Emergency PT & the Incident of the Unhappy Quad

IMG_20160219_202216[1]I am not going to lie.  Every time something that shouldn’t be twinging at me makes any sort of unhappy pain or unusual pain…or just pain…I get a little freaked out.  Hard to imagine, I know! *sarcasm*

Hey, after the past year of pain that wouldn’t go away and injury after injury after injury…I am more than a little anxious when my body is doing something that it shouldn’t.  Two weeks ago, after my physical therapy session and just before my sister came into town (and right before my first double-digit run since August 2015), my left quad (yes…the quad on the leg that doesn’t have a torn hip labrum) had a knot of pain near the top.  Not at the hip…but at the front of the leg.  I freaked out (a little) and e-mailed my physical therapist.  She told me that it sounded like a muscle strain and to just roll it and stretch.  And to keep runs on ground as flat as possible.

Easier said than done in this area.  And, wouldn’t you know it, the group run that Saturday (for 10 miles), was straight up to the top of Iroquois Park.  I actually got through the run without problems, and failed to stretch or roll any of that weekend because I was hanging out with my sister and nephew, which was WAY more important.  But…I was doing good.  I just had that little knot of pain that would flair up when I’d stand up or…go upstairs.

I rolled, I skipped hill repeats and opted for the mileage on the very flat treadmill (in the sweltering hot gym).  And I even skipped out on The Hard 10 run, which I love doing with my favorite peeps from my running group, but it would have been another stint all the way to the top of Iroquois Park, and I figured I best obey my therapist and not run that hill again.  It’s a steep one.  A big one.  So, instead I went out and rocked 13.15 miles around Seneca Park.  The quad did fine during the run, and even handled the few hills that I had to get over without even a flare-up.

But I still had that little knot there.  On Tuesday, I went out to Iroquois Park to do hill repeats with group…and came out of that better than I thought.  For one thing, my hip flexor on the right leg wasn’t hurting as much or as tight after the 8 hill repeats I did.  The quad handled it just fine.  And I was doing this all in new shoes (which gave me a blister (GRRR!)…

But when the pain was still there…now 2 weeks later, I decided to get in touch with my physical therapist.  She decided that I needed to come in for a quick assessment, asked me a few questions, and arranged for me to come in this afternoon at 1 p.m.

After doing a little stretching with my left leg, she determined I have a strained Rectus Femoris…probably brought on by all the hills that I am running these days.  No big deal.  Lots of rolling, sticking, and trigger point and it should work out.  And…once again…I am to keep runs as flat as possible.

So, at least there was good news.  I was getting all worked up, because I had visions of this past year and all the trouble and pain and frustration the hip flexor and hip labrum in the right leg. I just knew the same thing was happening now with the left leg.  But…thankfully, that’s not the case.  She added a new stretch for me and sent me on my way.  Easy fix.

YAY!

So…that’s the latest.  I did attempt a few sprint intervals on my 4 mile run this morning, but my legs just aren’t firing fast right now.  It’s frustrating, but I’m sure it will come in time.  For now, I’ll just keep focusing on my form.  The rest will fall into place from there.

…at least, that’s what I keep telling myself.

Product Review: Feel Good Foods Gluten Free Vegetable Fried Brown Rice

Once again, I have Raisin Rack in Columbus, Ohio, to thank for introducing me to some amazing gluten-free goodness.  It was on one of my numerous trips to Columbus to visit my friend Jenn that we made our (now) official stop in at the natural food store.  The budget was small this time thanks to holiday (and doctor) bills, but I was able to stock up on a few things of interest.

One of said items was from Feel Good Foods, makers of gluten free eggrolls and dumplings.  Apparently, they now make actual microwaveable meals.  I didn’t know this, and I keep really up-to-date on the new products out there, especially from companies and brands that I love.  I spotted the one vegetarian option (the fried rice mentioned above) and picked out the General Tso’s Chicken for my roommate…and it was game on.  Purchased.  It made the budget cut for sure.

Feel Good Foods has the slogan: Don’t worry. Eat happy.  And, with the promise of having no added MSG, no preservatives, and no artificial flavors, I was already feeling good about my purchase.  Creators, Tryg and Vanessa met at a restaurant where he was the chef and she was working.  When he discovered that she couldn’t have the staff-created meals, he began creating gluten-free versions of the dish.  They created Feel Good Foods gluten-free frozen foods after they opened a gluten-free restaurant and were told that they needed to put their food out on the market.  Their foods are non-GMO, all-natural and completely gluten-free.  You see…Vanessa is a Celiac…so they take food allergies really seriously.

Well, these meals were in our freezer for a few weeks, because I figured they would be a perfect “need a quick dinner” meal for busy nights…something we’ve finally been having more of these days.  Because…running.  Well, Tuesday nights are my hill repeat nights, and this happens in Louisville…at 6 pm.  So, after working until 4:30, I literally have time to come home, throw on some running clothes, warm something up, down it, and get over the river to the event.  The past couple of weeks, due to weather, I’ve hit the treadmill due to cancellations and/or…me not wanting to be out in the elements.  But…yesterday…despite some apprehension (got some niggling pain in the hips), I decided I was going to go and at least attempt to tackle the hills.

So, this meant the frozen meals have to come out.  And so…without any further adieu…out came the Feel Good Foods Gluten Free Vegetable Fried Brown Rice (and my roommate’s General Tso’s Chicken, too!) for a quick heat and eat.

