And then the top of the cookie is drizzled with more dark chocolate.  It’s captivating to the eye.  It makes your mouth water.  You eagerly take that first bite…and chewy heaven.  The chocolate on the bottom of the cookie is adding not just sweetness…but texture.  And the salty-sweet combination of the dark chocolate and the peanut butter is God’s gift to gluten-free cookies.  For real.  This cookie is, by far, one of the best gluten-free and vegan cookies I have ever eaten in my life.  Perfectly balanced, perfectly made, and perfectly delicious.

According to the Web site, the peanut butter cookies were discontinued prior to the release of this cookie because the peanut butter and the gluten-free ingredients were not playing nicely together.  With some recipe tweaking, and a little luck…this cookie is what emerged.  And the gluten-free cookie world celebrates this creation.  I know I’m not the only cookie monster out there applauding this.  Or devouring it.

I’m kind of sad that they’re gone.

Udi’s creates lightest, softest whole grain dinner rolls…from freezer to oven to table

It’s amazing how you never realize how much you miss something until you no longer have the option of having it.  Like…a dinner roll.  Something that simple.  And at first, maybe you just say…”I don’t need that anyway.  I don’t need those calories…”  But after awhile…when everyone else at the table has something to scoop up their sauces with…you sort of miss having the option.

Maybe not to the extent of being jealous.  But sometimes…the social binder that is the bread basket at dinner on the holidays or at gatherings does leave a void…when you are a Celiac or gluten intolerant.

But…that’s all about to change.

Awhile back, Udi’s introduced a couple of new bread products to their line-up.  Among them were a gluten-free French baguette, classic French dinner rolls and seeded whole grain dinner rolls.  All of which I had been dying to try…but never quite allowed myself to purchase when on my strict grocery budget.  But…a Groupon happened to come around for a local natural foods store…and I purchased it.  As the expiration date was swiftly approaching, my roommate and I ducked in there this past weekend (during the chaos of a Vegetarian Tasting Fair) to get some products we really wanted to try.

One of the first products that was overwhelmingly decided on were…Udi’s Gluten-Free Seeded Whole Grain Dinner Rolls.

My usual mojo is that items end up sitting in my freezer or pantry for awhile as I use up other items that came before it.  But I had nothing quite like these…and I really, really, really wanted to test them out.  As I was making a pasta dish for dinner the other night, it would be the perfect side dish to accompany the meal.

Nothing could be simpler.  Open bag of frozen dinner rolls, remove, place on a baking sheet, and warm in an oven at for about 10-15 minutes…and they are ready to serve.  Yes…really that easy.

Before I get into the taste, let’s start with the basics.  The serving size is one roll.  Yep. One roll.  These rolls are about 2.5 inches in length and about 2 inches in circumferance, so they are a very good size.  You only really need one.  Each roll is 100 calories (not bad for bread!), 4 grams of fat, 3 grams of fiber, and 4 grams of protein.  It’s pretty much a powerhouse.  Where does all that protein come from?  Simple.  Udi’s makes their Seeded Whole Grain Dinner Rolls with healthy chia, sunflower, and flax seeds.  Right there is a healthy combination that you wouldn’t get with regular bread.  They are even healthier than Udi’s own Gluten-Free Classic French Dinner Rolls.  How about that?!

Now…I’ve utilized these in two ways…

The first two times I ate them, I ate them just as a side dish.  This was the perfect side for my pasta dish.  And then, last night, my roomie and I each had a roll with my Chickpea Teriyaki over Steamed Spinach.  I simply toasted these in the oven, sliced each roll in half, and gave them a light schmear of vegan butter.  It was perfect like that for each dish.  What was the best part of eating the rolls like that was that I truly got to taste the bread.  My pasta didn’t have a sauce with it (I coated it with vegan butter and Parmesan), so again…I could taste the bread.

My roommate found that it tasted a lot like a honey wheat bread.  She loved it…and she can have regular rolls!!  She isn’t the one that has to eat gluten-free.  She does…because I have to.  We both agreed…these got a nice crispy crust on the outside in the oven…but were so soft and fluffy on the inside.  They aren’t heavy or dense at all.  Amazing.  I probably could have eaten another one each time…but resistance was futile.

And the reason for that being…tonight I took the last four rolls and made each of us gluten-free and vegetarian “meatball” mini-subs.  OH. MY. GLUTEN. FREE. GOODNESS.  No…for real.  This was probably one of the best ideas I came up with.  I simply threw some marinara sauce into a pan on the stove while my oven warmed up.  In went the vegetarian meatballs (I used Franklin Farms Veggieballs) to heat through while the sauce simmered.  Then, I placed the rolls on the baking sheet and put them in the oven for 5 minutes at 400°F.  When 5 minutes were up, my sauce was simmering and the veggieballs were heated through.  Perfect timing.  I pulled the pan from the oven and turned on the broiler.  Then, I sliced each roll down the center, making sure I kept the bottom in tact.  I opened it up (sort of like a baked potato) and spooned two veggieballs inside, coating them with some of the remaining sauce.  I threw some Daiya vegan mozzarella shreds on top, tossed the mini sub rolls under the broiler for about a minute…just long enough for the cheese to get a good melt on it, and BAM.  Dinner was served.  And these rolls made the best mini sub rolls I could have asked for.  Honestly.  Still light with the crusty outside, it made holding them and eating the sandwich easy and less messy.  Texture is important and these were spot-on.  For real.

I’m already putting these on my grocery list this week because now I can’t imagine not having a bag in my freezer.  They are super delicious.  Super easy to prepare.  And best of all…good for you.  Especially where gluten-free breads are concerned.

Hunt these down in your local grocery stores.  Find them.  And try them.  I guarantee you…you’ll fall in love with them too.
