So, one of my roommate’s favorite desserts is cannoli.  She can indulge quite a bit when we go out to Italian places that offer it as a dessert…but it is a very rare treat for me.  Gluten free cannoli is just…not often found.  Sweet ‘N Savory Food Truck did it once during Cluster Trucked…and I had one at Da Luciano in Chicago the night before the Chicago Marathon…but otherwise, I’m normally not able to partake in this classic Italian pastry dessert.

Which is too bad.  Because I’m the one who introduced this amazing treat to my roommate, prior to the Celiac diagnosis.

But, over the New Year holiday, my roommate, my friend Jenn, and I all ventured out to Jungle Jim’s International Market, and went on a small, tightly budgeted shopping excursion.  Because…it’s sort of become a tradition.  We wound our way through the store, finally reaching my favorite destination…the gluten-free aisles.

YAY!  Let my shopping begin.

And…breaking the budget bank happened almost immediately when my roommate spotted a big yellow box on the top shelf of the first row…

GLUTEN. FREE. CANNOLI. SHELLS.

Oh hell yes.  So…with most of the budget gone for this high ticket…the shopping got a little more picky.  But I was elated…because I had gluten free cannoli shells in my basket and could easily pick up Kite Hill ricotta to make a vegan cannoli filling.

The brand was Russo’s Gluten Free Gourmet.  Russo’s Gluten Free Gourmet came about from Neil Russo, a professional chef who was hard at work on gluten-free recipes, which he was striving to perfect after hearing about the many people connected to himself that were having a hard time finding food while on a gluten-free diet due to intolerance or Celiac disease.  After experimenting on his Italian bread loaves and Tiramisu, Russo was ready to give his food to the world.  He first introduced the gluten free food in his restaurant, where he got high praise.  Soon, he opened up Russo’s Gluten Free Gourmet.  And from there…the frozen versions of some of the classic Italian foods he perfected in gluten-free form.  So good, that people even would ask if he was certain it was gluten free.  All of Russo’s products are prepared in a strictly gluten-free facility.

We decided to do it on our least favorite “holiday”…Valentine’s Day.  And with all that in mind, after a quick jaunt out to the grocery store before the weather hit yesterday…I prepped the filling and made dinner (Smokey Zucchini Cakes with a Vegan Lemon Cream Sauce) and, afterwards, went to fill a cannoli shell for each of us.

I pulled the box of Russo’s Gluten Free Gourmet Cannoli Shells down from the top shelf of the pantry and went to work.  The shells looked amazing.  Golden and crisp…they weren’t broken, which was my main concern to be honest.  I was terrified they would be these fragile little rolls…but they held their own for sure. I put some of my vegan ricotta cannoli filling into a piping bag and piped it into each of the shells I had removed for us.  I passed one off to my roomie and then went to get mine.  She was already diving in.

And that’s when I knew…this was not going to live up to the expectations I had built up in my mind. Nope.  I was just finishing up filling mine and I look up and cautiously ask…”How is it?”

“The filling is delicious.  The shell…”  When her voice trails off…I know.  I know it can’t be  good.  “…is nothing special.”

Hmmm.  So, I settled in, wine glass in one hand, cannoli in the other.  And take a bite.  Or, at least I attempted to.  This gorgeously constructed, perfectly golden, durable gluten free cannoli shell is…solid.  It was the hardest thing to actually bite into.  It was crispy alright…to the point I was almost concerned about chipping a tooth.  And…trust me…these were marked as good through April…so they weren’t over their best by date.  UGH.  But, I was determined to have my cannoli, dammit.  It was Valentine’s Day.  I owed myself that much.  I finally managed to bite through it and then loud crunching ensued.  It was…really flavorless.  Didn’t taste like much.  Tough as bricks (literally).  And heartbreakingly disappointing.  I had this grand image of devouring cannoli on Valentine’s Day…just me, my wine, and my dessert smorgasbord (I had vegan and gluten free cookie dough from Annie May’s Sweet Cafe as well).  And here I was, with sub-par, tough-as-a-rock, cannoli shells.  UGH.  They were really too tough to eat.  My roommate and I persevered, said a prayer for our teeth…and then today, decided not to risk it again…and tossed them out.  I hate when expensive gluten-free products don’t live up to their price tag.  I wouldn’t pay $5.00 for these, and here I payed $16.  Just to trash them.  Since my filling was awesome, I did dig out my gluten-free cinnamon graham crackers and made up a new recipes…that was much easier to eat and much kinder to my teeth.

Sorry, Russo’s.  Your other products have been good…but these…were horrible.  And I was not impressed.  In fact, I was beyond let down and a little angry I paid that much for a product I didn’t enjoy.  Not even a bit.

Russo’s Gluten Free Gourmet Cannoli shells are not made of cement, as you might make yourself believe if you ever tried to bite into one.  In fact, these dessert vehicles are made from rice flour, corn starch, tapioca dextrin, xanthan gum, rice extract, water, marsala, eggs, butter, sugar, salt, and vegetable oil.

As for nutrition, I believe you will burn more calories than you consume just trying to gnaw through these, but with that being said, a serving of Russo’s Gluten Free Gourmet Cannoli Shells is 1 shell and there are 6 shells in the box.  This serving will give you 70 calories, 1.5 grams fat, 1 gram saturated fat, 0 grams trans fat, 15 mg cholesterol, 80 mg sodium, 14 grams carbohydrates, 0 grams fiber, 1 gram sugars, 1 gram protein.

When people conjure up an idea in their mind of what gluten-free foods taste like (cardboard, tasteless, etc)…this would definitely not convince them otherwise.  It has been awhile since I’ve actually been disappointed with a product.  And I am beyond disappointed with Russo’s Gluten Free Gourmet Cannoli Shells.  Take my advice…don’t spend your money on these.  Your craving for cannoli is not worth the letdown you will endure if you decide to break the bank and try these.  It’s not worth it.  Trust me.

Top 10

Another weekend has come and gone, and what a weekend it was.  This week, I had a fantastic meeting with my physical therapist.  She had me working so much more on strength and balance.  Afterwards, she did a strength test on me and discovered that my legs and hips are FINALLY equal in strength.  That took awhile.  And, with 6 days that day to the day the injury began to really bother me…she was very excited about my first upcoming double-digit run on Saturday.  10 miles was the goal…and I was both terrified and excited about it.

And then…my other hip/quad started to act up.  It felt like a muscle strain, but it was enough that got me worried about Saturday morning.  So, on Friday, I contacted Katie (my amazing physical therapist) and we went back and forth as to where the pain was, how it felt, and what I should do.  In the end, she told me to stretch, foam roll, and give the run a shot.  If I didn’t hit 10…then to try again the following week.

On Saturday morning, in air temps that felt like 1°F…I struck out on my run…on a steep hilly course…and got through it. Pain free.  No limping.  No pain.  Nothing.  It made me feel confident and amazing and strong…all at the same time.  And relieved.  This is an ongoing battle, for sure…but I needed that run.  More than I even knew until I was done.

