So…does everyone remember my favorite meal of the day?

I’ll give you a hint:

It’s usually the first meal you eat.

Yeah.  Breakfast.  Oh, how I love breakfast.  How I crave breakfast.  I can eat breakfast for every meal of the day and be a happy, happy girl.  It is the most diverse, most delicious, most creative meal that can be baked, cooked, toasted, sauteed, fried, poached, or done however you like it with a variety of different ingredients.  And the combinations…are endless.

I always like to treat myself to one good breakfast/brunch out when I’m on vacation.  Last year, my roommate and I hit up a restaurant that specialized in crepes (which we revisited this year and I think I had the most perfect gluten-free crepe of my life!) while in Denver.  This year, after a little hunting around, I chose a different place to try.  And, we happened to visit it on the day we were flying out.  One filling breakfast would be really good before boarding a flight from Denver back to Louisville, yes?

That’s what I thought.

So…we took a short little drive to the Cherry Creek area of Denver and hit up this little breakfast/brunch/lunch joint called Syrup.

What really got my attention when I was researching restaurants in the area was that there was a gluten-free menu.  Actually, I’ve come to find out that Colorado is like…some gluten-free haven, so pretty much anywhere you go, there is something gluten-free on the menu…or a separate gluten-free menu if you have to avoid gluten.  It’s awesome.  Is it any wonder I want to move out there?

This is a little unassuming little place located on the bottom floor of a building.  This meant walking down some stairs to enter the restaurant.  My roommate and I were shown to a table immediately.  The waitress was alerted of my gluten sensitivity and she immediately pointed out that they could make waffles, pancakes, and English muffins gluten-free for me, so, whatever I desired…I could have.

Awesome!

After much consideration and back and forth, I finally settled on a waffle.  A nice Belgian waffle sounded awesome.  So, order in, I went with the Strawberry Fields Gluten-Free Waffle.  This is a delicious Belgian waffle that is covered with freshly cut strawberries that have been sauteed in Syrup’s own handcrafted Strawberry Syrup.  Yeah…as we all know…if it has strawberries…it wins.

My roommate opted for a traditional Belgian waffle with traditional butter (because, yes…you do get an option on a flavor of butter) and originally went with the Buttermilk Syrup.  She was told that it was a cold syrup, so she changed it to the handcrafted Apple Cinnamon Syrup.  And we decided to split an order of the hash browns.

With our orders in, we settled in to discuss our trip, some of our favorite things, and drink in the atmosphere.  We saw some dishes come out to other diners…fluffy, huge pancakes, and even some lunch-type items as well…sandwiches and the like.  It all looked really good.

Before we knew it…our plates were set before us.  Let me tell you…not only did my gluten-free waffle look amazing, but it smelled amazing too.  The strawberry syrup just sort of brought out everything good and awesome (which is…everything) about strawberries.  Especially on waffles.  YUMMY!!  I love fresh fruit on breakfast goodies like pancakes, french toast, and waffles.  This…was heaven for me.

My roommate’s waffle was done to the perfect crispy, soft texture you want in a Belgian waffle.  She loved her whipped butter.  But, more importantly, she fell in love with the apple cinnamon syrup (which was green, btw!).  I tasted it…yeah…it was awesome.

As for my amazing Strawberry Fields Gluten-Free Waffle…all I can say is that I was in a happy, happy place at first bite.  I just wanted to savor it.  The fresh strawberries were an amazing touch.  They were only enhanced by the handcrafted strawberry syrup, which…was a sweet, delightful topping on my waffle.  It was swimming in a sea of strawberry flavor and I just wanted to soak all of it up.  And I tried to with every bite of my waffle.

The hash browns were lightly cooked.  I topped mine with a bit of hot sauce and enjoyed their soft texture with just an outlying crunch on the edges.  Very nice and a great compliment with the sweetness of the waffle.  I was stuffed by the time I was done eating, but not to the point of feeling too full.  It was just the right amount of food.  And it was prepared with such care, skill, and done to perfection.  Nothing overdone or underdone.  The waffle had the right texture, the right crisp, the right amount of sweetness.  Yeah…I was in gluten-free waffle heaven.

