I think it has been well established that as a former New Yorker, I am a bagel lover.  When I got my Celiac diagnosis, I became a one-time lover of bagels.  Sure, there were a few different gluten free bagels out on the market…and I tried them all.  Most of them were all wrong.  I was enticed, because they had different flavors than the others…but in the end…just wrong.  The closest I could get to a true bagel in my gluten-free world were the offerings by Udi’s and, more recently, Canyon Bakehouse.

But here is where the power of social media plays an important roll.  I had recently reviewed the Canyon Bakehouse Plain and Everything Bagels that I ordered off their Web site, since they weren’t in stores yet (and still might be working their way there).  After posting the review, I was pinged on Twitter by a company that literally does only gluten free bagels.  Not just gluten-free, but also vegan, soy-free, dairy-free, egg-free, and non-GMO.  I was intrigued enough to Google search them and take a look at their Web site.  Their name: Sweet Note Bagels.

New York style bagels…gluten-free?  It sounded too good to be true.  Usually very hesitant and cautious about ordering from a company I know little about or have heard little about, I decided to take a risk and a chance.  And I went all-in, ordering half of their New York style gluten-free bagel flavors.  Yep.  They have eight (8) different flavors…I started with four of them – opting for the Plain (previously blogged), Everything, Cinnamon Raisin, and Chocolate Swirl.  In addition to these four, Sweet Note Bagels offers Poppy, Sesame, Snickerdoodle and Pumpkin.  And,according to their Web site, they are working on a Spinach Garlic offering as well (which sounds SO delicious).

Sweet Note began in 2012, when founder and president, Michelle MacDonald, stepped up to a challenge.  She had been baking ever since she was a child and was very passionate about it.  When her grandfather and sister were diagnosed with Celiac Disease, she took the first steps on her entrepreneurial journey.  Her family really missed a good New York Style bagel.  (Hey…I can’t blame them…I know this feeling all too well). So with a lot of experimentation and trial and error, MacDonald perfected the recipe, getting huge approval from her family (also bagel lovers).  Gluten-free bagels that taste good?!  It was a reality.  Sweet Note Bakery’s vision is to make gluten-free options more readily accessible.  Those of us who live with Celiac understand how isolating this disease can be, when you can’t have a meal while out with friends and family, be it at a restaurant or a ballpark, or wherever your adventures take you.  MacDonald wanted to change that…one gluten-free bagel at a time.

She and her team are doing a fantastic job.  And I hope it continues and more and more people try and discover these amazing bagels.  Sweet Note Bagels are top-of-the-line.  And I can now attest to that given that I have tried my second flavor that I purchased off their Web site…

EVERYTHING!

Yes, the Everything Bagel.  Nothing gets as New York as this flavor of bagel.  Unfamiliar with the Everything Bagel?  Well, the basic information is these bagels appeared in New York back in the 1970s-1980s.  They are basically a bagel that is topped with all the different topping varieties that are normally found on bagels.  It is basically traditional to see a combination of seeds and dried herbs, with the most commonly used being poppy seeds, sesame seeds, onion, garlic, salt, and even caraway seeds.  Everything but the kitchen sink.  They are incredible.

As the Everything Bagel is a New York tradition, and one that I am most fond of, I had high hopes when I pulled these out of the freezer to thaw them in the microwave for a minute, slice them, and toast them in my oven (you can toast them in a toaster, I just don’t own a toaster).  They smelled amazing.  Like…garlic and onion and awesomesauce.  I don’t know what awesomesauce smells like, but I have a feeling it would be these bagels.  And my mouth began to water more in anticipation as they toasted and the aroma filled my kitchen.  Oh yeah…New York heaven.

The best part is…Sweet Note Bagels gets EVERYTHING right with their Gluten Free Everything Bagel.  Trust this New Yorker.  This bagel is a perfect 3-inch diameter…just like bagels used to be made, not the monstrosities that exist on the market and in bakeries today.  Old school, traditional bagels…minus the gluten.  LOVE.  What this also means is that the outside of the bagel gets this great golden crust that is crisp when you bite into it after toasting it.  The center…soft, chewy, and perfection.  With the Sweet Note Bagels Gluten Free Everything Bagel, I topped it with a schmear of Kite Hill Plain Cream Cheese Style Spread and went to town.  I couldn’t help it.  If anything brought back my memories of New York…it was this bagel…in perfect technicolor!  The flavors were amazing.  Nothing was overpowering, not even the garlic!  Seriously.  The outside was this perfect crisp, which gave the bagel texture.  The top half was topped off with a healthy spread of salt, sesame seeds, poppy seeds, dried onion, and dried garlic.  Yes…these are messy bagels.  But messy bagels when you’re talking about an Everything Bagel…is just what you’re supposed to get.  I thought there was the perfect amount of toppings on each bagel (4 come in each package).  And they cooked up to perfection.  I ate them faster than I intended…and I wanted another one!  I mean, I literally wanted to go and prepare another one right then and there.  I resisted…somehow.  Even my roommate, who had a regular Everything Bagel back in New York City in November when I was running the marathon fell in love with this version.  She doesn’t have to eat gluten-free…but she does about 90% at home…because of me, and these bagels have really, really impressed her.  She didn’t grow up a bagel lover…so these have won her heart.  They have won me over too.  If I were asked to choose my final meal, I think a Sweet Note Gluten Free Everything Bagel would be on the menu.  Yes…they are that exceptional!

So…let’s talk about what goes into Sweet Note Gluten Free Everything Bagels, shall we?  I can tell you this…these won’t leave you feeling hungry an hour after you eat them.  These bagels are made with REAL ingredients,  not just fillers and rubish.  That’s  another great thing about Sweet Note Bagels…they make real food made with real ingredients.  The Gluten Free Everything Bagels from Sweet Note are made with LOVE (Yes…really on the ingredient list!), water, white rice flour, tapioca flour, sweet white rice flour, sorghum flour, sugar, cane syrup, olive oil, molasses, yeast, xanthan gum, psyllium husk, salt, sesame seeds, poppy seeds, dried onion, and dried garlic.  These bagels, as mentioned above, are gluten-free, soy-free, egg-free, dairy-free, vegan, and non-GMO.