Anyway…here is a list of 10 fantastic and wonderful things for this week…just because sometimes you find blessings…

1. A short, but amazing visit from my sister and nephew

Side-by-side or miles apart, we are sisters connected by the heart.  Seriously, my sister and I have always been close.  We have seen and done so much together.  We have been with each other through thick and thin.  Our bond is amazingly strong.  When we get together…watch out.  Insanity ensues.  She wanted to come and visit and chose Valentine’s Day weekend to do so.  And we had an absolute blast.  Added bonus…she brought one of her boys with her…Chace (age 6).  And we had SO much fun.  We braved the cold air and the snow…which Chace loved…we ate good food…we shopped…we played video games…we attempted to play Chinese jumprope, we laughed, snorted, and curled up together to watch a movie. Chace and I baked a special cake.  Chace told me that he loved me.  Do you know how much that made me want to cry (in the good, happy way)?  These are the moments I live for…and miss out on…because I live away from the rest of the family.  I hated it when they had to leave.  I cried a little this afternoon.  But, she’s already planning another trip…and bringing Landon (age 9) this time.  I love my sister.  And next time, the weather should be better so she and I can finally get that run in together.


2.  BOSU

I am now the proud owner of a BOSU.  I have wanted one for a long time now, but when this became part of my physical therapy, not having to go to the gym to do it became a bit of a priority.  The BOSU Balance Trainer is an exercise tool that targets multiple areas of fitness like endurance, strength, balance, and stability.  The squishy dome side on top offers a bouncy surface for everything from cardio to strength training.  Flip it over…and you work your on your core, lower body , and flexibility.  Due to lots of amazing Dicks coupons and a gift card…I didn’t pay anything out of pocket for this.  I love it. It’s pink…not blue like they normally are (because…princess).  And now I can work on the strength and balance exercises that Katie (the PT) gave me to work on…in the comfort of my own home.  SO happy!


3.  Feeling like one of the group again

IMG_20160213_103112[1]As I mentioned, this Saturday I was set to run 10 miles.  I had originally made plans to do this early to have a bit more time with my sister and nephew…but those plans didn’t pan out.  Probably for the best, with how cold it was.  All that being said, I got up and went out to run with the training group, and ended up striking out for the first 3.5 miles with people from my old running group.  It felt so good to be back out with them.  They ended up not tackling the heavy hill climb at Iroquois, but since I skipped hill day due to weather, I decided I needed to climb, even though my PT said to try to stick to flat roads.  Seeing them, running with them, talking to them…it all just lifted my spirits.  I hadn’t felt that good in a long time.  I knew I missed it…but I really miss them.


4. New Running Shoes

Sometimes something as simple as a new pair of shoes can make the world feel better.  Everyone knows that I love running in Newtons…but…I also love me some bright colors on my feet.  And the new version of my Newton running shoes are…silver.  Life’s too short to be stuck with boring running shoes.  And, as I was in need of new shoes, I went out to fleet feet and went to see Jackson (it was his last day there)…and tried on the shoes I originally went in for…the Adidas Pure Boost X (the ones that were made by women for women).  They were…not what I expected.  Very different.  And, while they felt good, I was a bit worried about lack of support on the arch of my foot.  So, Jackson went to work.  After I said no to the Adidas Energy Boosts (too much shoe)…he brought out a few more to try.  After I gave the Asics Gel Cumulus a try (liked them), and then the Brooks Women’s Launch 3 (loved them), and then the Nike Pegasus Air Zoom 32 (really loved them)…I did something I didn’t expect.  I went back to a Nike shoe.  Of course, I still have to really road test them, but they felt really good in store.  I have heard only good things about the Pegasus…so here’s hoping!  THANKS, JACKSON!

6. Being treated to a cake by Chace

Chace is like his Auntie KJ…he loves to cook and bake.  And this weekend, he brought the chef hat and apron I got him for Christmas and go to work baking a cake for dessert and to take home to his dad, brother, and sister.  It was a gluten-free funfetti cake (sprinkles rule!) with a strawberry frosting and decorated with some red sprinkles for the Valentines Day holiday.  He’s an amazing little boy in the kitchen, and he’s got quite a future as the chef he talks about becoming.  The cake…for the record…was super-moist…and super-yum!  Afterwards, we all snuggled on the couch and watched Pixar’s Ratatouille.


7. Morning smiles on an early, cold, running day

12742614_533123900192145_892004465850865809_nI have met some of the best people through running.  After taking an entire (basically) year off due to this nagging injury, it feels good to be out and running (even if it is slower than I would like) with people.  Sometimes, I end up alone and on my own.  But I always start with a group.  And in these groups, there are people who just make you feel welcome.  That’s how Melissa made me feel on Saturday, when I was standing around, arms crossed, just dreading going out in the cold.  She pulls me into a picture…and everything just felt better that morning.  Sometimes it is the smallest gesture that makes all the difference.  Thanks, Melissa!!


8. Gluten-Free and Vegan Cookie Dough

My local allergen-free bakery…Annie May’s Sweet Cafe…sold out, but reserved a cup of their cookie dough for me…because Valentine’s Day isn’t much fun when you’re single…so a big cup of cookie dough is a good meal choice, yes?  The hardest decision after getting it out of the fridge today was to have it with red or white.  HA!  I love my bakery!!

10. Chocolate!!

Forget Valentines Day.  Just give me chocolate.  Dark chocolate, especially.  I’ll love you for life.  And, trust me, I ate plenty of chocolate this weekend.  Because I love enjoying the sweeter things in life with the sweetest people in my life.  And we are a family of chocoholics.  It’s a lifestyle.

Heading into a new week…here’s hoping this upward trend in my recovery continues.  Here’s hoping that the winter weather goes away for good. Here’s hoping for many more good days over bad.

Life’s Too Short to Miss the Sweeter Things

Two fun facts about me:

1. I love eating healthy
2. I love sweets (especially chocolate)

What we have here, my friends, is a constant battle of sheer willpower.  But, the fact of the matter is…sometimes you just have to find a way to treat yourself.  Naturally, I stick to my necessary gluten-free, dairy-free, vegetarian lifestyle…however, this doesn’t mean that I don’t enjoy some of the finer things in life.

That being said, 2016 is a year of change for me.  I’m trying to improve myself, my body, my soul, my mindset…I’m trying to reach both long-term and short-term goals.  And part of that is definitely making certain tweaks to the diet.

I’m not saying I am cutting out sweets and desserts entirely.  That’s inhuman.  But, I am cutting back on them.  And once the current ones in the pantry are moved out…they aren’t coming back in.  I buy gluten-free…so I’m too cheap to just toss the stuff away.

That being said, I’m always game for trying new ways to make an indulgence healthier.  And awhile back, the amazing Lottie Bildirici, better known in the social media world as “Running on Veggies” posted about the treat she made for Kara Goucher (yes…THE Kara Goucher) when she was coming to NYC to run the NYC Marathon.  Kara chose blondies as her treat and Bildirici got to work researching and coming up with a recipe that would not only seem like a treat, but be made with real ingredients, nothing processed, and be healthy.  When the recipe posted, I was beyond intrigued.  Granted, my foray into baking using beans as a base resulted in brownies that tasted like black beans, so I did have my reservations going into this…but I decided to give it a try.

