What do you think of when you think of Portland, Oregon?  Food trucks…yes…but a lot of people would also point to the amazing array of brew pubs that the city has to offer.  Oregon is very much a foodie haven, and there is plenty of places to whet your appetite.

Research began on Find Me Gluten Free…which pulled up hundreds and hundreds of restaurants that cater to people with gluten intolerance and Celiac.  I knew that my traveling partners, Cathy and Jenn, were being very good about where we ate on Hawaii (often out of Jenn’s comfort zone) due to my dietary restrictions…so…going to a brew pub in Portland wasn’t just a necessity, it was a way of thanking them for being so flexible with the food choices while island hopping in Hawaii.

That being said, we narrowed it down to two choices…and Cathy and I made Jenn pick the place.  This was no biggie for me…there were options I was interested in at each place…but it was a matter of whether Cathy got Chicken and Waffles or Roasted Lamb.

Jenn didn’t really care where we went, but in the end, she chose Deschutes Brewery…and that was our Friday night dinner.

After lunch at the food pods, we continued our exploration of Portland, meaning bookstores, record stores, chocolate shops, coffee shops, and all that good stuff.  But all that shopping does work up an appetite.  So, after spending a long time exploring Powell’s Books, we were ready to get some dinner.  And it was just a short hike to Deschutes Brewery…and I loved it from the moment we stepped inside.

Deschutes Brewery is a brew pub located in the heart of Portland and is described as a popular destination for great beer, delicious food, and a relaxed urban atmosphere.  It features 26 taps that include Deschutes mainstays plus a selection of seasonal and experimental beers developed and brewed on site exclusively for the Portland pub.

In addition, no pub is worth its salt without pub grub.  Executive Chef Jill Ramseier leads a talented culinary team that has put forth classic pub food, but elevated it.  In fact, each item on the menu is created, from scratch, with the best possible local ingredients.  SO Portland.  Love it!

We arrived shortly after 5 p.m. and it was already hopping.  We were seated immediately and given menus to peruse.  Water was brought to our table and our waiter, Zach, came over to pour some water and ask if we wanted anything else to drink.  Jenn and I were sticking with water, but Cathy had it on her to-do list to sample a local brew.  She went with the Deschutes River Ale ($3.25).  He went to grab her drink while we finished up decisions for dinner.

With beer delivered, it was time to place an order.  Jenn went with the Dungeness Crab Roll ($17.75), which is pacific crab tossed with onion, celery, lemon and mayonnaise in a seared East coast-style bun.  It came with a serving of fries on the side.

Cathy opted for the Spicy Fried Chicken and Waffle ($16.50).  This dish is a Nashville-style basted chicken breast and thick sliced smoked provolone over a housemade sourdough waffle with maple dressed kale, fenel and pecan salad, served with a maple honey sauce.  For an additional $2…you can add bacon.  Cathy left the bacon off.

As for me…I was given a gluten-free menu.  And on that menu was plenty of items to choose from.  Had I not had a great sandwich for lunch from Juniper at the food pods, I would have opted for the Quinoa Burger ($13.25), which is described as a crispy quinoa cashew patty with chipotle aioli, Rock Face Creamery aged white cheddar (which I would have left off), lettuce, tomato, onion and served, I am assuming, on a gluten free bun.  BUT…I DIDN’T get that.  I could have…and, as I said, had I not had a sammie for lunch, this would have been my dinner.

My dinner, instead, was the half portion of their Spinach and Quinoa Salad ($7.00) with a plate of their Garlic Rosemary Fries ($6.75), which I got minus the manchego cheese that comes served with it.  YES…the fries are gluten-free!!!  *HAPPY DANCE!*  Hey…I eat healthy most of the time, dessert and an occasional plate of fries are treats to me and ones I never turn down when they are available.  A healthy life doesn’t mean there aren’t treats every now and again!

And in true brew pub (and pub) fashion, the food didn’t take too long to come out.  Just long enough to know that everything was prepared fresh and made to order.  Our plates came out…and they were heaped with food.  Even without the plate of fries (which I did share!), my salad would have been plenty filling at the half portion on its own.  So, that was actually a good call on my part.

Jenn and Cathy both loved their meals.  Cathy said that while the chicken was spicy, it wasn’t overpowering.  The provolone cheese helped to cool things down and the waffle was a nice hit of sweetness to mesh with the savory heat of the chicken.  When paired with the maple and honey, it was a perfect bite.  In fact, after years of wondering why chicken and waffles were such a thing in the south…it took a trip to Portland, Oregon for her to “get it.”  Yes…she gets it now.  And I think she has a new craving in life.  She ate until she was full…and then had to surrender to the dish.  But she made a healthy dent in it, loving and raving about every bite.  So there is that.

Let’s start with the salad.  The Spinach and Quinoa Salad comes with Briar Rose Creamery feta cheese (which I left on…because feta and I get along for the most part), blueberries, pickled beets, fresh spinach, and perfectly cooked quinoa.  It is topped with a delicious vinaigrette, which does come on the side so it isn’t swimming in dressing.  That’s something I totally appreciated.  This salad was filling and provided a myriad of different flavors and textures.  It was inviting with each bite.  Tangy, tart, smooth and creamy.  The quinoa and spinach are both nutritional powerhouses…and I devoured every last bit of this salad.  Besides, you put roasted beets on anything and you have my full attention.  Seriously!  OH…and it came with a gluten-free breadstick laid across it.  I questioned it when it arrived at the table…”This is gluten-free, right?”  “OH yes,” I was reassured.  Happiness comes in breadstick form sometimes.  It’s the little things that aren’t so little for other people but are for people like me.

But the star…as much as I want to point to the salad…was the gluten-free Garlic Rosemary Fries.  These fries are made from hand cut Kennebec potatoes and seasoned with fresh garlic (LOTS of it) and rosemary and served with a rosemary aioli.  These were to DIE for.  Seriously.  I took one bite and I was hooked.  I didn’t want to stop eating them.  Even with some self-control (HA!) and a little help from my friends, this plate wasn’t emptied.  It probably could have been, but we all have our limits.  These were some of the best gluten-free fries I have ever been served in a restaurant.  And fries are hard for me to get in a restaurant.  Everything shares a fryer…so this is always a nice treat.  And this is one splurge I was glad I made.  Holy cow.  I want to recreate these.  I’m going to do the best I can.  WOW!

Save for fries (from both Jenn & I) and a bit of chicken and waffle on Cathy’s plate…we ate the hell out of our meals.  And for good reason…they were amazing.  I was beyond impressed with the caliber of food that came to our table.  Everything looked beautiful and tasted amazing.  Nothing was soggy or overdressed.  Nothing was burnt.  It was pure dinner perfection in true brew pub form.  I am a huge fan…and I wish I lived in Portland so I could continue to go back and try other options from their extensive gluten-free menu.  Just…WOW!!