The Feel Good Foods Vegetable Fried Brown Rice is super easy to prepare.  Simply open the box and remove the little bowl.  Cut a 1-inch slit into the plastic overwrap.  Place in the microwave and cook on high for about 3-4 minutes.  Let it sit for one (1) minute.  Then remove the overwrap, stir, and devour.  Simple…

…and delicious.  In fact, it turns out that this particular fried rice dish is one of Chef Tryg’s favorites.  Feel Good Foods Vegetable Fried Brown Rice highlights the amazing flavors of the leeks and ginger.  Also…I love that brown rice is used instead of rice, not just for flavor, but health reasons too.  Let’s face it, brown rice is better.  Any…freakin’…day!  As for this meal, in general…it definitely is a frozen dinner, but leaps and bounds above your average frozen meal.  Made with real ingredients and seasoned to perfection.  I didn’t have to add a thing to this (not even Yum Yum Sauce).  And I devoured it.  I think my favorite thing that was in there were the waterchesnuts.  Nice texture.  The entire meal had a variety of flavors and textures going.  The vegetables were steamed to perfection, the brown rice wasn’t dry…and, as I said, seasoning was spot on.  Plus, this was a nice way to fuel up before taking on 6 miles of hills.  It was gone in record time.

So, let’s discuss what goes into the Feel Good Foods Vegetable Fried Brown Rice, shall we.  This meal is made from brown rice (water, rice, expeller-pressed canola oil), leeks, carrots, green peas, gluten-free soy sauce (water, soybeans, salt), expeller-pressed canola oil, ginger, eggs (whole eggs, citric acid, water), waterchesnuts, garlic, scallions, sesame oil, salt, and spices.

As far as nutrition goes, I was impressed with the nutritional facts that came with the Feel Good Foods Gluten Free Vegetable Fried Brown Rice.  A serving size is 1 package (255 grams), and there is one (1) serving per container.  One serving will provide you with 350 calories, 18 grams fat, 2 grams saturated fat, 0 grams trans fat, 45 mg cholesterol, 490 mg sodium, 40 grams carbohydrates, 5 grams fiber, 5 grams sugars, and 7 grams protein.  It is gluten-free, vegetarian, and made using minimally processed, non-artificial ingredients.

Thanks to Tryg and Vanessa, someone like me, who usually has to bypass the Chinese Food, can start to enjoy it again.  While I am not big on consuming frozen dishes, these sure did come in handy for a busy weeknight.  Quick and easy to prepare…and just as quick and easy to eat.  You’ll love the flavor.  For the record, my roommate truly enjoyed her General Tso’s Chicken, saying it wasn’t too spicy or anything.  So…there is that.

I know Whole Foods carries Feel Good Foods products…so next time I’m there, I might have to contemplate picking up another box of this…for another busy night in my future.  I encourage you to do the same.

A Half Dozen after a Half Distance

My physical therapist has been telling me that getting past my fear and my anxiety about running and adding mileage was all mental.  I knew she was right, but somehow, every time I would lace up to go running, short or long, I would just get this feeling in the pit of my stomach.  I was no longer comfortable with it. Especially the longer distances (which were always my favorite).

Last week, I managed 10 miles without any pain or issues.  This week, it was to be 12…but at a bit of encouragement from my physical therapist and my roommate, I bumped it up to a 13.1 distance.  Half marathon.  No time goals or pace goals.  Just go the distance.

And I did.  I won’t say it was pretty and that I felt great at the end…but I felt better.  I mentally and physically feel better for having done the distance. And, in the end, that’s all that really matters!

So, in honor of that…here is half a dozen things that made me smile this week…

1. Spreading a Little Sunshine

When bad things happen to good people, I like to find ways to lift spirits and at least spread a little happiness or, as I like to say, sunshine.  And the best way I know how to do that is by baking or cooking.  Well, my downstairs neighbors are going through a bit of a rough patch, and it’s hard to find reasons to smile sometimes.  This past Saturday evening, I baked up a batch of Lemon Blossoms (gluten & dairy free) for them.  I delivered them this morning.  And soon afterwards, I got a text message from Michelle saying that her son insisted on having a picnic in bed of Lemon Blossoms with daddy.  THAT…made my heart melt for sure.  It’s the little things that make big things happen.  Good things are coming for them.  I feel it.

After months and months and months of coveting the thing, I finally broke down Saturday and purchased the Sphero BB-8 toy.  Why?  Because I wanted it.  I didn’t need it…but I wanted it.  We all know, I am probably one of the biggest BB-8 fangirls out there.  And, let me tell you, this little guy is a blast to roll around.  It is driven by an app on my phone, and it is adorable.  It even reacts to voice commands.  Seriously, one of the best, random, unnecessary purchase I have ever made.  He’s coming to work with me tomorrow.

3. Reliving my Childhood with Rainbow Brite

Growing up, one of my favorite cartoons, toys, and things in life (hey…I was like 5) was Rainbow Brite.  For those of you who may not be as familiar with Rainbow Brite, she was the main protagonist of an animated series, where she was sent to a bleak and gloomy world to bring color and beauty to it.  Her mission was to make our world brighter and our hearts lighter by bringing color to all the corners of the universe.  She is aided in her adventures in Rainbow Land by her faithful companions, Starlite and Twink.  Her greatest

strengths are compassion and bravery.  I had a favorite shirt as a kid that I called my “Rainbow Brite” shirt…and prior to this past Saturday, owned a Rainbow Brite snuggie (thanks Dad!), a Starlite pillow pet (thanks Cathy!), the movie Rainbow Brite and the Star Stealers (thanks Cathy!), have costumed as Rainbow Brite, and have just always tried to bring happiness to people (see #1 above…about sunshine and lemon blossoms).  So this past Saturday, while going past a Hallmark Store, I spotted a Rainbow Brite doll in the window.  Upon going inside…there was also Starlite (that’s the horse, BTW) and Twink dolls too.  And I bought them.  I couldn’t help it.  That’s my childhood. That’s me.  I aspire, still, to be Rainbow Brite.  Sometimes, it is the little things in life.