Blondies made without flour…and by using garbanzo beans (chickpeas) and dates as the sweetener.  Well…there was only one way to find out how this would turn out.  I hoped for the best, since Kara Goucher was a fan…but…hey…some things you have to try yourself.

So this was what I put into my food processor this past Sunday afternoon:

Everything but the dairy-free dark chocolate chips, that is.  Any nut butter (or nut-free butter) will work, but I’m a huge fan, and an ambassador, for NuttZo…and it really is the best stuff on the market.  Find it.  Trust me…it’s worth the price!

After giving everything a whirl in the food processor, I was left with a light and fluffy fatter.  I folded in the chocolate chips, sprayed down some muffin tins and began to evenly distribute the batter into 24 muffin tins.

After baking for around 40 minutes, I removed the pans from the oven and let everything sit, untouched for over an hour.  At that point, I moved everything to a sheet pan (carefully) and then into the freezer.  But not without trying one.

First of all, they don’t taste bean-y…and they don’t taste like dates either.  They actually taste like a decadent little dessert or muffin.  Especially when warmed up in the microwave for about 30 seconds or longer.  Although, I love them frozen too…but I’m weird like that.  These are an amazing treat and one that I don’t feel bad about eating because…it was made from real food.

I know a lot of people look down on those who enjoy a treat every now and again…but the fact of the matter is…we’ve got it all wrong.  Not all calories are created equal.  Just like now not all carbohydrates and fats are either.  That’s the being said, I am a firm believer in counting nutrition, not calories.  And that’s what making something like this is all about.

And trust me…they are SO good.

Eat real food.  These treats are more like a healthy choice than an indulgence.  And what’s not to love about that?!

It’s no secret.  Not anymore.  When it comes to gluten-free bagels, my mind has been blown by the amazing ladies (or the crazy bagel ladies, as they dub themselves), at Sweet Note Bakery, based out of Bensalem, Pa.

Seriously, I had loved Udi’s Gluten Free Bagels…and Canyon Bakehouse’s Gluten Free Bagels…and I had been less excited about other brands…but it was the pioneering spirit of the Sweet Note Bakery ladies that really got me to step outside of the commercially known product line and try something…different.

And after a little prodding on Twitter…I took the leap and ordered their standard bagel offerings (Plain, Sesame, Everything, and Cinnamon Raisin).  I fell in love with the very first bite of the very first kind I tried.  And my appreciation has only since grown.  During the fall and winter, two seasonal flavors are introduced to the line-up…Pumpkin Spice and Snickerdoodle.

HELLO SNICKERDOODLE!

But…before I digress on how Sweet Note Bakery took my favorite cookie and turned it into my favorite breakfast (I’m a New Yorker…of course I love bagels!)..let me introduce you to Sweet Note Bakery…that is, if you don’t know anything about them.

Sweet Note began in 2012, when founder and president, Michelle MacDonald, stepped up to a challenge.  She had been baking ever since she was a child and was very passionate about it.  When her grandfather and sister were diagnosed with Celiac Disease, she took the first steps on her entrepreneurial journey.  Her family really missed a good New York Style bagel.  (Hey…I can’t blame them…I know this feeling all too well). So with a lot of experimentation and trial and error, MacDonald perfected the recipe, getting huge approval from her family (also bagel lovers).  Gluten-free bagels that taste good?!  It was a reality.  Sweet Note Bakery’s vision is to make gluten-free options more readily accessible.  Those of us who live with Celiac understand how isolating this disease can be, when you can’t have a meal while out with friends and family, be it at a restaurant or a ballpark, or wherever your adventures take you.  MacDonald wanted to change that…one gluten-free bagel at a time.

This is truly a love story between me and these bagels.  Every single flavor has been outstanding.  No joke.  You know, I’m very blunt about things I eat and if I don’t like them, you know it.  There is nothing NOT to like about the bagels that Sweet Note Bakery puts out there.  Fantastic quality…fantastic flavor.  Never once have they let me down.  And that’s why all other bagels stay in the freezer section now…and Sweet Note is the only one that actually makes the journey home to my own freezer.

So…Snickerdoodle Bagels.

Yes…they really are as epic as they sound.  Yes…they really do taste like a snickerdoodle.  YES…this is coming from a cookie monster who just happens to call the snickerdoodle her favorite cookie.  Ever.  In the history of cookies.  Seriously.

This morning, I returned to my apartment after my 5:30 am spin class (yeah…you read that time right), ready to have something substantial for my post-workout breakfast.  I pulled out a package of the Sweet Note Bakery Gluten Free Snickerdoodle Bagels and tore them open.  I had been waiting a long time to try these.  I pulled out two (1 for my roommate and 1 for me) and gave them the standard 1 minute defrost in the microwave before slicing each one in half and placing them on a baking sheet to toast up in the oven while I took a shower and got cleaned up for work.  Don’t worry, the roomie was awake and in the vicinity of the kitchen, so I wasn’t leaving anything unattended.  That’s a no-no.  I love my home too much to burn it down.  When I emerged…the apartment was smelling like…warm cinnamon and sugar.  I might have said, “Mmmmmmm!” as I strode toward the kitchen to check on the bagels.  Toasted to perfection.  I removed them from the oven, I knew these would not disappoint me.  They smelled like perfection.  If perfection had an aroma…it would be warm cinnamon and sugar.  For sure.

I went to get my vegan cream cheese out of the fridge, but, alas…I had used it up and failed to put it back on the grocery list.  It was also 4 degrees out this morning, so I wasn’t going to just pop on down to the car (wet hair and all) to scoot down the street to my grocery store to pick some up.  Instead…I used peanut butter.  Delicious, amazing, delightfully yummy peanut butter.  Natural.  No added sugars, salts or any of that craziness.  This required a good amount of stirring, but I got the peanut butter right to the creamy consistency that signifies a perfectly stirred peanut butter…and then…slathered a healthy schmear on each bagel half.  I served my roommate hers, went to pour my coffee, then sat down on the couch with the morning news on and a delicious bagel on my plate.

THIS…my friends…is the perfect balance between sweet and savory.  Perfect.  I loved how the cinnamon sugar coating hits your tongue first, and then it melts into that classic, bready, bagel flavor.  The peanut butter really tamped down on the sweetness, and really kicked up that savory level, making a perfect balance between both worlds. I am certain I would have loved this just as much with my usual schmear of vegan cream cheese, but the peanut butter was the perfect match, in my opinion.  The bagel is all kinds of amazing.  I love how the focus of the bagels by Sweet Note is not so much as the “bigger is better” but the quality and taste.  In fact, they take it back to the classic New York-style bagel…smaller, denser, and perfect.  PERFECT.  Every single flavor has been perfect.  When toasted, the outside gets that perfect golden crust and the inside remains chewy.  It’s dense, and flavorful, and just…awesome.  It’s awesome.  There.  And the snickerdoodle flavoring kicks this bagel up to iconic status.  It’s the Freddie Mercury of bagels.  They will rock you.  They are the champions.  You’ll want them all.  Yep.  Freddie Mercury of bagels.

