When you name your company So Delicious, you are definitely setting a high standard for not only your branding, but also the products that you put out.  So far, I have yet to have a flop with the So Delicious items that I have tried.  I know…most of said products have been in a non-dairy ice cream form.

That trend continues here…

My local grocery store had a great sale going on for the So Delicious quarts of ice cream awhile back.  After sending my roommate out for an item I needed for something I was cooking, she returned with a huge surprise for me.  Three quarts of So Delicious non-dairy ice creams to try.  And since then, I have dug into the Chocolate Velvet and the Neapolitan flavors and fallen in love with each of them.

All that remained in my freezer was the Creamy Vanilla one.  I really wanted to dress this ice cream up.  I mean, we all love vanilla ice cream…but it is so versatile.  I was thinking of melting chocolate over it…or getting some chocolate syrup from the store…or topping it with fruit and nuts…or sandwiching it between two gluten-free cookies.  The possibilities were endless.  I mean, vanilla ice cream is like being handed a blank piece of paper and a pencil.  You can get as creative with it as you want.

Little did I know that in the end…I’d basically be enjoying it as it was made.  Undressed.  But…perfectly matched.

So Delicious Creamy Vanilla is a soy milk based ice cream that is vegan, kosher, and gluten-free.  It is also non-GMO certified.  YAY!  That being said, this ice cream had been hanging in my freezer since the summer…so there was no way of telling what state I might find it in when I cracked it open last night.  I almost expected freezer burn and ice crystals.

But…I was wrong.  When I pulled the lid off the quart, a beautiful white surface looked back at me.  Perfect vanilla.  And it smelled of vanilla too.  So amazing.

When I said perfectly paired just above I wasn’t kidding.  You see, I have been watching Hotel Hell (Gordon Ramsay’s new show) and one of the hotels he went to help turn around was one that invented Apple Pie À La Mode.  No joke.  And I just happened to have a gluten-free apple pie in my freezer as well.  Hmmm…what to do…

So, last night after hurrying through dinner in an attempt to make it out to a concert (The Dave Matthews Band was in town) on time, my roommate and I actually allowed ourselves a moment for a palate cleansing dessert.  Never miss dessert.  It is very important.  I had thawed out the pie earlier that day so all I needed to do was toss it in the microwave (Gordon Ramsay would FLIP OUT!).  While a tiny slice of pie was heating, I opened up the So Delicious Creamy Vanilla ice cream and got out a spoon.

Apple pie à la mode is a slice of apple pie topped with vanilla ice cream.  The warm pie melts the ice cream that is layered on top and what emerges is this amazing dessert that is both hot and cold and melty and yummy and…*DROOL*.  Ahem.  Sorry.  Bit of a food nerd here.  At least I’m a foodie who loves to eat (within my dietary restrictions that is!).

So, when the microwave tolled it’s completion of the heating process, I removed the plate with the slice of pie resting on it and eased my spoon into the ice cream.

Smooth.  I expected something rock-hard, or flaky (some non-dairy ice creams can be crystallized and a bit hard to get a good, creamy scoop out of).  But So Delicious really delivered here.  The ice cream folded up in the spoon to create a perfect scoop.  I set it alongside the pie (trust me, for calorie purposes, the serving size was halved and setting any ice cream on top of this itty-bitty slice was not an option).  I repeated it with the other half of the slice and served one to my roommate and myself.

Oh. My. Foodie. God.

First of all, having a delicious gluten-free pie is one thing.  But the ice cream.  Oh, the ice cream just totally made this dessert.  I loved how it mixed perfectly with the buttery, flaky goodness of the pie crust, and the hot apples in the center just aided in creating this hot/cold, flaky/melty mess of a dessert.  And it was everything I dreamed it would be.

The So Delicious Creamy Vanilla won’t slap you in the face with its vanilla flavor.  It is very subtle.  That being said it is also very delicious.  Trust me.  I was highly impressed.  I loved how it had just the right hit of vanilla flavor so that it wasn’t underwhelming or overwhelming.  It was just perfect.  I would buy this again in a heartbeat…and eat it straight.  I might even still turn it into a sundae, or just put it in a gluten-free ice cream cone (I still have some of those in my pantry!).

Being lactose intolerant and gluten free doesn’t have to mean ice cream is off limits.  It just means you find an ice cream that suits you.  Preferably one that is So Delicious.

Vino de Milo Portobello Shiraz doesn’t offer perfect pour of pasta sauce

As is evident by this blog, I am a sucker for new products that are not only gluten-free, but also vegetarian.  And one of my favorite things to test is pasta sauces.  Why?  Well, growing up my favorite thing to eat was pasta.  It didn’t matter what kind of pasta dish it was…I just loved pasta.  Even more, I loved to cover it in sauce.  Yum yum!

When the gluten-free thing had to happen, I thought pasta would never be the same.  In fact, it was months before I even attempted to make any sort of gluten-free pasta dish.  And…sadly…it didn’t quite live up to the stuff I used to have and consume by the plateful.

