Recipe: Gluten-Free Cookies ‘N Cream Fudge

Mmmm…fudge!  And this is no ordinary fudge.  It combines the amazing power of white chocolate, marshmallow fluff (keeping it vegetarian, friends!), and gluten-free sandwich cookies.  Yes…it really is as awesome as it sounds.  You know those Hershey’s Cookies ‘N Cream candy bars?  It’s like that…in fudge form.

If you aren’t in need of a gluten-free diet, then you go ahead and use Oreos.  But, for me, I grabbed the Glutino Chocolate Vanilla Crème Cookies.  Those, by the way, blow Oreos out of the water.  I’m just saying…

So…give this recipe a shot if you have a craving for some fudge…or just something sweet!

Recipe: Gluten-Free Cookies ‘N Cream Fudge

Servings: 60+
Time: Prep 15 minutes; Cook 10 minutes

Ingredients:

  • 1 cup sugar (I used Truvia)
  • 3/4 cup butter (I used Smart Balance)
  • 1 (5 oz.) can evaporated milk
  • 2 (12 oz.) packages white chocolate morsels (I used Ghirardelli)
  • 1 (7 oz.) jar marshmallow cream
  • 3 cups coarsely chopped gluten-free sandwich cookies (I used Glutino Chocolate Vanilla Crème Sandwich Cookies) (about 25 cookies), divided
  • pinch of salt

Directions:

Line a greased 9″ square pan with aluminum foil; set aside.

Combine first 3 ingredients in a medium saucepan. Cook over medium-high heat, stirring constantly, until mixture comes to a boil; cook 3 minutes, stirring constantly. Remove from heat; add white chocolate morsels, marshmallow cream, 2 cups crushed cookies, and salt. Stir until morsels melt.

Pour fudge into prepared pan. Sprinkle remaining 1 cup cookies over fudge, gently pressing cookies into fudge. Cover and chill until firm.

Lift uncut fudge in aluminum foil from pan; remove foil and cut fudge into squares.

Normally, the folks at the office are a bit weary about trying the food I make because it’s…weird.  Well, they devoured the fudge this morning and I heard nothing but good things about it.  I take that as a win!

For anyone who knows me…I mean really, really, really, knows me…you’ll know that my favorite treat of all time is chocolate covered pretzels.  Guess what?  I hadn’t had chocolate covered pretzels since I had to go gluten-free back in February.

But then, today, while out at the grocery store, my roommate snagged a bag of Glutino Chocolate Covered Pretzels as a gift for me.  I normally wait until I get home to try gluten-free goodies like this because I have to take pictures for the blog, but I figured I could still do pictures and rip into the bag while we drove home.

Yeah…I was craving that bad!

Yeah…they are as amazing as they sound.  Here’s the deal.  Salty and sweet is the perfect combination, which is why chocolate covered pretzels have been my favorite snack to binge on for years.  Glutino seems to have the only gluten-free variety in existence on the market.  These were on sale, but I usually stare longingly at them and then pass they up because the small 5.5 oz bag is so damn expensive.  But, at least now I know the product is worth it in the end.

This is the danger of finding something I love so much.  Already a fan of Glutino’s pretzel twists, these are coated in delicious milk chocolate.  If that isn’t a tasty win, nothing else is my friends.  But…I warn you…once you start eating these, you won’t want to stop.  If chocolate is a weakness of yours as it is for me, then pour it over pretzels and I’m a lost cause.  The bag will need to be hidden from sight or I might just eat them all in one sitting.  It has happened before…more than once…with other products.

These pretzels have a gentle crunch, meaning they aren’t almost stale like a lit of pre-packaged chocolate covered pretzels sometimes seem.  They have a light crunch and the sweet layer of chocolate melts away as you chew.  It’s heaven in pretzel form.  Honestly.  I can now die happy because it’s almost been a year since I’ve indulged in my favorite snack…and here I am in my little Corolla stuffing my face with them because…it obviously had been too long.