What I love about Sweet Note Bagels is there is nothing artificial in their recipes.  In fact, the Gluten Free Snickerdoodle Bagels are made from LOVE (yes…that is a true ingredient and one that is in every variety of their bagels), water, white rice flour, tapioca flour, sweet white rice flour, sorghum flour, sugar, cane syrup, molasses, yeast, xanthan gum, psyllium husk, salt, cinnamon, and vanilla extract.  All of this…makes one hell of a bagel.  Because…hello…SNICKERDOODLE = BEST THING EVER!

Let’s discuss nutrition now, shall we?  A serving of the Sweet Note Gluten Free Snickerdoodle Bagels is 1 bagel (128 grams) and there are 4 servings per package.  One bagel will provide you with 310 calories, 4.5 grams fat, 0 grams saturated fat, 0 grams trans fat, 0 mg cholesterol, 300 mg sodium, 65 grams carbohydrates, 3 grams fiber, 14 grams sugars, and 3 grams of protein.  These bagels are a bit higher in sugar due to their snickerdoodliness.  But that’s okay.  They are filling and amazing and one of the best bagels ever created.  These bagels are gluten-free, soy-free, egg-free, dairy-free, vegan, peanut-free, tree nut-free, kosher and non-GMO.

Snickerdoodle Bagels are real and they are taking on the classic snickerdoodle cookie for sure.  I can’t thank Sweet Note Bakery enough for their innovative thinking and coming up with a merger of the best cookie ever with the best bagel ever.  If you can’t find the Sweet Note Gluten Free Snickerdoodle Bagel in stores…order those puppies on line.  They will rock your world.  But act now…as they are only available for a limited time.

While I love my  healthy and fit lifestyle, I do have a very soft spot for cookies.  I am a Cookie Monster through and through.  No doubt about that.  Not even a little bit.  Cookies are my kryptonite.  Offer me any sort of dessert item…and if there are cookies…that’s what I want.  Nothing beats the perfect, buttery, soft, crumbly, cookie.

Kooky for cookies.  That’s me.

So, imagine the grab-and-buy mentality I had when I stepped into my local World Market just before I left for home for the holidays and found those infamous plaid Walkers shortbread boxes…but two…yes…TWO of them were labeled…GLUTEN FREE.  HELLO.  GOODNIGHT.  TAKE MY MONEY!

Seriously…that’s how it all went down.  With the holidays over and me at home, my roommate and I are working through the plethora of impulse buys and purchased sweets that have accumulated in the pantry.  And after revisiting the Trader Joe’s Gluten Free Candy Cane Joe-Joe’s (a holiday favorite and one I never pass up!), this past week, tonight it was time to choose a new treat.  My roommate made the choice to give one of the two (there are three varieties – Ginger and Lemon; Chocolate Chip; Original…our World Market didn’t have the Original) boxes of the Walkers Gluten Free Shortbreads a try.  And, since it was on top…the Ginger and Lemon was up first (scientific approach to choosing dessert…mastered).

Walkers Gluten Free Shortbreads contain the same butter and sugar content as their regular versions, but the wheat flour is replaced by a blend of rice flour, maize flour, and potato starch.  Keeping true to Walkers custom, these cookies contain no artificial flavoring, coloring, or preservatives.  They are certified gluten-free by the UK Coeliac Association, and meet the FDA standard for gluten-free as well.  Walkers promise is that the cookies have “all the pure-butter taste, aroma, and texture you love, but without the gluten.”

Now…keep in mind, I am the girl that shipped a large tin…YES…TIN…of Walkers shortbread cookies to myself when I was in Scotland.  I love…love shortbread.  A good shortbread is crispy, crumbly, and buttery.  Smooth, delicious, and rich.  That’s a good shortbread.  And let’s face it…when it comes to shortbread…Walkers is one of the best.

One bite…and I knew that Walkers can do anything when it comes to shortbread.  They can make perfect, gluten-free, shortbread rounds and make them taste exactly like “the real thing.”  The Walkers Gluten Free Ginger and Lemon Shortbread was flaky and buttery and savory and sweet and melt-in-your-mouth amazing.  I loved the refreshing hits of lemon that followed up each tasty bite.  And the little nibs of candied ginger just spark that much more flavor in each bite.  I totally loved this cookie.  In unhealthy, but healthy, ways.  You know?  I wasn’t expecting this product to be so like their original recipe.  But the nice, cry crumb that you expect to find in shortbread, with that rich buttery flavor…it’s all there.  This particular variety just turns it up a notch with a little citrus and spice.  So much love.

Let’s talk about the ingredients that go into the Walkers Gluten Free Ginger and Lemon Shortbread, shall we?  These cookies are made from their own gluten free flour blend (rice, potato starch, maize, stabilizer: xanthan gum), butter, sugar, candied stem ginger (stem ginger, sugar), ground ginger, lemon oil, and salt.  Notice how you recognize every ingredient listed.  Sure, this may be all about cookies, but at least they are cookies laden in chemicals, fillers, and preservatives.

As for the nutritional information, Walkers Gluten Free Ginger and Lemon Shortbread are…well…just as you would expect for a treat of cookies.  A serving size is two (2) cookies and there are five (5) servings per box.  Your two cookies will dish up 16o calories, 8 grams of fat, 5 grams saturated fat, 0 grams trans fat, 25 mg cholesterol, 75 mg sodium, 21 grams carbohydrates, 0 grams fiber, 9 grams sugars, and 1 gram of protein.  These are cookies and they are not meant to be filling, so don’t expect them to fill you up.

I have fallen in love with a lot of cookies in my life.  But Walkers really stepped up and created a fantastic line of gluten-free versions of their famous, sought-after, amazing shortbread cookies.  I am never going to give these up…because this took me back to a memory…and that is worth every bite of those cookies.  And another trip to World Market.  For more, of course.

Scones.  To quote the minds behind Thug Kitchen, “Scones are the bastard blend of a biscuit and muffin. They sound so wrong but taste so right.”  HAHA!

YES!

I have a deep, passionate, never-ending love for scones.  No joke.  They were one of the first things I ate when I went to Europe…Ireland, to be exact, and I’ve been in love with them ever since.  I’ve attempted to make gluten-free versions of scones in my own kitchen, but nothing has ever quite lived up to the crumbly, golden, amazing food profile of a scone.

Until…Bake Me Happy stepped up to the plate…and hit a home run…all the way over the center field wall.  It’s true.

Bake Me Happy was started by the lovely Wendy and Letha, committing themselves to making each and every bite that you have from their products the most decadent thing you’ve had since sliced bread.  Sliced bread, however, is not on their menu.  After being self-diagnosed with gluten intolerance in 2006, Wendy immediately felt relieve from a life of digestive issues.  The only problem was…the gluten-free food choices available lacked flavor and texture, seriously limiting what she would be willing to consume (and who can blame her!?).  After many years of self-study, she decided to take the plunge and signed up for an immersion course at the Culinary Institute of America, experimenting with recipes and trying them out on unsuspecting friends.  Soon, both friends and family began requesting her treats for parties, and none of them were gluten intolerant.  From there, Wendy expanded and began offering her products to the public.  And from the huge response she got from her goodies…Bake Me Happy, the bakery, was born.  And because Wendy understands what it is like to have a food intolerance , you can guarantee that she takes great care and pride in the products that she puts out for the public.  Not only does she understand the importance of what she does, she also knows that a perfect recipe cannot be rushed and that the best things in life are worth waiting for.