How about taking a look at the nutritional facts of the Sweet Note Gluten Free Everything Bagels?  A serving size is one (1) bagel (135 grams).  This serving will provide you with yumminess.  Aside from that, you will be taking in 300 calories, 5 grams of fat, 0.5 grams saturated fat, 0 grams trans-fat, 0 grams cholesterol, 540 mg sodium, 63 grams carbohydrates, 3 grams fiber, 7 grams sugars, and 4 grams of protein.  See why you’ll feel so full and stay full?  LOVE IT!

Let me tell you, there are few things that win me over as quickly as these bagels did.  I am so grateful that Twitter drew Sweet Note Bagels to my blog on Canyon Bakehouse, and had them reach out to me about their product.  Never before have I been so blown away by a product.  Bagels…they are simple pleasures, but the bagels that Sweet Note Bagels makes are a gluten free treasure.  Nothing else will stack up to these.  I’m sure of it.

Yep.  This New Yorker has been introduced to a new gluten-free bagel.  I had never, ever heard of Sweet Note Bagels before, until I got a response to a tweet on my blog on Canyon Bakehouse’s new bagels.  It came from Sweet Note itself, telling me that if I liked Canyon Bakehouse, then I would love their bagels.

So…here I was…sitting at my desk, looking at these amazing photos online of these gluten-free bagels.  I decided to throw caution (and my budget) to the wind and place an order, choosing four of the eight gluten-free bagel varieties that Sweet Note Bakery currently offers.  I didn’t even hesitate to order, which is very unlike me, as I’ve been burned by gluten-free products before.  But…this involved bagels…

It was important.

The bagels arrived two days later, and via the instructions in and on the box, I immediately froze them.  I had some homemade bagels to use up before diving into these, but that occurred over the weekend.  So, on Tuesday morning, after a morning at the gym, I returned home and pulled the Sweet Note Bakery Gluten Free Plain Bagels out (because you always start with the plain/original).  The instructions that come in the box and on the packaging says not to thaw these to room temperature.  This was certainly a different approach than how I normally do gluten-free bagels…but I obeyed.  I plucked two bagels out of the package and tucked the remaining two back into the freezer.  Then, each bagel got a 60 second meet-and-greet with the microwave.  When they were removed, I did my best to slice them in half evenly.  I admit, my bagel slicing skills will definitely need some work.  I tossed these onto a baking sheet and into the oven to toast (I don’t own a toaster…that went away with my initial diagnosis, as my roommate was still eating regular bread and cross contamination was an issue…but since then, my kitchen went completely gluten-free) and went to get cleaned up for work.  I returned and pulled these out of the oven, seeing the beautiful gold middles from the oven.  I got the vegan cream cheese out of the refrigerator and applied a liberal schmear to each half.  I served one bagel to my roommate and prepped my own, pouring a nice cup of coffee to enjoy with it.

Moment of truth.

For the first time…ever…someone finally got it right.  Inside of each Sweet Note Bagel is the taste of a true New York Style bagel.  From the size to the way it eats, you would be hard pressed to find someone who could immediately identify these bagels as gluten-free.  First of all, forget the gigantor, plus-sized bagels on the market today.  Sweet Note makes bagels the size they were intended to be, smaller, and more dense.  That’s a true New York bagel.  The average bagel 20 years ago was only 3 inches wide.  Today, you’re looking at a 6 inch circumference.  Is it any wonder we deal with an obesity epidemic in this country?  So, returning to the authenticity of the true New York bagel, Sweet Note Bagels also achieve a perfectly crunchy crust and a chewy center.

My first bite brought back a wash of memories.  These bagels are dense, chewy, crunchy and perfection.  I loved sinking my teeth into each half, savoring the flavor, the way the crust would crumble and the middle would be soft, with a bit of melty vegan cream cheese.  Heaven.  Bagel heaven.  I didn’t want breakfast to end.  They say that it’s okay to have two…but I reigned myself in.  There is nothing plain and simple about the Sweet Note Bakery Gluten Free Plain Bagels.  They have extraordinary flavor for being the most basic bagel available.  This leaves me looking forward to the other three flavors that are residing in my freezer.

For the record, my roommate has never really experienced the joy of a true New York Style bagel.  She said she wasn’t used to the chewiness.  Not a slam at all, because she devoured her bagel just as quickly as I did mine.  She did get a bagel in New York City back in November, but she can’t remember much about it apparently.  HA!

So…let’s talk about what goes into the Sweet Note Gluten Free Plain Bagels, shall we?  These bagels are made from LOVE (yes…that is in the ingredient list!), water, white rice flour, tapioca flour, sweet white rice flour, sorghum flour, sugar, cane syrup, olive oil, molasses, yeast, xanthan gum, psyllium husk, and salt.  These bagels are gluten-free, soy-free, dairy-free, non-GMO, egg-free, peanut & tree nut-free, and cholesterol free.  LOVE IT!!  Vegan and gluten-free…yes, please.  More of these!

Now, let’s look at the nutritional information.  A serving size is one (1) of the Sweet Note Gluten Free Plain Bagels.  This bagel will provide you with 300 calories, 3.5 grams of fat, 340 mg sodium, 64 grams carbohydrates, 3 grams of fiber, 7 grams of sugars, and 4 grams of protein.  Yes…these bagels are filling, and that’s what I love about them.  With other gluten-free bagels on the market, I am full for an hour, then hungry again.  And I ate a six inch gluten-free bagel.  It was made with filler more than real ingredients.  And that makes a huge difference.

I will shout this from the highest mountain top, and throughout the realms of cyberspace.  If you are like me, looking for an amazing bagel, but are confined to the gluten-free lifestyle…go over to Sweet Note Bakery‘s Web site and place an order for any (or all) of their eight varieties of bagels (Plain, Everything, Cinnamon Raisin, Poppy, Sesame, Snickerdoodle, Pumpkin Spice, and Chocolate Swirl).  For the record, I went with plain, everything, cinnamon raisin, and chocolate swirl to start…and that was without ever trying them before ordering).  Trust me, there is only sheer awesomeness in each bite of these bagels.  You will not be disappointed at all.