I have Jenn to thank for actually sending us to Deschutes Brewery in the end…and to me, it was the perfect way to round out an amazing and unforgettable trip.  No better way to end a vacation then with good friends, good food, and good times.  Deschutes…made that all possible…right in the heart of Portland.

Twas the end of my vacation, and after a late flight in from Honolulu, Hawaii, and a walk of doom from the wrong train stop to the hotel my friends and I were staying in…around 11 p.m. at night…my Friday morning started off really well.  My two friends who have no food allergies took in a Portland, Oregon staple…Voodoo Doughnut…for breakfast.

It had been discussed that we would do some shopping around Portland and then hit up the food pods for lunch.  In fact, after a bit of researching, my roomie found the perfect pod for us to visit…due to one food cart where she knew I could get something to eat.

The food cart…Juniper.

Juniper is a worker-owned food cart that was founded by five (5) women – Kashi, Lizz, Elena, Frencesca, and Summer.  They serve nourishing, vibrant, whole-foods that are consciously sourced.  Their menu is seasonal and features local and global flavors that pair lesser known produce with familiar favorites.  They are proud to offer meals that are mostly organic, local farm sourced and made from scratch.  They encourage you, above all else, to “Love Your Food.”

Speaking of food, this team of ladies work hard to source foods grown locally, supplied by small businesses, with worker-focused and community driven practices.  They keep the food on their menu in sync with natural availability, which also helps keep our bodies in sync with the seasons.  They believe that access to healthy and sustainable food is a social justice issue and have set sort and long term goals for themselves aiming at using their position in the food industry to open doors to people who have trouble accessing healthy and steady food sources.  And with all that going on, these ladies do their best to keep prices on the menu sustainable for them to stay in business, to be able to source foods in a way that is in line with their mission, and to also stay accessible to a large cross-section of people.

But, that’s not all…these intrepid food cart entrepreneurs built their menu with high awareness of food sensitives and allergies.  Their menu items are and always will be gluten-free and vegan (completely free of dairy, meat, honey, and egg), and limited on the amount of soy ingredients – meaning they sparingly use tamari, tofu and soy curls.  If necessary, they are happy to substitute or eliminate the tofu or soy curls completely from an order.

With all that said…on Friday morning, I spent the day drinking amazing coffee, ducking into local shops, and just checking out as much of Portland as I could while hobbling around.  I handled it well enough, but when noon rolled around, I was more than ready to eat.  I knew what I was getting from the food pod, and Cathy pretty much knew what she wanted…so we walked the other carts so Jenn could figure out what she wanted to eat.  And after a little wandering…we made our choices.  Cathy was left over at I Hearth This Cart, as she had her eyes on the small Loaded Tater Tots ($4.00), which are tots layered up with Tillamook cheddar cheese, bacon, and green onion, served w/ chipotle ranch. These are, by the way, gluten-free.  Jenn got a quesadilla…I don’t remember from what cart.  She gave Cathy her avocado.  I was waiting on my dish for most of their orders and eating.  But…I won’t complain.

The one reason I chose Juniper over all other food carts at that specific pod was because of the vegan and gluten-free options.  This was one very safe cart for me to dine in without wondering how I would feel afterwards.  And, honestly, the one dish that caught my eye first and foremost was one of their offered sandwiches…

The Vegan BBQ Bacon Sandwich.

OH HELL YEAH!!

Juniper’s Vegan BBQ Bacon Sandwich (7.00) is BBQ soy curls, cabbage and carrot slaw, avocado, and coconut bacon, piled onto two grilled slices of their homemade gluten-free bread.  I got mine with a T.A.S. Coconut Water ($2.50).  I waled up to the cart and said I had heard stories of this sandwich and said that was what I wanted for lunch.  It was a bit of a wait, but they were hopping at lunch time.  Never a bad thing.  And I don’t mind waiting for food I can see being prepared right there in front of me.  And trust me…this sandwich was worth the time standing on the sidewalk holding a can of coconut water.  HA!

But the wait was well worth it.  The sandwich looked and smelled amazing.  The soy curls gave the BBQ “meaty” portion of this sandwich a great depth of flavor.  It really made the sandwich feel like a sandwich.  The coconut bacon was amazing, as smokey, delicious bacon made out of coconut always is.  And the slaw and avocado just completed the full affect, adding texture and a bit of cooling deliciousness.  The toasted gluten-free bread was done to a golden perfection.  And this was all served up with a side of greens, lightly dressed.  How amazing.

First bite was love.  I shared a piece with Cathy, and she said it was “pretty tasty.”  Which means, she liked it but didn’t love it.  HA!  She was eating deep fried potato tots…of course my healthy and amazing sammie wasn’t going to win out.  But to me, this was perfection.  It’s a food I can’t get from any of the meager selection of food trucks here in the area, nor anywhere else I have visited…which was the main reason that Juniper was where I wanted to eat.  There was no getting around that.  I wanted that sandwich before I even left for Hawaii…and before I made it to Portland.  And it was everything that I expected.  For the record, the coconut bacon tastes like bacon…not coconut.  And it is awesome.  So, pretty tasty is a total understatement and doesn’t do this cart the justice it deserves for the quality and standard of food that they are putting out.  Above all else, one of the best vegan and gluten-free sandwiches I have ever been able to eat.  So far above anything else offered anywhere else.  Miles above.  I love sammies…and this one…was just what I wanted, needed, and ended up devouring.  I was so happy it was on the menu when I got to Juniper’s food cart.

If you are in Portland, be sure to make the most out of your stay.  Check out all the different varieties of food pods out there…eat at a food cart.  But if you have food allergies and food restrictions like I do, head over to Juniper at the food carts on SW 3rd and Washington.  If they have it…get the Vegan BBQ Sammie.  Trust me…all expectations of any sandwich that is vegan and gluten-free…will be exceded.  This was sandwich nirvana for me.  I only wish I had been able to go back for another one before leaving town.

I will be back though.  And I know where I’m catching a bite.

Normally humidity and heat don’t get to me.  I thrive in warmer temperatures, to be completely honest.  But the sun, heat, and humidity that were brought to Hawaii by the hurricanes and tropical storms is a new level of humid.  And it’s a level that, being so close to the equator, I am not used to yet.

I was melting.  Literally.  Melting at Pearl Harbor yesterday afternoon.  But, myself and my traveling compatriots all survived and had quite the experience at Pearl Harbor.  Totally…unforgettable.  It was the one place I was making a requirement…and the other two also felt the same way.  Despite the intense sun, the humidity, and the heat…it was all worth it.