4. Another Pair of Running Shoes

So, as stoked as I was about the Nike Pegasus Air Zoom 32’s that I purchased last weekend.  But after 3 runs in them, I discovered a couple of things.  The first was that the toe box was too narrow.  I now am the proud owner of a black toenail.  Just after I got normal toes back after a year off from running.  HA!  Secondly, they felt heavy on my feet. My usual running shoes (the Newton Distance series) are abound 6.1 ounces.  The Nike Pegasus shoes were 8 ounces.  I didn’t think it would make a huge difference…but it did.  So, I returned them to Fleet Feet, and opted to exchange them rather than shop for a cute running skirt or get a refund. I explained what the issues were, and the sales girl returned with 2 different Nike shoes.  After testing them out at the store, I opted for the Nike Free RN Distance, which are 6.6 ounces, so closer to what I’m used to on my feet.  They are also soft to run on thanks to Lunaron cushioning, which fuses soft foam and lightweight Phylon carrior to deliver an excellent blend of plush comfort and durable support.  Great for distances.  These felt happy on my feet.  So I will test them out this week and either take them back or keep them.  We’ll see.

5. Foam Rolling

All runners have a love/hate relationship with their foam rollers.  I love mine.  It’s one of those “hurts so good” devices.  I have started rolling again…every night.  And it’s amazing.  I mean…yeah…it doesn’t necessarily feel good, but it does.  And I feel better after that.  So, after my BOSU ball routine for my physical therapy stuff…out comes the foam roller.  For 20-30 minutes, I work on those tired and sore muscles…and afterwards, I feel a little better.  So, I’m actually happy to have this back in my routine!

6. Accidentally Twinning

One great thing that has come from these runs I have been doing on weekends is the people I get to run with.  And one of them happens to be my good friend, Kelsie.  I met Kelsie via my blog and we’ve become very good friends.  This past Saturday, we accidentally dressed in the same color scheme.  So, that was awesome.  She and I will be doing our long run this weekend together as neither of us are participating in the Anthem 5K.  So, I am seriously looking forward to that.  We’re going to keep a nice easy pace and rock out the mileage together.  I’m excited.  Been way too long since Kelsie and I got nice run in together.  Wonder if we’ll accidentally color coordinate again.  HA!

And there it is, my friends…half a dozen things in honor of the half distance.  I’ve been recovering today…with shopping (yep…more…because I bought a pretty dress!), and baking and cooking…and now I’m watching Tangled, which is part of my Disney Animated Movies In Order viewing-fest.

Product Review: So Delicious Dairy Free Mac & Cheese Pizza Flavor

It was in a recent issue of Gluten Free & More that Erica Dermer (aka: Celiac & The Beast) brought to my attention the fact that So Delicious Dairy Free was coming out with a new product.  Two (yes…TWO) versions of a boxed mac & cheese.

Gluten free and dairy free…perfect for this girl.  I figured it would take an eternity to find in Louisville, but…a couple of weeks ago, it was out on the shelves of the local Whole Foods.  So both flavors (Pizza and Cheddar) came home with me.  And this week was an ideal week to try one of them as my endless quest to clear out the pantry continues (I know…if I’d stop buying things it would be so much easier!).

I know, I had a vegan mac and cheese on Monday…but who says comfort food can only happen once a week, right?  Besides…this was a different mac and cheese. This one came in a box.  HAHA!  And since today was my (allergen-free) Soft Pretzel Wednesday lunch tradition, and I bought an amazing (allergen-free) Confetti Cupcake from my local bakery, Annie May’s Sweet Café, I figured, why not go for broke?  Have some mac & cheese!  Thanks to the (not-so-expensive) splurge at Whole Foods…this was possible.

Nothing could be easier to make.  Simply bring a pot of water to a boil and pour the noodles in.  Allow them to cook for about 8-9 minutes.  Drain.  Once drained, return noodles to the pot and add in 1/2 cup of unsweetened coconut milk (I used unsweetened cashew milk) and 2 tablespoons of a dairy-free buttery spread (I used Earth Balance).  Add in the packet of powder-like-cheesy-stuff and stir until mixed well.  Serve.

So, my roommate opted to have the Pizza Flavored Mac & Cheese from So Delicious first before the Cheddar.  I think she’s having a hankering for pizza.  Well, she said it’s because I made “regular” mac & cheese on Monday.  Whatever.  Regardless, we started off with the odd-flavored one!  (That’s odd as in…not a normal flavor you would find).  I served it with a slice of vegan garlic bread (from Annie May’s Sweet Café)…and dinner was super-easy, super-quick, and hopefully super-yum!

As far as boxed mac & cheese goes, this ranks up there.  I thought the gluten free noodles were amazing.  They didn’t get gummy or fall apart.  They held up to draining and constant mixing when everything was added in.  That really was a high point for me, since so often these boxed gluten-free pastas just fall apart.  So…YAY!  As for the flavor…it…kind of tastes like pizza.  There is a hint of tomato flavor in the sauce, for sure.  And the sauce is darker than the orange boxed powder stuff that people are used to eating.  It didn’t punch me in the tastebuds and make me think I was eating pizza instead of pasta.  Like I said, it had more of a rich tomato flavor than anything.  What I did love most, however, was that it didn’t have a weird tangy fake cheese flavor to it.  No plastic residue.  Nothing that can be such a turn off (for me, anyway) when it comes to vegan cheese products.  The sauce was creamy and cheesy (without the cheese!)…and for that I am happy.  I think I liked it best when I was scooping it up with my garlic bread though.  More powerful flavors there than on its own. That being said, I wasn’t disappointed in the least, and will probably end up keeping a box of the So Delicious Dairy Free Mac & Cheese in my pantry for nights where I need something quick and easy…and delicious.