It’s been awhile since I’ve reviewed a product from Cuisine Cube.  Farmer’s Market season is in full swing and I, sadly, had to drop the subscription for the time being.  With my hip injury, my medical bills have to take precedence.  So, the last Cuisine Cube box that I received was the May 2015 (For Mom) box.

Cuisine Cube has gone through some changes as of May as well.  No longer do they strictly only offer gluten-free cubes.  In addition to their gluten-free option, they now also offer Artisan and Vegan cubes as well.  The Artisan cube means that you have no food allergies and foods that contain common food allergens will be included.  The Vegan cubes contain products that are dairy and animal free.  And, they still have the Gluten Free cubes, which will have products that contain no gluten or wheat.  These box subscriptions start at $34.99/month.  And, part of the charm is that you will receive 5-6 full-size (not sample size) products.  WOOT!  These usually fall into every meal category for the day: breakfast, lunch, dinner, snack and dessert…with an added bonus from time-to-time.  So, if you’re really interested in being introduced to the smaller, lesser-known, artisan companies, give Cuisine Cube a try!  I can’t wait to get back to receiving these in the mail.

For the snack option in the May 2015 Cuisine Cube, I received a 2.3 ounce bag of the Good Boy Organics Organicasaurus Tangy Tomato Baked Organic Corn Snacks.  This, naturally, couldn’t be more timely.  Well, at least my devouring of them couldn’t be.  And here’s why…I ate these, for the first time, on Wednesday night, along side a new recipe I was trying for vegan carrot “hot dogs.”  No joke…I made carrots into hot dogs.  And they were rather fantastic…but I digress…

Good Boy Organics was founded in 2012 and is dedicated to providing delicious, healthy products that are USDA Certified Organic and Verified by the Non-GMO Project.  The company sources ingredients from fair trade certified producers and develop gluten-free products whenever possible.  YAY.    Founded by David and Victoria Byrnes, a husband and wife team, Good Boy Organics was born through their dedication through a decade of success launching progressive and successful organic food brands with the sales and marketing company they founded in 2001 – Integrated Organics Company (IOCO).  In 2009, Integrated Global Organics (IGLO) joined IOCO and from there…Good Boy Organics was born.  The two of them, along with their dedicated team, are working to help families everywhere make better, delicious, nutritious decisions when it comes to foods, encouraging purchasing certified organic foods and helping to make such products readily accessible and affordable.

So…they just seemed like the perfect side, on the cusp of an early screening the following night of Jurassic World, to accompany dinner that evening.  First of all, the vegan carrot hot dogs were fantastic.  But that’s not the point of this blog…

Truly, I was a bit underwhelmed by the Good Boy Organics Organicasuarus Tangy Tomato Puffs.  They were crispy and slightly crunchy, sure.  They made a great snack if you were looking for a little salty, a little sweet, a little tangy, and a little crispy.  But I just felt that they came across more like…stale cheesy puffs.  That being said…the flavor was amazing.  It definitely had a bit of a zip to it.  The tomato flavor was there, but it didn’t overpower the rest of the snack.  The puffed corn made it a healthier choice than, say, potato chips, and the dinosaur shape…ingenious.  I just felt like it was lacking…something.  Maybe I expected a little bit more, but at least they tasted good enough to devour the rest of the bag in the days that followed.  So…good…not great.

Let’s discuss ingredients, shall we?  The Good Boy Organics Organicasaurus Tangy Tomato Puffs are made from organic corn (flour and/or grits), organic sunflower oil, and organic sun dried tomato seasoning (tomato, salt sugar, corn flour, yeast extract, paprika, tomato concentrate, black pepper, sunflower oil, garlic, silicone dioxide, paprika extract).  These snacks are baked, not fried, contain 40% less fat than their fried counterparts, are non-GMO verified, certified organic, and certified gluten-free.

As for nutrition, the facts for Good Boy Organics Organicasaurus Tangy Tomato Puffs will astound you!  A serving is 14 little brontosaurus shaped puffs, or around 28 grams if you weigh your food like I do.  There are 2.5 servings per package.  This serving will provide you with 140 calories, 6 grams of fat, 0 grams trans fat, 0 grams saturated fat, 0 mg cholesterol, 19 grams carbohydrates, less than 1 gram of dietary fiber, 0 grams of sugars, and 2 grams of protein.  I may not have fallen head-over-heels for these, but the real ingredients and the fantastic dietary standards are appealing.

I love a healthy snack that doesn’t seem like it should be good for you.  That’s what Good Boy Organics has done with their Organicasaurus Tangy Tomato Baked Organic Corn Snacks.  I wasn’t raving about them, but I wouldn’t turn my nose up at the chance to try them or other Good Boy Organics products again.  Never heard of this company before Cuisine Cube and now am more than intrigued to see what else they have to offer.  Total win.

A week ago, I wrote up a review about the newest product from Canyon Bakehouse.  A product that made my native New Yorker heart skip a beat and, maybe, just maybe, made me shed a few tears…of foodie joy.  We’re talking bagels.  And while last week it was the new Plain Bagels from Canyon Bakehouse, this week we hit on a new high and a new favorite.  And, yes, more tears of joy were shed.  Not just because these gluten-free bagels are the best I’ve had so far, but because they hit on the essence of a New York bagel.

The Everything Bagel.

If you go to any bagel shop in New York City, you’re going to find the Everything Bagel on the menu.  And for good reason.  It was invented in New York City.  And, even better, it’s the perfect bagel flavor.  It has, as the name says, a little of everything.

And it has always been my favorite.