Whether you wake up for breakfast or just love having a nice breakfast treat, I highly recommend Syrup.  Not only does their menu offer pancakes, waffles, and french toast done in a variety of ways, but sandwiches, burgers, eggs, omelets, fruit, oatmeal, salads, etc. are also offered.  There is a little something for everyone.

But if you are wise, when you eat at a place called Syrup…order something with one of their specialty handcrafted syrups.  I promise, it’s totally worth it.  I’m already planning to return next year.  I was that impressed.

Denver is lucky.  It has a wide variety of fantastic places to eat.  But this one…takes the pancake…gluten-free…with a nice topping of…handcrafted maple vanilla syrup.

Espressolé Caffe brews up Denver’s best coffee

Nothing makes me happier when I am out and about than a latte, cappuccino, or a mocha from somewhere local.  Granted, Caribou Coffee (YUM YUM) and Starbucks will do in a pinch, but there is something so amazing and special about independent, local coffee houses.

So…I tend to seek them out.

(For the record, I sought out Caribou Coffee at the Denver airport upon flying in and before flying out, LOL!)

Just up from the Denver Marriott DTC there is this little shopping center.  And in this shopping center is this really amazing cafe called Espressolé Caffe.  Attached to this little coffee shop is a cooking school.  If I lived in the area, do you realize where I would be, like, all the time??!!  Well, I wasn’t there to attend the cooking school that Sunday morning…I was there for some caffeine.

It turns out that Espressolé has been voted the best coffee in Denver.  Seriously.  And considering how many coffee houses exist, that’s no easy task.  That being said, my roommate and I ducked inside that morning to sit in some chairs, relax, and have a morning coffee boost.  She ordered a white chocolate mocha with a hit of hazelnut (one of her favorite things to order).  I got the Maple Latte with almond milk.  (YES!!  Almond milk is in every little local cafe in Colorado it seems, making me one happy coffee drinker.)

It took a moment for the drink orders to be made, and I never mind waiting around in coffee shops.  We were taking these to drink there, so they would be in mugs and everything.  Awesome.  Cathy’s White Chocolate Hazelnut Mocha was up first and I went to retrieve it.  It smelled awesome and she was quite happy to sip from the foamy top for a moment and savor the taste.  She said that it wasn’t bitter at all (perfect espresso pour!) and that it was just rich and creamy and yummy.  Yes.  Yummy.

My Maple Latte with almond milk was up next.  The latte art was very pretty.  I love latte art.  And the foamy top was done to a frothy perfection.  Foam is one of my favorite things on an espresso or cappuccino so I love it when it’s done to perfection.  I was hooked on this drink.  I wish more places offered a maple latte because this was beyond delicious.  It was sweet, without being too sweet, with that little maple flavor that reminds you of fresh syrup on pancakes.  The espresso was a perfect pour, very smooth.  And it all came together in a caffeinated beverage that I wanted to savor for as long as I possibly could.  I did so too, until it started to cool down and I knew that I needed to polish it off before it got cold.

YUMMY!!  No…for real.  I can see why Espressolé Caffe has been voted the best coffee in Denver.  It’s honestly the best coffee I have had…anywhere!!  In addition, their pastry case even offered quite a few gluten-free breads/pastries/goodies.  WOOHOO!  I was gearing up for gluten-free crepes later that day, so no gluten-free goodies this time, but I intend to be back next year and perhaps I’ll indulge then…with another amazing maple latte.

Oh, if I lived in Denver I would be in SO much trouble.  Believe me when I say I’m hitting up Espressolé Caffe every morning next time I’m in Denver.  It’s just a short walk from my hotel and a whole lot of caffeinated goodness…so close to my home base.

Popcorn is awesome.

No, seriously!!  It really is.  It is a naturally gluten-free food.  And…oh yeah…it’s delicious.

While traveling to, ironically, Colorado, I stashed a couple bags of Rocky Mountain Popcorn Company popcorn in my luggage for snack purposes while away from home.  Why?  Because I eat popcorn every night.  Air popped, delicious popcorn rounds out my evening.  Healthy and a great snack to help with digestion.  Honestly.