All that being said, let’s talk about what goes into the So Delicious Dairy Free Mac & Cheese Pizza Flavor.  This product is made up of organic gluten free pasta (organic white rice flour, organic green lentil flour, organic corn flour), algal protein, veggie blend (carrot, tomato), sea salt, natural flavor, coconut oil powder (maltodextrin, organic coconut oil, rice starch, natural flavor), guar gum, pizza seasoning (spices, garlic, salt, onion), mustard (seed), annatto, and lactic acid.  This product us Kosher Parve, Certified Gluten Free, and Certified Vegan.

As for nutrition, a serving of the So Delicious Dairy Free Mac & Cheese Pizza Flavor is 2.5 ounces (71 grams…or about 1 cup prepared) and there are about 2.5 servings per box.  My roommate and I just split it in half.  An actual serving (as packaged, not prepared), will give you 260 calories, 2 grams fat, 0 grams saturated fat, 0 grams trans fat, 0 mg cholesterol, 500 mg sodium, 50 grams carbohydrates, 3 grams fiber, 2 grams sugars, and 10 grams of protein!  LOOK at that protein!!  It is definitely filling.

No worries…I still ate the cupcake afterwards!

Anyway…while the So Delicious Dairy Free Mac & Cheese Pizza Flavor was a nice way to have a stress-free night of cooking, I still felt that it was lacking somewhat in flavor.  That being said, the texture, taste, and creaminess were right up to par…especially for a powder-base.  I was impressed and surprised that I liked it that much.  And that’s a good thing, for sure.  But, I sure was glad I picked up that garlic bread today…

Bottom line…it was good.  Not outstanding.  But good.  And different.  I have yet to find another gluten free and/or vegan pizza mac and cheese on the market.

 

 

Product Review: Heidi Ho Creamy Chia Cheeze

A little while ago, I posted a blog about a new product I discovered at my local Whole Foods store…a vegan cheese spread by a company known as Heidi Ho.  I was beyond impressed with not just the texture, but also the flavor and taste of the cheese.  And from there…so many people began to sing the praises of their products, specifically their Creamy Chia Cheeze.

Let it not be said that I can’t take a hint!  HA!

With the holidays now out of the way and the budget not as stretched, I am able to indulge a little more these days.  And, that is how a container of Heidi Ho Organics Creamy Chia Cheeze wound up in my basket at Whole Foods…and then in my fridge at home.  Funny how that happens, right?  With this week being a little…hectic…with my training and just life in general…I chose to make a version of mac & cheese using some of the Heidi Ho Creamy Chia Cheeze instead of Daiya and all the cashew milk and gluten-free flour and bake method.  Simple is what I like.

Heidi Ho was created by Heidi K. Lovig, a fanatic about farm-to-table dining, sustainability, seasonal menus, and buying local.  This vegan chef honed in on her skills during her time living on the Big Island of Hawaii in a sustainable community where she managed an eco hostel and farm.  She trained with vegans and raw foodies from around the world, thus developing a deeper connection to the ingredients she uses in her cooking.  Lovig moved to Portland a few years ago and began training at Le Cordon Bleu to obtain her degree in Culinary Arts.  With a focus on local, organic, and sustainable practices, she turned her attention to the environmental issues humans have created due to food supply structures and our current system of distribution.  At her side is Lyssa M. Story, “the Boss” at Heidi Ho.  She runs the show and is the brains behind every facet of its operations.  From HR to business plans and projections, to law, licensing, accounting, banking, money, organization, and keeping Chef Heidi on track.  Story has an extensive background in the food and beverage industry, and attended the Western Culinary Institute Le Cordon Bleu, where she received an Associates degree in Occupational Studies – Hospitality and Restaurant Management. Story was raised on the standard American diet, which, over time, jeopardized her health.  At the age of 22, she began a plant based and whole foods diet.

So, these two ladies set out to create delicious plant-based cheezes using ingredients that are healthier for their consumers…as well as the planet.  Hedi Ho is the future of cheese – aiming to be the cheese that creates change.  They take great pride in the values they uphold in their company and products.  They sell cheeze that is superior in flavor and quality over the rest on the market.

Guess what…they succeed.  The introduction of this plant-based comfort food is a game changer for vegans out there.  They say on their Web site that their Creamy Chia Cheeze will “blow your mind for Mac N Cheese” and they are absolutely correct.  Not only does this have a fantastic flavor, but it is rich and creamy and tastes like cheese…not like something plastic.  It has a great texture too.  And it’s like having a real melty cheese.  I was so happy with the way this worked on the gluten-free noodles that I cooked up and poured this over.  Creamy, healthy, and guilt-free.  My dairy-free fridge will forever have one of Heidi Ho’s cheezes inside.  That’s for sure.

Let’s talk about what goes into the Heidi Ho Creamy Chia Cheeze, shall we?  This product is made from a veggie puree (water, red potatoes, red bell pepper, carrots, onions, garlic), cashews, safflower oil, sea salt, lemon, chia seeds, citric acid, paprika, mustard seed, black pepper, and cayenne.  A majority of their ingredients are organic!  The Hedi Ho Creamy Chia Cheeze contains NO nutritional yeast (thank goodness, as I’ve started to have reactions to it), soy, and is free of gluten and dairy.  In other words, perfect for me!

So, let’s discuss nutrition.  A serving of Heidi Ho Creamy Chia Cheeze is 1 ounce (28 grams).  The container has 10 servings inside.  A serving of Heidi Ho Creamy Chia Cheeze will provide you with 50 calories, 4 grams fat, 0 grams saturated fat, 0 grams trans fat, 0 mg cholesterol, 150 mg sodium, 3 grams carbohydrates, 0 grams fiber, 1 gram sugars, 1 gram protein.  So much healthier than actual cheese too!  Trust me, even you who can have dairy will LOVE this cheese.

If you haven’t been over to Whole Foods to pick up one of Heidi Ho’s vegan cheeze products, then you need to hurry over there now and try it out.  Seriously…it is one of the best vegan cheezes that I have tried.  No weird taste, creamy, delicious, and made with real and clean, organic ingredients.  What’s not to love?

