Recipe: Gluten Free Strawberry Breakfast Cake

It was one of those moments where you receive an e-mail with a recipe…and you’re out of town visiting a friend, who happens to keep gluten-free goodies at her house just for you!  And every ingredient needed for said recipe that caught your attention is already in her pantry, fridge, or freezer.

To me, that sounds like a sign to make something for sure.  And as it is traditional for the two of us to cook at least once together when visiting…this recipe seemed to fit the bill.

And why did it catch my eye?  First…the word “breakfast” was involved.  We all know that my favorite meal of the day is breakfast.  Secondly…the word “cake.”  Yes…CAKE FOR BREAKFAST!

I have actually made this recipe twice now…and found the flour I used for it the second time (Mina’s Purely Divine Gluten Free All-Purpose Flour) worked a lot better than the Trader Joe’s Gluten Free All Purpose that we used at Jenn’s.  I served this up to my parents, my sister, and my nephews…and all loved it as much as my roommate, Jenn, and I did.  So…this is forever being made.

The original recipe was from Gluten Free on a Shoestring…posted by Udi’s Gluten-Free.  The recipe below…is how I make it!

Cake for breakfast…it sounds so sinful, but, even more importantly…it’s delicious.

Recipe: Gluten Free Strawberry Breakfast Cake

Servings: 16
Time: Prep 10 minutes; Bake 25 minutes

Ingredients:

  • 1-3/4 cups all-purpose gluten free flour (I used Mina’s Purely Divine Gluten Free All-Purpose Flour)
  • 1-1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup sugar
  • 4 tablespoons unsalted butter, at room temperature (I used Earth Balance)
  • 1/2 cup + 1 tablespoon vanilla Greek yogurt, (If dairy-free, use soy/almond/coconut yogurt) (you make need to add more to mix)
  • 2 eggs, beaten
  • 1-1/4 cups fresh roughly chopped strawberries

Directions:

Preheat your oven to 350°F. Grease an 8-inch square baking pan, then line it with crisscrossed sheets of unbleached parchment paper, overhanging both sides of the pan. Set the pan aside.

Make the batter.

In a large bowl, place the flour, baking powder, baking soda, salt and sugar, and whisk to combine well.

Create a well in the center of the dry ingredients and add the butter, yogurt and eggs, mixing to combine after each addition. The batter will be thick.

Add 1 cup of the chopped strawberries and mix gently until the strawberries are evenly distributed throughout the dough, taking care not to crush the strawberries.

Scrape the batter into the prepared pan and spread into an even layer with a wet spatula. Scatter the remaining 1/4 cup chopped strawberries over the top of the batter, pressing them gently into the batter.

Bake the cake.

Place the pan in the center of the preheated oven and bake until a toothpick inserted in the center comes out clean and the top is very lightly golden brown (about 25 minutes). Remove from the oven and allow to cool in the pan for 10 minutes before lifting out by the overhung parchment paper and placing on a wire rack to cool (peeling off the parchment from the bottom of the cake if possible). Allow to cool completely before slicing into 16 squares and serving.

**NOTE: I store this in the fridge and give it a 20-30 second heat up in the microwave before eating.  It is DIVINE!**

This cake is not just for breakfast, but it is a rather healthy, low-calorie, and amazingly moist and delicious way to have breakfast.  Nothing better than having your cake (for brekkies) and eating it too!  I was so impressed by this recipe, and totally made only a few slight adjustments to the recipe, but it came out perfect.  And I intend to make it again very soon.  It’s easy, it’s delicious…it’s what breakfast should be.

One of my fondest memories of my roommate’s late father was taking him to the ballpark on Thunder Over Louisville day here in Louisville, Kentucky.  He had just been re-diagnosed and started treatment for his second round of prostate cancer.  And he was having a good day.  He ordered a foot-long brat and enjoyed that, then bought some German roasted nuts to share with us.

Little did I know that Cuisine Cube was going to bring those memories back to me with the simple inclusion of one product in their March 2015 cube.

Before I explain, let me begin by telling you a little bit about Cuisine Cube.  Cuisine Cube has gone through some changes as of May.  No longer do they strictly only offer gluten-free cubes.  In addition to their gluten-free option, they now also offer Artisan and Vegan cubes as well.  The Artisan cube means that you have no food allergies and foods that contain common food allergens will be included.  The Vegan cubes contain products that are dairy and animal free.  And, they still have the Gluten Free cubes, which will have products that contain no gluten or wheat.  These box subscriptions start at $34.99/month.  And, part of the charm is that you will receive 5-6 full-size (not sample size) products.  WOOT!  These usually fall into every meal category for the day: breakfast, lunch, dinner, snack and dessert…with an added bonus from time-to-time.  So, if you’re really interested in being introduced to the smaller, lesser-known, artisan companies, give Cuisine Cube a try!  I can’t wait to get back to receiving these in the mail.

Tucked into my March Cube was the product that surprised me when I tried it last night as my dessert.  Sometimes it takes me a little while to get around to products, but I always do it.  They all serve a purpose.  And, even though Cuisine Cube presented this product as the Snack portion of their cube, it can be so much more.

I’m talking about OLOMOMO Masala Maple Pecans.

OLOMOMO Nut Company launched in one of my favorite places on Earth – Boulder, Colorado, in 2008 with one simple mission plan: be The Good Nuts and create one of the first socially and environmentally conscious nut companies.  Their beginnings were humble, selling samples at the Colorado farmers markets, and then, eventually hitting the big time with a national debut on the Cooking Channel.  OLOMOMO is quickly becoming a national brand.  Currently, the product is available through natural grocery stores like Whole Foods and in coffee shops and smoothie shops (like Smoothie King) across the country.  OLOMOMO is committed to developing fun, healthy products that infuse exotic flavors with familiar flavors, enticing your taste buds more than you thought possible.  They use simple, real, natural ingredients, including fair trade, organic and sustainable packaging when possible.  OLOMOMO is also the first US nut snack company to become certified as a B Corp for their socially and environmentally sustainable business practices.  What’s not to love?  Even more, what’s not to love about a company that strives to inspire people to be more nutty, good and adventurous.  Now you’re speaking my language!