All that being said, afterwards we headed toward Kailua, which was home to the restaurant we would be having dinner in that evening.  The little restaurant is Kalapawai Café, this quaint little café and market.  We were early, as they don’t start serving dinner until 5 p.m.  So, while waiting, we scoped out a bit of Kailua.  We went to Walgreens so Jenn could pick up more Ibuprofen (sunburns suck!).  We dropped by this little bookstore called Book Ends.  It was in disarray, but it killed a bit of time.  And as we were heading out, it was time for dinner.  Talk about timing, eh?

We were greeted at the door as we entered and were able to ogle the dessert case, where I spotted macarons immediately.  Jenn noted the Flourless Chocolate Cake as well.  Mmmm…dessert.  But, our hostess guided us to a nice cool spot (we must have looked hot!) right under the air conditioning and got us situated with menus.  Our waitress soon followed, bringing us glasses of water and asking us if we wanted anything besides water.  We were all trying to rehydrate after Pearl Harbor, so we just stuck with the H2O.  She went over the specials and over what the Auction Price Fish of the Day, Auction Price Fresh Fish for the risotto was, and what the Auction Price Fresh Fish for the Greek Salad was.  She gave us a moment to peruse the menu.

Upon her return a few minutes later, we were pretty much set.  We mentioned that I was a Celiac vegetarian and she said…”Okay…so no wheat no meat…” She asked if I did dairy…I said I can…but I don’t always handle it well.  So she recommended the meal I had been eyeing in the first place due to the fact that it was labeled gluten-free AND contained no meat.  She said she’d just have the chef leave off the cheese.  Perfect.  Jenn and Cathy put in their orders too…and we cooled off, chilled, and got to watch the kitchen work.  I love open kitchens.  Hearing the expediter call off the orders was awesome.  Seeing the small line of chefs preparing at their different stations…yep…I love this stuff.

And soon…it was our order being made and being delivered.

Oddly enough, I had pegged what Jenn was going to order.  I know my friends!  Jenn ordered the Crab & Artichoke Dip ($12.00), which contained huge chunks (I mean HUGE) of blue crab, chopped artichoke (which didn’t overwhelm), fresh mozzerella, provolone, parmesan, red bell pepper, sweet onion, and served with toasted crostini.  Her meal looked cheesy good.   And it was delicious according to her.  Especially since they used great care to put chunks of crab meat into the dish itself…instead of skimping on the prize protein.  That was a huge plus.  The plate got polished.  She said she’d offer me some, but basically everything about the dish offended me.  LOL!

Cathy had gone back and forth on what she wanted, opting between the ravioli and the shepherd’s pie.  In the end, she ordered the House-made Okinawan Sweet Potato & Goat Cheese Ravioli ($15.00), served with asparagus, roasted grape tomato, and a lemon-thyme brown butter sauce.  She said the pasta was okay (duh!), but the star of the plate was that sweet potato and goat cheese.  The star of any ravoili should be the filling.  That’s the entire point.  The pasta…it should definitely be homemade and good…but it it simply a way to hold the delicious filling inside.  She devoured her meal.  In fact, for the first time, she was the first one done eating.

As for me, I ordered the House-made Gluten Free Potato Gnocchi ($16.00), served with grilled asparagus, roasted mushroom and tomato, ver’jus and a sauce romesco.  It normally would come with Manchego cheese, but they left it off my dish since dairy and I are broken up.  These “gnocchi” were toasted potato puffs.  Sort of like…a naked tater tot.  And to be honest…that’s exactly what they tasted like.  This dish was like eating breakfast for dinner.  The gnocchi had this great toasted outside, think…perfect hashbrowns, and then were soft like the inside of a tater tot, on the inside.  The vegetables were grilled and cooked to perfection, pairing nicely with the breakfast-like gnocchi on my plate.  And the sauces gave a nice hit and addition of flavor to be sure.  I loved it…because breakfast is one of my favorite things in life.  It wasn’t what I was expecting.  Definitely less pasta more potato.  And I was okay with that.  It just wasn’t what my palate had been expecting.  It was a nice surprise.

Afterwards we were asked if we’d like to see a dessert menu.  As we never turn down looking at least, we perused and finally opted on splitting the macaron plate (it came with 3) ($5.00).  Normally this was an assortment of vanilla, lemon, and lime ginger, but they were out of vanilla, and I wasn’t too sure on the lime ginger…so we went with three of the lemon macarons.  They were retrieved from the case and…oh…oh yes…they were worth it.  Little pillows of lemony flavor.  Like…big lemon flavor too.  None of this fake stuff or lack of flavor.  It was like a lemon bar and lemon chifon cake.  It was just…yummy.  And we were happy that we went that way with the dessert in the end.

I was actually quite impressed with the service and the food that came  out of Kalapawai Café.  I would return there to eat in a heartbeat.  I loved the dish I was served, even if it wasn’t what I expected.  And having macarons on the dessert menu always wins, because they are a light option that still feels like a treat.

What a way to end the first night in O’ahu.

Hangry.

That was all there was to it.  We were all hangry.  Our flight out of Kauai to island hop over to O’ahu was the earliest one available.  We were up at 4 a.m.  Some of us sooner.  Some of us without getting much sleep.  But between the three of us, we were all just picking at everything.

And the added unseasonable humidity wasn’t helping matters.  For me…I was doing okay…but my traveling companions don’t take to the humidity well.  So, lack of coffee and food was setting in.  But…we made the short hike over to Hee Hing Plaza and climbed the stairs to the second floor.  We stepped inside, happy to be in some air conditioning and took a table near the middle of the dining area.  A nice waitress came over with glasses of water and menus and explained to us the three new specials that Tucker & Bevvy Breakfast was now offering.  After that, she let us ponder what we wanted and returned soon after when we looked ready to order.

Jenn had one question about the pancakes, and when she was given an answer as to what size they were, she ordered up.  One single Ricotta Pancake ($4.00) with a side of bacon ($4.00).  Cathy went with the House Omelette (bacon, potato, cherry tomato, spinach & parmesan) with Sourdough Toast ($11.50).  As for me, I wanted one of the new specials for the menu:

Order in, and we continued to sit there and attempt to wake up.  This usually meant that Cathy rambled on about something while Jenn and I pretended to listen or just simply blinked at her.  It was one of those mornings.  We watched as plates were brought out to fellow diners…all of the food looking amazing.  I was ready to get something other than a protein bar in my tummy, that was for sure.

After a bit of a wait…out came some food.  Happiness is food arriving at your table when you are hot, tired, and hungry.  Jenn’s pancake was fluffy and looked and smelled amazing.  The Web site says they serve 100% maple syrup…but she tasted it and shunned it.  Not pure maple.