For the record…tonight I poured it over gluten-free rice chips and made nachos…and it was awesome.

So, one of my roommate’s favorite desserts is cannoli.  She can indulge quite a bit when we go out to Italian places that offer it as a dessert…but it is a very rare treat for me.  Gluten free cannoli is just…not often found.  Sweet ‘N Savory Food Truck did it once during Cluster Trucked…and I had one at Da Luciano in Chicago the night before the Chicago Marathon…but otherwise, I’m normally not able to partake in this classic Italian pastry dessert.

Which is too bad.  Because I’m the one who introduced this amazing treat to my roommate, prior to the Celiac diagnosis.

But, over the New Year holiday, my roommate, my friend Jenn, and I all ventured out to Jungle Jim’s International Market, and went on a small, tightly budgeted shopping excursion.  Because…it’s sort of become a tradition.  We wound our way through the store, finally reaching my favorite destination…the gluten-free aisles.

YAY!  Let my shopping begin.

And…breaking the budget bank happened almost immediately when my roommate spotted a big yellow box on the top shelf of the first row…

GLUTEN. FREE. CANNOLI. SHELLS.

Oh hell yes.  So…with most of the budget gone for this high ticket…the shopping got a little more picky.  But I was elated…because I had gluten free cannoli shells in my basket and could easily pick up Kite Hill ricotta to make a vegan cannoli filling.

The brand was Russo’s Gluten Free Gourmet.  Russo’s Gluten Free Gourmet came about from Neil Russo, a professional chef who was hard at work on gluten-free recipes, which he was striving to perfect after hearing about the many people connected to himself that were having a hard time finding food while on a gluten-free diet due to intolerance or Celiac disease.  After experimenting on his Italian bread loaves and Tiramisu, Russo was ready to give his food to the world.  He first introduced the gluten free food in his restaurant, where he got high praise.  Soon, he opened up Russo’s Gluten Free Gourmet.  And from there…the frozen versions of some of the classic Italian foods he perfected in gluten-free form.  So good, that people even would ask if he was certain it was gluten free.  All of Russo’s products are prepared in a strictly gluten-free facility.

We decided to do it on our least favorite “holiday”…Valentine’s Day.  And with all that in mind, after a quick jaunt out to the grocery store before the weather hit yesterday…I prepped the filling and made dinner (Smokey Zucchini Cakes with a Vegan Lemon Cream Sauce) and, afterwards, went to fill a cannoli shell for each of us.

I pulled the box of Russo’s Gluten Free Gourmet Cannoli Shells down from the top shelf of the pantry and went to work.  The shells looked amazing.  Golden and crisp…they weren’t broken, which was my main concern to be honest.  I was terrified they would be these fragile little rolls…but they held their own for sure. I put some of my vegan ricotta cannoli filling into a piping bag and piped it into each of the shells I had removed for us.  I passed one off to my roomie and then went to get mine.  She was already diving in.

And that’s when I knew…this was not going to live up to the expectations I had built up in my mind. Nope.  I was just finishing up filling mine and I look up and cautiously ask…”How is it?”

“The filling is delicious.  The shell…”  When her voice trails off…I know.  I know it can’t be  good.  “…is nothing special.”

Hmmm.  So, I settled in, wine glass in one hand, cannoli in the other.  And take a bite.  Or, at least I attempted to.  This gorgeously constructed, perfectly golden, durable gluten free cannoli shell is…solid.  It was the hardest thing to actually bite into.  It was crispy alright…to the point I was almost concerned about chipping a tooth.  And…trust me…these were marked as good through April…so they weren’t over their best by date.  UGH.  But, I was determined to have my cannoli, dammit.  It was Valentine’s Day.  I owed myself that much.  I finally managed to bite through it and then loud crunching ensued.  It was…really flavorless.  Didn’t taste like much.  Tough as bricks (literally).  And heartbreakingly disappointing.  I had this grand image of devouring cannoli on Valentine’s Day…just me, my wine, and my dessert smorgasbord (I had vegan and gluten free cookie dough from Annie May’s Sweet Cafe as well).  And here I was, with sub-par, tough-as-a-rock, cannoli shells.  UGH.  They were really too tough to eat.  My roommate and I persevered, said a prayer for our teeth…and then today, decided not to risk it again…and tossed them out.  I hate when expensive gluten-free products don’t live up to their price tag.  I wouldn’t pay $5.00 for these, and here I payed $16.  Just to trash them.  Since my filling was awesome, I did dig out my gluten-free cinnamon graham crackers and made up a new recipes…that was much easier to eat and much kinder to my teeth.

Sorry, Russo’s.  Your other products have been good…but these…were horrible.  And I was not impressed.  In fact, I was beyond let down and a little angry I paid that much for a product I didn’t enjoy.  Not even a bit.

Russo’s Gluten Free Gourmet Cannoli shells are not made of cement, as you might make yourself believe if you ever tried to bite into one.  In fact, these dessert vehicles are made from rice flour, corn starch, tapioca dextrin, xanthan gum, rice extract, water, marsala, eggs, butter, sugar, salt, and vegetable oil.

As for nutrition, I believe you will burn more calories than you consume just trying to gnaw through these, but with that being said, a serving of Russo’s Gluten Free Gourmet Cannoli Shells is 1 shell and there are 6 shells in the box.  This serving will give you 70 calories, 1.5 grams fat, 1 gram saturated fat, 0 grams trans fat, 15 mg cholesterol, 80 mg sodium, 14 grams carbohydrates, 0 grams fiber, 1 gram sugars, 1 gram protein.