But, bringing a popcorn popper was out of the question, so I settled for something I had on hand at my apartment…these bags of popcorn that I picked up on sale at Big Lots.  I had two kinds, and the one that I busted into first was the Cinnamon Sugar variety.

I had never had cinnamon sugar popcorn before, so I was a bit excited about tasting this.  And I was not let down in the slightest.  You know when you used to toast up a piece of bread, spread a bit of butter on it, melt it down and sprinkle it with a cinnamon and sugar topping…that’s what this reminded me of.  It was sweet with that little bit of cinnamon heat that made the flavors honestly, and forgive the pun, pop.

I was hooked.  The first night my roommate and I had a small cup full and we ended up going back for more.  And for only 150 calories per 3/4 cup, that’s not bad at all when it comes to flavored popcorn.  Nothing will quite match the healthy factor of air popped, but…you work with what you have when it comes to snacks.

I was blown away by the flavors of this popcorn and now am contemplating making a variety of it with my air popped stuff at home.  It was like no popcorn I ever had before…and now I am pleasantly hooked.

If I were to choose another place in this country to take up residence…it would be Boulder, Colorado.  Hands down.

Not only is it a hip, happening place, but it is so healthy and full of energy and life.  It’s a little piece of Bohemia up in the mountains.  And I love every moment I am there.

This year when I ventured over to Boulder, Colorado, I was meeting up with someone.  And as she knows the area, she chose to meet up for coffee at Folsom Street Coffee.  Now, we all know that I am a coffee addict.  So, a little non-chain, independent coffee place is always high on my map.  She chose well.

My roommate and I arrived early and settled in to wait.  But, soon we were eagerly contemplating what type of drink to get.  And before you knew it, we were placing our order at the counter.

Cathy went with a simple mocha, which, mind you, is prepared with chocolate milk.  WHAT a concept.  Honestly.  And the chocolate…Ghirardelli.  YES!

I was feeling a latte that day, and went with a strawberry latte made with almond milk.  Oh yeah…almond milk abounds at these little coffee shops in Colorado, and I am so thankful for that.  Unfortunately, they were out of strawberry syrup, so I changed my order to a blackberry latte made with almond milk.  No harm, no foul.  Still berry-licious in a latte type way.

We could see our drinks being prepared as we sat there and just sort of drank in the atmosphere.  When our order was up, I went to retrieve it, admiring the beautiful latte art in the process as well.

And at first sip, the mix of the berry flavor with the awesome espresso shot was a perfect combination for me that morning.  I loved the way the espresso played with the sweet undertones of the blackberry syrup.  And the almond milk frothed up beautifully and gave me the perfect foam that I love on a latte.  So delicious.

Interesting to note that Folsom Street Coffee is Boulder’s only zero waste coffeehouse. In addition, it is family owned and operated as well.  I love independent shops.  And let me tell you, this place was packed.  From the moment we arrived to the moment we left, and people were still coming in as the time we spent in there talking ticked away.  Yeah…it was a perfect coffee experience in the perfect city in my view.  If you find yourself near Boulder, Colorado, I encourage you to stop in at Folsom Street Coffee.  Treat yourself to something delicious and caffeinated from this awesome little coffee shop.

Strawberries make this crispy cereal from Erewhon a berry good wake-up call

We probably didn’t really need cereal while we were away in Colorado.  We were loaded down with some gluten-free breakfast bars, but for some reason…cereal ended up in our shopping basket on our usual grocery trip for the time we were in Colorado.  Hey…we buy groceries so we don’t eat out three times a day.  It’s smart!

But, I’m so accustomed to eating cereal in the morning that I wasn’t going to fight the urge to purchase it.  So, purchase made.

I was shopping at a little natural foods store in Denver, which is the equivalent of Whole Foods…but at great prices.  No…really.  The produce and food selection (especially gluten-free) was amazing!!  I was just awestruck by it all.

When it came to choosing a cereal, my roommate and I went a little off the beaten path.  We could have played it safe…but, you see, we had this coupon for products from Erewhon, a brand we don’t see much of in our area.  So when we spotted the Strawberry Crisp Cereal, we just put it in the basket.  No questions asked.  Didn’t need it…but there it was.  And here we were…buying it.

