Twas two days after my friend Jenn’s birthday and I was visiting her.  That was not planned.  Okay…maybe it was.  I mean…birthdays are so much fun and I wanted to go visit Jenn anyway.  The need to get away from life where I am currently living was a necessity more than anything.  And good friends always offer the best times when you need your spirits lifted and your soul cleansed.

After a morning of delicious gluten-free crepes and an afternoon spent out shopping at the used book stores, a treat at Jeni’s Splendid Ice Creams,  and a stop at the natural food store that literally BROKE my budget (OMG…gluten-free things that I had not even known existed!), Cathy and I were going to take Jenn out to dinner to celebrate her birthday.  I let her know ahead of time and she, even though she didn’t have to, chose a place that features a gluten-free menu.

And at 5 p.m., we rolled up, parked, and made our way into the restaurant.

First of all, the place was nothing like I expected.  Located on the end of a strip mall, the outside is very unassuming…save for the 50’s style door you walk through to enter the diner.  We were greeted by the hostess after a moment and requested a gluten-free menu for me.  We were shown to a table and settled in when our waitress, Candie, came over to get our drink orders.  Despite the day of celebration, we all just stuck to water.  She went over some specials, and the vegetable soup did spark my interest.  So, after she went to fetch our waters and returned, I asked if it was gluten-free.  She said she thought it was, but she would go double-check.  When she returned, she regretfully informed me that it was not gluten-free.  I had to options in mind for dinner.  They had gluten-free fries offered and that was really tempting.  If I did that, I’d be getting a salad.  And it was pointed out by Jenn and Cathy that I could get a salad anywhere.  True…but I can’t get fries everywhere.  That being said, I made up my mind.

Cathy and Jenn ordered what they normally order when we go out to a restaurant that has this on the menu – Fish and Chips ($15.99).  As for me, I went with the Gluten-Free Seasonal Vegetable Plate ($14.99).  Candie asked if I wanted some gluten-free dinner rolls.  I was taken aback.  I wasn’t expecting that.  I eagerly nodded my head and gave her a “Oh…yes please!”  Happiness.

Orders were in, and we fell into conversation about future plans, things happening around us, the waiter with the really awesome mustache, ate dinner rolls (mine gluten-free…theirs regular)…that sort of thing.  The dinner rolls, for the record, were warm, flaky, and delicious!  I kept myself to just one.  And then…our actual food arrived.

My veggie plate looked amazing.  I mean…I read the description, but this was beyond what I expected.  This plate was stunning.  The colors were vibrant.  The presentation was inviting.  I was beyond impressed and totally ready to dive in and try it out.  But, I composed myself enough to take a picture.  Then let my roomie photograph her fish and chips for her own blog (which maybe one day she’ll actually put up on the interwebs).  And then she promptly stole some of my rice…because she said she really wanted to try it.  LOL!  I also let her steal a tortilla chip and some of the hummus.

Oh…I’m getting ahead of myself here.  I haven’t yet described the actual food on the dish yet.  The menu described the Gluten-Free Seasonal Vegetable Plate as being composed of very wild rice, sliced almonds, goat cheese, roasted red pepper hummus, warm roasted vegetables and cured olives.  I asked for my plate to not include the olives because I disdain olives so much.  I don’t even want to have to pick around them.  The plate came with corn tortilla chips on the side.  The rice had the slivered almonds, corn and craisins in it, really amping up the volume as well as the presentation.  The roasted vegetables were a mix of asparagus, broccoli, carrots, red pepper, portobello mushrooms and garlic.  It was topped off by a very liberal sprinkling of goat cheese.  It looked fantastic.

And it was.  Just popping with flavor.  The corn tortilla chips were my least favorite part, actually and ended up being left on the side of the plate.  The vegetables were roasted to perfection, however.  Packed with flavor and cooked just enough to get them to that brilliant bright hue that catches the eye and really whets the appetite.  I was SO ready for bite after bite.  I ended up using dabs of hummus on my vegetables.  The roasted red pepper hummus was good, but I found it to be very oily and a bit bland.  I felt like it needed a little more seasoning or spice to it.  Believe it or not, though, my absolute favorite part of this entire dish…was the very wild rice.  I loved the play on flavors and textures with the perfectly cooked rice, the crunch of the slivered almonds, the sweetness from the corn and the craisins.  It was absolute perfection.  Everything meshed and mingled well on the plate and I was quite content with eating it.