But, as time went on, I discovered different types of gluten-free pastas, different brands…and the same held true for sauces as well.  I’ve tried a lot of really good sauces and I’ve tried others that were decent enough…but…I’d probably never purchase again.

While out at Whole Foods one day, an end-cap full of pasta sauces I had never seen before caught my attention.  All of them were clearly marked gluten-free…and I knew that I had to take one home with me and try it.  So, my roommate and I looked over the various selections being offered and finally decided that the best one would be to go with the Portobello Shiraz, a pasta sauce made from diced tomatoes, tomato sauce, fresh onions, fire-roasted portobello mushrooms, fresh garlic, fresh herbs, extra-virgin olive oil, crushed red pepper…and Shiraz wine.

No ingredient on there sounded unappetizing and there were no chemicals or added preservatives.  Even better.

So, it came home with us and we began working our way through some of the other sauces in the pantry.  Last night, however, was Vino de Milo’s night to top off some fresh (yes…you read that right, FRESH) gluten-free pasta.  I sauteed up some mushrooms and some yellow onion, added the fresh pasta noodles and poured two servings of the sauce over the noodles in the pan to warm it.  And then…when it was ready, I dished it up.  A small shake of freshly grated Parmigiano-Reggiano topped it off and I served a bowl to my roommate and kept the other for myself.

I was already in a happy place due to the fresh gluten-free pasta (which was superb!)  The addition of a new pasta sauce had me eager to dig in and have a taste.  Before I even settled in though, my roommate had taken a taste and declared the pasta to be fantastic…the sauce…not so much.

My heart sank.  But I went and settled in with my own bowl to make that call for myself.

Sadly…she was absolutely right.  It wasn’t that this sauce is bad.  It’s not.  It’s just that I have tasted others that have been so much better than this one.  The wine, while a common and usually delicious addition to any tomato-based sauce…just didn’t seem to fit in this one.  Trust me, my own homemade marinara uses wine…and I love that one.  Perhaps it was the type of wine used.  The Shiraz is normally a slightly spicy wine, but here it just sort of made everything taste like…it had a touch of vinegar on it.  It just wasn’t a good fit.  It wasn’t bad…it just tasted all wrong.  But…we are going to finish off the jar regardless.

I don’t know if I would be willing to try other options for sauces by Vino de Milo after this one.  While I love a good spicy kick to any sauce, this just didn’t deliver for me.  Thankfully, the pasta and the vegetables were there to lend a hand to the dish.  And I also didn’t drown the pasta in sauce (I kept to the serving size!).

Nutritionally speaking, Vino de Milo’s Portobello Shiraz is a healthy choice when it comes to sauces for pasta.  A serving (1/2 cup) is only 40 calories.  Love that.  It is also completely fat free and low in sodium (330 mg) and sugars.  So, it is a rather healthy choice when it comes to sauces.  I  mean, it is a marinara, it shouldn’t be loaded with a lot of unnecessary calorie-loaded and fat-laden things.  So, there is the good.  I just wished it tasted better.

If I find myself looking for another sauce to give a try, I might try a different variety of Vino de Milo pasta sauces.  But the Portobello Shiraz was definitely not the way to get started on this brand.

Chocolate for breakfast? With Enjoy Life’s Double Chocolate Crunch Granola…you betcha!

Say it with me…

Chocolate.  For.  Breakfast.

Sounds sweet, yes?  Sounds, perhaps, a little decadent?  Perhaps more than a little sinful?

In most cases, you would be right to think so.  But there is nothing sinful about Enjoy Life’s Double Chocolate Crunch Granola.  It’s sweet.  It’s chocolate.  And yes…it can be even made into something decadent.  But you will be amazed at how good this actually is as far as, not just gluten-free granola (and granola in general) goes, but chocolate granola at that.

My problem with most granola is that it is laden with sugar.  I try to eat healthy…and at times I am as guilty about splurging on some sweet treat than every other human being out there.  We like to treat ourselves to something at times.  This chocolate granola from Enjoy Life foods is all treat without the guilt.  I promise…even I was shocked by the nutritional information on this.

But I’ll get to that momentarily.

I actually picked up a bag of Enjoy Life Double Chocolate Crunch granola at Big Lots one afternoon while out shopping.  It was a random stop, but I couldn’t turn down the price.  Most of the time it is far more expensive than what I found it for at Big Lots.  Score.  I’d been wanting to try chocolate granola for ages and had seen this at other stores, but had been more than a little reluctant to pay the price for it.  Now…I had reason to welcome it into my pantry.

This morning, I had some Chobani vanilla chocolate chunk Greek yogurt to finish off, some pomegranate seeds to use, and a pantry that held the key crunch component of my infamous breakfast parfaits.  I reached into my pantry and eagerly pulled out the bag of Enjoy Life Double Chocolate Crunch and eagerly began assembling my gluten-free and mighty tasty breakfast parfaits.

In the bowl, a small layer of granola.  Over that, some Greek yogurt.  Then the pomegranate seeds.  Then more granola, more yogurt, more pomegranate seeds, then one last dusting of granola.  It’s super simple and super delicious.  And it makes for a delicious breakfast treat to start off the morning with.  I just knew that the chocolate and pomegranate would be a match made in heaven.  In fact, I couldn’t wait to try it so I dug right in.