Perfection is key, and perfection is what they managed with their scones.  The scones at Bake Me Happy are available to purchase already cooked and ready to eat…or in their Take & Bake versions.  When I was up in Columbus, Ohio over Halloween, we dropped into the bakery and purchased one scone to devour on the go…and then my roommate promised I could select a Take & Bake variety to bring home.  At the bakery, I chose the Almond, Coconut and Chocolate Chip Scone to devour on the way home.  So, that being said, my roomie (who was paying) decided that she would choose the Take & Bake version…and as there was only one other vegetarian one…she lunged at the opportunity to try the Blueberry, Basil & Goat Cheese scones.  Besides, she’s a happy girl whenever goat cheese is involved.  Note…the Take & Bake Scones do contain butter, sour cream and 3 of the 4 flavors contain cheese.  All of them contain egg.  So…not vegan.

I am not (completely) vegan as of yet.  Maybe one day.  That being said, I do still eat eggs and use eggs in my own baking at home.  I am, however, lactose intolerant, so I had to be sure to take something prior to consuming this delectable treat.

Let me start off by saying, I actually ate these before the holidays.  Life has been insanely busy with me starting physical therapy again and…in general…the holiday madness that happens from Thanksgiving through the New Year.  So, yeah, I am a bit delayed on getting this review up.  But good things come to those who wait…

And I can’t say enough good things about these amazing scones.  The Bake Me Happy Blueberry, Goat Cheese & Basil Scones are fantastic.  I mean, they are just as good as the scones that hooked me on eating scones when I went overseas.  And the Take & Bake versions are just as amazing as the ones they have ready at the bakery.  And it’s not hard either.

Simply thaw the scones in the refrigerator for 12-24 hours, or at room temperature for an hour.  Preheat the oven to 400°F.  Place the desired number of scones on an ungreased baking sheet and bake for 18-22 minutes, or until baked through and golden brown on top.  Allow to cool and enjoy!  Yep…that easy.  And they really are that easy to bake too.  Mine came out of the oven smelling like blueberry heaven and all golden and crispy on the outside.  I was impressed.  It is SO rare that gluten-free baked goods get that amazing golden color.  This was a nice treat.

Even more of a treat was what I discovered when I took a bite.  The Bake Me Happy team made sure each scone (there are 5 per box) was loaded with plump blueberries, creamy goat cheese, and fresh basil.  Each bite was a little savory and a little sweet.  Each scone was crispy and golden on the outside and light and flaky on the inside.  No gluten-free scone I have had before this or attempted to make myself has been anything like this.  I was blown away.  The sweetness of the berries paired amazingly well with the tangy goat cheese and the herby flavor of the basil.  It was a flavor explosion in each bite…and I kept wanting to take more and more bites.  And soon…my scones were gone.  Not all in one sitting, but within 3 days.  HA!  Then I wish I had shelled out some money for more.  I mean…HELLO!!  It doesn’t get much better than this.

No other scone will ever come close to living up to the standard Bake Me Happy has set.  I can pretty much guarantee that.

So, let’s talk about the ingredients that Bake Me Happy put into their Blueberry, Goat Cheese & Basil Take & Bake Scones, shall we?  These delicious pastry hybrids are made with Bake Me Happy’s top-secret flour blend (sweet rice flour, brown rice flour, sorghum flour, tapioca starch, cornstarch, white rice flour), butter (sweet cream, natural flavoring), sour cream, blueberries (blueberries, sugar, sunflower oil), goat cheese (pasteurized goat milk, culture, vegetable rennet, salt), sugar, egg, basil, baking powder (cornstarch, bicarbonate of soda, sodium aluminum sulfate, monocalcium phosphate), xanthan gum, salt, and baking soda.  These scones are completely gluten-free.

As for nutrition goes, well, butter, cheese, and sour cream are involved.  You do the math!  That being said, I have scones as a treat…like Sunday breakfast or something.  Or…post-workout (you think I’m kidding, but I’m not).  The Bake Me Happy Blueberry, Goat Cheese & Basil Take & Bake Scones serving size is one (1) scone and there are five (5) scones per box.  One scone will fill you up with 390 calories, 20 grams fat, 12 grams saturated fat, 0.5 grams trans fat, 80 mg cholesterol, 430 mg sodium, 48 grams carbohydrates, 2 grams fiber, 14 grams sugars, and 6 grams of protein.  They are hockey-puck sized and…seriously…worth the calorie overload for breakfast every now and again.  Trust me, I love to eat fresh and clean…but sometimes, you just need to have a treat.

This is one of my new favorite treats.

So, ladies of Bake Me Happy…I love you.  I love your scones.  I can’t wait to come back and buy out half your bakery again.  Because…that’s what I do.  That’s how I work.  And with scones waiting for me to take and bake…well…it should be sooner rather than later.

It has taken me way too long to review this product, for sure.  Which is strange, because I am very enthusiastic and happy with the Sprouted For Life Gluten Free breads from Food For Life.  In case you’re new to this blog, I have previously reviewed the other three varieties of the Food For Life Sprouted For Life Gluten Free Breads: Original 3 Seed, Almond, and Flax.

I was fortunate enough to be sent one loaf of each of the Sprouted For Life Gluten Free Breads from Food For Life.  These loaves come in Original 3 Seed, Almond, Cinnamon Raisin, and Flax.

But I think I was saving the Cinnamon Raisin version…because cinnamon raisin bread (or anything) has always been one of my greatest flavor loves in life.  I was very fortunate to have a loaf of each of Food For Life’s Sprouted For Life Gluten Free Breads to try.  I flew through the other three…but the Cinnamon Raisin version has waited a very long time for its turn to shine.

That being said, I am doing a lot of baking and cooking these days (okay…that’s not unusual for me…but I’m trying to create amazing foods with fresh, healthier ingredients).  And I had a thought about a bread pudding that would incorporate some of my favorite things in life: cinnamon raisin bread, peanut butter, banana, and coconut.

How could this be a bad thing?

And, thankfully, I had saved the loaf of the Food For Life Sprouted For Life Gluten Free Cinnamon Raisin Bread.  I pulled it out of the freezer this past weekend and allowed it to come down to room temperature (and thaw beautifully) before getting to work in my kitchen.  I pulled 12 slices of bread and cut them up into large cubes.  This bread is absolutely perfect for a bread pudding recipe as it is not a soft bread.  This bread is sturdy, and when eaten on its own, I prefer it toasted.  Although, I nipped a few of the cubes of bread, just to get a taste for it as I knew I’d be blogging on it.

Guess what?  Even not toasted, the Food For Life Sprouted For Life Gluten Free Cinnamon Raisin Bread is just layers of flavor.  Not only is each slice loaded with plump, juicy, organic raisins, but it has this nutty flavor to it as well.  It’s amazing.  I couldn’t wait to taste it toasted and in my recipe I was working on.