Let me tell you…I’m so glad we didn’t talk ourselves into putting it back.  Friday morning was an early morning as we had a meeting out in Boulder, Colorado, which meant up and out of the hotel early to get there in time.  Knowing that our big meal of the day wouldn’t happen until around noon-ish, the cereal was a welcome site that next morning.  Now, Erewhon’s Strawberry Crisp Cereal doesn’t really look like anything special.  It’s simple.  It’s the combination of certified organic corn flakes that are crispy and crunchy and sweet.  And to add to the flavor, some dried strawberries are thrown into the mix.  I was skeptical at first.  I have an issue with dehydrated fruits thrown into cereals…but these were strawberries…and strawberries always win.

Well, this cereal was definitely a winner!  The crispy texture was awesome and held up in the splash (or pool) of almond milk that was poured over it.  The corn flakes were lightly sweetened and were definitely bolstered by the inclusion of the strawberries.  And those berries were what shocked me the most.  I figured they would taste like cardboard, but with the addition of the almond milk, these little dried strawberries were revitalized.  Their flavor was all over this cereal.  It reminded me a lot of the flavor of Fruit Loops, which I used to eat the hell out of when I was growing up.  It was so good.  I only wish the strawberry one was easy to find around here.

Even if you aren’t required to eat gluten-free (like my roommate), I highly recommend giving this cereal a try.  Especially if you are a strawberry fiend like me.  Because, honestly…anything with strawberries wins.  And this took the cereal gold.

Recipe: Gluten-Free Cinnamon Raisin Pumpkin Pecan French Toast

It’s a mouthful.  I know.

But trust me…this little experiment this morning turned out to be a delicious mouthful.

Now, I admit…I’m not big on French toast.  I don’t know what it is.  I think growing up I had one too many still-soggy slices that were rushed to the table in an attempt to get us fed and then out the door to catch the bus to school.

But I’m getting ready to head out on vacation so I’m trying to use up things that I have open in my fridge…and as I’ve been using pumpkin recently in a lot of recipes (instead of eggs/oil/butter), I had some pumpkin to use up.  So…this is the recipe I created on a whim this morning.

Recipe: Gluten-Free Cinnamon Raisin Pumpkin Pecan French Toast

Servings: 2
Time: Prep 5 minutes; Cook 8 minutes

Ingredients:

  • 4 slices of gluten-free cinnamon raisin bread (I used Udi’s Gluten-Free Cinnamon Raisin)
  • 2 eggs
  • 1/4 cup pure pumpkin (I used Libby’s)
  • 1 teaspoon gluten-free vanilla
  • 1 teaspoon ground cinnamon
  • Dash of ground nutmeg
  • 2 tablespoons milk (I used unsweetened almond milk)
  • 2 teaspoon brown sugar (optional…for sweetness)
  • Chopped pecans

Directions:

In a bowl, mix together the eggs, pumpkin, milk, cinnamon, nutmeg and vanilla.  Add the brown sugar, if using.  Mix well.

Preheat a pan (for about 3-5 minutes).  Spray it with gluten-free non-stick spray or olive oil over medium-high heat.

Dip each slice of bread into the egg mixture and place into the pan to cook until golden brown on one side (about 2-3 minutes).  Turn the slices over and cook until golden brown on the other side (another 2-3 minutes).

Remove and place two slices on each plate, garnish with chopped pecans.

I added a little pad of butter and some maple syrup to these this morning and they were heavenly.  I absolutely loved the variety of flavors, from the sweetness of the syrup and the raisins to the spice of the cinnamon and nutmeg in the pumpkin.  And that pumpkin flavor was there, but wasn’t overpowering.  Every flavor came out and took the spotlight.  It was a culinary experiment totally worthy of a Top Chef Quickfire Challenge.

Or…at least I’d like to think so.  But…that can be left to you as well.  Go ahead…give this a try.  I promise, it’s a filling, low-calorie breakfast treat.

Recipe: Gluten-Free Rocky Road Scones

I’m at it again in the kitchen.