Super chocolate YUM!  No joke.  I loved how crisp this granola is.  And scattered throughout it are chunks of allergen-free chocolate.  Love that.  In fact, this granola is free of the top eight food allergens (wheat, dairy, peanuts, tree nuts, eggs, soy, fish and shellfish).  I love that.  It is composed of brown rice flakes, evaporated cane juice, chocolate chips, brown rice syrup, rice crisps, cocoa powder, ground flaxseed, vegetable oil, vanilla, salt, and rosemary extract.  When combined, what develops is this amazing chocolate granola that is a delight to nibble on, plain, with a splash of milk (I use unsweetened almond milk), or in some sort of a breakfast parfait, dessert topping, etc.

Nutritionally speaking, for a chocolate granola (or just as granola) this is one of the better options.  A serving size is 1/2 cup and that will only set you back 180 calories and 4 grams of fat.  That’s not bad at all comparatively speaking.  But what surprised me and pleased me even more was that the sugar content in a serving was only…only…11 grams.  A lot of regular granola pack twice that.  Color me impressed.

What also impressed me was the taste and texture of this granola.  It was sweet without being overly sweet.  The chocolate was a delicious sweet touch and it really popped when I mixed it into my breakfast parfait.  On its own, however, it was just as tasty.  I love the chocolate chips that are scattered throughout, making a nice pop of chocolate with every bite.  I was in love with this granola upon first bite.  And I’m already coming up with other ideas of how to use it and use it well.

If you are in the market for a granola and are craving a hit of chocolate…you can’t go wrong with Enjoy Life’s Double Chocolate Crunch Granola.  I’m so happy I finally got to try this.  And now…I don’t think I can survive without it.

Katz Gluten-Free English Muffins toast up breakfast perfection

How many times can I sing the praises of Katz Gluten-Free?  I mean, honestly?  They are, far and away, the pinnacle of gluten-free companies when it comes to the products that they provide.  I have yet to dislike anything.  True, some things are better than others, but I have never out-and-out disliked any of their products.

And this tradition holds true for their Gluten-Free English Muffins.

My roomie surprised me with an order from Katz Gluten-Free awhile back.  It had quite a few items in it that were apart from my normal order.  One such item were the newly introduced gluten-free English Muffins.  I was so excited to have these.  And, as with most things I get that are gluten-free…despite my enthusiasm over having them, they sit and wait while I work through other products first.  And that was the case with these.  My freezer saw more of them than I did.

That is…until this morning.

Sure, there were plenty of things I could have made for breakfast on a Sunday.  Waffles for one thing…as Sunday usually grants me enough time in the morning to put into that sort of a task.  But, we had some plans to go see Lincoln in the theaters and that meant, with a couple errands to run first, we needed something easier for breakfast.  Well…my freezer is often a good place to start when I need a go-to breakfast item.  And there, right in the front of my very, very full freezer, were two sleeves of Katz Gluten-Free English Muffins.  I grabbed the older one, already knowing that English Muffins were a simple, easy breakfast regardless.  And I had plenty of options to top them off with.  Even better.

As I hadn’t planned for this ahead of time, I couldn’t let these thaw out overnight in a plastic bag as I normally would.  But that is why there is a defrost button on the microwave, my friends.  Though it is not my favorite way to go about thawing out bread products, it does work in a pinch.  So, I removed two English muffins from the bag and set to thawing them out via the microwave.  Once that was accomplished, I preheated the oven to 425 degrees and put some aluminum foil down on a baking sheet to prep for toasting these up.  I don’t own a toaster anymore (got rid of mine when I had to go gluten-free due to cross-contamination) and I have no room, currently, for a toaster oven.  The oven is my only method for making anything toasted these days.  It’s not simple…but it works.

I sliced each English Muffin in half and placed it on the baking sheet.  Once the oven light clicked off, into the oven the pan went for about 7-10 minutes.  This allowed the English Muffins to get a nice golden brown without being overly done.  While they were busy toasting, I was getting out some toppings.  I figured half could have some cream cheese on it and the other half would be topped with a small schmear of Smart Balance spread and some organic strawberry jam.  It doesn’t get much better than that when it comes to English Muffins, let me tell you!

With the toppings ready, I removed the English Muffins from the oven and was quite pleased that they didn’t get too overly done.  They were a fantastic golden color all the way around and toasted beautifully.  I applied my selected toppings carefully to each half, giving one of each to my roommate and I.  I carried hers out there and went to go grab my breakfast for the morning.  As I settled in, she was already noshing away on her English Muffins and singing their accolades.

Now, let me reiterate that I grew up in New York.  Bagels and English Muffins were two of my favorite breakfast carbs to down growing up.  Honestly.  Nothing beats a good breakfast bread topped with cream cheese or jam.  It’s one of my most favorite things in the world.  I just hated to give it up when I had to go gluten-free.