After combining it with the other ingredients of the bread pudding, which also includes NuttZo Original Crunch 7 Nut and Seed Butter, a ripe banana, unsweetened coconut flakes, unsweetened cashew milk, Earth Balance, and 4 large eggs.  All of this went into my (vintage) Pyrex bowl, and I gave it a good toss and tucked it into the liquid, allowing the bread to really absorb the liquid for about 5 minutes.  Then…I loaded it into a baking pan and popped it into the oven.  I then proceeded to clean up my apartment, stopping briefly to really admire and fully absorb the fantastic smell that was coming from my oven.  Nutty and sweet…it smelled like heaven.  I am assuming, of course, that heaven smells like a bakery…and peanut butter.  And if so…I’m okay with that.

Once the bread pudding was set, I removed it from the oven, and barely allowed it to cool at all before cutting a small piece to give it a try.

OH…YEAH!!  While the flavor profile mostly goes to the peanut butter and coconut, the bread is the main vehicle of any bread pudding…and the Food For Life Sprouted For Life Gluten Free Cinnamon Raisin Bread was ideal…no…it was perfect…absolutely perfect, for this recipe.  The bread toasted up gorgeously, developing a richer, nuttier flavor to it after being toasted.  The raisins remained plump and sweet.  The edges of the bread…crispy…sweet…savory…and amazing.  The flavor of this bread meshed SO well with the other ingredients.  I fell in love with this cinnamon raisin bread…and that means it has to be good, due to my affinity for cinnamon raisin products.  Just…YUM!!

Let’s discuss the ingredients that go into the Food For Life Sprouted For Life Gluten Free Cinnamon Raisin Bread, shall we?  This particular type of bread is  made from organic sprouted quinoa (red and/or white), filtered water, organic arrowroot, organic potato starch, organic raisins, organic sprouted millet, organic tapioca, organic applesauce, fresh yeast, organic safflower oil, organic cactus, organic sprouted chia seeds, organic agave, organic vanilla organic cinnamon, sea salt, vegetable gum (xanthan, cellulose), and organic psyllium.  Made with sprouted chia, sprouted quinoa, and sprouted millet, this bread is a trio of health.  Not only is it made with sprouted grains (which are SO good for you!), it is also vegan, gluten-free, and high in fiber.  It is so rare for a gluten free bread to be high in fiber.  This is a welcome addition to my freezer.

Now let’s take a look at the nutritional information, because, honestly, in this day and age, it’s important to pay attention to those labels.  A serving of the Food For Life Sprouted For Life Gluten Free Cinnamon Raisin Bread is 1 slice of bread (43 grams).  This serving will dish up 110 calories, 1.5 grams fat, 0 grams saturated fat, 0 grams trans fat, 0 mg cholesterol, 95 mg sodium, 22 grams carbohydrates, 3 grams fiber, 5 grams sugars, 1 gram protein.  When I was first introduced to this bread, the high calories on only one slice of bread really freaked me out.  But, a good reminder is that not all calories are created equal and there is nothing fake…no colors, preservatives, or fillers…going into this bread.  It’s all healthy, all good, all nutritious.  It’s a great choice of bread for those of you who are (like me) really trying to eat clean.

Servings: 12
Time: Prep 10 minutes; Bake 40 minutes

Ingredients:

  • 12 slices Food For Life Sprouted For Life Gluten Free Cinnamon Raisin Bread
  • 2 tablespoons Earth Balance vegan butter, melted
  • 1/2 cup organic unsweetened coconut flakes
  • 1 large ripe banana, sliced into 1/4 inch pieces
  • 4 large eggs
  • 2 cups unsweetened cashew milk
  • 1 cup NuttZo Crunchy Original 7 Nut & Seed Butter

 

Directions:

Preheat oven to 350°F.

Prepare an 9×13 inch pan with nonstick baking spray.

Cut the cinnamon raisin bread into cubes and place in a large bowl.

Drizzle melted butter over bread.

Add shredded coconut, banana slices, eggs, cashew milk and peanut butter; gently toss to combine and lightly push down until bread is covered and soaks up the liquid.

Once liquid is absorbed, pour into the baking dish.

Bake for 35-40 minutes or until the top springs back when tapped.

Serve warm with a drizzle of blueberry (or maple…or any flavor) syrup, or additional peanut butter.

I absolutely adore how amazing this bread is, not just in this recipe, but on its own as well.  Depth of flavor is delicious.  And it baked up so well in the recipe, I couldn’t imagine making this again without using the Food For Life Sprouted For Life Gluten Free Cinnamon Raisin Bread.  I have a few extra slices left…so I can’t wait to toast them up next week, once I polish off this amazing bread pudding.

I wish I could remember where I picked up the pouch of Milton’s Craft Bakers Gluten Free Everything Baked Crackers…but I don’t remember.  I think…think…they came from my local Kroger.  Possibly one of those days where my roommate threw something into the cart, off list, to surprise me.  Who knows for sure.

What I do know is that I have a pouch of Milton’s Craft Bakers Gluten Free Everything Baked Crackers…so why not pair it with a hearty (and healthy) chowder for lunch today?  Hey, if I have the product, I best use said product!  It does no good just sitting in my pantry (or in this case, in the basket on top of my fridge).

Today, I popped them open.

Milton’s Craft Bakers  began in 1995 with the opening of Milton’s Restaurant and Delicatessen in Del Mar, California, offering up wholesome and great tasting foods in the tradition of the delis of New York City.  The founders then continued their passion by creating their own breads for any sandwiches they served.  The customers loved the bread so much that they wanted to take it home with them…and thus…Milton’s Baking Company was born.  Since then, their line of delicious and nutritious breads has grown, and they have since developed an assortment of flavorful crackers made with the same whole grains that they make those famous breads with.  But, wait for just a moment.  That’s not all.  This past summer, Milton’s stepped into the gluten-free realm by offering a new line of crackers and cookies, that they state are so good that consumers won’t know for a moment that they are gluten-free.  The crackers come in four (4) varieties: Cheddar Cheese, Crispy Sea Salt, Everything and Multi-Grain.  The cookies have three (3) varieties: Chocolate Chip, Double Chocolate Chip, and Snickerdoodle.

I haven’t seen the cookies yet…but…now that I’ve had the crackers…I’d love to try them.  So, let’s get into the nitty-gritty here.  I never do anything basic, so when faced with a flavor option, I aim to be different.  Now, these might have been the only offerings at the mystery store where I mysteriously picked these up…but…either way, why start with Multi-Grain and Crispy Sea Salt?  I can’t do cheese…so EVERYTHING!

Being a New Yorker…I love me a good (gluten free) everything bagel.  I really, really do.  It has every wonderful flavor packed into each bite.  You want poppy seeds…yep…in there.  Sesame seeds…also in there.  Onion and caraway…got that too!  EVERYTHING literally means…everything.  And any New Yorker appreciates this flavor.