Most gluten-free bagels out on the market have never met my high bagel standards.  Come on, I’m from New York…and going gluten free was hard enough, but don’t insult me with a poorly made gluten-free bagel.  Udi’s was the closest I ever got, and they recently released an “Everything Inside” version of the Everything Bagel.  It was close…but it wasn’t a true Everything Bagel.  I want that crumbly topping on the bagel itself.  Make it more real.  Make it more…like the original.

So,  yeah, when I received my box of gluten-free bagels from Canyon Bakehouse, which I ordered, and I could smell the garlic, I knew this was going to be a treat.  And, I was not let down.  I used the Plain bagels first, which from a previous blog, you realize were amazing to me and my bagel-loving self.  Oh. My. GOD!

I think people would be hard-pressed to identify these as being gluten-free, they are that close to the real thing.  The right amount of chewy on the inside, crunchy on the outside.  Dense without being overly dense (texture and feel…not mentally…just clarifying that!).  They smelled amazing as they toasted up in my oven on both Monday and Friday this week.  And I was sad that today marked the end of the ones I ordered, though I feel the need to hop over to the Canyon Bakehouse Web site and order MORE!!  ALL THE BAGELS!

So, let me explain.  Everything Bagels are THE BOMB!  And these are the GLUTEN FREE BOMB!!  I love, love, love, love these.  I love how the Canyon Bakehouse Gluten Free Bagels are sliced ALL the way through for ease in halving them for toasting.  I love how the inner part of the breading is soft and chewy.  I love how the outside is golden and gets crunchy with the toasting.  I love the variety of seasonings that they managed to put on the outside of the bagel, making to seem more like the original thing.  I love how well this paired with my Daiya Chives and Onion Cream Cheese Style Spread.  I loved the flavor.  WOW…the seasoning was amazing.  The right hit of everything.  Toasting each half only brings out those flavors more.  They are soft, yet dense, yet satisfying.  I don’t know if I’ll ever meet a bagel that surpasses the way this one tastes.  I felt like I was back in New York, just having a typical breakfast morning.  Sipping coffee.  Reading.  Enjoying my bagel.  And, it is the perfect size and shape.  NO one would know it was gluten-free.  But it is.  And I am in love.  Madly, deeply in love.

Oh, Canyon Bakehouse…thank you!

Okay, so, we’ve established my undying appreciation and love for these bagels.  Now let’s discuss what goes into making them so amazing.  The Canyon Bakehouse Gluten Free Everything Bagels are made from water, tapioca flour, brown rice flour, potato starch, cultured brown rice flour, extra virgin olive oil, organic agave syrup, dehydrated onion, dehydrated garlic, whole grain sorghum flour, xanthan gum, egg whites, baking powder (sodium acid pyrophosphate, sodium bicarbonate, potato flour, mono calcium phosphate), poppy seeds, sunflower seeds, yeast, sea salt, sesame seeds, and natural enzymes.  These bagels are made with 100% whole grains, are gluten-free, and kosher.  OH…and DELICIOUS!

As far as nutrition goes, the Canyon Bakehouse Gluten Free Everything Bagels impressed me with their nutrition facts.  A serving is 1 bagel (99 grams).  In this 1 bagel, you will be taking in 250 calories, 5 grams fat, 420 mg sodium, 46 grams carbohydrates, 4 grams sugars, 4 grams fiber, and 4 grams of protein.  These bagels are cholesterol free.  The Everything Bagels will fill you up without filling you up.  That’s the best part.  The nice balance of fiber and protein makes for a filling breakfast.  And, if you are lactose intolerant like me, I highly recommend the Daiya Chives & Onion cream cheese style spread.  YUMMY!

Twas the day of a new product release and I was just sort of…scrolling through Facebook…completely unaware that such a thing was happening.  And then, one of my latest obsessions in the gluten-free bread world hit me up with the one thing that I, as a New Yorker, cannot ignore.

BAGELS!

GLUTEN-FREE BAGELS!!

Do you know how hard it is to find GOOD gluten-free bagels?  Immensely.  Seriously.  They are either too small and dense, or too light and fluffy.  Or they just taste all wrong.  As far as commercially available gluten-free bagels go, after trial and error on so many brands, Udi’s is the only one ever to keep me coming back.  The rest were just so many kinds of wrong in texture, flavor, or just feel.  Not saying that Udi’s is spot on either.  They are a little light in the middle, because, bagels are supposed to be dense and awesome.  I took to making my own…and that’s fine…but it’s a lot of work and sometimes it doesn’t always work out as planned.

So, yeah, I sort of released a few cries of joy and immediately went over tot the Canyon Bakehouse Web site to order the latest products they were introducing to the gluten-free market.  I skipped the Brownie Bites (for now) and ordered one pack each of the new Canyon Bakehouse Gluten Free Plain Bagels and Everything Bagels.

HELLO.  GOOD MORNING.

They arrived via Fed Ex yesterday afternoon, so I have wasted no time in getting these tasted, tried and reviewed.

This morning, after my spin class, I came home to load up two of the Canyon Bakehouse Gluten Free Plain Bagels into my oven (I do not own a toaster…so this is how we roll in my apartment), went to shower while they toasted, and came out to find them just about ready for the vegan cream cheese!

Life…was good.  Almost perfect.  Coffee was poured.  Bagels were toasted.  And the (Better Than) Cream Cheese (non-dairy for my delicate tummy) was spread on each half.  I passed the first bagel off to my roommate and then went to retrieve mine, after taking a few moments to simply wash out a few containers and the coffee pot.  Time to settle in.  Breakfast.

And good morning indeed!  Canyon Bakehouse just won my little bagel loving heart.  FINALLY…something so close!!  SO darn close that I fanned my hand in front of my face as I slowly chewed my first bite.  Now, I’ve had gluten-free bagels from NYC specialty bakeries.  And these…are nothing like those.  But these…these stand out in the gluten-free world for items you can buy in grocery stores and the like.  TOTALLY WOWED!!

Before toasting, Canyon Bakehouse have a nice, hefty feel to them.  They are pre-cut…all the way through so I’m not tearing at to edges (such is the case with Udi’s).  The insides have this amazing looking center, small hole, and a big, crusty, outside to it.  It felt like a real bagel.  It even looked like a real bagel.