Are they worth the cost?  Hell yeah!  I wouldn’t buy them every time I went to the store, simply for the sake of maintianing my waistline, but every now and again to treat myself to one of the greatest inventions on Earth (that would be chocolate covered pretzels…genius!)…yeah, that will happen.  These amazing morsels of goodness are worth treating yourself to every now and again.  Just because I have to eat gluten-free doesn’t mean I have to make everything from scratch for it to be good (although I do have Glutino pretzel twists and Ghirardelli dark chocolate, so this may happen regardless).  Sometimes, a company knows what people need (and want) in life…and offer a sweet and salty solution.

Thank you, Glutino…for feeding my snack-loving side with such amazing treats.  Keep it up.  You’re swiftly becoming one of my go-to gluten-free brands.

For now…another handful of chocolate covered pretzels won’t hurt, right?

Who says that adult cereals have to actually be for adults?  I find that, especially in the gluten-free cereal market, those marketed to children are actually tastier.  No joke.  If I have to prove it, I would point to the Envirokidz line from Nature’s Path.

Already having been pleasantly surprised by the Gorilla Munch cereal, I broke into my new box this morning before I headed to the gym to get my run in.  I am powered on cereal on gym mornings, until I’m done and can fill up on a little something more substantial.  The key is, the cereal has to not only taste good, but be filling enough to get me through a run, some weights, and whatever else I decide to take on that morning.

I was already feeling good about my cereal choice.  Envirokidz Organic Koala Crisp Cereal.  What is it, you ask?  Think of chocolate Rice Krispies…but with ingredients you recognize.  In fact, as compared to Cocoa Krispies (made from artificial flavorings), Koala Crisp is made from all natural ingredients…all of which I recognize.  You do not understand (or perhaps you do) how important that is to me.  I don’t want to eat chemicals.  I want to eat actual nutrients and vitamins.  I want to be able to look at the ingredients in a pre-packaged product and not have to guess at what it is I will be ingesting.  I like to know what I’m eating because it’s just better for our bodies overall.  Food snob or not…I know what goes into natural chocolate flavor…but artificial flavor…that’s a black hole of guesswork.

I poured a bowl of this cereal this morning, topped it off with a splash of almond milk, stood in the kitchen, leaning against the counter, and dug in.  At first, I wasn’t too sure what to think of it.  While I am a natural chocoholic, I wasn’t sold immediately on the chocolate rice crisps idea.  But, by the next spoonful and the one following, I was hooked.  It really is a wonderful treat, chocolate in the morning.  And the thing I do love about these is that the chocolate isn’t too much.  I can’t handle too much sweetness in the morning, so this was at the perfect level.  And once my taste buds woke up, I was enjoying every spoonful I ladled up to my lips.  Before I knew it…my bowl was empty.  Yes, the remnant chocolate almond milk was slurped up as well.  These things happen…

As mentioned previously, one additional advantage to purchasing Envirokidz products is that 1% of the purchase proceeds goes to species and habitat conservation or education programs for kids.  Beyond that, you get a fantastic product, which is not just good for kids, but also adults (we’re young at heart too!).  And with ingredients that are naturally occurring in nature and not created in a lab, I feel better about putting this in my body in the mornings than other options out there.  Big bonus for me…these cereals are gluten-free.  Fantastic flavor, great texture, and natural ingredients.  Yeah…breakfast just got better.

Snickerdoodles.

From my mom’s homemade variety to the gluten-free versions I have tried since having to take on a new dietary lifestyle, these cookies remain my absolute favorite kind.  And it’s no surprise to me that when it comes to companies that take on cookies, when snickerdoodles are offered, they are often the favorite variety…yes, even beating out chocolate chip!

Never fails.

While out at the grocery after a stressful day at the office, my roommate decided to treat me to a gluten-free goodie of my choice.  This is one of the most epic statements you can ever hear because there are so many products out there that I want to try…the trick is finding them and being able to afford them.