When people conjure up an idea in their mind of what gluten-free foods taste like (cardboard, tasteless, etc)…this would definitely not convince them otherwise.  It has been awhile since I’ve actually been disappointed with a product.  And I am beyond disappointed with Russo’s Gluten Free Gourmet Cannoli Shells.  Take my advice…don’t spend your money on these.  Your craving for cannoli is not worth the letdown you will endure if you decide to break the bank and try these.  It’s not worth it.  Trust me.

Top 10

Another weekend has come and gone, and what a weekend it was.  This week, I had a fantastic meeting with my physical therapist.  She had me working so much more on strength and balance.  Afterwards, she did a strength test on me and discovered that my legs and hips are FINALLY equal in strength.  That took awhile.  And, with 6 days that day to the day the injury began to really bother me…she was very excited about my first upcoming double-digit run on Saturday.  10 miles was the goal…and I was both terrified and excited about it.

And then…my other hip/quad started to act up.  It felt like a muscle strain, but it was enough that got me worried about Saturday morning.  So, on Friday, I contacted Katie (my amazing physical therapist) and we went back and forth as to where the pain was, how it felt, and what I should do.  In the end, she told me to stretch, foam roll, and give the run a shot.  If I didn’t hit 10…then to try again the following week.

On Saturday morning, in air temps that felt like 1°F…I struck out on my run…on a steep hilly course…and got through it. Pain free.  No limping.  No pain.  Nothing.  It made me feel confident and amazing and strong…all at the same time.  And relieved.  This is an ongoing battle, for sure…but I needed that run.  More than I even knew until I was done.

Anyway…here is a list of 10 fantastic and wonderful things for this week…just because sometimes you find blessings…

1. A short, but amazing visit from my sister and nephew

Side-by-side or miles apart, we are sisters connected by the heart.  Seriously, my sister and I have always been close.  We have seen and done so much together.  We have been with each other through thick and thin.  Our bond is amazingly strong.  When we get together…watch out.  Insanity ensues.  She wanted to come and visit and chose Valentine’s Day weekend to do so.  And we had an absolute blast.  Added bonus…she brought one of her boys with her…Chace (age 6).  And we had SO much fun.  We braved the cold air and the snow…which Chace loved…we ate good food…we shopped…we played video games…we attempted to play Chinese jumprope, we laughed, snorted, and curled up together to watch a movie. Chace and I baked a special cake.  Chace told me that he loved me.  Do you know how much that made me want to cry (in the good, happy way)?  These are the moments I live for…and miss out on…because I live away from the rest of the family.  I hated it when they had to leave.  I cried a little this afternoon.  But, she’s already planning another trip…and bringing Landon (age 9) this time.  I love my sister.  And next time, the weather should be better so she and I can finally get that run in together.


2.  BOSU

I am now the proud owner of a BOSU.  I have wanted one for a long time now, but when this became part of my physical therapy, not having to go to the gym to do it became a bit of a priority.  The BOSU Balance Trainer is an exercise tool that targets multiple areas of fitness like endurance, strength, balance, and stability.  The squishy dome side on top offers a bouncy surface for everything from cardio to strength training.  Flip it over…and you work your on your core, lower body , and flexibility.  Due to lots of amazing Dicks coupons and a gift card…I didn’t pay anything out of pocket for this.  I love it. It’s pink…not blue like they normally are (because…princess).  And now I can work on the strength and balance exercises that Katie (the PT) gave me to work on…in the comfort of my own home.  SO happy!


3.  Feeling like one of the group again

IMG_20160213_103112[1]As I mentioned, this Saturday I was set to run 10 miles.  I had originally made plans to do this early to have a bit more time with my sister and nephew…but those plans didn’t pan out.  Probably for the best, with how cold it was.  All that being said, I got up and went out to run with the training group, and ended up striking out for the first 3.5 miles with people from my old running group.  It felt so good to be back out with them.  They ended up not tackling the heavy hill climb at Iroquois, but since I skipped hill day due to weather, I decided I needed to climb, even though my PT said to try to stick to flat roads.  Seeing them, running with them, talking to them…it all just lifted my spirits.  I hadn’t felt that good in a long time.  I knew I missed it…but I really miss them.


4. New Running Shoes

Sometimes something as simple as a new pair of shoes can make the world feel better.  Everyone knows that I love running in Newtons…but…I also love me some bright colors on my feet.  And the new version of my Newton running shoes are…silver.  Life’s too short to be stuck with boring running shoes.  And, as I was in need of new shoes, I went out to fleet feet and went to see Jackson (it was his last day there)…and tried on the shoes I originally went in for…the Adidas Pure Boost X (the ones that were made by women for women).  They were…not what I expected.  Very different.  And, while they felt good, I was a bit worried about lack of support on the arch of my foot.  So, Jackson went to work.  After I said no to the Adidas Energy Boosts (too much shoe)…he brought out a few more to try.  After I gave the Asics Gel Cumulus a try (liked them), and then the Brooks Women’s Launch 3 (loved them), and then the Nike Pegasus Air Zoom 32 (really loved them)…I did something I didn’t expect.  I went back to a Nike shoe.  Of course, I still have to really road test them, but they felt really good in store.  I have heard only good things about the Pegasus…so here’s hoping!  THANKS, JACKSON!

6. Being treated to a cake by Chace

Chace is like his Auntie KJ…he loves to cook and bake.  And this weekend, he brought the chef hat and apron I got him for Christmas and go to work baking a cake for dessert and to take home to his dad, brother, and sister.  It was a gluten-free funfetti cake (sprinkles rule!) with a strawberry frosting and decorated with some red sprinkles for the Valentines Day holiday.  He’s an amazing little boy in the kitchen, and he’s got quite a future as the chef he talks about becoming.  The cake…for the record…was super-moist…and super-yum!  Afterwards, we all snuggled on the couch and watched Pixar’s Ratatouille.