Cathy’s omelet was packed with vegetables.  In fact, the entire top layer was vegetables.  Inside the egg was the bacon and potatoes.  It looked amazing.  And, she does love her sourdough toast when we’re out to eat.  She’s always stuck with the gluten-free stuff in our apartment due to the kitchen needing to be completely gluten-free (save for her own boxed snacks and cereals).  She devoured it.

And my Smashed Avocado Toast was fantastic.  I knew this was what I wanted the moment I saw it on the board at the restaurant.  It is no secret that avocado and I are BFFs and when smashed over toast…I’m in a happy place.  This version of Avocado Toast was made with lemon juice, an Egyptian spice blend, and toasted pistachios on top.  The pistachios were a nice touch, and one I never would have thought of.  But…lo and behold…it totally changed my idea of Avocado Toast.  This was amazing.  It was love at first bite…all the way down to the last bite.  Because, yes…I ate it ALL!  ALL of it.  Completely all of it.  And the big bowl of fresh fruit as well.  The fruit was fresh and ripe and sweet…and I didn’t need it, but damn, it tasted good.  Bananas, strawberries, blueberries and grapes.  That’s the good breakfast life.

We all pretty much ate what was put in front of us.  Cathy ate most  of hers.  She almost had all the eggs gone and left two of the slices of bread.

In the end, we were happy with the fact that we now had delicious food in our stomachs.  It was an unexpected breakfast stop, but well worth it.  I am forever dressing up my avocado toast with toasted pistachios.  I mean…HELLO!  Mind blown.  Culinary eyes opened.  Heck yeah…LOVE.

So, while Tucker & Bevvy was a spur-of-the-moment choice so the three of us didn’t claw each other’s eyes out…our hanger pains were tamed by the delicious breakfast foods at Tucker & Bevvy.  Seriously, I’d go back for that toast in a heartbeat.  Breakfast is love…and this was true love.

There are few things in life as perfect as a bagel, right?  All my New Yorkers, let me hear those cheers of agreement.  They are crispy, and soft and chewy and…just amazing little morsels of bready goodness that actually due fill you up and keep that motor running all the way through lunch time.  Bagels and I have been BFFs for years.

Well, we were breakfast besties until I was diagnosed with Celiac.  Then the bagel and I had to break up.  Yep…because I just couldn’t find a decent one out on the market.  Which…sucks.  Yep.  Sucks.  The closest I came to bagel perfection was Udi’s Gluten Free Bagels (now available in a variety of flavors) and also Canyon Bakehouse Gluten Free Bagels (Plain & Everything), which were just released this past year.  They weren’t perfect…but they were the best out there.  Most of the other ones I tried were wrong in texture, taste, or everything.  Katz Gluten Free offered some good ones…but again…not anything like the bagels I grew up consuming.

And then, one day, that all changed…

I had just posted on Twitter about trying the new Canyon Bakehouse bagels, when I was tweeted at by the PR person at this random gluten free bagel company, called Sweet Note Bakery.  I was, naturally, intrigued.  So…I did find myself scoping out their Web site and seeing all the amazing bagel flavors they have to offer.  Their bagels not only looked amazing, but sounded amazing too.  To top things off and really sweeten the deal for this former New Yorker and bagel-enthusiast, they were New York style!  And yes…New York does have a style for bagels.  Smaller and more dense.  For such a big and bustling city, you wouldn’t think small and dense would sum up the bagel style.  But it does…beautifully.

So, Sweet Note Bagels started in 2012, when founder and president, Michelle MacDonald, stepped up to a challenge.  She had been baking ever since she was a child and was very passionate about it.  When her grandfather and sister were diagnosed with Celiac Disease, she took the first steps on her entrepreneurial journey.  Her family really missed a good New York Style bagel.  (Hey…I can’t blame them…I know this feeling all too well). So with a lot of experimentation and trial and error, MacDonald perfected the recipe, getting huge approval from her family (also bagel lovers).  Gluten-free bagels that taste good?!  It was a reality.  Sweet Note Bakery’s vision is to make gluten-free options more readily accessible.  Those of us who live with Celiac understand how isolating this disease can be, when you can’t have a meal while out with friends and family, be it at a restaurant or a ballpark, or wherever your adventures take you.  MacDonald wanted to change that…one gluten-free bagel at a time.

And, as you know, I have already sung the praises of the Plain, Everything, Cinnamon Raisin, Chocolate Swirl and Poppy.  Which means…Sesame was the last holdout.  I’d been meaning to place an order with Sweet Note Bakery…but life’s been a bit hectic as of late.  It kept slipping my mind, although in the mornings I’d be all “I wish I had bagels.”  So, one would think I would take drastic action.  But, alas…craziness.

But then I finally made the trip up to Columbus, Ohio, to visit my friend Jenn for a weekend.  And, one of my favorite stops to make (and one reason I travel with a cooler) is at The Raisin Rack.  It’s a great natural food store with a gluten-free section that blows my mind.  And, as I was meandering down the aisle…what should I see in the freezer…but Sweet Note Bagels – Poppy and Sesame variety.  The two that I hadn’t tried yet.  It was an omen.  It was a sign.  Yes…both flavors were in my basket, in my shopping bag, in my cooler, and then in my freezer.

With Poppy long gone, and a hectic and even more stressful week this week than originally planned…the Sweet Note Gluten Free Sesame Bagels made their debut in my kitchen (and my belly) yesterday and were polished off today.  Let me tell you…these were completely worth the wait.  I pulled the sleeve of Sweet Note Gluten Free Sesame Bagels out of the freezer yesterday morning, just as I was about to make them.  Why?  Because the bagel goddesses in charge of the Sweet Note Bagel Empire instruct per the packaging that you should not let these bagels thaw to room temperature…and instead, microwave them to perfect softness for about 60 seconds.  Allow to cool (or don’t) and slice in half.  Toast these bagel halves to perfection, either in a toaster, or, if you’re like me and don’t own a toaster, in the oven at 350°F for about…15-20 minutes.  What emerges is sheer toasty bagel perfection, all golden brown and ready for their liberal schmear of the vegan cream cheese that is in my fridge. Time to dig in.