But…did the flavor come across in cracker form?  YES!  Oh yes.  First of all, these crackers have an abundance of flavor, without being a distraction.  Everything about this cracker is right and good in the world.  Simple pleasures come in simple packages…and this was one I am glad I somehow ended up with.  These crackers are made with 7 grains and 4 seeds, which are perfect for snacking, stacking and dipping.  For reals.  The texture is thin, and crispy.  I don’t want a cracker that wilts in soups and stews.  I want it to keep that texture and crispiness when I dip, or spoon heaps of the soup onto the top of these.  Oh yeah…these went above and beyond all expectations.  And, yes, they have that perfect everything I love about everything everything (did you follow that?) flavor.  It’s turning the best bagel in the world into a chip…that makes it so versatile and amazing.  And I am a happier snacker because of it.

Let’s take a look at the ingredients that Milton’s Craft Bakers puts into the Gluten Free Everything Baked Crackers.  These crackers are made from brown rice flour, gluten free oats, potato flakes, potato starch, corn flour, high oleic sunflower oil (tocopherols, rosemary extract and ascorbyl palmitate added as an antioxidant), rice flour, cane sugar, white toasted sesame seeds, molasses granules (syrup, molasses), spice blend (poppy seeds, caraway seeds, sesame seeds, dehydrated onion), sugar, black sesame seeds, sea salt, millet, whey protein concentrate, poppy seeds, quinoa seeds, amaranth, autolyzed yeast, baking soda, monocalcium phosphate, sunflower lecithin, salt, sodium acid pyrophosphate, garlic powder, natural butter flavor, and caraway seeds.  These crackers are non-GMO verified, certified gluten free, wheat free, kosher, and vegetarian.

As for nutrition information, the Milton’s Craft Bakers Gluten Free Everything Baked Crackers are actually a healthy option when paired against other snacks out there.  A serving size is about 14 crackers (30 grams) and there are around 4.5 servings per package.  A serving will provide you with 130 calories, 4 grams fat, 0 grams saturated fat, 0 grams trans fat, 0 mg cholesterol, 180 mg sodium, 21 grams carbohydrates, 1 gram fiber, 3 grams sugars, and 2 grams protein.

These baked (not fried) crackers definitely deliver on their promise to provide a healthier snack without the gluten!  These are one of the best crackers I have had in my gluten-free life.  And I love crackers.  They are even (dare I say it?) better than Crunchmaster!  Pair it with a spread, soup, or just snack on them on their own.  However you do it…just do it.  I’d hate to have you miss out on these delicious snack crackers.

Of all the products that I received when I was a subscriber to Cuisine Cube, the ones that took me the longest to get to were the bread mixes.  I have another mix (which I hope to make in the next few weeks) for gluten-free tortillas…so…this is not an anomoly.  It’s just that I already have my own gluten-free bread/dinner roll flour blend that I make amazing bread with.  So, why use a mix?

Besides, my bread baking skills in the gluten-free realm are…sort of hit or miss.

But my March 2015 Cuisine Cube brought me a lot of amazing goodies that I have already blogged on.  The only hold-out from that cube was…none other than the lunch option (weird, I know…but probably under the impression that sandwich bread would be the end result).  And that lunch option was the Sevierly Good Gluten Free Organic Bread Mix.

Inside the cube, you will discover full-size products (not sample sizes) that are made by local and smaller, artisan companies, rather than those that you can find at the average grocery store.  It has introduced me to so many new and delightful products.  Each box contains a breakfast, lunch, dinner, snack, and dessert product…and then, sometimes, an extra bonus item.  Who doesn’t love a little something extra, right?   Keep in mind, however, that Cuisine Cube has gone through some changes as of May.  No longer do they strictly only offer gluten-free cubes.  In addition to their gluten-free option, they now also offer Artisan and Vegan cubes as well.  The Artisan cube means that you have no food allergies and foods that contain common food allergens will be included.  The Vegan cubes contain products that are dairy and animal free.  And, they still have the Gluten Free cubes, which will have products that contain no gluten or wheat.  So, if you’re really interested in being introduced to the smaller, lesser-known, artisan companies, give Cuisine Cube a try!  It’s like…Christmas…or your birthday…every month!  Who doesn’t love that?!  I did love it and I hope I’m able to resubscribe next year.

So, the March 2015’s lunch option was filled by the Sevierly Good Gluten Free Organic Multigrain Bread Mix.  Sevierly Good began with the Sevier family, who began their business when they realized how difficult it was to find good, local resources for the things they enjoyed eating.  The company blossomed from the need for their family to eat a gluten-free diet due to high gluten intolerances.  So, with a completely different diet now being served up, the Seviers decided to get into the kitchen and begin to experiment.
With past experience in the baking industry and some great resources, the family created a list of recipes to begin with…and from there, a set of mixes that are versatile and easy to make emerged.  For two (2) years, the Sevier Family made each mix by hand in a local, commercial kitchen.  Since then, they have expanded to working with a manufacturer, enabling them to grow their dream and their product.  Now, Sevierly Good Gluten Free products can be found in the more stores throughout the United States.

This was actually my first introduction to any of the Sevierly Good Gluten Free products.  And while I don’t always appreciate a bread mix…I do love to bake.  So, I sucked it up and got together the very few ingredients needed to mix up this bread and set it to baking.  Except…I decided not to make a loaf.  I wanted to make hamburger buns and dinner rolls.  So…I got out the rings I use to make homemade gluten free hamburger buns and got the oven preheating.

All I had to do was mix together the Organic Multigrain Bread Mix with the (included) yeast packet, 2 large eggs (or egg substitute), 2 cups of warm water, and 1/4 cup olive oil.  Once mixed together, if you’re baking a loaf, you pour it into an oiled loaf pan and pat/spread it into place with the spatula.  For dinner rolls, drop onto an oiled cookie sheet in the desired size.  I filled the hamburger bun rings…and the rest i made into 12 small dinner rolls.  After they were on the baking sheet, I covered them with lightly oiled cling wrap and let it rise in a warm place for about 30-40 minutes.  Then, it goes into the oven for 10 minutes at 400°F, then I turn down the temperature to 375°F and allow it to finish baking.  For a loaf of bread, that’s around 40-50 more minutes.  Less for the dinner rolls…but this isn’t indicated on the package.  So, watch those rolls!!  I got mine out before they got too baked.  But, what I did notice was how golden brown they got on the top.  I allowed them to cool on a rack…and then…I had to try one immediately.

I admit…I was skeptical.  After finally having an amazing gluten-free dinner roll recipe of my own…I don’t stray from it often.  But, this product was in my pantry and calling to me to (FINALLY) bake it up.  To be honest…I was impressed.  This is, perhaps, the best sandwich bread that I ever baked up from a mix.  They did actually rise in the rising period, which was a step ahead of most mixes.  And then, they baked up to golden rolls just ready for the dining room table.  I sliced one in half, finding the center to be soft (a nice contrast to the crispy outer crust) and the texture reminded me so much of what traditional bread was like.  Seriously, this is a mix that a hearty bread lover will love, even if they don’t have to eat gluten free.  I was so happy with each bite of the roll.  So, now I have a backup for when I’m low on ingredients for my own.  Completely surpassed all my expectations.