But, how do they taste?  Well, the OLOMOMO Masala Maple Pecans look like the German roasted nuts you see around ballparks and in the malls during the holidays.  My biggest concern was going to be how well the garam masala played with the flavor.  Garam masala is an amazing Indian spice blend that contains cinnamon and cardamon tones.  I love Indian food…I just wasn’t sure how well this flavor would play with the coating on the nuts.  The answer…was brilliantly.  The nuts, even with the hint of garam masala, have more of a sweet than savory flavor…and it isn’t a spicy tone either.  A lot of people hear the word “Indiana food” and immediately imagine everything to be at volcanic levels of spice.  This is like adding cinnamon to your nuts.  Seriously, the combination of cinnamon, cardamom, clove, and maple sweeten up the nuts while the dash of salt gives it that perfect balance salty/sweet combination.  And, yeah, they taste dead up like those German roasted nuts.  Except…better.  Yep…better!!  I’m addicted to them and sad that they are only available in 3.25 ounce bags at the moment.  Don’t let the strange combination of maple and Indian spices throw you off.  These are truly a delightful treat that will entice your taste buds and leave you reaching for more.  It’s a good thing I weigh out all portions of foods I consume…

These are great by the handful, but would really spice up a salad or some fresh yogurt as well.  Go nutty!  Be adventurous.  That’s the entire point.

Let’s discuss ingredients, shall we?  OLOMOMO Masala Maple Pecans are made with pecans, organic evaporated cane juice, fair trade organic maple syrup, garam masala, and love.  YES…my second product in a week that includes LOVE as an ingredient.  It has to be good!!  Food made with love is honestly really amazing food.

Even more enticing is the nutrition information of OLOMOMO Masala Maple Pecans.  This snack is a nutrition powerhouse.  A serving size is 1/4 cup (30 grams) and there are about 3 servings per package.  This one serving will provide you with 190 calories and 18 grams of (healthy) fat.  You will be devouring 120 mg sodium, 9 grams carbohydrates, 2 grams dietary fiber, 6 grams sugars, and 2 grams of protein.  These nuts are all natural, gluten free, and cholesterol free.

Trust me…this little snack is so addicting.  If you aren’t like me and dish out a serving, you could easily eat the entire package.

I probably have seen OLOMOMO nuts at my Whole Foods and just never given them a second glance.  Or, perhaps my area doesn’t carry them.  But now that I know they exist, I’ll be searching for them for sure.  Without this introduction by Cuisine Cube, I’d be a little less nutty today.  Spice up your nut habit…try OLOMOMO!

When a product goes by the name “Laughing Giraffe” I take notice.  Funny thing though…I’d never heard of this brand before.  Trust me…if I had, it would probably have already been a staple in my pantry.

This brand and product came to me courtesy of my monthly subscription to Cuisine Cube.  I know most of you, by now, are familiar with this service, but let me give you a quick rundown.  For as little as $29.99/month, you can have Cuisine Cube delivered to your door . What this service provides is 5-6 gluten-free, full-size products that are made by local and smaller, artisan companies, rather than those that you can find at the average grocery store.  It has introduced me to so many new and delightful products.  Each box contains a breakfast, lunch, dinner, snack, and dessert product…and then, sometimes, an extra bonus item.  Who doesn’t love a little something extra, right?

So, April 2015’s Cuisine Cube featured Laughing Giraffe Organics Cherry Ginger Snakarola for the Breakfast/Snack item.  I was immediately intrigued.  Loved the name of the company and the name of the product.  And I love a good granola…and this looked like it was quality in a little pouch.  So, yeah…excitement.

Laughing Giraffe Organics is a family run business owned by the Gilmour family, based out of the San Francisco Bay Area.  They entered the health food business out of a desire to learn about healthy eating and how it could improve their own well-being.  Laughing Giraffe Organics mission is to provide quality nutritional snack foods that taste great and only use the purest organic ingredients that are nutrient dense and minimally processed.  I am loving this already.  Basically, they make foods that they believe will satisfy hunger without detracting from quality of life.  This is a company that truly wants you to eat well and live better.

Who can’t get on board with that, right?

It was my 5:30 a.m. spin class day at the gym yesterday.  I love my class, but it’s an hour long, and I have to go home, shower, and get everything together to get out the door to work.  It makes for a huge time crunch.  SO…in order to have something my roommate can eat and that I can take with me to work, it is often something like a Greek yogurt parfait or something of the sort.  This was the case this past Wednesday, and so, before heading off to the gym, I made up two bowls of my infamous breakfast parfaits…Greek yogurt, granola, and fresh berries.

I try to keep healthy (ie: low sugar) granola in the house, and since Cuisine Cube had provided me with some, I figured I’d take full advantage on such a chaotic morning.  I washed the berries and prepped the to-go bowl and the nice bowl (for the roomie to eat at home) for the actual assembly of the parfaits.  I put a small handful of the granola in each bowl, then spooned over the Greek yogurt, then added the berries.  Repeat.  Then finish off with another handful of granola.  It’s a filling, amazing, delicious and nutritious way to start the morning.  Of course, I had to try this granola on it’s own, as well as as a mixer with the parfait.