I love anything with sesame seeds on it, honestly, and these get a nice toasting, making the flavor really…pop.  I was hooked at first bite, for real!!  The Sweet Note Gluten Free Sesame Bagels are what sesame bagels are meant to be like.  Perfectly coated, because bagel perfection is what Sweet Note Bakery is all about.  They hit up the top with a nice layer…and speckle that bottom.  No plain bottoms here.  No way!  Every bite gives you that sesame flavor that you love.  The bagel itself…a nice crisp on the outside with that soft, chewy center.  It’s amazing what a good bagel can do to start your day off right.  And the Sweet Note Gluten Free Sesame Bagel is not just a good way to start your day off on a sweet note (heh…see what I did there?), it’s a great way!  This bagel is everything you love about that sesame flavor, without having to go to your favorite Asian bistro at 5 am.  They aren’t open.  But your freezer is open 24/7…365 days a year.  So stock happy bagels in your happy freezer…whichever flavor makes you happiest.  But trust me, a good sesame bagel…no…a great sesame bagel like the one from Sweet Note…is a happy place and a happy food.  Even better, the inner bread, that soft, chewy part, is perfect.  No holes or airpockets, like those you can find in the gluten-free bagels in the supermarket.  You know what I’m talking about…so you don’t have that “I paid for holey products!” moment and feel like you wasted your money and you’re not getting your fill.  Sweet Note Gluten Free Sesame Bagels are, like all their bagels…love in a bag.  Every flavor has now been consumed with eager anticipation and foodie amazement…and everyone has left me satisfied.  Bagel perfection…in a gluten-free, New York-style way.  It doesn’t get any better than this!

So…let’s talk about ingredients, shall we?  The Sweet Note Gluten Free Sesame Bagels are made with LOVE (and you can tell!), water, white rice flour, tapioca flour, sweet white rice flour, sorghum flour, sugar, cane syrup, olive oil, molasses, yeast, xanthan gum, psyllium husk, sesame seeds, and salt.  These bagels are gluten-free, soy-free, dairy-free, non-GMO, egg-free, peanut & tree nut-free, and cholesterol free.  LOVE IT!!  Vegan and gluten-free…yes, please.  I also love that their ingredient list is all real food.  No weird chemicals and preservatives.  Just real…tasty…perfect ingredients.

And now…here is where we discuss the nutrition facts of the Sweet Note Gluten Free Sesame Bagels.  A serving size is 1 bagel (128 grams), and there are 4 bagels in a sleeve.  This one bagel will dish up 310 calories, 5 grams fat, 1 gram saturated fat, 0 grams trans fat, 22 mg cholesterol, 350 mg sodium, 62 grams carbohydrates, 3 grams fiber, 7 grams sugars, and 5 grams of protein.  Seriously…this is a great choice for breakfast as it does keep you energized and full throughout the entire morning.  So much love.  Oh yes…a sesame coated love-fest for sure.

And guess what?  This is not where my Sweet Note Gluten Free Bagel journey comes to and end.  Nope.  For one thing…I intend to always have some of these delights in my freezer.  I’d be missing out on life if I didn’t.  BUT…more importantly…it is September and that means they have just released their limited time fall flavor…PUMPKIN SPICE!

And you know me…I love PUMPKIN EVERYTHING!  As my birthday is in 19 days…I think I’m going to have to celebrate by ordering some of their Pumpkin Spice bagels.  I mean, I’ve earned it, right?

Recipe: One Bowl Gluten-Free and Dairy-Free Peanut Butter Quick Bread

I am in love with my Gluten Free on a Shoestring books.  I always have been.  I always will be.  Because the recipes utilize items you would normally have in your kitchen.  Not only that, all of the recipes are super easy to prepare and have been DELICIOUS!

I mean…DELICIOUS!

I own three of the four Gluten Free on a Shoestring books by Nicole Hunn.  However, this particular recipe I stumbled across through a post on Facebook…and it is not in any of her current books.  That being said, I pinned it to my Pinterest account and then made arrangements to make it that weekend.

And I did.  And it was awesome.

I loved how light and full of peanut butter flavor this bread was. While the chocolate chips are optional, I highly recommend it.  Great topped off with jam or…as I enjoyed preparing it…as French toast…with blueberry maple syrup topping it off.  Whether you like it plain, jammed up, buttered up, or French toast style…this quick bread is super easy to make and even easier to devour.

Recipe: One Bowl Gluten-Free and Dairy-Free Peanut Butter Quick Bread

One Bowl Gluten-Free and Dairy-Free Peanut Butter Quick Bread

Servings: 10-12
Time: Prep 10 minutes; Bake 60 minutes

Ingredients:

 

  • 1 cup smooth natural peanut butter (I used Trader Joe’s Organic Unsalted Natural Peanut Butter, but I bet any other nut butter, or non-nut-butter would work beautifully)
  • 1-1/4 cups milk, at room temperature (I used Silk Unsweetened Cashew Milk)
  • 2 eggs at room temperature, beaten
  • 2/3 cup granulated sugar
  • 1 teaspoon kosher salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1-1/2 cups all purpose gluten free flour (I used Mina’s Purely Divine Gluten Free All-Purpose)
  • 2 tablespoons cornstarch (or try arrowroot or potato starch) (I actually used arrowroot)
  • 1-1/2 to 2 ounces semi-sweet chocolate chips (optional, but recommended!) (I used Enjoy Life)

Directions:

Preheat your oven to 325°F. Grease or line a standard 9-inch x 5-inch loaf pan and set it aside.

In a large, heat-safe bowl, place the peanut butter and microwave for 30-seconds on high power just to loosen up the peanut butter and make it easier to stir. Remove it from the microwave and whisk the peanut butter until smooth.

Add the milk, eggs, sugar, salt, baking powder and baking soda, whisking to combine well after each addition. The batter will be thin.

Switch to a large spoon or spatula, and add the flour and cornstarch, mixing to combine after each addition. The batter will be relatively thick.

Scrape the batter into the prepared loaf pan, and smooth the top with a wet spatula. Using a very sharp knife, score the center of the loaf along the length from one end to the other in one swift motion. Scatter the (optional) chocolate chips over the top of the batter, and press the chips gently into the batter to adhere.

Place the pan in the center of the preheated oven and bake until a toothpick inserted in the center comes out with a few moist crumbs attached (about 1 hour), rotating once during baking.

Remove from the oven and allow to cool in the loaf pan for 15 minutes before turning out onto a wire rack to cool completely.

Slice thickly and serve, topped off however you want. Wrap any leftover slices tightly in freezer-safe wrap and freeze until ready to use. Defrost at room temperature.

Serious…serious yum!  I mean…yum!!  And if you want a protein-packed breakfast or snack, this is the bread to make.  It has great flavor, great taste, great texture.  It was light (not dense and heavy) and the chocolate chips gave it this nice touch of sweetness without overpowering the entire recipe.  And, as I said, it is great as French toast.  For real!!  I was sad when my roommate and I polished this off on Friday for breakfast, but I will definitely be making this again.

They’re back!!  Not just bagels my friend.  And not just those crazy poppy seeds that get everywhere, screw up drug tests (or so I’ve heard), and make everything taste amazing.  Nope.  I’m talking Sweet Note Bagels!  If you missed out on my initial fawning over this brand of gluten-free bagel…then you’ve missed out.  So it up and pay attention!  And if you remember it all too well, welcome back…because they hit another one out of the endzone…or something!