I love an easy, and filling breakfast treat in the morning, especially after hitting up the gym and heading into the office.  Portable and easy to reheat are key.

So, scones are usually my go-to option for this.  And this recipe…I totally invented this afternoon from items I had in my pantry and fridge, crossed my fingers, and hoped for the best.

Thankfully…it all worked out to a delicious end.

Recipe: Gluten-Free Rocky Road Scones

Servings: 12
Time: 20-25 minutes


Ingredients:

 

  • 2 cups Pamela’s Products Gluten-Free Baking & Pancake Mix
  • 1/4 cup cocoa
  • 1/3 cup sugar (I used Truvia)
  • 1 tsp baking powder
  • 1/4 cup white chocolate chips (I used Ghirardelli)*
  • 1/4 cup mini chocolate chips (I used Nestle)
  • 1/4 cup chopped almonds
  • 5 tbsp pure pumpkin (I used Libby’s)
  • 2/3 cup milk (I use unsweetened almond milk)
  • Marshmallow Fluff


Directions:

Preheat oven to 375°F.

Mix the dry ingredients together.

Add in the pumpkin and the milk.  Mix together with a fork.  Dough will be thick.

Drop large, tall dollops of dough (scones will spread when baking) onto lightly greased baking sheet.

With a knife, remove the top of each scoop and place 1 tsp of Marshmallow Fluff into the scone.  Recover with the dough.

Some fluff will be visible.

Bake for 15-17 minutes.

I lightened up this recipe by dropping the usual butter and egg combination and using pumpkin instead to bake with.  It creates a great texture.  As these cook in the oven, the marshmallow fluff will bubble out and create a great mashmallow-y look to the top, which toasts a little as they bake.  One bite…and I was hooked.  These were soft, decadent, and had a great rocky road texture and flavor with the different chocolates, the almonds, and the fluff.  Perfection in scone form.

Go ahead…try them.  You know you want to!

Okay…so I admit it.  I ate a cookie for breakfast.  Well…it was half a cookie.  But it was still breakfast.  And I regretted nothing.

And why should I?

Once again Katz Gluten-Free has won me over with something as simple and as basic as a chocolate chip cookie.  Their gluten-free take on the world’s most famous and favorite type of cookie is nothing short of awesome.  And it is really, really difficult to impress me with chocolate chip cookies…because I am a cookie monster in gluten-free person-form.

But without even warming this one up like it was fresh baked, my half of this cookie (the roomie got the other half) was soft and chewy at first bite.  And yes…despite their small size, I managed to get a few bites of this cookie.  The best part is how packed with chocolate chips they are.  Honestly!  I was shocked.  Usually these smaller gluten-free varieties are pretty sparse with the chocolate chips…but not these.  Each bite had a few of the sweet little morsels in it.

Mmmm.

I loved how soft and chewy they were.  Despite having been in the freezer for awhile and simply being left on the counter overnight.  This was a fantastic bite of cookie.  And…as far as cookies go, rather up-to-par with the competition.  Two cookies would yield a serving size, setting you back only 150 calories.  And these little bite-size goodies don’t make you feel bad about diving in and savoring each one.

This was gluten-free cookie love from Katz.  And I, for one, was impressed.

Now pardon me while I go place an order for a full carton of these.  Delicious.  The cookie monster is back!

First of all…I had no idea what rugelech was when this was shipped to me.  Honestly.  I didn’t even know how to pronounce it.  But, it looked like a little cinnamon roll, so it had to be good, right?  Well, the only way to find out was to try it.

But first…what is rugelech?  Well, it’s a Jewish pastry.  I figured that much out on my own.  But what did it taste like?  That was the big question.

When I pulled these out to thaw the night before, I loved to see how they were twisted around like little cinnamon rolls – bite-size, of course.  The sample pack contains one cinnamon and one chocolate, two of the varieties that Katz offers on their Web site, each pack containing 10.

For good measure, I unwrapped these this morning and gave them a 10 second zap in the microwave to give them that fresh-from-the-oven appeal.  Since both my roommate and I are testing out these products, I cut each of them in half and plated them up.  I was really excited about these because they smelled fantastic coming out of the microwave all warm and ready to enjoy.