The Laughing Giraffe Organics Cherry Ginger Snakarola is a better granola.  It’s soft (like Van’s Granola), and packed with nuts and and tons of flavor.  I was a bit concerned with the ginger in the name of the product, but the ginger that is included in the mix isn’t candied or overwhelming.  It’s blended in perfectly and offset by the salty-crunchy nuts.  Then…to add to the decadence…dried cherries.  Honestly, it was a perfect blend for me.  Almost like a muesli while still being a granola.  It was amazing.  And it could be used over dairy-free (or regular) ice cream, in cookies, or eaten straight out of the bag…among other tings.  That’s the great thing about a fantastic granola…it can be so versatile.  The Laughing Giraffe Cherry Ginger Snakarola is all of that.  And…it’s addictive…in a good, healthy, and delicious way.

So, let’s take a look at the simple, basic, organic ingredients that go into each pouch of Laughing Giraffe Cherry Ginger Snakarola, shall we?  This granola is made up of organic walnuts, organic pecans, organic agave nectar, organic dried cherries, organic ginger powder, organic vanilla extract (gluten-free) and Himalayan pink salt.  This product compliments a Paleo diet, has a low glycemic point, is nutrient-rich and power-packed, is a fantastic source of healthy fats, and is packed with fiber to keep you feeling full.  This product is gluten-free, certified organic, raw, vegan and non-GMO.

As for nutrition information, don’t be frightened.  Remember much of this granola is made up of healthy nuts, which, are higher in calories and fats (but healthy…just keep to the serving size or below!).  A serving of the Laughing Giraffe Cherry Ginger Snakarola is 1/2 cup.  This serving will give you 290 calories and 25 grams of fat.  You will also be taking in 50 mg sodium, 13 grams carbohydrates, 8 grams of sugars, 3 grams of fiber, and 8 grams of protein.  This granola is cholesterol free.

It was definitely love at first bite with this granola.  It wasn’t too sweet, nor was it spicy.  It was crunchy without being over toasted.  And it was soft and delicious.  Filled with the best sort of foods for healthy and fitness…yeah…this was a definite win.  Now to get more for my pantry.  Perhaps in another flavor.  Thanks to both Laughing Giraffe Organics and Cuisine Cube for this fantastic product!

Product Review: Jessica’s Natural Foods Gluten Free Chocolate Hazelnut Granola

It was Whole Foods and Cuisine Cube that got me hooked on the amazing and healthy granola that I have more than indulged in since first discovering it in the breakfast aisle at my local Whole Foods.  This granola is Jessica’s Natural Foods.  I haven’t met one of her granola’s that I haven’t liked.  And the one I am reviewing today is my third variety I have tried.

This speaks very highly of any product when I keep going back to the brand.  And let me tell you, when it comes to gluten-free granola, Jessica’s Natural Foods does it right.  You’ll want to eat it straight out of the bag.  I’ve done it…while sprinkling it on top of my fruit and Greek yogurt parfaits.

As stated above, the granola I chose this time around was the Gluten Free Chocolate Hazelnut Granola from Jessica’s Natural Foods.  Jessica’s Natural Foods was started by Jessica Mindell, an avid baker with a background in engineering.  Back in 2009, her husband discovered that he was gluten-intolerant and said that he missed oat-based granola.  Once Mindell was able to find gluten-free oats and a certified gluten-free facility, she was able to launch her healthy, delicious granola.  Since then, her bags of granola have expanded to over 25 states.  Mindell’s passion for natural foods means that she always bakes with simple, pure ingredients and keeps health and nutrition at the forefront of her products.  How can you not love that?

Originally called Motor City Crunch, Jessica’s Natural Foods Gluten Free Chocolate Hazelnut Granola is just what it sounds like.  Toasted oats that are loaded with cocoa powder, chocolate chips, and hazelnuts.  Think…Nutella in gluten-free granola form.  Does that peek your interest?  It did mine!  This was the original flavor that I had wanted to try when my roomie (Cathy) and I first discovered this brand at Whole Foods.  It was the flavor she waved at me, then selected a different flavor in the end.  Talk about a tease.  That wasn’t happening this time.  When we needed granola to go with the 2 pounds of fresh strawberries we received from the CSA bin, I said that the Chocolate Hazelnut Granola from Jessica’s Natural Foods would be the perfect match.  Cathy couldn’t argue with that.

So…this week’s breakfast…Greek yogurt, fruit and granola parfaits.  One of my favorite things in life.  For real.  Building these is simple.  A little granola on the bottom, then some Greek yogurt, a drizzle of honey or agave, fresh berries.  Repeat.  Then top off the last of it with the granola and honey/agave.  It makes a filling, fresh, nutritious, and amazing breakfast.  Trust me.

And, let me tell you, I was completely right about this granola.  It is exceptional.  I mean, completely indulgent and sinful.  But, it isn’t bad for you at all.  The rolled oats are toasted to a great crunchy texture, and coated with chocolate.  Hazelnuts and semi-sweet chocolate chips are incorporated throughout.  And when the chocolate chips hit your tongue, they melt.  It is…A-MAZ-ING!  I can’t think of a time I fell so in love with the flavor of the granola.  But this…this was true love.  Love at first bite.  Love in a Nutella-like formation.  Love for a food might seem strange, but, until you taste what I have, you won’t know the true level of obsession you might develop for a granola.  Honestly.  The absolute best.  THE BEST I have ever tasted.  I would eat it in a bowl on its own, on a parfait, over dairy-free ice cream, by the handful, spoonful, or 1/4 cup full.  If you love chocolate…this will satisfy your tastebuds.  Bite after bite after bite.

Let’s discuss the ingredients that go into Jessica’s Natural Foods Gluten Free Chocolate Hazelnut Granola.  This granola is made from certified gluten-free rolled oats, semi-sweet chocolate chips, organic honey, brown sugar, expeller pressed sunflower oil, hazelnuts, ground flax seed, coconut, cocoa powder, maple syrup, pure vanilla extract, sea salt, cinnamon, and tocopherols (natural vitamin E).  This granola is gluten free, cholesterol free, kosher, and non-GMO.