You see, a long time ago in a Twitter-verse far, far away, I posted a blog regarding the Canyon Bakehouse Gluten Free Bagels that I had actually found in my area.  Much praise and accolades were given.  And then…a highly efficient PR person for another gluten-free bagel company replied to my tweet and told me that if I enjoyed Canyon Bakehouse…then I would love what they were serving up.

And last Monday, I busted out the Sweet Note Gluten Free Poppy Bagels for breakfast.  Per the instructions on the packaging, do not thaw these bagels on the counter.  Just don’t.  Obey the bagel goddesses who are in charge of these fantastic bagel-y treats.  They say nuke each one for 60 seconds, until they are soft.  Allow to cool slightly (or don’t)…and then slice in half.  Toast…in a toaster or, if you’re like me and don’t own a toaster, in the oven at 350°F for about…10 minutes.  This gave me time to toss them in the oven and then toss myself into the shower (Hey, Monday morning is spin class…and I had an office I didn’t want to offend with my workout funk!)…and upon my return, I pulled them out of the oven.  And they were perfect.  I mean…golden brown perfect.  Each half got a liberal schmear of the vegan cream cheese that is in my fridge and then my roommate and I dug into the Poppy variety.

DUDE!  YUM!  The packaging says…“For flavor that POPS…” like Poppy Seeds…get it?  HAHA!  Well, the fact of the matter is, those little black seeds really are a powerhouse for flavor.  And what’s more is that Sweet Note Bakery knows how to properly coat a bagel, prep a bagel, and put out a good quality bagel.  Sure, some seeds fleck off, but that’s what happens.  That’s life.  You simply wet a fingertip and pluck them up, or turn your cream cheese side down and dab at them.  It’s all good.  The bagel itself…a nice crisp on the outside with that soft, chewy center.  It’s amazing what a good bagel can do to start your day off right.  And the Sweet Note Gluten Free Poppy Bagel is not a good bagel…it’s a damn good bagel.  It’s a happy bagel.  A poppin’ fresh bagel.  It’s an everything is going to be okay bagel.  The poppy seeds bring this nutty flavor and aroma to the toasted bagel.  The bread itself is perfection…no airpockets of “WTF WHERE IS MY PRODUCT?” that can happen with gluten-free bread products.  It’s…love in a bag.  Every flavor I’ve tried has been outstanding. And this one just got added to the list.

Now, let’s look at the nutritional information.  A serving size is one (1) of the Sweet Note Gluten Free Poppy Bagels.  This bagel will provide you with 310 calories, 5 grams of fat, 1 gram saturated fat, 0 grams trans fat, 22 mg cholesterol, 520 mg sodium, 62 grams carbohydrates, 2 grams of fiber, 7 grams of sugars, and 5 grams of protein.  Yes…these bagels are filling, and that’s what I love about them.  With other gluten-free bagels on the market, I am full for an hour, then hungry again, despite being twice as big.  Most others on the markets are made with fillers rather than real ingredeints, and that’ makes a difference by leaps and bounds.

Love.  Love is their main ingredient.  And love is what I give back.  Sweet Note Bagels is doing the gluten-free community a lot of justice by putting out quality, delicious, amazing bagels.  If these were served to anyone, no one would be able to tell that they are gluten-free.  That is how outstanding these bagels are.  With this package polished off, all that remains is the Sesame…before I need to restock.  Maybe the Pumpkin Spice will be back by then…

Bless you GeeFree.  Bless you for bringing these into the gluten-free world.  Thank you for putting these out on the market.  Why?  Because I’ve looked at the very complicated and confusing instructions on how to make gluten-free puff pastry at home and it was not something I thought I was capable of producing.  Not well.  Not at all.  And I love to bake and cook.  So…THANK YOU!!

It was at Expo West in 2014 that the GeeFree Gluten Free Puff Pastry Sheets were introduced.  I saw the pictures on the various Twitter feeds and Instagrams that I follow of people who were fortunate enough to attend.  And I was excited.  SO excited.  And then…let down at the fact that I have never…ever…seen this brand carried anywhere in my area.  I looked though.  And it took a trip to Columbus, Ohio…and the natural food store Raisin Rack, before I found these…three weekends ago.  Believe it or not…it took over a year.  I bet you’re wondering if the wait was worth it.

GeeFree Gluten Free began when Susan Hougui, a veteran of the food industry for over a decade, was visiting with friends while traveling overseas.  The family needed to avoid gluten and Susan was served the most delicious puff pastries.  Intrigued, as she had never seen anything like it, she tried them and found them to be crispy, yet tender, treats.  Excited with this discovery, she called her friend and master baker, Steve Leyva, to help her recreate and perfect the treats that Hougui had been served…and that she knew would be a sensational hit.  The first three products to be released in the savory line from GeeFree were Spanakopita, Franks in Blankets, and Chicken Pot Pie.  And now…PUFF PASTRY!!

Puff Pastry…for sweet or savory.  For desserts or dinner.  PUFF PASTRY!!  GLUTEN FREE PUFF PASTRY!!

So…since I now had the GeeFree Gluten Free Puff Pastry Sheets in my clutches…and my freezer…I knew immediately the first thing I wanted to make with them.  Way back…back before I went gluten-free, I made these amazing Tomato and Goat Cheese Tarts, with the aid of a recipe from The Barefoot Contessa, and fell in love with them.  This was just before I had to go gluten-free…and so…when it happened, this new favorite recipe was now forever gone.  I attempted it a couple of years ago, in 2013, with the Pillsbury Gluten Free Pie & Pastry Dough.  It wasn’t the same at all.  So…when a recipe that actually calls for puff pastry now can have real (gluten-free) puff pastry, I, naturally, have to make it.  So I did.

I put the pastry sheets into the fridge the night before I was going to make this dish, allowing them to thaw from frozen.  When I got home from work, I began to work on caramelizing onions for the recipe, slicing tomatoes, giving my homegrown basil a julienne, and then went to snag the pastry sheets from my fridge to prep them.  My counter top got a liberal sprinkling of gluten-free flour, as did my rolling pin, and I rolled out the sheet to be thinner before cutting 6 inch circles from it.  I used a paring knife to score a ¼-inch-wide border around each pastry circle.  Then, the center circle was scored with the tines of a fork and given a sprinkle of Parmesan cheese, not leaving the border of that second circle.  The caramelized onions were placed on top, along with crumbled goat cheese, a slice of tomato, olive oil, basil, salt and pepper.  I sliced shards of Parmesan to put over the top and went to bake these tarts, praying that this all worked out just as I remembered.