7. Morning smiles on an early, cold, running day

12742614_533123900192145_892004465850865809_nI have met some of the best people through running.  After taking an entire (basically) year off due to this nagging injury, it feels good to be out and running (even if it is slower than I would like) with people.  Sometimes, I end up alone and on my own.  But I always start with a group.  And in these groups, there are people who just make you feel welcome.  That’s how Melissa made me feel on Saturday, when I was standing around, arms crossed, just dreading going out in the cold.  She pulls me into a picture…and everything just felt better that morning.  Sometimes it is the smallest gesture that makes all the difference.  Thanks, Melissa!!


8. Gluten-Free and Vegan Cookie Dough

My local allergen-free bakery…Annie May’s Sweet Cafe…sold out, but reserved a cup of their cookie dough for me…because Valentine’s Day isn’t much fun when you’re single…so a big cup of cookie dough is a good meal choice, yes?  The hardest decision after getting it out of the fridge today was to have it with red or white.  HA!  I love my bakery!!

Forget Valentines Day.  Just give me chocolate.  Dark chocolate, especially.  I’ll love you for life.  And, trust me, I ate plenty of chocolate this weekend.  Because I love enjoying the sweeter things in life with the sweetest people in my life.  And we are a family of chocoholics.  It’s a lifestyle.

Heading into a new week…here’s hoping this upward trend in my recovery continues.  Here’s hoping that the winter weather goes away for good. Here’s hoping for many more good days over bad.

I am not afraid to be afraid…

determinedInjuries suck!  I don’t have to tell anyone that.  Not only do they keep you from doing what you love to do, but sometimes…they just refuse to go away.

Five days from now will mark an entire year since the initial problem I was having with my hip.  I know this, because I log what I do every day, and I went back through last year’s runner’s journal and discovered my last run was on February 17…I complained that it hurt to get back into my boots (I was at the gym on the treadmill due to weather)…and on the way home, it hurt like a mother just moving my foot from the accelerator to the brake pedal.

I guess I never mentioned that, because last year was rough…and there wasn’t much that I felt like blogging about.  Now I wish I had…because I’ve kept a lot of anger, sadness and pain to myself, whereas this could have been a journey.

All that being said…here I sit…almost an entire year later and my hip still flairs up.  I can’t do my hill repeat nights without being in pain the next day.  Running on the treadmill at the gym sucks.  It is painful (more than running outside, believe it or not) and boring.  I don’t know how people log miles on a treadmill.  I can’t focus on anything but those numbers…and how slow each freakin’ second is ticking away.

All that being said…there are days I wish I had one…because being outside sucks…and being at the gym sucks.  At least at home I could put in a movie or watch a show and maybe it wouldn’t suck as hard.

I’ve been back in physical therapy for a couple of months now.  For awhile, it was twice a week.  Then once a week.  I had an initial running analysis done by my therapist, Katie (who is awesome…and a running specialist and runner herself), by having her film me at different angles on the treadmill and going through each frame…showing me exactly why my leg ended up fractured last year when I first came back.  You see…my hip hurts, sometimes to the point that it makes me limp…sometimes to the point that standing up is a problem.  It changes from day to day.  Sometimes, I am pain-free.  There is no rhyme or reason to how these days pan out or what kind of a day it will be (except for post-hill repeats…that night and the next day will always suck).  In the initial analysis, she showed me how I was not trusting my right leg because of the hip.  It is my “Bambi leg.”  While it took about 3 seconds to push off with my left foot, when my right foot came down…a second, if that.  I was limping while running, and didn’t even realize it.  Strength in my right leg…next to nothing.  My body was so imbalanced…it was crazy.  So, the primary focus was strengthening…and then…very slowly…ease back into putting some mileage in on these legs.

And that’s what I’ve been doing these last couple months.  Physical therapy, strengthening, then…running.  I’m not focused on speed or time right now.  It’s all about getting that mileage in…rebuilding that endurance.  It’s hard to tame the speed demon though.  Muscle memory and all…I put on those running shoes and I just want to fly.

I just can’t.  Usually around Mile 4-6 on a long-ish run, the hip will seize up or begin to hurt.  And then I’ll hurt for the rest of the day…if not too bad, I do the plyometric exercises that Katie assigned me.  If it’s bad…I skip them and opt for some rest.  This journey has been long, tedious, tiresome, and I’m still on it.  And I think that’s the most difficult thing for me.

When this all happened, I figured I’d be better…because everyone I know who has had a torn hip labrum has gotten a shot, had surgery, and just…gone back to what they were doing.  But my Cortisone shot didn’t work…and surgery…not an option…and the whole thing is just this really rocky road that I keep stumbling around on, catching my footing, and then stumbling again.  I am a big ball of emotions…anger, frustration, hope, sadness, pain, fear, redemption, courage…it’s all there.

I’m not better…but I am on the road to being better.  I don’t know if I will ever not have some sort of pain.  I admit, I panic anytime something else flairs up…and with this cold weather, you better believe I’ve had some moments.

The long of the short of it is…I’m not where I used to be, I may not ever be where I used to be.  But I am doing the best I can with what I’ve got.

On Wednesday, I saw Katie again and she reassessed my strength, finding that my right and left legs have equaled out.  Got that strength imbalance fixed.  In fact, the hip flexors and adductors are actually stronger than the outer muscles now.  Go figure.  With all that being said, and with my mileage continuing a slow climb…Katie will see me one more time at the end of the month.  After that…it will be on an “as needed” schedule.

It freaks me out…because a part of me likes having these sessions because I feel better coming out of them.  I feel more confident. But I also know…I can’t always have someone there holding my hand.  I have to do this on my own.  I have to once again find that strength, that courage, and that will…and I have to let go…of doubt, fear, and negativity.

It won’t be easy.  It never is.  But I know me…I’m determined.  Very few of my runs may ever be fast.  Very few may ever be pain-free.  I’ll take the good runs…and I’ll use the bad runs to focus on getting stronger…

But, yes…it is time to let go…it’s time to hit that pavement again…perhaps a little scared…perhaps a little doubtful…but stronger…and better.