That day, since it was stressful, I was seeking comfort food.  And to me comfort = cookies.  Basic math, my friends.  So, with the limited selection at the store, I did spot the Enjoy Life Soft Baked Snickerdoodle Cookies.  Instant win.  I snatched them off the shelf and they came home with me.

Now, I’ve had some hits and some misses with the Enjoy Life brand.  I loved their crunchy chocolate chip cookies, but their bagels left me unsatisfied and unhappy.  Their snack bars…well…some are better than others.  But since their cookies rocked my world the first time I had them, I figured these were worth the try.  Besides…they were snickerdoodles.  They were made for me.

Tonight was the big unveiling.  I was out of dessert options, but these cookies were sitting in my pantry just beckoning to me.  So…after dinner and clean-up, it was time to settle in with a touch of dessert.  And that was when I tore into these cookies.  They are small, but most gluten-free, prepackaged cookies are.  No surprise.  What I loved about them was the obvious dusting of cinnamon and sugar on the top.  Settling in with one (the serving size is two, but they last longer if you do it one at a time.  Frugal thinking in this gluten-free girl’s life), I anticipated my first bite.

These were really good.  The flavor didn’t stand up and wallop me in the  , but they were very pleasing to eat.  Very soft, like a fresh brownie right out of the oven.  They were like biting into the dough, but in an actual baked form.  Soft cookies are sinfully good.  And these, while not as full as flavor as I hoped, were still good in their own right.  It is perhaps unfair to try to compare them to the Snickerdoodles that have come before them, as these were distinctively softer, chewier, and just flavored differently.  I wouldn’t flinch to pick up another box of these somewhere down the line, as they seem easier to find than my favorite brand so far (Udi’s).

Enjoy Life Soft Baked Snickerdoodle Cookies are a delicious dessert or midday treat.  Honestly.  They have great texture, and I love how soft they are and how easy they are to eat.  No annoying crunches from your desk in the  middle of the day.  Just a savory, sinfully good treat that bring two-bite goodness to your gluten-free life.

Recipe: Apple Cider Syrup

Ah…I love the fall and winter for a few reasons.  And, trust me, they are very few.  I am not a cold weather, snow bunny, kind of girl.  No way!  I would much prefer a warmer climate.  But, usually around September, one of my favorite things begins to show up in grocery stores, at farmer’s markets and at festivals and gatherings.

And for my first foray into apple cider cooking, I went with an apple cider syrup, to top my homemade pumpkin waffles.  Because nothing screams fall more than pumpkin and apples, right?  And, wow…the flavor combination was phenomenal, but the syrup on its own was a sweet, delicious treat that would be good over pancakes, french toast, regular waffles, toast, or whatever else you can dream up.

Recipe: Apple Cider Syrup

Servings: 6-8
Time: Prep 5 minutes; Cooking 25-30 minutes

Ingredients:

  • 1/2 cup white sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1 cup apple cider
  • 1 tablespoon lemon juice
  • 2 tablespoons butter (I use Smart Balance)

Directions:

Stir together the sugar, cornstarch, and cinnamon in a saucepan.

Add the apple cider and lemon juice.  Stir.

Cook over medium heat until mixture begins to boil; boil until the syrup thickens.

Remove from heat and stir in the 2 tablespoons of butter until melted.

Serve warm.

Trust me…this is a fantastic substitute for your everyday maple syrup.  Sweet with a hint of cinnamon spice.  Easy to make and really, really delicious.  Make it while cider is readily available.  Trust me…you’ll fall in love with it.

And…if you happen to make your own pumpkin waffles…it really is a fantastic flavor combo.  This allergic chef wouldn’t steer you wrong.

Sometimes my local grocery stores make my life a little less expensive by putting gluten-free items on manager’s special.  If the moon and the stars aline and the diet gods are smiling upon me that day, I wander in at the right moment and am able to benefit from these specials before someone else scarfs them off the table.  This takes a huge burden off my food budget and allows me to try new products I normally wouldn’t either because of price or because I can honestly go without them.