But now…now my love for carby goodness at breakfast is back.  Because with one bite, my mind was flashing back to the amazing English Muffins I ate up until I had to stop.  Katz Gluten-Free perfected these.  Honestly.  Just like English Muffins I used to eat.  Sure…even the ones made by Thomas and other store-brands.  These reminded me exactly of those in taste and texture.  And it was enough to really make my breakfast mean a lot to me this morning.  Honestly.  I was beyond impressed.

Katz Gluten-Free English Muffins don’t have all the rivets and divets of the ones in the store or bakery, but don’t count them out on account of that.  The butter and cream cheese still soaked in to each bite.  Even without the traditional nooks and crannies of an English Muffin, these impressed me because they tasted, felt, and toasted up just like “normal” English Muffins would.  I could have cried from joy.

These English Muffins are completely free of soy, eggs, dairy, nuts and gluten.  They are made from a gluten-free flour blend of rice and potato flour, water, potato starch, quinoa, tapioca starch, canola oil, sugar, dry yeast, baking powder, guar gum, salt, and corn flour.  These ingredients truly are the magic behind the taste and texture that these English Muffins provide.  As a gluten-free consumer, I couldn’t be happier with these.  Even more…the nutrition facts are fast better than the previous gluten-free English Muffins I found in the store and refused to buy due to how high in calories they were for only half the muffin.

Katz Gluten-Free English Muffins are only 130 calories for the entire English Muffin.  Not half.  Love that.  They contain 3.5 grams of fat per English Muffin and 2 grams of protein.  I’m liking these nutritional stats much better already.  And if that didn’t sell you on them, trust me when I say that these are the most amazing gluten-free English Muffins I have had to date.  Because while I have refused to buy others on the market due to nutrition stats, I have sampled them at Gluten-Free Tasting Fairs and Gluten-Free Expos.  NONE of them have come close to tasting like Katz Gluten-Free variety.  In case you were wondering…four English Muffins come in a package.

I’m sold.  I also think I need to make more room in my freezer and order much more of these.  English Muffins are back in my life.  Which means…my vegetarian/gluten-free egg muffins can make their way back into my breakfast line-up after being absent for so long.

Terra Original Vegetable Chips get to the root of enticing, exotic snack chips

Everyone does potato chips.  And if it’s not potato chips…it’s corn chips.  But, really…when something has been done, just with different seasonings, it’s hard to really tell one chip apart from the next.  Then it’s just down to name brands or generic brands.  And, really, there isn’t that much of a difference.  More often than not that name brand company is making that generic brand.  That’s how it works!

But then…there are some companies that think outside the box…or in this case…the potato chip bag.  I’m talking about Terra.  Terra Chips created a mission statement to the customers that are seeking out a different sort of snack.  Their mission is to provide wholes gourmet snack food that is not only chef-inspired, but always made with 100% natural ingredients.  Talk about a solid commitment to quality.

But how does one dress up a simple potato chip?

In the case of Terra, chefs put their own spin on the most popular snack food in America.  And for the Terra Original Vegetable Chips…there is even a unique spin on something original.  Instead of just potatoes, Terra introduces a plethora of different root vegetables to the mix.  The Terra Original Vegetable Chips includes a variety of light, naturally colorful vegetables that add a little crunch, a little savoriness, and a little sweetness to each bite.  This particular variety of Terra Chips is a fantastic mix of sweet potato, parsnip, batata, taro and yuca.  All of them are fried in canola oil with beet juice concentrate for color, and salt for seasoning.

The result is an amazing bag of chips that has this amazing balance of flavors from rich, delicate, and nutty.  I love the way each vegetable tastes different and has a different texture.  Some are not as heavy as others, some have a bigger crunch.  It keeps the snack interesting and definitely entices the palate with each bite.

I have had great luck with Terra Chips.  Most of their chips are gluten-free and they are very good about labeling.  If you are interested in stepping outside the chip bag…I highly recommend giving the exotic line of vegetable chips from Terra a try.  Trust me…you will welcome the change and the variety of flavor you get with each bite.

It was Small Business Saturday and I made it known…I wanted to go to one of my favorite small businesses in the area.  Annie May’s Sweet Café in Louisville, Kentucky.  And I wanted to have breakfast there.  A gluten-free waffle.  Perhaps with a gluten-free donut.  Maybe I’d get the gluten-free apple cider donut with the glaze this time.  I just wanted to support a business that has literally changed my life in this area for the better.

My love affair with Annie May’s began with a simple birthday cake.  Because of Annie May’s, I didn’t have to bake my own cake or birthday confection this year.  It was done for me.  And the result was nothing short of spectacular.  I was enamored with them…and so…the love affair continued.

I have returned to Annie May’s as often as possible when I am in the area.  I have gone there for breakfast, for sweet snacks and treats, for take and bake cinnamon rolls.  If I am in town, I want to stop by for something.  And given that this past Saturday was Small Business Saturday, I made a point to go to as many small businesses as possible…and my first stop was Annie May’s for my usual waffle breakfast.