The bad…the puff pastry didn’t puff up around the edge that was not scored.  So, if you are looking for that flaky, layered, soft crust that puff pastry produces when it puffs in the oven…this didn’t happen.  The puff pastry remained completely flat…like a pizza crust.

The good…it tasted phenomenal.  And even though I baked it at a higher temperature (per the recipe I was using, as opposed to the box directions), it didn’t burn (like the Pillsbury pastry dough did), and it did have that light texture you expect from a puff pastry…just without the lift.  And that’s fine.  It got to this gorgeous golden color.  And it worked as a great base for the tart I was making.  So, it wasn’t like the one I used to be able to eat…it sure tasted like it.  Looks aren’t everything.  And this didn’t look bad, it just didn’t get puffy.  The flavor, buttery, crispy, soft, amazing…yeah…it was worth the wait for over a year to actually try this stuff.  And I think next time I’m going to try it in one of their suggestions online…like a fruit tart…or a vegan version of a pot pie.  Hmmm…that might be what I do actually.  YUM!!

Let’s discuss what goes into the making of the GeeFree Gluten Free Puff Pastry Sheets.  These pastry sheets are made from potato starch, butter (sweet cream, natural flavorings), water, canola oil, eggs, sugar, baking powder, salt, xanthan gum, flaxseed meal, whey protein concentrate, inulin (chickory root), guar gum, baking soda, citric acid, and annatto.

Each package contains two 9×7 frozen puff pastry sheets.  This box is meant to serve 6 people.  A serving size is 1.5 ounces of a pastry sheet.  This serving will provide you with 150 calories, 9 grams fat, 4.5 grams saturated fat, 0 grams trans fat, 25 grams cholesterol, 250 mg sodium, 18 grams carbohydrates, 1 gram fiber, 1 gram sugars, and 0 grams of protein.  Not extremely filling…but definitely full of delicious flavor and texture.

I am impressed with the innovation of gluten free puff pastry sheets that can be bought at the store in the freezer section instead of having to go through the quite labor-intensive way of making it from scratch.  GeeFree Gluten Free took all the hard work out of the task and simplified it into puff pastry sheets that are there for your convenience.  I am one happy little baker and chef right now.  Oh yes…so very happy.  If you can find the GeeFree products, get the Gluten Free Puff Pastry and create some puff pastry goodness.  Just…amazing that it has happened.

Who says stuffing is just for Thanksgiving?  Where is that written?  Growing up, I was one of the only people in my family who wanted to have stuffing.  My dad wasn’t a fan, so my mom never made it.  Everything I needed to know about stuffing, I tasted at my friend’s homes.  It was a rare occasion that my mom would make it…and as we never had turkey on Thanksgiving, but enjoyed a delicious shrimp creole instead…well…this was more of a Christmas thing.

When I went gluten-free…stuffing was off the menu regardless…unless I made it myself.  In fact, one of the first gluten-free recipes I posted was a Gluten Free Hazelnut Sage Stuffing, which I made with Rudi’s Gluten Free Bread.  That was back in 2011…and I’ve made that recipe quite a few times since then.  It’s delicious and easy and amazing.

But sometimes, you just don’t want to do all the work yourself.  These days, my free time is less and less.  I’m recovering from a torn hip labrum, getting back to running, doing all my stretches for physical therapy and trying to maintain only a slight bit of pain when I move, and everything else like work, preparing meals/snacks for work, and maintaining my training/workout schedule.  It just isn’t always feasible to pull out a recipe and whip something up.

Well, two weeks ago, I was in Columbus, Ohio, visiting my friend Jenn.  And as I was packing up to head home, she handed me a box of Glutino’s Gluten Free Corn Bread Stuffing.  As it was due to expire within the month, I decided I would make this for lunches this week for both the roomie and myself.  And, that Sunday evening, I did just that…

I had everything else needed to make the recipe that was supplied on the box in my fridge, ironically enough.  I guess I just know what’s good to have on hand, HAHA!  Actually, it was just luck that I didn’t have to pick up anything else to make this.  All I needed was butter (I used Earth Balance), eggs, vegetable broth, celery, and onion.  That was it.  I followed the instructions on the box, pulling open the silver package that contained the corn bread stuffing portion of the product, loving the little, crispy, yellow corn bread croutons that spilled out and into the bowl with the rest of the ingredients.  Giving it a good stir, it was prepared and ready to cook.

This stuffing smells amazing as it cooks.  I think I was drooling a little every time I walked by the oven.  I mean, SO good.  And when it was finally done, I pulled the dish from the oven, loving how golden the top had become during the cooking process.  I dished it out into 6 Pyrex dishes, tasting a little at the end…and…oh yeah…this was going to be good.

I was wrong, though.  This stuffing wasn’t good.  It was FANTASTIC!!!  Seriously, it was love at first taste.  And I was really, really anticipating lunch for the three days that my roomie and I had this in our refrigerator.  Seriously…I was sad when we devoured the last servings of it.  The cornbread croutons soak in all that amazing flavor from the eggs, sauteed veggies, and the vegetable broth.  It doesn’t get mushy though.  Not at all.  As it bakes, all that flavor bakes inside, making this rich, savory, and addictive stuffing that it’s hard to stop eating.  And that top layer gets this nice golden brown, which brings that bit of crunchy texture when you dig into it.  My mouth waters just thinking about it again.  In fact, I want to see if any of my natural food stores have this on hand.  I’m sort of concerned it’s a seasonal product…but I have every intention of stocking up!

So, let’s take a look at what all goes into a box of the Glutino Gluten Free Corn Bread Stuffing, shall we?  This product is made up of corn starch, tapioca starch, vegetable oil (contains one or more of the following: sunflower oil, canola oil, safflower oil), seasoning (salt, yeast extract, sugar, maltodextrin, dextrose, spices, onion powder, garlic powder, dehydrated parsley, expeller pressed canola oil, spice extractive, silicon dioxide), sugar, egg whites, salt, guar gum, glucono-delta-lactone, yeast, pectin, sodium bicarbonate, sodium alginate, modified cellulose, iron, niacin, tricalcium phosphate, pyridoxine hydrochloride, thiamine mononitrate, and riboflavin.

The Glutino Gluten Free Corn Bread Stuffing mix isn’t a nutritional bomb either.  So, it’s not clean eating for sure…but the nutritional facts aren’t so bad.  A serving size of this product is 1/2 cup prepared and there are 8 servings per box.  This serving will provide you with 120 calories, 4.5 grams fat, 0 grams saturated fat, 0 grams trans fat, 0 mg cholesterol, 470 mg cholesterol, 20 grams carbohydrates, less than 1 gram fiber, 1 gram sugars, and less than 1 gram protein.  The lack of fiber and protein would make you believe that it wouldn’t fill you up if eating it as a meal instead of a side, but that wasn’t the case at all for me.  I found it filling and amazing.