I tasted the chocolate one first.  It was like biting into a cinnamon roll but with chocolate instead.  And who said chocolate was a bad thing?  Not me.  Nope.  Not at all.  I fell in love with this and cherished the bite I got.  It was crisp, flaky, and melted in my mouth.  A delicious morning treat that would pair well with a piping hot fresh cup of coffee.  I loved it.

The cinnamon one was up next.  And this was equally as good.  Seasoned to perfection, with just enough cinnamon flavor and the right amount of sweetness to offset the heat.  It was like biting into a fresh cinnamon roll minus the heavy icing on top.  Yeah…these were a nice treat.  And a part of me wished that I had left them for the very last thing to eat out of the sample pack.  But it was not to be.

What I did come to know though is that rugelech is very delicious.  This traditional Jewish pastry really, really got my breakfast sweet-tooth going.  And it was just what I needed with the perfect light, crunchy texture to make it interesting…and flavorful.  Both the cinnamon and the chocolate are amazing.  The Katz Web site also offers vanilla…so perhaps that’s something for me to try in the future.

One can say…I will totally be ordering more of these because these…were deliciousness.  And with only 110 calories per pastry, you don’t feel too bad about indulging a little, be it at breakfast or for a snack with your afternoon coffee…or even a glass of milk.

Granola is not something that I normally seek out.  Just being honest.  While I find them to be delicious, and love them, I would rather buy a gluten-free oatmeal for lunch or snack on something that is a bit more substantial.  But I came into the possession of  a gluten-free granola thanks to a gift pack from my local Fresh Market called “Don’t Be a Gluten.”  I loved the name, and as it was intended for the holidays, which had since past, my roommate bought it for me and I got to dig through at the gluten-free treasures that awaited me.

One of the biggest bags in there was a pack of Sweet Cranberry Pecan Granola from a company I never heard of – Love Grown Foods.  And with a company name like that…how can you resist at least trying it out?

Here’s the dish from what I can gather via the Web site.  Love Grown Foods was created by a couple while attending the University of Denver.  Each of the young entrepreneurs brought a knowledge of healthy living, healthy eating and love of an active lifestyle to the kitchen.  And why not?  What emerged was a perfected recipe for granola that started off with simple sample packs and grew from that into a business.  And who can argue with a company that delivers amazing flavor in each handful that isn’t tainted at all by artificial sweeteners or sugar.  Their granola is sweetened by either honey or agave.

It’s a great story, but how does it pan out in the product?

Well, let me tell you, the name Love Grown Foods is not misleading at all.  Not only can you tell the amount of care and love that went into each and every batch, but the product speaks for itself in nutritional value as well as flavor.  The Sweet Cranberry Pecan is the ideal combination of dried cranberries and toasted pecans, served up with perfectly sweetened and seasoned gluten-free rolled oats.  It is touched up with some dried coconut and seasoned with honey, cinnamon and vanilla.  The play of flavors on your palate just works.  It’s fantastic…crunchy with a hint of sweetness that just leaves you wanting to grab a little more and then a little more.  It’s probably the best granola I have ever had in my life.

What I appreciate about Love Grown Foods granola is the nutritional value that is packed in each serving.  A serving is 1/4 cup, which, when it’s granola, goes a long way.  Each serving of the Sweet Cranberry Pecan brings with it only 130 calories and 6g of fat.  Not bad.  And I promise, a simple serving of that size does stick with you.  That’s the wonderful thing about granola.  And, it’s easy to transport and take with you, if you are going to be out for the day, on a hike, a jog, or a walk.  It’s the ideal snack to pack.

It was love at first crunchy, sweet bite when it came to this granola.  Now I’m hooked.  And I’m hoping to find one of the other varieties (it also comes in Simply Oats, Apple Walnut Delight, Raisin Almond Crunch, and Cocoa Goodness) in store to give them a taste as well.  If it’s anything like the Sweet Cranberry Pecan, then I’d say I’ll be in for a delicious treat.

If you love granola and really want to try one that is made from natural ingredients, no artificial sweeteners, and honestly made with love…then I recommend Love Grown Foods.  Yummy doesn’t begin to describe it.