This happened recently with products I had been ogling for a long time now…

Sans Sucre produces a line of gluten-free, sugar-free mousse mixes that look absolutely fantastic.  I spotted them on the shelves months ago and often stop to stare at them before continuing on my way while I’m out grocery shopping.  With a small sigh, I bypass them week after week after week, telling myself that when I get some wiggle room in the budget, I will pick them up and try them.  It had yet to happen.

And then…the gluten-free food gods found me worthy, because sitting on the manager’s special table the other day was one box of Sans Sucre’s Mocha Cappuccino Mousse.  You better believe I scarfed that up off the table immediately.  One box…and now it was mine.

This little dessert treat couldn’t be easier to make.  Each box contains two envelopes of mix to make the mousse.  One pack will make four 1/2 cup servings.  Simply grab your mixer and blend the contents of one packet with 3/4 cup of milk (I used unsweetened almond milk in mine).  Start off on the lowest setting and work your way up to the highest, allowing the mixture to blend and thicken in texture.  Do this for about five minutes.  Put into dessert dishes and pop in the refrigerator for at least two hours.  Then it’s ready to serve.

Now, this is where you can just grab a spoon and dig in or dress it up some.  I decided to melt some dark chocolate Ghirardelli over mine and serve it up that way.  Either way, you won’t be disappointed.

The mousse is smooth, rich and creamy.  You wouldn’t believe that this is sugar free.  By using almond milk, I reduced the calories even more.  And this delicious dessert had it been made with skim milk would only have clocked in at 70 calories prior to that.  So, it really is a sinfully delicious sinless dessert.  They do exist!   The cappuccino flavor really ties in well with the chocolate.  But espresso/coffee and chocolate are best mates anyway.  They just work together!  This is delicious on its own, but could be served up as a filling in a pie, tart, parfait, torte, etc.  Possibilities are endless.  I’m already coming up with ways to dress it up some more in my head.  This creamy, delicious mousse was light and didn’t feel heavy like some desserts can.  It’s the perfect compliment to a big dinner.  Especially for all you coffee-loving people out there.  It’s a café-infused dreamy dessert, delicious spoonful after spoonful.  Without the sugar, gluten, and with it being so low in fat, you can definitely afford to indulge a little.

So whip up Sans Sucre’s Mocha Cappuccino Mousse the next time you’re looking for a light dessert.  It compliments any meal and is sure to please everyone out there.  Enjoy.  And eat up.

Recipe: Rudi’s Gluten-Free Bread Pudding

It’s that time of year again.  Holiday time.  The autumn leaves of done changing, and fall is now beginning to transform into winter.  That means one thing: Thanksgiving is upon us.

This is one of those times of year that are a mass of trips to the grocery store, trying to put together the perfect meal to satisfy everyone who will be seated around the table on Thursday.  You have to plan on someone who might have a food allergy, finicky and picky eaters (especially kids), and from there your menu must be built.

Traditionally, pumpkin pie and apple pie are the go-to dessert options for the big day.  But, this Thanksgiving, I encourage you to change it up a little.

My friends at Rudi’s Gluten-Free Bakery have shared this recipe for their Gluten-Free Bread Pudding.  I dug out my slow cooker this morning and got to work on this.  The prep work is simple and the slow cooker does all the work for you.  And this really makes your entire house smell fantastic as it simmers away for a couple of hours.  Get it going on Thanksgiving morning and have it ready by the time the feast is consumed, simply serve it up, warm and fresh from the crock pot.  It’s that easy.

Even better…it’s Rudiculously delicious!  But don’t take my word for it.  Gather the ingredients together and give it a go for yourself.