I took my first bite…and it tasted like a real bagel.  Yes.  I was beyond elated.  I loved how the outside was crispy, without being hard.  It had some give to it still, and gave way to the perfect, tasted, but still tender bread in the middle.  Oh…my…freakin’…gluten…free…bagel.  These have an actual bagel taste to them too…not just tasting like…well…gluten free bread.  I love the texture and the flavor (yeah…this was the Plain, but still!).  Nothing plain about the taste of these.  Really phenomenal taste and totally filling.  Just as a bagel should be.  I felt content.  I felt loved.  I felt…full…but in a good way.  The best way.  The “I just consumed something mighty and gluten free and I loved every bite of it so much I might have devoured it faster than I should have but that’s okay!” kind of way.  I can’t wait to try the Everything Bagel version as Everything Bagels have always been my most favorite bagels.  Remember…I’m a New Yorker.

So, let’s talk ingredients that go into the Canyon Bakehouse Gluten Free Plain Bagels.  These amazing breakfast rounds of starchy, carby goodness are made from water, tapioca flour, brown rice flour, potato starch, cultivated brown rice flour, extra virgin olive oil, organic agave syrup, whole grain sorghum flour, xanthan gum, egg whites, baking powder, yeast, sea salt, and natural enzymes.  These bagels are gluten-free (of course), kosher, and non-GMO.  They are also cholesterol free and free of trans-fats.  YAY!  Even better, they are made with 100% whole grains.  LOVE IT.

Now, let’s delve into the nutritional facts for these bagels.  A serving size is 1 bagel (99 grams), and there are 4 bagels per package.  One serving will provide you with 250 calories and 6 grams of fat.  You will also be consuming 450 mg sodium, 45 grams carbohydrates, 3 grams sugars, 3 grams fiber, and 3 grams of protein.  Trust me, for a bagel this is phenomenal.  And, these nutrition facts beat out those of Udi’s Gluten Free Plain and (for those who do eat gluten) a Panera Bread Plain Bagel in everything but protein.  Healthier.  Canyon Bakehouse has definitely built a better bagel.

And yeah…I’m totally purchasing more of these.  My freezer will not be complete without a package of these tucked inside for those mornings when only a bagel will do.  These bagels make me feel right at home.  And that, my friends, says a lot.

Back when I first went gluten-free, the receptionist at my office was on this diet kick.  And she brought in these muffins that were made with only two ingredients: spice cake and a can of pumpkin.  That’s it.  I didn’t get to try them, despite her asking me to at least take a bite…because I didn’t want to feel ill the rest of the day, or perhaps the week.  Everyone else who tried them though loved them.

That was over three years ago.  And despite there being at least one gluten-free spice cake mix out on the market (made by Namaste Foods)…I hadn’t really gotten around to purchasing the mix and then giving a gluten-free version of those muffins a try.

And then…this past fall as I was strolling down the back aisle of my Whole Foods Market…I saw a display of gluten free fall baking items, all by Pamela’s Products.  They were the new Gluten Free Pumpkin Bread Mix and the new Gluten Free Spice Cake Mix.  I had just recently gotten a gluten-free pumpkin bread mix from a different company, but the spice cake mix…that made me happy.  I turned to my roommate and asked if we could break the budget for this…because I had two ingredient muffins I wanted to make with it.  She agreed.  YAY!  Home came the cake mix.

However, with the busy, hectic holidays…my time for baking things for me (I baked a lot of gluten-free goodies for family/friends/special businesses) and the muffins got pushed to the back burner.  As a lot of my great ideas at the time…when I am purchasing something often do.  Sadness.  But sadness no more…because I needed some easy breakfast food this week…mostly because I’m attempting to get back into a workout routine, despite my injury, and have some early morning sessions at the gym planned out.  The easier something is to make afterwards, the better!

So, today, I got out a can of pumpkin (I keep cans of pumpkin on hand like they are going out of style!) from my pantry and snagged the bag of Pamela’s Products Gluten Free Spice Cake Mix from the baking shelf.  It was time to make those muffins as planned.

So, into a bowl went the cake mix and the can of pumpkin.  I beat it all together with an electric mixer and then folded in 1/2 cup of semi-sweet chocolate chips.  So…I made mine with three ingredients.  I wasn’t sure how a gluten-free cake mix would take to this recipe (a lot of times you should follow instructions on the package exactly or face epic, massive, culinary fail!), and who doesn’t like a touch of sweet chocolate with their breakfast, right?  RIGHT!  I filled 18 muffin cups with the mix and popped it into a 350°F oven, allowing them to bake for around 24 minutes.  I removed them and let them cool before placing them in a container to keep for the upcoming week.

BUT…I can’t bake something and not try it, right?  If it was an epic fail…well…I didn’t want to find out tomorrow morning when there was nothing to do about it.

My worry was for naught.  I should have known.  Pamela’s Products has always been delicious, no matter if I’m using her flour blends, or product mixes, or feasting on cookies, figgies, or granola bars.  I have never met a Pamela’s Products product that I didn’t fall in love with or enjoy.  And that continues to hold true.

The Pamela’s Products Gluten Free Spice Cake Mix has this delicious fall spice flavor to it.  A hint of cinnamon, nutmeg, allspice, cloves, ginger and cardamom bring out that amazing taste of one of my favorite seasons!  Nothing like a taste of fall at the height of spring, right?  Maybe I was trying to forget that we were in the high 70s already this morning when I set out to make these.  The pumpkin added this great flavor and moistness as well.  And who doesn’t love a little touch of chocolate when all is said and done, right?  Because the addition of the chocolate chips made these a sweet enough treat, without all the guilt.  The muffins didn’t puff up, but that’s gluten-free mixes for you.  They did bake up gorgeously though…with a golden brown top and a moist, cake-y middle.  Loved it at the first bite and will truly enjoy devouring a couple of these each morning this week.  Super easy to make…and super delicious in the finished product.