As for nutrition, for being a chocolate based granola…this is actually really, really impressive.  A serving of Jessica’s Natural Foods Gluten Free Chocolate Hazelnut Granola is 1/4 cup.  This serving will provide 135 calories and 7 grams of fat.  This granola will provide you with 30 mg sodium and 7 grams of sugar.  That’s amazing for a granola.  You will also be consuming 18 grams carbohydrates, 3 grams of fiber and 3 grams of protein.  So, yes…you will feel full after eating it.  As this is lower in sugar than most granola, that helps keep you satiated as well.

Love is chocolate.  Breakfast love is chocolate for breakfast.  Jessica’s Natural Foods totally gets this and understands that sometimes we just want something decadent, but healthy, for breakfast.  And that is what you get in Jessica’s Natural Foods Gluten Free Chocolate Hazelnut Granola.  It’s a healthy, filling treat that will definitely liven up your breakfast, your snack, your lunch, your dinner, or even your dessert.  Jessica’s Natural Foods does it right…and nothing is more right than this Chocolate Hazelnut Granola.

Honestly…best gluten-free waffles you can find in the freezer section of the grocery store.  For real.  Best gluten-free French toast sticks too.  Some of the best boxed gluten-free pasta meals.  Amazing gluten-free crackers.  Yes…Van’s has impressed me each and every time they have put out a product for the gluten-free market.

I won’t lie.  I have a bit of a Celiac crush on them.

Shhhh.

So, this past week, I was out and about at Target, spending all my money on all the seasons of Game of Thrones (my newest obsession!) on Blu-ray, when it occured to me that my roomie and I didn’t have any gluten-free granola in the house.  Considering at least twice a week I make delicious breakfast parfaits that require said granola, this had to be fixed.  And, wouldn’t you know it, Target recently started carrying a good amount of gluten-free breakfast things.  Technical term…things.  So, the two of us meandered over to the grocery section to see if we spotted anything we liked.

Our eyes immediately went to the KIND brand and we snagged a bag of it and then prepared to move on.  But my wandering eyes spotted something else.  Van’s…granola?!  What was this?  I didn’t even know that existed.  I didn’t know it was out in the wild!  And now I really, really wanted to try it.  Why?  Because Van’s Gluten-Free = OMGYUMMY!

So, without any hesitation, the pack of KIND granola we settled on was back in place and the bag marked NEW carrying that infamous red flag that reads: VAN’S…now made its way into our little shopping basket.  Game of Thrones…granola.  Do we know how to party or what?!

So, one morning this week, I got everything geared up to make big, big breakfast parfaits.  I had the new granola to try…I had kiwi fruit from my CSA bin…I had Greek yogurt.  So…the assembly began…but not without me first sneaking a taste of the granola.

Bad idea.

Very, very, very bad idea.

Because one taste of the Van’s Gluten Free Blueberry Walnut Soft Baked Whole Grain Granola Clusters and I was beyond hooked.  Holy Moses and the Gluten Free Gods!  I mean…think of the most fantastic Rice Krispies treat you have ever had…then multiply it by at least ten.  Maybe more.  This soft baked granola is exactly what that tastes like.  Trust me.  I used to devour Rice Krispies treats whenever possible.  This is a little bit sticky, very soft and chewy, packed with sweetness, with a hit of the dried fruit and the savory nuts to bring it balance and amazing texture.  I wanted to eat the entire bag and not share.  Not even put it in a parfait.  It was sheer perfection the way it was…straight out of the bag.  So much love.  One big gooey clump of granola…one very happy Celiathlete.  Beyond amazed.  Beyond impressed.  Simply put…I was blown away.  This is one of the only granola I now will have in my pantry.

One of those reasons is how much Van’s actually cares about what they put into their products.  And the Van’s Gluten Free Blueberry Walnut Soft Baked Whole Grain Granola Clusters are no exception.  They even put on their label: “Ingredients: (That we are proud of!)”.  WINNING!  So, what goes into the Blueberry Walnut Soft Baked Granola Clusters?  Glad you asked!  This granola is comprised of gluten-free whole grain oats, brown rice syrup, walnuts, invert cane syrup, non-GMO expeller pressed canola oil, dried blueberries, cane sugar, unsweetened coconut, honey, flax seed, gluten free oat bran, almonds, vanilla extract, sea salt, and mixed tocopherols for freshness. They are gluten-free, dairy-free, egg-free, cholesterol-free, kosher, made with whole grains, and contain no artificial flavors or colors.

As far as nutrition goes…loving the stats on the Van’s Gluten Free Blueberry Walnut Soft Baked Whole Grain Granola Clusters.  One serving is actually a whopping 1/3 cup.  In this serving, you will be taking in 130 calories and 5 grans of fat.  You will also be provided with 30 mg sodium and only 6 grams of sugar.  This serving will also dish up 2 grans of fiber and 2 grams of protein.

And, trust me…you’ll just eat it straight out of the bag.  You won’t want to stop.  You’ll wish you had dished out a portion size.  And then you won’t care.  Because…just wow!!  WOW!!  Another winner in the Van’s Gluten Free product line up.  I’m going back for more of this granola this week.  Because, yeah, we polished it.

I don’t know why…but I have turned into a granola freak over the past couple of years.  I absolutely love the stuff.  And it can be eaten on its own, on top of Greek yogurt, put over ice cream, mixed with fruit, etc.  I love granola and love trying new versions that I find out in the markets.  When it comes to the gluten-free options available in my area, I think I’ve pretty much tackled them all.  Every brand.  Every flavor.  I’ve got it covered.

So, when I take a trip to Birmingham, Alabama, to visit my family, one of the required stops I make is to a natural foods market called Organic Harvest.  It was on one such trip that I stopped in and spotted some gluten-free granola I was unfamiliar with on one of the shelves.  Therefore, I put it into the “Organic Harvest Budget” and made it one of the items I brought home with me.  I try to aim for things I don’t see in my area…so this fell right into that category.