Recipe: Rudi’s Gluten-Free Bread Pudding

Time: Prep 20 minutes; Cook 5-6 hours

Ingredients:

  • 9 slices of Rudi’s Multigrain, Cinnamon Raisin or Original Bread
  • 4 tablespoons of butter or butter alternative
  • 3 Golden Delicious apples, peeled and thinly sliced
  • 2 tablespoons lemon juice
  • 1 Tbs grated lemon rind
  • 1/2 cup honey (to taste)
  • 1-2 teaspoons cinnamon
  • 1/4-1/2 teaspoons nutmeg
  • 1 cup apple juice
  • 1/2 cup golden raisins|
  • 1/2 cup walnuts (optional)


Directions:

Spread butter onto bread and place in toaster or under broiler until nicely browned.

Cut bread into chunks.

Place all ingredients in the slow cooker except for walnuts.

Set the slow cooker to LOW and leave to cook for 5-6 hours, but check and stir the bread pudding around the 3-4 hour mark.

Stir in walnuts before serving.  Try serving it up with gluten-free ice cream or whipping cream.

This recipe was fantastic.  I used Rudi’s Gluten-Free Cinnamon Raisin bread (my favorite!).  The spices and ingredients all came together as it cooked up.  The texture is smooth and the flavor…sweet with a little bit of heat from the cinnamon and nutmeg.  Honestly, it definitely lived up to the fantastic aroma it cast throughout the house.

I ended up melting the butter on the stovetop and brushing it over the slices of bread before sticking them under the broiler to brown.  I found this kept a good balance on each slice.  And it toasted up brilliantly in my oven.  Aside from that, just give the mixture a stir halfway through and enjoy the end product.

Proof once again that gluten-free is Rudiculously delicious…any way you slice it, bake it, and cook it up.

So…this is the fourth variety of Liz Lovely’s vegan and gluten-free cookie line that I have managed to snag and try while out at the natural food store.  The other varieties have had the chocolate base…so this time, I went for a little more variety…but keeping with the chocolate theme.  Liz Lovely’s Gluten-Free Chocolate Chip Cookie was my vegan, gluten-free cookie of choice this past visit.  And since I was working on a box of Glenny’s cookies at the time, this had to wait.

But…damn…these were worth the wait.

If cookies were rockstars, this one would win the Grammy.  You wouldn’t even believe what you were eating was gluten-free, let alone contained no dairy or animal products.  It’s like biting into a cookie pre-baking process.  So, if you LOVE cookie dough, that’s what this is.  But it is baked.  Yet that fresh, straight-from-the-bowl flavor lingers and plays across your palate.  Honestly…it’s cookie dough in cookie form.  Which, is an odd way of putting it, but that’s what these taste like.  Like I said…rockstar.

These cookies have that first initial stiffness to them, but they are chewy and soft.  It’s the perfect storm of cookies.  I mean, you honestly can’t a cookie composed of rice flour, dark chocolate, and other binders and sweeteners (of which are all recognizable and natural), that is not only certified vegan (YAY!) but also safe for those of us who have to be careful of the cookies we indulge in.  Not every cookie is created equal, but thanks to Liz Lovely…those of us who need a special tweak to our cookies get ones that are far and away better than what any bakery, any café, or any weekend warrior baker could produce.  These are perfection wrapped up in a plastic bag.

I’m particular about my snack bars.  For one thing, I want them to have some nutritional quality in them.  Yes…even if they are chocolate.  But the most important thing these days is that they are gluten-free.  And that can be quite difficult to track down.  Granted, there are plenty of meal replacement bars out there, but I’m not trying to substitute a meal…I’m trying to get through that long stretch of time between lunch and dinner.  Because my stomach is sure to get a case of the rumblies if I am not prepared.

There was a mega sale going one day at one of my local grocery haunts on Enjoy Life’s snack bars.  I had great success with their Coco Loco Chewy Bars during my foray into the world of rock n’ roll this summer, traipsing across the country at numerous U2 shows.  Those general admission  lines can be killer, and you gotta feed your body in order to survive those shows.  Trust me.  So, that was a gamble I took then that paid off.