So, let’s discuss the ingredients that go into Pamela’s Products Gluten Free Spice Cake Mix, shall we?  This mix is made from evaporated cane sugar, tapioca starch, white rice flour, potato starch, brown cane sugar, inulin, grainless & aluminum-free baking powder, rice bran, sea salt, cinnamon, gluten-free flavor, nutmeg, allspice, xanthan gum, cloves, ginger, cardamom, and black pepper.  This mix is certified gluten-free, non-dairy, and kosher.

Let’s discuss the nutrition information of Pamela’s Products Gluten Free Spice Cake Mix, shall we?  This mix makes 12 servings (I made 18 muffins though!), so it’s 1/12th of the dry mix or 1/12th of the finished cake that you bake.  In this serving, you will be consuming 150 calories and less than 1 gram of fat.  This mix will provide you with 340 mg sodium, 36 grams carbohydrates, 15 grams of sugar, 2 grams of fiber and 1 gram of protein.  Not bad for a cake mix, right?  Normally, this mix is prepared using eggs, butter and milk, so your nutrition facts will change when it’s mixed with baking ingredients.

For those interested, the nutrition information for the Gluten Free Pumpkin Spice Muffins that I made with this mix is that 1 muffin will give you 141 calories, 2 grams of fat, 228 mg sodium, 30 grams carbohydrates, 14 grams sugar, 2 grams of fiber and 1 gram of protein.  Only three ingredients.  Easy to bake.  And…YUMMY!

I hope that the fall isn’t the only time I can find the Pamela’s Products Gluten Free Spice Cake Mix.  I haven’t looked recently at my natural foods stores…but if they have another package of it, I’ll be more than happy to pick it up and bake up another batch of these muffins.  Or, maybe next time, I’ll bake up the actual cake itself.  As always, Pamela’s Products impresses me beyond all expectations.  And this is why this is a big-name gluten-free brand I trust.

I love seeing what my Cuisine Cube sends to me each month.  This month, however, hasn’t been a good one for me to actually dive into my box.  Most of the items…okay…all of the items…were in the box up until I returned from the Boston Marathon.  We all know from previous posts, leading into that were days and nights of stress and emotional overload…just trying to find out if I was going to get to race or not.  And then, afterwards, I was having a hard time moving around, putting things away sounded like a tedious task.

That being said, the six items that were inside my April 2015 (Spring) Cuisine Cube have been put away.  And have stayed put away.  Up until last night.  And that was mostly because I had nothing ready for dessert…

Hooray for convenience!

The WB Kitchen Maple Pecan Honey Cookies were the item that Cuisine Cube shared with us in April.  And I was really excited about trying them, after looking over the ingredients, and more impressively – the nutrition information.  Last night was the ideal day to try them after a big breakfast at my local gluten-free bakery and then movie theater popcorn (just the kid’s snack pack) while seeing Avengers: Age of Ultron.  I cooked up a simple dinner…gluten-free veggie burgers with sweet potato fries, to eat while watching the Kentucky Derby (I live in Louisville…that’s what we do one day out of the year).  Afterwards, I knew I wanted my palate cleansing dessert.  And I felt no guilt in reaching for the WB Kitchen Maple Pecan Honey Cookies.  I tore into the package, giving one of the cookies to my roommate and taking the other one for myself.  Dessert…and a horse race.

Well, the horse I chose (the names didn’t impress me this year, so I went for the prettiest horse in the field – Frosted!) came in 4th…but dessert…that was definitely winning in my book.  The texture, at first, is a little weird.  Sort of like a non-date-y Laräbar…soft and chewy…with a lot of emphasis on the “chew.”  It wasn’t gummy though.  But the flavor…that’s where these cookies totally won.  The honey flavor for sweetness is perfect.  Not too much…not too little.  Just the right amount.  And the pecans gave it this nutty flavor and a bit of crunch in each bite.  Top it off with one of my favorite things – maple…and you have a recipe that I truly enjoyed.  Every bite (which, technically was only three…but…).  Just loving the way everything came together.  And once that first bite was taken and I was able to adjust to the texture…it was dessert perfection.  And no guilt.  Cookies without the guilt.  Loving that!

So, let’s discuss the ingredients in the WB Kitchen Maple Pecan Honey Cookies.  These cookies are made with  almond flour, raw unfiltered honey, organic maple syrup, organic pecans, sea salt, organic cinnamon, organic coconut oil, and organic vanilla extract.  That’s it.  Real.  Simple.  Ingredients.  I recognize everything.  Nothing makes me question what I’m about to devour.  I love that.  These cookies are produced in a dedicated gluten, grain, dairy, and soy-free facility.  On top of being gluten-free and vegan, these are also cholesterol free.

Now, I told you I was impressed by the nutrition facts on these cookies and I’m going to share with you why.  A serving size is 1 cookie, so there are 2 servings per container.  This one cookie will provide you with 68 calories (a cookie for 68 calories!) and 4 grams of fat (mostly from nuts).  You will also be taking in 54 mg sodium, 6 grams carbohydrates, 6 grams of sugar, less than 1 gram  of fiber and 1.4 grams of protein.  They won’t be filling, but they sure make a nice way to end the day.

So, if you’ve been looking for a great, healthy, cookie-type snack/breakfast/dessert…look into WB Kitchen and what they have to offer.  Their Web site has other varieties of cookies and bars that make for healthy, nutritious, and clean eating.  If maple is your thing…I highly, highly recommend these though.  Soft, chewy, and good for you.  What’s not to love?  Thanks, Cuisine Cube for another wonderful food discovery!

I know some pretty amazing people.  I really do.  One of such people is a friend of mine from high school.  Awhile back, she contacted me and said that Tastefully Simple was releasing some gluten-free products that she would love for me to try.  My friend, Rebecca Fifield, just happens to be a Tastefully Simple Consultant.  So, she sent them to my.  And then Tastefully Simple released more products…and I bought them and some of the ones that had originally just been sent to me.  And I loved every one of them that had tried.