So, let’s take a look at the ingredients.  The Sevierly Good Gluten Free Organic Multigrain Bread Mix is made from organic brown rice flour, organic sorghum flour, organic tapioca starch, organic quinoa flour, organic evaporated cane juice, xanthan gum, yeast, and salt.  It is non-GMO, certified gluten-free, nut-free, soy-free, dairy-free, bean-free and corn-free.  Wholesome and wholegrain goodness in one little pouch.

As for the nutrition facts, the Sevierly Good Gluten Free Organic Multigrain Bread Mix has 12 servings in a package.  A serving size is 1 slice of bread.  Each serving will give you 110 calories, 0.5 grams fat, 0 grams saturated fat, 0 grams trans fat, 0 mg cholesterol, 45 mg sodium, 23 grams carbohydrates, 1 gram fiber, 1 gram sugars, and 2 grams protein.

One would think that with the low amounts of fiber and protein that this bread would not be filling.  But I made vegan BLTs for lunch today, using one of the hamburger buns for the sandwich portion instead of bread from my freezer.  I toasted the buns in the oven and then topped them with vegan mayo, baby spinach, heirloom tomato slices, and vegan (and gluten-free) bacon.  This bread was…AMAZING.  I loved using it for this sort of sandwich as it didn’t get soggy (even with toasting) and crumble and fall apart.  It’s wonderful to have a traditional bread feel…but be able to bake it up in various ways, without having to blend all the flours myself.

I, once again, have to commend Cuisine Cube for introducing me to the Sevierly Good Gluten Free brand.  The Organic Multigrain Bread Mix was amazing…like no other bread mix I have ever baked from before.  Now I sort of wish that I had done up an actual loaf, just to see how it turned out.  But…that’s why I can order more.

You know…I don’t shop at Wal-Mart often.  I don’t.  But, there is this gorgeous Neighborhood Market version of Wal-Mart (it is all groceries!) in Louisville, and if I happen to be on that side of the city, I’ll stop in for some essentials that.  I mean, the prices are right and it’s not all sketchy like some other Wal-Marts are.  Nor is it busy, so that is also a plus!

I rarely go off my grocery list these days…but one day while searching an aisle for something, I spotted a box of gluten-free banana bread.  We all are aware that my forays into gluten-free banana bread have been epic fails…every single time.  And here…here was a mix that would do all the difficult stuff for me…and all I had to do was add a few things and pop it in the oven.

Easy peasy, right?

So, yeah…you better believe that box came home.

For the record, the box just happened to be a new baking mix from the amazing Pillsbury, who seems to have embraced the gluten-free market as of late, having started with refrigerated dough for pizza, cookes, and pie.  Since then, it has introduced gluten-free funfetti cake mix (I have some of this in my pantry), gluten-free funfetti cookie mix, gluten-free multi-purpose flour, and gluten-free quick bread and muffin mix.  They also have already made gluten-free muffins out there…I have yet to find them though.

That being said…the great pantry purge is underway and this weekend, with all the horrible events going on in the world, I needed to comfort myself with a little baking.  So, I pulled out the box of the Pillsbury Gluten Free Banana Quick Bread & Muffin Mix and decided I was going to give it a try.  But why just bake it up as bread?  Why do the easy thing?  Instead, there was a recipe on the side of the box for Gluten Free Peanut Butter Banana Chocolate Chip Muffins.  Which sounds…frickin’ fantastic.  I didn’t have any chunky peanut butter on hand, so I used my PB2 powder from the pantry and it worked out just fine.  No peanut chunks…but…hey, I saved some calories and fat, right?  HA!

So, this recipe was really, really easy.

Simply preheat the oven to 375°F.  Put the mix into a large bowl and add water, extra crunchy peanut butter (I used PB2 and it worked great! No little peanut chunks though…so there is that…), vegetable oil, 2 eggs, and some miniature semi-sweet chocolate chips (or dark chocolate chips…which is what I used) and beat the conglomeration of ingredients into a thick batter.  Spoon it into 18 muffin cups and bake for about 20 minutes until they are golden on top and a toothpick inserted into the center comes out clean.  Let them cool for about 10 minutes in the muffin tin before moving to a wire rack to cool completely.

I get a little skeptical, at times, when it comes to big-name companies jumping onto the gluten-free bandwagon.  But Betty Crocker managed to do it well, and, to be honest, Pillsbury really hit it out of the ballpark with this particular mix.  I was beyond impressed.  The muffins fluffed up and cooked to a beautiful golden brown.  So often, these mixes turn out pale products, regardless of sitting in the heat of the oven.  They centers were moist and rich.  The muffins themselves bold with banana flavor, and the PB2 gives it a nice peanut butter thought, without overpowering the banana.  Because, after all, I bought this because I suck at making gluten-free banana bread.  The dark chocolate morsels (I used Enjoy Life, for the record), were a nice, sweet touch.  I had to make myself stick to just one of the muffins, because I easily could have eaten three right then and there.  So good.  Moist, rich, and delicious!!

So, as we all know, I usually steer clear of mixes like this due to ingredients and trying to eat a bit cleaner.  But we all have to indulge a little bit, right?  Right!  So, Pillsbury makes its Gluten Free Banana Quick Bread & Muffin Mix from rice flour, sugar, tapioca starch, potato starch, dried banana, dextrose, and it contains 2% or less of: leavening (baking soda, sodium acid pyrophosphate, calcium phosphate), canola oil, cellulose, propylene glycol esters of fatty acids, distilled monoglycerides, xanthan gum, salt, natural and artificial flavors, sodium stearoyl-2-lactylate, nonfat dry milk, citrick acid and bht (antioxidents).  Whew.  A lot of preservatives and the such, but I don’t make this stuff often…and I just really wanted to see how it worked out.  Totally worth it for an every-now-and-again fill-in, especially if I want banana bread.  At least until someone can give me a recipe that I can actually master and make without it being…gross.

As for nutritional information…the Pillsbury Gluten Free Banana Quick Bread & Muffin Mix makes 12 servings.  Each serving will dish up 120 calories, 1 gram fat, 0 grams saturated fat, 0 grams trans fat, 0 mg cholesterol, 220 mg sodium, 28 grams carbohydrates, 13 grams sugars, and 1 gram protein.  If prepared (as the banana quick bread or plain banana muffins), the calories per 12 servings goes up to 170 calories, 6 grams fat, 1.5 grams saturated fat, 35 mg cholesterol, 230 mg sodium, and 2 grams protein.  Not too bad for a quick bread mix…and really not bad for a gluten-free product!

I have to say, I was beyond amazed with the quality and the taste  of the Pillsbury Gluten Free Banana Quick Bread & Muffin Mix.  These muffins were moist, delicious, and so easy to prepare and make.  I would be more than happy to try other Pillsbury mixes (I guess the funfetti cake mix is up next), because this blew me away.  The texture was perfection.  The flavors were bold and pronounced.  And it only took me 10 minutes of prep time at most.  Can’t beat that convenience.  Way to go Pillsbury!  Thank you for your gluten-free awesomeness!