I had three other flavors to choose from, but opted for Sunbutter Crunch.  Why?  Well, I’m a sucker for that salty and sweet combination, that’s why.  These chewy snack bars are made from sunflower seed butter, so it’s safe for people with nut allergies.  How awesome is that?  In fact, Enjoy Life’s products are free of the 8 most common food allergens.  These are also vegan, casein-free, gluten-free, trans-fat free, packed with vitamins…and kosher!

Now, I was a little nervous about having these as a snack because my mom had tried another kind (she’s had to go gluten-free as well) and didn’t like them.  I was beginning to wonder if Coco Loco was an anomaly in the Enjoy Life snack bar lineup.  So, when my 3:00 p.m. snack break rolled around, I tore through the wrapper and very, very cautiously took my first small bite.

Salty.  Sweet.  And delicious.  Enjoy Life was back on track with these bars.  What I love is the flavor.  You feel like you are eating a nut butter bar, but it’s completely free of nuts.  The sesame seed butter is a fantastic substitute.  In addition, the rice crisps add a needed crunch and texture to these bars.  It just sort of provides that extra flair to keep each bite interesting instead of monotonous.  Sweetened with evaporated cane, these have just the right level of sweet to compliment the saltiness of the sunflower seed butter.  As a lover of almond butter, this was very reminiscent of that flavor so I fell in love and gobbled it down.

For a light, easy, and healthy snack (only 140 vitamin-packed calories), these make a great grab-n-go option.  They are just filling enough and contain the right balance of flavors.  Best of all…they are allergen-friendly.  So, whether you have food allergies or not, these are a viable and tasty option for your snacking needs.

I have a fellow WordPress blogger to thank for introducing me to Glenny’s Gluten-Free Oatmeal Chocolate Chip Cookies to me.  So, this blog is for you, glutenfreegimmethree!  I will never forget the comment you left on my blog about the new Enjoy Life Chocolate Chip Cookies.  Your feedback and your recommendation never left my mind…and the instant I spotted Glenny’s products on a shelf…your personal favorite, the Oatmeal Chocolate Chip Cookies…found a new home in my pantry.

It’s obviously well known by now that I love my cookies.  And, thankfully, over the years, the gluten-free world has become an overflowing stream of various brands, types, and flavors of cookies.  There are brands that I know and tend to stick with.  And there are ones that I notice in passing, but give no further thought to.  Glenny’s probably would have fallen into that category if not for a recommendation by a fellow gluten-free WordPress blogger.

I cracked these open the other night to have as my dessert.  The serving size is two cookies, but I once again limited myself to one.  And that wasn’t an easy thing because this is where the magic of these cookies comes into play.  One bite and it’s like you’re back in mom’s kitchen, reaching for the cookie jar or the cooling rack and swiping a cookie.  At first bite, it was like eating something homemade.  It tasted like the cookies mom and grandma used to make…the ones that never got hard, were always soft, and that you could eat by the handful and never get sick from them.  Or, maybe that was just me.  Regardless, the true treasure of Glenny’s Gluten-Free Oatmeal Chocolate Chip Cookies is that they honestly taste like they were fresh baked that day.

I can rave all I want about my favorite go-to brands.  But none have ever ignited such memories for me.  I know…it’s a cookie.  But food can be a very powerful transport back to the past.  Honestly…it was a comfort.  And that’s what cookies are – comfort food.  Glenny’s cookies are quite soft and chewy.  I loved their tender texture.  Despite the fact that they were made with oatmeal (not a favorite ingredient in cookies for me), this enhanced the taste and taste rather than distract from it.  The chocolate chips gave an added hint of sweetness.  And these amuse-bouche sized cookies were all-around perfection.

I couldn’t ask for more in a packaged cookie.  To be that close to homemade is making Glenny’s a brand that now is close to my heart.  Find these cookies.  Buy these cookies.  And eat these gluten-free treats wherever, whenever you want.  Happiness is calorie-free.  And with only 55 calories per cookie…you can indulge more than a little.