I think what I love most about what Tastefully Simple is doing with their gluten-free mixes is that they are making it so easy to make bread or pizza or cake cookies or pancakes.  They take all that fancy flour mixing and make it so you have it in one easy place, and only need to add 2 ingredients to it.  I love it.  LOVE it.

And now, thanks to both Rebecca and my own trial-by-fire with the gluten-free products that Tastefully Simple offers (they’ve added cookies and pancakes since I last looked!)…I’m obsessed.  Because, as much as I love baking and cooking and being in my teeny-tiny kitchen…I love simplicity too.  Because baking can be stressful…gluten-free baking can be catastrophic if anything is off.

That’s the glory of Tastefully Simple.  They take that guess work off.

So, with me heading out of town on Friday evening, the main goal this week is to use up all the fresh produce that would otherwise go bad in my absence.  So, with fresh basil and some tomatoes and onions lurking about, I remembered that I had a Tastefully Simple Gluten Free Pizza Crust & Sauce Mix in my pantry.  So…pizza it would be.  AND…it would last for three days between my roommate and I.  Added bonus.  No more cooking the rest of the week.  YAY!

Preparing the Tastefully Simple Gluten Free Pizza Crust & Sauce Mix is super easy!!  For real.  That’s why there is the word “simple” in the brand.  HA!  To prepare the crust, simply combine the crust mix with 1 cup of water and 2 tablespoons of olive oil.  The dough will be sticky.  Cover it losely with plastic wrap and let it stand for 10 minutes at room temperature.  Using lightly oiled hands to prevent sticking, spread the dough out on a pizza stone or a 12-inch greased pizza pan.  Bake it for 10 minutes in a 400°F oven.

While it’s baking…mix up the sauce.  It’s a breeze.  Simply combine the sauce mix with the remaining 1 tablespoon of olive oil and tomato sauce.  Spread it over the warm crust you have now baked for 10 minutes.  Add your favorite toppings (in my case…tomato, onion, basil and Daiya vegan mozzarella cheese shreds) and place back in the oven to cook for another 17-20 minutes, until the crust is golden brown.  Slice into 6 pieces and devour.

The quality, however, always comes in the taste test.  And they totally nailed it.  The dough wasn’t too sticky when I went to press it out on the pizza stone.  And, it cooked up to this amazing crispy, golden brown.  The sauce and toppings didn’t make it soggy.  It held up to slicing and being moved onto plates.  And I loved the flavor.  It had this amazing crusty quality that just made it work.  It was the perfect base for my toppings of choice.  And it was one of my favorite crusts I have made at home.  It was easy, and it didn’t take too long to bake up either.  Perfect way to enjoy my dinner tonight.  Tastefully Simple is not only making gluten-free delicious, but easy too!

So, let’s take a look at what Tastefully Simple puts into their Gluten Free Pizza Crust & Sauce Mix, shall we?  This pizza crust mix is made from rice flour, tapioca flour, sugar, baker’s yeast, potato starch, cassava flour, salt, less than 2% hydrogenated palm kernel oil, soy lecithin, baking powder and, xanthan gum.  The sauce mix is made from maltodextrin, dehydrated garlic, garlic powder, salt, dehydrated onion, spices, roasted dehydrated garlic, sugar, Romano cheese, less than 2% of natural flavors, toasted sesame oil, citric acid, whey, cheddar cheese, hydrolyzed soy protein, disodium phosphate, and silicon dioxide (anticaking).

As far as the nutritional information for the Tastefully Simple Gluten Free Pizza Crust & Sauce Mix goes, this isn’t bad for pizza.  Really.  A serving size is 1/6 of the package.  This serving will dish up 200 calories, 1.5 grams of fat, no cholesterol, 810 mg sodium (it’s a little high, yes), 43 grams carbohydrates, 3 grams sugar, 1 gram fiber, and 4 grams of protein.

So, as I’ve been working my way through the March Cube, I got into the dessert yesterday.  We all know that I am a strong believer in dessert.  I am even more of a believer when said dessert is…cookies.  Because, first and foremost, I am a cookie monster.  They are the perfect dessert and there are so many variations and textures.  Love.  You just don’t get bored with cookies.

This month’s dessert option had me at Double Chocolate Chip Cookies.  I mean…double your chocolate, double your delicious fun, right?  I think so.  I actually paid attention this time and noted the “Refrigerate Me” tag on the Cuisine Cube product rundown, so into the fridge these went.  And as April has gotten under way, I decided it was time to bust into these.  So, last night after eating my Gluten-Free, Dairy-Free, Vegetarian Cheeseburger Pie…this was going to be dessert.  I went to retrieve the clam-shell container from the fridge and popped it open.  I removed two cookies…one for myself and one for my roommate to try.  It was a very good thing that I then put the container back in the fridge, because I don’t know if I would have stopped at one cookie.

First of all…these cookies have a perfect texture.  Crunchy outside and a bit of chewiness on the inside.  They explode, with each bite, with fantastic chocolate flavor.  I mean…wow.  Not overpowering.  Not too much.  But just right.  It satisfies that every craving for chocolate.  Seriously.  Because the cookie has this richness to it, and then you get this little burst of dark chocolate with the chips baked into them.  It’s one of the most perfect cookies ever.  They are about the size of a Chips-Ahoy Cookie…but way better than any of that processed garbage I used to eat.  These…are amazing.  Bite-for-bite.  But hide them away in the fridge, or you may find yourself cookie-less and 3 pounds heavier for it.

Worth it.  Totally worth it.

The container doesn’t have any of the nutrition information on there, so I can’t give you the rundown of calories/fat and all that per serving…but I can tell you what ingredients go into these fantastic cookies.  The Krumville Bake Shop Double Chocolate Chip Cookies are made from Guittard chocolate, unsalted butter, dark brown sugar, brown rice flour, light brown sugar, sorghum flour, eggs, pure cane sugar, potato starch, milk, sweet rice flour, rice starch, vanilla extract, baking soda, sea salt, and xanthan gum.