The brand was New England Naturals Organic Gluten Free Unsweetened Berry Coconut Granola.  There were a few flavor options on the shelf from New England Naturals…but this had a few things working for it…the word unsweetened…the word coconut…and the word berry.  I happily snagged the white and pink package off the shelf and dropped it into my basket.  After a little more shopping…it was time to check out.  And, when I left Alabama, this bag of granola made the journey with me.

And then sat, dormant, as I wasn’t doing anything in the mornings with granola.  Until recently.  Because I’m really changing up not only workout plans, but also the diet.  And some mornings…a fruit, yogurt and granola parfait are on the menu.  YAY!  Finally getting things back on track.  And I have been working my way through the packs of granola that I have acquired over the past few months.  Some I have liked more than others.  But now…it was time for the New England Naturals Organic Gluten Free Unsweetened Berry Coconut Granola to either wow me or underwhelm me.

Yesterday…was the first chance it had to shine.  I had picked up some strawberries at the grocery store over the weekend, along with some Greek yogurt.  So, I began building the parfait…starting with a small hit of the New England Naturals Organic Gluten Free Unsweetened Berry Granola…then yogurt…honey…fruit…repeat…top with a handful of granola…drizzle honey…enjoy!  Simple.  And one heck of a breakfast if you ask me.  Nutritious, filled with great nutrients, and hearty thanks to the granola.

I loved quite a few things about this granola.  For one thing, the New England Naturals Organic Gluten Free Unsweetened Berry Granola wasn’t clumpy.  No large clusters to break apart.  It was just every little piece stood on its own.  Which means to me that this is not loaded with sticky sugars and syrups that would cause things to bind together.  YAY!  Second of all…because it is unsweetened, the flavors that are in the bag are what you get.  If a granola can’t stand on its own when it comes to flavor…then…I feel it is failing to do its duty.  The freeze dried blueberries and raspberries really bring out the tangy nature of this granola.  The coconut chips add a depth of flavor.  And the oats…they bring the texture.  I felt all the components really worked well together and when put into one bite did make for…a perfect bite.  Subtle flavors…but just enough to accentuate, not detract from the rest of the dish.

What I love about New England Naturals is that they believe that gluten free products should be delicious and have nutritional value.  What a concept!!  So often, a gluten free product is a calorie and fat laden mess, making up for the lack of gluten in the product.  It is great to see a company striving for better health in gluten free goods.  This is something I can totally get behind.

With that being said, let’s go ahead and take a look at the ingredients that go into the New England Naturals Organic Gluten Free Unsweetened Berry Granola, shall we?  This granola includes organic gluten free oats, organic expeller pressed canola oil, organic coconut, organic raisin puree, organic corn meal, organic flax seed, organic freeze dried raspberries, organic freeze dried blueberries, organic vanilla flavor, and salt.  This granola is non-GMO, kosher, gluten-free trans fat free, and cholesterol free.  It is a great source of iron as well!

As far as nutrition information goes, a serving of the New England Naturals Organic Gluten Free Unsweetened Berry Granola is 1/2 cup.  That’s a lot of granola.  I use half of that in each parfait.  But, if you were to eat an entire serving, that would provide you with 250 calories and 12 grams of fat.  Much of that fat count is going to be provided by the oils, seeds, and the coconut.  With the exception of the oil, the rest of it is a healthy fat.  A serving of this granola will also dish up 60 mg sodium and 3 grams of sugar.  How amazing is that?  So often, granola is just laden with sugar and I have to really pay attention to it as I’m trying to cut back on processed sugars.  But with this being left unsweetened, that sugar count stays low.  Love that.  And, finally, you will be taking in 5 grams of fiber and 7 grams of protein, making this not only nutritious, but also filling.  I love eating a gluten-free food and not feeling famished only an hour or so later.  No artificial fillers here either.  This is naturally filling and it lasted me through the morning for sure.

If you like granola, but are tired of the sugar-fests out there, I highly recommend the New England Naturals brand.  With less sugar and still packed with flavor, you really can’t go wrong.  I am definitely enjoying using it this week on various morning dishes.  Breakfast is definitely being done right.  I hope I can locate some of this granola in my area…or else I’m stocking up next time I’m down visiting my family!  Without a doubt…one of the best low sugar options out there.

On some very rare occasions, a product that arrives in my Cuisine Cube is actually something I am familiar with…or…perhaps…even might have tried before.  When it comes to the Non-GMO Project cube, which arrived in October, I was actually surprised to encounter a brand that I had already tried.  Albeit, this was not a flavor I had tried from this brand, but it is readily available at my local Whole Foods!  Like I said…this doesn’t happen often…but sometimes it’s a comfort to find a small brand that you have familiarized yourself with before.

This product…was the Gluten Free Chocolate Chip Granola from Jessica’s Natural Foods.  Jessica’s Natural Foods was started by Jessica Mindell, an avid baker with a background in engineering.  Back in 2009, her husband discovered that he was gluten-intolerant and said that he missed oat-based granola.  Once Mindell was able to find gluten-free oats and a certified gluten-free facility, she was able to launch her healthy, delicious granola.  Since then, her bags of granola have expanded to over 25 states.  Mindell’s passion for natural foods means that she always bakes with simple, pure ingredients and keeps health and nutrition at the forefront of her products.

Prior to this Cuisine Cube…I had picked up a pack of the Jessica’s Natural Foods Gluten-Free Pecan Almond Granola.  My Cuisine Cube stepped it up a notch by including one of my most favorite things…chocolate!  Chocolate chips to be exact.