Annie May’s Sweet Café has the best gluten-free waffles.  Seriously.  I always get the regular ones, served with maple syrup and Earth Balance.  I did decide on the Maple Glazed Apple Cider Donut as well…and devoured that as soon as I hit the table.  I had not eaten anything since I had woken up bright and early that morning…so, needless to say…I was ready to eat.

And then…sad news was given.  They were having some trouble with their waffle batter.  It wasn’t working out.  So…they were going to make a fresh batch.  It would take a little while…and did we mind the wait.  I never mind waiting for food.  But, soon after we were asked if we would mind having pancakes instead of waffles.  No skin off my nose.  I keep thinking of trying the pancakes and always returning to the waffles.  I’m a waffle addict apparently.  They apologized numerous times and said that for our wait and our patience we could get a free cookie before leaving.  I don’t mind the wait.  I had an amuse bouche of donut, after all…

In the end, however, the waffles were able to be made and were delivered to our table looking all golden and delicious and ready to be consumed.  And they died a very messy death right there in the café.  Cathy went to clear the table and I was putting on my jacket when the nice woman behind the counter called me over to get my cookie.  I was going to leave without it…because I wasn’t upset with them, nor did I mind the wait.  But, she insisted.  So, she asked me to come over and choose between the cookies or the cupcakes or the brownies on the counter.  I had their brownie before (to DIE FOR!) and I wasn’t feeling cupcakes…so I stuck with the allergen-free (yes…it’s even vegan!) Chocolate Chip Cookie.  After all…I do love my cookies!

She packed up two of them for me and asked what Cathy was interested in.  I waved her off and said the cookies she gave me in the bag were plenty for us and thanked her.

After a busy day of small business shopping, Cathy and I returned home and I went for my 10K run for training.  Soon after, I was preparing dinner (leftovers!), which we settled in to eat.  And then…dessert.  With a bag on the counter with two of Annie May’s Sweet Café Vegan Chocolate Chip Cookies…I knew exactly what dessert was going to be.

I carefully opened the small white paper bag and pulled out the paper-wrapped cookies.  They smelled amazing.  I handed one to Cathy and I took the other one.  As I settled in for my sweet treat to cleanse my palate, I took my first bite.

Homemade cookies are the best around.  And these, completely vegan and allergen-free, have to be some of the best I have ever tasted.  Most of the time, unless I make them myself, my gluten-free cookies are store-bought packaged brands.  Not these.  These are fresh from the oven at Annie May’s and the time and dedication to their products really shows.  The cookie was light and buttery.  The flavor was fantastic.  They were soft, chewy, yet with that golden crust that gave it a bit of texture.  And the mini chocolate chips were awesome.  Just the right hit of sweetness in each bite.  Not one bit of the cookie lacked in chocolate chips.  They were like my mom used to make.  And I do love a chewy chocolate chip cookie.  These delivered everything I love in a cookie and that…made me one happy girl.

While my visit to Annie May’s Sweet Café on Saturday didn’t initially involve trying their Vegan Chocolate Chip Cookies…now that I have, I think I’ll be purchasing more in my future.  Honestly…the best gluten-free chocolate chip cookie I have had…to date…anywhere!  And we all know how much of a cookie monster I am.  So, that is truly saying something.

I really am fortunate to have a small business that caters to people with food allergies in my area.  The day I discovered Annie May’s Sweet Café my life changed…and it was all for the better.  My life is whole lot more delicious these days too.

Recipe: Magic Beans (Green Beans)

It happens without fail…every time.  When I am attending a big get-together and asked to supply a dish…it’s a vegetable.  I can count on it.  I can place money on that bet and win every time.  Perhaps, in this group of people, it’s because I’m the only vegetarian…so it just makes sense.  Regardless…sometimes getting a bit creative with a vegetable can be a task.  Anyone can bring those steam-in-the-bag veggies and just give them a quick nuke in the microwave…but that’s not my style.  Not anymore.

So, it came as no surprise to me on Thanksgiving that I was asked to supply the vegetable dish for the meal with my roomie’s family.  At first, I thought of doing my famous confetti corn dish, but I had received 24 ounces of green beans in my CSA bin (along with a plethora of Thanksgiving veggies and fruits…that I probably could have cooked all the side dishes had I been allowed), so I changed my mind.  But…how to dress up green beans and make them…interesting?

Well, for that I turned my attention to a Top Chef.  No joke.  I found a recipe on the Internet from Stephanie Izard (Season 4 winner of Top Chef, and the first female winner).  The recipe was for her restaurants green beans, known as Girl and the Goat Magic Beans.  It sounded…really good.  And I only had to make a few minor adjustments to make it fit into my diet.  Like…I didn’t use fish sauce, I just used more tamari sauce instead.  That sort of thing.

The recipe was super-easy to prep for and really easy to prepare.  Better yet…it was enjoyed by all at the table.  These really are magic beans.  Delicious green beans everyone will love.  And the recipe…is below.