…just not faster.  At least…not yet.

Face your fears…and you won’t fear them anymore.  You’ll learn from them.

Every run…every day…is a learning experience for me.

Product Review: Freedom Foods Chewy Oats, Apple & Cinnamon Granola Bar

It was at the Gluten-Free Food Allergy Fest in Indianapolis, Indiana this past October that I was introduced to one of Freedom Foods newest products. Now, I’m already a huge supporter of the amazing, healthy, gluten-free products from Freedom Foods, but what I didn’t know up until that point was that they have moved beyond just cereals and (the best thing ever) Smudge (a dairy-free and nut-free version of Nutella).

I made a purchase of the Freedom Foods Fruity Rainbow Rocks at the expo, and for my purchase (of umpteen million boxes), they threw in a free box of one of their new (at the time) products…their Freedom Foods Chewy Oats, Apple & Cinnamon Granola Bar.

NICE!!  As I have been a huge fan of everything I have tried from Freedom Foods, this was a nice treat and a huge added bonus for me.  I’m really cautious when it comes to buying protein bars and granola bars, as so often they are just laden with processed sugars, preservatives, chemicals and all that stuff that does the body no good.

But not so when it comes to Freedom Foods.  Their food should always find a spot in your pantry, bag, shopping cart…because their products are all free from gluten, low in salt, a great source of fiber, are non-GMO project verified, have NFCA Certification, are vegan, are kosher, and contain no artificial colors, flavors or preservatives.  Basically…what you see is what you get.  And I absolutely LOVE that.

In fact, Freedom Foods offers a variety of products, although only a few items are available in the United States at the moment…and most of these include cereals, which, for the record, are made in a dedicated and specially built allergen-free facility in the Riverina region of New South Wales, in Australia.  As Freedom Foods was specifically developed to make allergen-free foods, they test every batch made in their facilities, to the most stringent levels possible, leaving no doubt that the Freedom Foods products you pick up will be free of the allergens that are necessary to avoid.

LOVE THAT TOO!

Because we live in a world where it’s not enough to just be health conscious.  Now we have to be allergen conscious too.  With the growing number of food allergies and intolerances, it is nice to find a company that really proves that it is dedicated to creating products that are safe to consume.  Freedom Foods has been around for over 20 years, making great-tasting and nutritious allergen-free food.  I can attest to this, as I am a huge fan of the products I have had from them thus far.  All of their products adhere to the strict guidelines laid out by Australia’s food industry, meaning all their products are non-GMO.  They even test for GMOs just to make sure.

So, here I am…4 months after the GFFAF and just now tearing into the box of free goodies from a company that I adore and trust.  What is wrong with me?  Well, just been working my way through the pantry and trying to do so systematically.  But this was to be paired with my container of Chocolate Chia Superfood Pudding after my gym sessions this week.  And, I admit, I was a small bit concerned that I wouldn’t like it, even packing a backup bar…just in case.

Back up bar wasn’t necessary though.

The Freedom Foods Chewy Oats, Apple & Cinnamon Granola Bar was…simply put…fantastic.  It’s the perfect snack as it’s small and easy to pack into a purse or pocket…ideal for an on-the-go breakfast or when that snack attack happens mid-afternoon, yes?  Hey…it happens.  Pretty much every day for me.  And having something healthy to reach for, rather than candy or sweets, is good for me.  Because, we all know I have quite the sweet tooth.

Well, not only does the Freedom Foods Chewy Oats, Apple & Cinnamon Granola Bars fulfill any sweet craving, I don’t feel guilty noshing on it either.  Not only are they low in salt, with no added artificial colors or flavors, but they are also free of gluten, wheat, almonds, hazelnut, walnuts, dairy, soy, and eggs…and instead contain a whole heap of wholegrain oats, tasty apples, raisins, and sweet cinnamon.  They prove to be a great source of filling fiber.  And…guess what?  They taste amazing.  No backup bar required.

I loved these bars at first bite.  They are sweet, without being sugary.  They are crumbly and chewy, and not dry.  They are packed with fruit flavors and have amazing texture with the coconut, oats, apples and raisins.  Seriously…love.  LOVE.  And, like I said, I can be pretty picky about my bars.  But these are a dream.   A serious granola bar lovers dream.  I devoured them the past two gym days if that tells you anything.

So, now that I’ve raved over the Chewy Oats, Apple & Cinnamon Granola Bars from Freedom Foods, let’s talk about their ingredients!  These bars are made from whole grain rolled oats, glucose syrup, rice cereal (rice flour, yellow corn flower, psyllium husk, whole grain sorghum flour, sugar, canola oil, salt, sunflower lecithin, sultana raisins, glycerin, erythritol, dried apple (contains sulfites), canola oil, resistant dextrin inverted sugar, coconut (contains sulfites), maltodextrin, natural flavor, sunflower lecithin, and sodium bicarbonate.

And as far as that coveted nutritional information goes…Freedom Foods Chewy Oats, Apple & Cinnamon Granola Bars have amazing stats.  Seriously.  A serving size is one (1) bar, and there are 6 bars in each box.  This one bar will provide you and your body with 130 calories, 3 grams fat, 0.5 grams saturated fat, 0 grams trans fat, 0 mg cholesterol, 10 mg sodium, 21 grams carbohydrates, 3 grams fiber, 6 grams sugars, and 2 grams of protein.  Filling…but filled with good stuff, that’s for sure.

I love how Freedom Foods continues to hold itself to the highest of standards when it comes to their products.  Their focus on a better and healthier diet, through the food they produce, is evident in the products that they put out on the shelves.  I have yet to be let down.  Totally amazing.  Totally delicious.  And yes…filling.

I’m sold…for life.