With all the time that I’ve spent traveling and racing these past couple of months…and the holidays taking over life in general…I haven’t had much time to explore some items from some of my Cuisine Cubes.  That being said, I’m making a push currently to polish off most of the products that have made a home in my pantry.  I need to be more pro-active about these products…and that’s not a bad thing.  It is definitely getting me to branch out and try some things I had been content to let sit for awhile.

This past week, after a long weekend away in Charleston, South Carolina (I was marathoning)…I was looking for a delicious, and more nutritious way to enjoy breakfast.  I knew I had a few granola options tucked away on the top shelf of my kitchen pantry…so, I grabbed a stool (I’m short…I can’t help it!) and dug around.  I had two to choose between and both sounded great.  But the Jessica’s Natural Foods variety had one thing that won me over…

CHOCOLATE CHIPS!

Yep…the sweet-tooth, chocaholic emerged with a vengeance upon seeing that in the name.  WIN!  That morning, I darted out to the grocery store to pick up a few necessities that were needed for the coming week and ended up picking up a big container of Greek yogurt, some fresh organic blueberries, and a few other fruits and vegetables to use for the various meals I needed for the week.  Breakfast…lunch…dinner.  You name it.  But, I hadn’t made many of my fruit & yogurt breakfast parfaits for a long while, and I knew this was a delicious and nutritious way to start the morning.  With some granola at home, it was just a matter of choosing the fruit.  I had thought to get strawberries, but the organic ones didn’t look too good.  We are, after all, out of season.  But, the blueberries looked big and ripe and therefore…came home with me.  That morning, I assembled two breakfast parfaits, making use of the Jessica’s Natural Foods Gluten Free Chocolate Chip Granola, vanilla Greek yogurt, local honey, and the fresh organic blueberries.  I just layer these up and top it off with more granola and…voila…breakfast was served.

Jessica’s Natural Foods gluten Free Chocolate Chip Granola is, without a doubt, one of the best granola’s I have had since going gluten-free.  The gluten-free oats were toasted and golden to perfection.  Adding to the sweetness were the melt-in-your-mouth bits of semi-sweet chocolate chips.  It feels like you’re cheating, but in reality, you are eating something that is good for you.  Mixing these delightful spoonfuls with a thick and delicious Greek yogurt and bursts of fresh fruit juice from the little blueberries…this made a perfect breakfast with each bite.  The granola brought this fantastic and light texture to the entire dish.  And, if left with a bag of this and no supervision, I could easily eat the entire bag in one sitting.  The clusters with the chocolate were my favorite part as they would melt upon hitting my tongue.  This made handfuls of this granola a great treat…if not addictive.  Seriously…one of the best parts of any breakfast I have ever eaten in my entire life…this granola is amazing.  And I don’t feel bad indulging in it, because the ingredients are natural and the nutritional information is rather good!

Granola can become a calorie-laden sugar-fest, so it’s always good to take a look at ingredients and nutritional information.  For Jessica’s Natural Foods Gluten Free Chocolate Chip Granola…this is what the company strives for.  The Gluten-Free Chocolate Chip Granola is made from certified gluten-free rolled oats, semi-sweet chocolate chips, organic honey, brown sugar, expeller pressed sunflower oil, ground flax seed, coconut, maple syrup, pure vanilla extract, cinnamon, sea salt, tocopherols (natural vitamin E).  This granola is free of cholesterol and trans fats.  It is also gluten-free and non-GMO.

A serving of Jessica’s Natural Foods Gluten Free Chocolate Chip Granola is 1/4 cup.  Trust me…this may not seem like much…but it is an amazing and filling 1/4 cup.  Mmm…chocolate by the quarter-cup.  In this serving, you will be consuming 130 calories and 6 grams of fat.  Not bad for granola.  Not at all.  In this serving, you will also be taking in 30 mg sodium and only 7 grams of sugar.  Yes…only 7 grams.  That’s amazing.  So often, the gluten-free granola I find is laden with heavy sugar.  Not these.  Naturally sweet more than anything.  And finally, this 1/4 cup serving gives you 2 grams of fiber and 2 grams of protein.  Not too filling, but filling enough, especially when paired with nutrient dense Greek yogurt and fiber-filled fresh fruit.

Recipe: Grilled Eggplant with Gluten Free Couscous and Greek Yogurt Dressing

Sometimes…it’s fun to ignore those magical CSA bin vegetables and go off the beaten path.  Besides, while I love having fresh and local produce delivered to my door, I also love the fun and buzz of the local’s farmer’s market.  And that’s exactly what my roommate and I did this week.  While we have some great bin ingredients, there was an amazing recipe in the October 2014 issue of Vegetarian Times…and the only ingredient I currently had in the home was the couscous.

Don’t panic.  This is gluten-free couscous that came in my Cuisine Cube this month.  I was pretty stoked about that and really wanted to use it right away.  So, that same day as I was flipping through the Vegetarian Times magazine (that had also just arrived)…one dish stood out, as it utilized couscous.  When Cathy read the magazine after me, she also spotted it.  So, that Saturday morning, we went out to a large farmer’s market in Louisville and picked up the necessary ingredients to make this dish.

I prepped most of it last night, so today, the only thing I needed to do to complete the dish was slice and grill the eggplant.  Simple…

Recipe: Grilled Eggplant with Gluten Free Couscous and Greek Yogurt Dressing

Grilled Eggplant with Gluten Free Couscous and Greek Yogurt Dressing

Servings: 4
Time: Prep 30 minutes; Cook 10 minutes

Ingredients for salad:

  • 2/3 cup couscous (I used a gluten-free brand)
  • 1 cup pomegranate seeds, divided
  • 2 Persian cucumbers, diced (1 cup)
  • 1/4 cup sliced green onion
  • 2 tablespoons chopped mint leaves
  • 1 tablespoon olive oil
  • 2 tsp white wine vinegar

Ingredients for dressing:

  • 7 ounces low-fat plain Greek yogurt (or dairy-free yogurt)
  • 1/2 cup chopped Persian cucumber
  • 1/4 cup mint leaves
  • 1 green onion, chopped
  • 1 tablespoon white wine vinegar
  • 1 clove garlic

Ingredients for eggplant:

  • 4 teaspoons olive oil
  • 1 teaspoon finely chopped fresh mint
  • 2 small Italian eggplants, each but on the bias into 6 slices

Directions:

To make the salad: Bring 1 cup of water to a boil in a small saucepan.  Stir in couscous.  Cover pan, remove from heat, and let stand for 5 minutes.  Transfer to bowl and cool for 10 minutes.