Girl and the Goat Magic Beans (Green Beans) – adapted from Stephanie Izard’s recipe

Servings: 8-10
Time: Prep 15 minutes; Cook 15 minutes

Ingredients:

  • 24 ounces green beans, stems trimmed
  • 4 fluid ounces olive oil
  • 1 shallot, sliced in small rings
  • 4 ounces lemon juice
  • 5 ounces fish sauce (I replaced with San-J Gluten-Free Low Sodium Tamari Sauce)
  • 2.5 ounces soy sauce (I used San-J Gluten-Free Low Sodium Tamari Sauce)
  • 1 tablespoon Dijon mustard
  • 3/4 teaspoon Sriracha
  • 3 cloves garlic
  • 1 cup mayonnaise (I use Trader Joe’s Reduced Fat Vegan Mayonnaise)
  • cashews (I used walnuts…but your favorite nut will do…or leave out if you have a nut allergy)

Directions:

Make the green bean dressing (yields 2 cups):

Combine lemon juice, fish sauce, soy, Dijon and sriracha.  Transfer to blender, add garlic and emulsify with oil.

Make the aioli:

In a bowl, combine 1/3 cup of the green bean dressing (above) with 1 cup mayonnaise.  Whisk together.  Set aside.

Make the green beans:

Wash and trim the stems off the green beans.

In a large frying pan, heat a small amount of oil.  Add the green beans and some sliced shallots for flavor.

Add enough vinaigrette to coat the green beans.  Cover and allow to steam.

Add a handful or two of cashews (or nut of your choice) for flavor.  Season with salt.

Transfer to a serving dish and drizzle with aioli.

Serve hot.

Stephanie Izard has said that her restaurant gets compliments for its vegetable dishes all the time.  That being said…there is a reason for that.  These were some of the best green beans I have ever eaten.  The dressing and aioli really stepped up the flavor.  And, the addition of the walnuts added a necessary texture to them.  I would make these again in a heartbeat.  Normally not a huge fan of green beans, these were fantastic.

There is a reason Stephanie won Top Chef all those years ago.  With recipes like this…she’s winning over fans of her food even now.  Even little home chef’s like me.

Want to dress up your green beans differently, I highly encourage you to give this recipe a shot.  I wasn’t disappointed.  My roomie’s family wasn’t disappointed.  I promise…you won’t be either.

I admit it.  The only reason I had a soup that had acorn squash and mango in it was that it was on sale.  Super-duper sale.  At Big Lots, I believe.  I mean, I love Imagine Soups.  And I love soups that use squash as a base.  I was okay with that part.  It was the mango part of this soup that was throwing me.  However, the expiration date was nigh and I never let anything go to waste in my pantry.  It’s a rule that I swear by.  So…therefore, I knew that dinner this week was going to be Imagine Organic Acorn Squash & Mango Soup with vegan, gluten-free grilled cheese sammies.  Yep.  Soup and sandwiches.  Just before Thanksgiving…it seemed logical to me.

This soup doesn’t look like much on its own.  It’s a deep yellow color.  That’s about all I can tell you about it.  It’s got this richness in texture though due to how smooth and creamy it is after you shake it up and pour it into a pan to warm.

Imagine Organic Creamy Acorn Squash and Mango Soup is a simple soup by standards.  Its ingredients include filtered water, organic acorn squash, organic mango puree, organic onions, organic butternut squash, organic potatoes, organic carrots, organic celery, organic oils, organic evaporated cane juice, organic ginger, organic spices, organic orange zest…and seasonings like sea salt. Organic tapioca starch is also included, probably to give it that creamy base in the end.  What’s not to love about that ingredients list, right?  It’s all organic.  It is all items that I recognize and could pull out of a vegetable line-up.  No hidden chemicals or indecipherable ingredients.  That’s one thing I love about Imagine’s organic soup line.

But what it comes down to when it comes to soup is taste.  Well, this soup doesn’t lack for flavor.  It’s smooth and has a perfect balance of sweetness and savory.  That’s where the mango really came in.  It added just the right amount of sweetness to the squash flavoring.  The other vegetables help add a depth of flavor that just makes each spoonful a delight.  I loved it.  I’d spoon it up on its own, and I’d dip my sandwich into it at times.  It was good either way.  And I loved that a serving size (1 cup) only set me back 70 calories.  Show me other creamy soups that can offer that kind of nutritional value.  You’d be hard-pressed to find one.

This soup is also low in sodium (430 mg) as well, which is always important when it comes to packaged soups.  More often than not they are loaded with more sodium than anyone would even need in a day.  I love that about Imagine’s soup line as well.  They tend to offer more nutritional value, but still keep it flavorful and delicious.   I am totally looking forward to polishing this off tonight.

Once again, Imagine puts out a product worthy of high praise.  I don’t know why the combination worried me.  In the end, it was delicious and that, my friends, is the important thing.  The fact that it is one of Imagine’s gluten-free soups is also a plus.  Check them out if you haven’t yet.  They have an endless line of amazing gluten-free soups.  I can’t wait to try out even more of them.

Fast food, shmast food.

Being a gluten-free vegetarian means a stop-off at any regional fast food joint is just not an option.  I mean, I got sick for 5 days after eating Chik-Fil-A’s supposedly gluten-free waffle fries this past summer.  Let me tell you, I have yet to go back.