Believe me when I say that these cookies are phenomenal.  They are the right hit of sweetness and that perfect level of chocolate for this major chocaholic.  For real.  I am glad these get tucked away after I pull out that night’s worth for my roommate and I because we’d probably kill off the entire container in one go.  Dessert and cookie perfection.  Nicely done Krumville Bake Shop and Cuisine Cube.

Product: Moon Rabbit Foods Pastry & Pie Crust Mix – $8.79+

So, for awhile now, I’ve been wanting to revamp another one of my mom’s famous recipes.  Making it not only gluten-free, but also vegetarian.  Oh…and dairy free too…but that’s pretty much a given when it comes to me, right?  The actual dish is her delicious Cheeseburger Pie.  Normally, the crust of this amazing meal is made from crescent rolls from the grocery store fridge area zone.  You know, that place I hardly visit these days.

Sadness.

But…then I got to thinking…what if I cooked up a pie crust and used that instead.  Sure, it wouldn’t be the flaky crescent roll shell that this meal was known for, but I was already going to get rid of the whole meat thing (using a meat substitute) and use Daiya cheese for the cheese.  So…why not give a different sort of crust a try?

The problem is…pie crusts and I have never really gotten along.  We are anything but BFFs.  Then…lo and behold…the Thanksgiving (November 2014) Cuisine Cube arrived in the mail.  And inside was Moon Rabbit Foods Pastry & Pie Crust Mix.  Everything in the November Cuisine Cube could have been used for Thanksgiving itself…but I wasn’t allowed to host this year so most of it was used at my own discretion.  Well, the final product is up now…but first…

Cuisine Cube is run by a small group of foodies who have put together a completely gluten-free box of goodies and then sends them to your doorstep each month.  These boxes contain 5-6 full-size products from small, lesser-known artisan producers…mostly local…some not as local.  Some you may even have heard of before, but most will be new to you.  I signed up for Cuisine Cube back in May and have never looked back.  Subscriptions start as low as $29.99…which is a great price and great incentive to sign up for this subscription box service and try out some gluten-free products you have been too nervous about purchasing yourself or, perhaps, didn’t even know existed.

Such as Moon Rabbit Foods.  Never head of this brand before in my life.  Moon Rabbit Foods follows a philosophy of choosing the finest ingredients and using the latest techniques of the craft of baking to give those living a gluten free lifestyle (like me!) a rare opportunity to enjoy delicious refined pastries and baked goods.  Their baking and pastry blends provide a source for hard-to-find gluten-free products, allowing customers to enjoy that high quality at home, and even allowing them to add their own inspirational touches.  So, here, in my clutches was a pie crust mix.  I had no reason to make a pie.  No one ever wants desserts at the family dinners.  I usually do because I never really get to eat much of what is offered (part of why I love to host).  But, I also hate being the only person to eat dessert, especially when I’m the one providing it.  So, instead of going sweet, I opted to go savory and attempt to recreate a gluten-free, dairy-free, vegetarian version of my mom’s Cheeseburger Pie recipe.

Cross your fingers…

This mix makes 3 9-inch pie crusts.  I went ahead and cooked them all up because…well…I could freeze the rest of them instead of just letting the mix sit and having to haul out all the equipment (a food processor, really) and ingredients (only 3) to do whenever I felt the need to make a pie.  Because if I did that, it would only get used this one time.  Therefore…all or nothing.  So, I took 1 cup of the pie mix and mixed it with one stick (4 ounces) of butter (or vegan butter) and pulsed it until it looked like cornmeal.  Then, in went 3 tablespoons of cold water and I ran the food processor until it all came together.  I formed the dough into a 6-7 inch disk and then put it in the fridge for 30 minutes.  Then I rolled it out and fit it into a pie pan.  It fell apart at some points because pie crusts hate me, but I managed to get it into the pie pans and into a 350°F oven for 30 minutes.  Out come the par baked crusts…and there you have it.  Use it as you will.

For the rest of the recipe, I used NEAT original mix and prepared the recipe from my mom’s cookbook as it would have been prepared regularly.  YAY!  That recipe will go in the review for NEAT.  So stick with me here.  Let’s talk about how the pie crusts cooked up and the rest of that important stuff.

First of all, I think I sort of expected them to be a little more golden.  They cooked, but they were still a pale white color.  I poked it to make sure it wasn’t still dough.  Then I figured it would get more golden as it cooked with my filling of Neat, tomato paste, onion, and vegan cheese…but it still remained a pale shade of…pale.  It was cooked…it just didn’t look that way.  It was a bit disconcerting.  It tasted good though, so I guess that’s the important thing.  It may look underdone, but it is quite a good pie shell.  I was actually happy to have a pie crust that didn’t incorporate sugar into the mix as I was using it for a savory dish.  This made this a great substitute for the refrigerated croissant rolls that used to make this light, flaky crust for this dish.  Being a thinner crust also helped as well.  So, once again, looks can be a wee bit deceiving.  It’s all in the taste, when it all comes down to it.

So, what exactly is in the Moon Rabbit Foods Pastry & Pie Crust Mix?  According to the package, this mix is made up of potato starch, cassava flour, rice flour, sea salt, unrefined cane sugar, and xanthan gum.  That’s it.  Small list and all recognizable ingredients makes me a happy girl. This crust is gluten-free and vegan.  It is also cholesterol free and fat-free until you add the butter…

As for nutrition, the Moon Rabbit Foods Pastry & Pie Crust Mix has around 24 2 tablespoon servings in the package.  A serving will provide 60 calories, 115 mg sodium, 16 grams carbohydrates, 1 gram fiber and no sugar or protein.  No sugar or protein is added to the mix so…it remains that way in the end.  When it’s prepared, all of this changes depending on your ingredients and the like.

If you need an easy pie crust, I highly recommend Moon Rabbit Foods Pastry & Pie Crust.  Yet another product I never would have even know existed (and, hence, never would have made my mom’s Cheeseburger Pie (albeit vegetarian and dairy free)) if not for Cuisine Cube.  Loving this service and the new products and companies that it introduces to me.