Stir 3/4 cup pomegranate seeds and remaining ingredients into couscous, and season with salt and pepper, if desired.

Chill for 1 hour, or overnight.

To make the dressing: Purée all ingredients in a blender until smooth.

To make eggplant: Preheat grill or grill pan over medium-high heat.  Whisk together oil and mint in a small bowl.  Brush eggplant slices with mint oil and season with salt and pepper, if desired.  Grill slices 4 minutes per side, or until tender and nicely grill-marked.

Divide salad among plates.  Top each serving with 3 eggplant slices, 1 tablespoon of remaining pomegranate seeds, and 2 tablespoons of the dressing.

Serve any remaining dressing on the side.

I made only one minor change.  Instead of making the mint oil, I instead added a hit of cayenne pepper, cumin, and garlic powder to the olive oil instead, then brushed that over each slice of eggplant and grilled it.  It worked out perfectly.  And the mint dressing is so light and fresh that it really just brings everything together on the plate.  I highly recommend this hot and cold salad.  It’s simple and easy and beyond delicious for sure!  I can’t wait to make it again.

There was a time…back before I was diagnosed as a Celiac…when I used to make numerous dishes with a grain known as couscous.  But, as couscous is made from the semolina of hard wheat…so any couscous dish I started to ignore or substitute quinoa.  It worked…but it wasn’t the same.

You cannot imagine my excitement when I opened up this month’s Cuisine Cube and found a box of Molino di Nicoli Gluten Free Couscous.  I was beyond thrilled.  Seriously, I might have done a happy dance in my office.  Okay…I did do a happy dance.  And with that being said, I was already making plans in my head to recreate some of my favorite couscous dishes with this little box.  My roommate immediately said, “BREAKFAST COUSCOUS!”  Which, is definitely going to happen.  But…it just so happened that I ended up making a salad first with this product.

It was this month’s issue of Vegetarian Times, highlighting hot and cold salads.  And the one that really, really caught her attention was one of Grilled Eggplant with Couscous and Greek Yogurt Dressing.  We looked over the ingredients and they all seemed within reason to pick up at the local farmer’s market (as none of the ingredients were in the CSA bin this week), so I made a pact…if we could find the ingredients, I would cook up the dish.  Because now…I could absolutely use couscous in a dish that asked for it.

The shopping was a success and last night, I found myself prepping most of the ingredients for our dinner tonight.  I cooked up the couscous, seeded the pomegranate, diced the cucumbers, chopped the green onion, and chopped the mint leaves.  I blended together the yogurt dressing ingredients, after a quick run to the store for the actual yogurt itself.  It was the one ingredient we forgot about.  HA!  Not bad.

I have to say…the couscous is easy enough to cook.  I actually didn’t follow the ingredients on the box.  I went off the instructions in Vegetarian Times for the cooking of the whole-wheat couscous they used in the original recipe.  So, instead of 2/3 cup of couscous with 2/3 cup of boiling water, I used the 2/3 cup of couscous and 1 cup of boiling water, letting it cook for 5 minutes.  Usually the said amount of boiling water and the same ratio of couscous would sit for 2 minutes, then the box says to add oil or butter and cook for 3 more minutes over a slow flame.  The way I did it worked just as well, and when the 5 minutes was up, I emptied the pan of couscous into a bowl to cool for 10 minutes.  Then I added the pomegranate seeds and the remaining ingredients, seasoning with olive oil and white wine vinegar.  I let it chill overnight in the fridge.

After work today, my roomie and I returned home and I set out to grill the eggplant and piece the dish together.  That’s what I did.  I plated the couscous salad, then topped it with the grilled eggplant, gave a drizzle of the Greek yogurt dressing and topped it off with a few more pomegranate seeds.  It looked amazing.  And it tasted just as good!

Now, my roommate said her least favorite part of the dish was the couscous, but to me, it was one of the highlights.  Maybe it was because I haven’t had it in a long time.  But I did nothing special to season this couscous, as I used to hit up the regular couscous with cayenne while it steamed.  I left this one plain, as I was adding enough flavors via the fresh ingredients and the oil and vinegar…and a touch of salt to season.  I thought the texture was clearly different.  This was a lighter, smoother, not as gritty couscous, but it was the perfect ingredient for this dish.  In fact, I can’t wait to try it in my “Breakfast Couscous” later on this week.

The grains of the Molino di Nicoli Gluten Free Couscous were finer and smoother than regular couscous.  However, this is not to say that it was mush.  Anything but that.  In fact, the grains were still very noticeable on the palate and tongue.  I found that it really blended well with all the fresh vegetables and ingredients that were placed on top of it.  It was perfection…quinoa wouldn’t have been the same.  The couscous was perfect.  And it tasted brilliant.

I was beyond impressed!

So, I bet you’re wondering what a gluten-free couscous is made from.  Simple.  One ingredient is all that is listed on Molino di Nicoli’s Web site – corn flour.  Yes, the Molino di Nicoli Gluten Free Couscous is simply corn flour.  That explains the different texture from regular couscous…but ultimately still delicious.  It felt more like grits than couscous…but…it will do.  Different…but close enough in my eyes.