So, when someone like me – someone who is constantly on the go and on the road – needs something to eat…what then?  Well…thanks to Go Picnic my options just got a little more exciting and much healthier than any fast food stop would have been.

Now, I’ve blogged about Go Picnic before.  I am a HUGE fan of the gluten-free Hummus + Crackers meal, which is usually my on-the-road poison.  However, when I attended the Gluten-Free Expo in Indianapolis, Indiana a month or so back, I dropped by the Go Picnic booth and raved to them about how much I appreciated their gluten-free boxes (especially the ones that are also vegetarian/vegan).  It just so happened that they had some of their brand new on-the-go meals at the expo…and if I bought them that day, I’d be saving some money, for sure.

So, my roomie and I made a decision to purchase six meals.  She got two of the Sunbutter + Crackers plus the Turkey Pepperoni + Cheese boxes.  As for me, I went with two of my favorite…the Hummus + Crackers and one of the brand new offerings…the Black Bean Dip & Plantain Chips box.  I was pretty stoked about that one as it was new, vegan, and gluten-free.  And it just sounded…different and interesting.

Well, the perfect opportunity to break out the Go Picnic meals came this past weekend as my roomie and I were venturing out to Ohio to visit our friend Jenn.  Our plan…to see The Monkees on Saturday night and then on Sunday morning…I was off to the races.  Literally.  I was running in the Hot Chocolate 15K in Columbus.  So, we left work at noon on Friday and went to run a few local errands before settling in for the 4 hour car trip up to Columbus, Ohio.  With the errands out of the way…it was lunch time.  And for me, lunch was the Go Picnic Black Bean Dip & Plantain Chips on-the-go meal.

After opening the box, I settled on starting with the star of the actual box…the Go Picnic Garden Black Bean Dip with the Sweet Perry Orchards Crispy Roasted Plantain Chips.  I thought, at first, that this was an interesting combination and wasn’t quite sure how it would work in the end.  However, the combination was actually quite delicious.  What I loved was how the sweetness of the dried and roasted plantains made into chips complimented the rich, sweetness of the black bean dip.  The Go Picnic Garden Black Bean Dip is amazing.  A creamy, somewhat sweet and spicy blend of black beans, green chilies, jalapeno peppers, spices, garlic, and onion made for a fantastic base to dip the chips in.  And Sweet Perry Orchards Crispy Roasted Plantain Chips made a fantastic alternative to crackers or corn chips.  Honestly.  They provided a hint of sweetness as well.  They were crispy, crunchy, and just the perfect compliment to the rich dip.  I was so happy with this flavor combination.  The Go Picnic Garden Black Bean Dip is only 40 calories of this box’s total 360 calories and provides 2 grams of protein.  Let’s hear it for the protein magic of beans!  And the Sweet Perry Orchards Crispy Roasted Plantain Chips also only contain 70 calories in the provided 0.5 ounce bag.  It also only sets you back 3 grams in fat.  They are also very low in sodium (50 mg).

My next taste from the box that I chose to devour was the Sweet Perry Orchards Ginger Zip Fruit and Nut Mix.  This was a surprisingly delicious mix of peanuts coated in ginger, dried cranberries, and banana chips.  The ginger was the part that concerned me, as often it can be a little too strong and too much.  Thankfully, pairing it with lightly salted peanut, banana chips, and the tart sweetness of the dried cranberries, the blend worked.  It worked fantastically, actually.  I was digging down into the little 0.75 ounce bag that came in the Go Picnic box in hopes of finding more of the mix in there.  But, alas, when I said devour…that’s what I did.  This one surprised me and it was a nice surprise.  The ginger was just enough to add a bit of heat to a few of the bites, but it didn’t overwhelm the mix.  It was nicely balanced.  And the little snack bag you receive in the box is only 90 calories of the entire 360 in the box itself.  And the rest of the nutrition information is nice as well.  The little pack provides 5 grams of fat and 2 grams of protein.  Not bad for a fruit and nut mix.  Not bad at all.  Oh, and the sugar content on this one isn’t bad either.  Most “trail mixes” are laden with sugar.  Thanks to the ginger, this one only has 10 grams of sugar.  Other trail mixes would be at least twice that per serving.

My next choice to eat from the box was the Sweet Perry Orchards Power Play Tasty Seed Blend.  Now, one of my favorite parts of the Go Picnic Hummus + Crackers box is the packet of dry-roasted edamame.  Well, this is a different twist on that pack.  Sweet Perry Orchards Power Play Tasty Seed Blend is a mix of dry roasted edamame, pumpkin seeds, and watermelon kernels.  Sound weird?  It’s not.  In fact, what this little 0.75 ounce pack provides is a heap of protein and healthy fats.  Yep.  While salt is added, it’s not overdone either.  The seeds really stand up for themselves and pack a bunch of flavor in each bite.  The blend is interesting and different.  I mean, who can say they’ve really enjoyed a watermelon kernel before?  Well…truth is…I did.  And the pumpkin seeds and edamame were also fantastic.  Sweet Perry Orchards Power Play Tasty Seed Blend provides 110 calories of the entire 360 calories in the box and 5 grams of fat.  This blend also provides 8 grams of protein.  That’s awesome.  As for the sodium…which can be a real sticking point, this bag only has 70 mg of sodium in it.  Yep.  It really is a healthy choice.