So…if you want to make this too, here is the recipe I used, which is straight off the back of the box itself:

Recipe: Glutino Gluten Free Corn Bread Stuffing

Servings: 6
Time: Prep 10 minutes; Cook 35 minutes

Ingredients:

 

  • 2 Tbsp of unsalted butter (I used Earth Balance)
  • 2 large eggs
  • 1-1/2 cups of vegetable broth
  • 1 cup diced onion
  • 1 cup diced celery
  • l box Glutino Gluten Free Corn Bread Stuffing

Directions:

Preheat oven to 350° F.

Lightly grease one 8×8 baking pan.

In a heated skillet add the 2 Tbsp of unsalted butter and sautée onions and celery until translucent. Let the vegetables cool.

In a mixing bowl empty package of stuffing mix.  Add cooled sautéed onions and celery, eggs, and vegetable broth. Let stand one minute.

Stir until all the liquid has been absorbed.

Place in greased baking pan and pack down.

Cover with foil, bake for approximately 25 minutes. Uncover and finish cooking for an additional 8 minutes or until it reaches an internal temperature of 165° F.

This was one of the first corn bread stuffings I have had.  And it brought back all those happy memories of the Stove Top Stuffing days of my childhood.  I was beyond impressed.  So, if you’re a glutton for stuffing, I highly recommend picking up a box of Glutino’s Gluten Free Corn Bread Stuffing.  Even your gluten-eating friends would never guess this was gluten-free.  It is that delicious!!  ENJOY!

You know…I’ve been searching for the newer additions to the Rudi’s Gluten Free Bakery bread selection since they were first introduced back in early 2014.  But, it seems that no store in the Louisville area carries anything apart from the traditional three: White, Multigrain, and Cinnamon Raisin.  That is all I can ever find around here.

So, imagine my delight upon a stop at my favorite Columbus, Ohio, store – Raisin Rack, and spotting the two missing pieces of my Rudi’s Gluten Free bread dilemma.  I could only afford 1 loaf this time around, and after a little back and forth with the roomie, we decided on the Rudi’s Gluten Free Bakery Deli-Style with Caraway Seeds Bread.

And no soon had I transported it home and put it in my freezer…it was back out again.  I’ve been spending a lot of time out on the road, and to save money, and time (because fast food is not exactly easy for a gluten-free vegetarian)…I’ve been packing peanut butter & jelly sandwiches to eat for dinner.  Yep.  That’s how I roll.  And while I had two slices of a previous, regular Rudi’s Gluten Free White Bread loaf in my freezer, I delegated that for my roommate’s sammie while I went ahead and tried the Deli-Style.

I can’t say the overall appearance of the Rudi’s Gluten Free Bakery Deli-Style with Caraway Seeds Bread looks much different from the other varieties on the market.  It doesn’t.  BUT…my blonde self (haha!) didn’t quite register that this was a loaf of bread that was definitely geared more toward delicatessen-style sandwiches…like…those with meat in them.  And since I don’t eat meat…not exactly a bread that would normally find its way into my freezer.  Nope.  That didn’t register at all.  So, here I was, making a peanut butter and jelly sandwich with the Deli-Style bread, not even considering that this bread was made to be like a rye bread and that the caraway seeds might add an aromatic anise-like flavor.  I just thought it was like the sprouted seeded bread I had been eating recently.

So, you can imagine my extreme surprise when I unwrapped my peanut butter and jelly sandwich on the Rudi’s Gluten Free Bakery Deli-Style with Caraway Seeds Bread…and took a bite.  NOT A GOOD TASTE!!  Nope.  The bread definitely had that rye and anise flavor to it, which is all fine and good with a savory sandwich…but peanut butter and jelly is anything but a savory sandwich.  This combination did not work at all.  I somehow managed to finish off the sandwich regardless…but I was…beyond disappointed.

And then…I remembered one of my favorite foods in life to dine on is avocado toast.  And while the Rudi’s Gluten Free Deli-Style with Caraway Seeds Bread was an awful match for PB&J…it was a delightful flavor enhancer for the avocado toast I often toast up for breakfast…and sometimes dinner.  When I toasted up this bread and mashed an avocado over it, seasoning it with a hit of bereber…that was so much better.  To me, I think when I saw Deli-Style, I was thinking size of the bread.  The caraway seed part didn’t even register.  So, after an initial taste that went…not so well, the next few times I ate this bread, I ate it in a savory way…and it tasted perfect.  The hit of dilliness with the caraway seeds perfectly complimented the avocado and seasoning…and for that, my confidence in this bread was back.  So, if you are a fan of rye bread, Rudi’s Gluten Free Bakery is bringing it to you…and you can have it back in your life with their Deli-Style with Caraway Seeds Bread.  My one compliant (as is the case with most gluten-free breads) is that some of the slices had some pretty massive holes in them.  Sad face.

Let’s talk ingredients, shall we?  Rudi’s Gluten Free Bakery prides itself on using real ingredients…so it is no surprise that this holds true for their Gluten Free Deli-Style with Caraway Seeds Bread.  This bread is made from water, potato extract, tapioca starch, rice flour, high oleic canola/sunflower oil, inulin, rice starch, psyllium husk, egg white, yeast, sea salt, caraway seeds, xanthan gum, ground caraway seeds, vinegar, sodium bicarbonate, and natural enzymes.  It is non-GMO, soy-free, dairy-free, nut-free, kosher, and contains no high-fructose corn syrup.

As far as nutritional information goes, the Rudi’s Gluten Free Bakery Deli-Style with Caraway Seeds Bread looks amazing in print.  The serving size is 1 slice of bread.  This slice will provide you with 70 calories, 0 grams fat, 0 grams saturated fat, 0 grams trans fat, 0 mg cholesterol, 170 mg sodium, 16 grams carbohydrates, 0 grams fiber, 1 gram sugar, and 1 gram protein.  It isn’t a very filling bread, a common problem with gluten-free breads…but it sure is delicious.  Pair it with the right thing, and you have a very filling breakfast, lunch or dinner.

So, at first bite, I was not in love with the Rudi’s Gluten Free Bakery Deli-Style with Caraway Seeds Bread.  Not at all.  But I had paired it wrong due to not fully understanding what deli-style bread was all about.  Once I figured it out and paired it with the right sort of topping and filling, that was where I learned to enjoy it.  It’s all about the food you pair with it.  Not recommended for PB & J or something like a french toast…but for any sort of savory sandwich…or even a grilled cheese, it just might work better.  So, if you love rye bread, this one is perfect for you.