As far as nutrition goes…well…let me see if I can figure this out.  A serving size of Molino di Nicoli Gluten Free Couscous is 50 grams, which is about 1/4 of a cup.  This serving will provide you with 177 calories and 0.5 grams of fat.  You will be consuming 0.002 mg sodium (yes…that is the actual measurement) and 0.3 grams of sugar.  A serving provides you with 1.3 grams of fiber and 3.8 grams of protein.  It’s not too filling, but you won’t fell starved an hour later either.  Molino di Nicoli Gluten Free Couscous is gluten-free and cholesterol free.

I will be savoring this couscous for as long as I can, as I have a few more dishes I want to make with it.  But tonight’s meal was a success.  It was the perfect base for the grilled eggplant and the light and lively dressing that brought everything together.  Beyond happy.  It’s not exactly couscous, but when you’re gluten-free…this is close enough.  Close enough…and really, really good!

Product Review: Jessica’s Natural Foods Gluten-Free Pecan Almond Granola

It wasn’t in the budget this week.  Honestly.  But I have a lot of delicious, fresh blueberries at home and needed some way to prepare them.  Well…some other way as I’ve already put some in a blueberry compote for gluten-free pancakes and even baked some into dark chocolate and blueberry scones.  Mmmm…scones.  I’ve been eating them prior to running and after running.  So, when I was out grocery shopping, it occured to me that one of my favorite ways to eat blueberries…is in my breakfast fruit, yogurt and granola parfaits.   So, while at Whole Foods, Cathy and I were walking through the cereal aisle and she spotted the bright, colorful, yellow packaging of Jessica’s Natural Foods Gluten-Free Granola!

Her eyes fell on the Motor City Crunch variety, which is a chocolate and hazelnut granola.  Mmmm…Nutella in granola form.  I wanted it.  So, I told her we had to get one, because, after all, we had blueberries to eat.  So, she grabbed…the Gluten-Free Pecan Almond Granola??!!  After waving chocolate hazelnut at me?  That’s just mean and cruel, I think.  Next time I’m selecting so I get the chocolate hazelnut.  Crazy roomie of mine.  Chocolate and hazelnut always win.  I mean, I love pecans and almonds, but those are in…pretty much every other granola out there.  And Motor City Crunch actually had like a special title and everything  It wasn’t just the flavor.  It has to be big…it has to be amazing…it has to wait until next time…

Bummer.

But…you just go with it in these situations.  So, instead of the one I thought we were getting…the Jessica’s Natural Foods Gluten-Free Pecan Almond Granola is the actual variety that made it into our shopping bag and then into the pantry on Saturday.

Fast forward to Monday morning.  I had spin class to get to by 5:30 a.m. and breakfast had to be quick.  So…here it was…blueberry breakfast parfaits.  I pulled out the pouch of granola and opened it up.  I retrieved glasses to build the parfaits in and then the Greek yogurt and berries from the fridge.  I plucked the honey from the pantry.  And I figured I had to taste-test the granola before loading it into the parfaits.  So, I reached inside and plucked out a large clump of granola.

It was sweet without being overly sweet.  It looked like it was packed with sugar…but it’s not.  The nuts add a great bit of depth to the flavor and the oats are toasted to perfection.  You get that perfect granola crunch followed by the sweetness.  I had to take another bit before telling myself that I actually needed to build a parfait and couldn’t just eat the granola.  But trust me…I could.  While I might have been disappointed that the flavor I wanted remained shelved at Whole Foods…this flavor is top of the line.  I mean, honest-to-goodness ingredients and flavors.  Low in sugar…packed with enough flavor that makes you almost feel guilty when eating it.  It was like a treat.  And when I paired it with the ripe and very fresh (and amazing) blueberries and the Greek yogurt…it was a fantastic combination.  The pecans, almonds, and oats brought this nice texture, the berries practically burst on my tongue…and the smooth yogurt just tied it all together.  This was a wonderful (and tasty) surprise this morning.  LOVED this flavor.

So…let’s talk ingredients.  Inside a package of Jessica’s Natural Foods Gluten-Free Pecan Almond Granola you will find certified gluten-free rolled oats, organic honey, brown sugar, expeller pressed sunflower oil, pecans, almonds, ground flax seed, coconut, maple syrup, pure vanilla extract, sea salt, cinnamon, and tocopherols (natural vitamin E).  That last ingredient sounds very chemical-like…but look at everything else.  The sweetness, I now see, is due to the honey, brown sugar, and maple syrup that are included.  I can taste the hint of coconut and the seasoning of cinnamon that is included.  And the combination is magic on your taste buds.  Not only is it gluten-free, but it’s also cholesterol free.  YAY!

Nutritionally speaking…these stats are pretty awesome.  A serving of Jessica’s Natural Foods Pecan Almond Granola is 1/4 cup.  This serving will provide you with 135 calories and 7 grams of fat.  That isn’t bad for something that contains nuts.  Mostly healthy fats there.  A serving also will give you only 25 mg sodium and 6 grams of sugar.  This is phenomenal for a granola.  You will also be taking in 3 grams of fiber and 3 grams of protein.  It doesn’t sound like much, but you will actually feel full.  Trust me.

I always try to get Cathy’s opinion on a product and since this was the flavor that she chose…against my wishes (because NUTELLA!)…I asked her what she thought.  She gave her usual…”It was good.”  Or whatever.  And then I remember she is still fighting off a summer cold and she had just woken up.  Dammit.  No luck these days with her opinion.  And this one I really wanted.  Maybe another time.

That being said, despite not getting the Chocolate Hazelnut variety I am enamored with high praise and love for Jessica’s Natural Foods and the Pecan Almond Granola.  Delicious.  Not too sweet…although it just looks like it should be more sweet than it is.  It’s sheer granola perfection and I can’t wait to try the other flavors.  But next up…Motor City Crunch.  For real!