And finally…dessert.  Because that’s what we look forward to at the end of a meal.  Even lunch on-the-go.  The Go Picnic Black Bean Dip & Plantain Chips box comes with dessert of dark chocolate.  Oh yes…almost like it was made for me.  Dark, delicious chocolate.  The little piece is Professor Zim Zams Extraordinary Sweets Dark Chocolate with Orange.  It’s a little circle of orange-flavored dark chocolate goodness.  Now, sometimes the orange and chocolate combination works for me.  Sometimes…it doesn’t.  In this case, the bittersweet dark chocolate meshes so well with the tart orange.  It’s a seamless marriage of flavor to be honest.  And it was a decadent enough bite to satisfy that need for dessert or something sweet to cleanse the palate.  Professor Zim Zams Extraordinary Sweets Dark Chocolate with Orange is only 0.35 ounces of rich chocolate flavor…but it’s just enough.  This little disk of sweetness provides the Go Picnic box with the remaining 50 calories.  It contributes 4 grams of fat into the serving and 2 grams of protein.  And it is good to the last little bite.  Because…I admit…I savored the chocolate.  I love a good, sweet ending.

In the end, Go Picnic provided a hearty on-the-go meal in a little box that really satisfied every taste.  Sweet, sour, salty, and bitter.  It meant that I felt satisfied at the end of the box.  And with only 360 calories, it’s a nutritious meal that you can take with you on the road, on a hike, on a picnic, or just for something easy on a busy day at the office.  This little box also provided me with 13 complete grams of protein at the end of it, which is fantastic as I am a gluten-free, vegetarian athlete (distance runner!) so making sure I get enough protein in my diet can be a huge challenge.  This satisfied.

I haven’t been able to find this actual box listed yet on Go Picnic’s Web site.  But it is one of the new offerings from the company.  I say…give it a bit of time and it will be there.  As for me…I hope to find this one in the stores soon because I loved every bite of it.  If you can find it…pick it up and try it.  I promise…you’ll be as hooked as me.  Go Picnic…you won me and my taste buds over again with simple flavors and nutritious snacks.

Recipe: Rosemary Roasted Carrots and Fingerling Potatoes

So, this past weekend, my roomie purchased a new cookbook for me.  I actually told her not to get it.  As, at full price, it was rather expensive.  But she insisted that it was necessary because the holidays happen every time you turn around.  And not just the fall/winter holidays.  All the little ones in between too.  After a quick flip through of the book, I finally relented my stance and let her get it for me.

The book is Gluten-Free and Vegan Holidays: Celebrating the Year with Simple, Satisfying Recipes and Menus by Jennifer Katzinger, who also authored Flying Apron’s Gluten-Free & Vegan Baking Book.  So, if there is any authority in this area…this would be the person to turn to.  And the recipes really did sound amazing.  Everything was something I was willing to try.

Now, the first recipe I chose to do out of this cookbook is considered a side dish.  But I eat side dishes for meals all the time.  The original recipe calls for new potatoes, but I had 24 ounces of fingerling potatoes in my fridge from my CSA bin, along with baby carrots.  It would work.  The only ingredient for this recipe that I didn’t have on hand was fresh rosemary, but my grocery store happens to have that.  And so, last night, I set out to prepare this recipe for dinner.  And yeah…I wasn’t disappointed at all.

Recipe: Rosemary Roasted Carrots and Fingerling Potatoes

Rosemary Roasted Carrots and Fingerling Potatoes

Servings: 4-6
Time: Prep 10 minutes; Cook 50 minutes

Ingredients:

  • 1 pound new red potatoes (I used organic fingerling potatoes), halved
  • 1/2 pound carrots, peeled and cut diagonally into 1/2-inch pieces
  • 1/4 cup canola oil
  • 3 tablespoons minced fresh rosemary
  • 4 cloves garlic, minced1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper

Directions:

Preheat the oven to 400 degrees F.

Combine all the ingredients in a large bowl and toss well to coat the potatoes and carrots with the seasonings and oil.

Pour the contents of the bowl onto a large baking sheet and roast the vegetables for about 50 minutes, or until the exteriors are crisp and the interiors can be easily pierced with a fork.  (Halfway through cooking, using tongs or a spatula, turn the potatoes and carrots so that they brown evenly).  Transfer to a serving bowl and season to taste with additional salt and pepper.

First of all…this smells amazing while it is baking up.  Honestly.  It really gave the apartment an amazing aroma.  The vegetables really do crisp up nicely on the outside, leaving the inside nice and soft.  Perfect.  And wow…packed with flavor.  This is a super simple, but super tasty dish.  Honestly.  I thought about bringing this to Thanksgiving, but mashed potatoes are always abundant there…so I don’t want to repeat the potato.  Looking for a new way to enjoy potatoes and carrots…give this recipe a try.