If I had one complaint it was that the entire plate was swimming in oil.  While I love olive oil as much as the next person, I think there is a thing as way too much.  And this definitely got to that point.  But, the flavors were great and I devoured everything but the chips.  Delicious!

Would I dine here again?  I’d be willing to give it a try.  I might do the salad and french fries next time though.  Cathy said she’d be willing to try a burger the next time as her fish was good…and fell solidly in the middle of everywhere she ate up until now.  Not a bad showing…but it didn’t wow her enough to try it again.  But…each of us are willing to give it another try with other food options.

So, a good showing by Cap City Diner.  We had a great time there.  And we did enjoy the food.  It was a great night out with good friends and that was fantastic in and of itself.  Good food and good times.  Just what I needed.

Product Review: Tasty Bite Garlic Brown Rice

As so many of you know, Tasty Bite is my go-to prefabbed food of choice when it comes to needing something quick and on-the-go.  I mean, honestly.  It doesn’t get much easier than a 90 second nuke in the microwave.  The food tastes fresh…like it wasn’t pre-packaged or sold on the shelf of your local grocery store.  All-natural…real ingredients help make this a healthy and better choice than other options out there.

Known for Indian and Asian cuisine (the Asian dishes are NOT gluten-free), these are little packets of amazingly flavorful food.  They are affordable, don’t take up much space in the pantry, and so easy to prepare.  If you haven’t jumped on the Tasty Bite train yet…what are you waiting for?

For those familiar with my blog, you might have read about the past few Tasty Bite meals being…rice.  Simply price.  I had one with lentils and one that was just plain brown rice.  And they were fantastic.  Still moist.  Still seasoned perfectly.  No need to add anything else.  Just…sheer, tasty perfection.

The rice trend continues.  This time with Tasty Bite Garlic Brown Rice.  First of all, I’m a total fan of brown rice.  I have been for ages.  I actually prefer it to the ultra-refined white rice.  I think the texture is better and I love that light, nutty flavor that comes with it.  Mmmm.  But Tasty Bite, this time, stepped it up.  They gave it an extra flavor boost with garlic.

And I LOVE, LOVE, LOVE garlic!

FOR REAL!

So…brown rice…garlic…how can you go wrong?  You can’t.  Tasty Bite seasoned and flavored this rice with the perfect balance of spices and added vegetables.  It made for one interesting and flavorful bite after another.  Seriously.  I served this with some sauteed baby bok choy.  I’m not joking.  As I sauteed it up with some garlic…it was a nice match.  But I kept them separate on the plate because I wanted to enjoy my rice on its own if I chose.  And a few bites…that is exactly what I did.  The rice is amazing.  It microwaves to perfection…still soft…still moist and fluffy.  The flavors melt right into each grain and make it one of the best rices that are pre-made.  Seriously.

And look at these ingredients: water, brown rice, carrots, corn, spinach, sunflower oil, garlic, salt, celery, sugar, cumin, chilies.  Real ingredients.  Recognizable ingredients.  What more could you ask for?

Nutritionally speaking…we’re talking good numbers here.  A serving is half of the pouch.  In this serving, you will be consuming 220 calories and 5 grams of fat.  That’s amazing.  And you do get a lot of rice in that serving.  You will also be treated to a cholesterol-free meal that contains only 420 mg sodium and 1 gram of sugar.  Finally, you will be provided with a filling 2 grams of fiber and 5 grams of protein.

Healthy.  Packed with flavor.  Fluffy.  Light.  Delicious.

If you have yet to try any of the Tasty Bite meals…I encourage you to do so.  And if you aren’t brave enough to go for Indian cuisine, give the rice a try.  The Garlic Brown Rice is amazing.  So if garlic is your thing…it won’t overpower, but it will add plenty of flavor to the rice.  Enjoy!

Recipe: Blueberry Breakfast Rice Bowl

Rice.

For breakfast.

You read that right.  All natural.  All things I had at home.  All healthy ingredients.  And the best part, it really does fill you up.  Fiber is a wonderful thing.  Trust me.

It was a bitter cold morning…around 0°F…and I didn’t want to have anything cold.  Nothing.  Hot coffee.  Hot breakfast.  So, I modified a recipe I spotted in a magazine and it proved to be as epic as it sounded.  I loved the play of flavors and the way everything was fresh, light, and filling.  This is definitely a hearty, no-guilt breakfast.

Recipe: Blueberry Breakfast Rice Bowl

Servings: 4
Time: Prep 5 minutes; Cook 20 minutes

Ingredients:

  • 1 cup brown rice
  • 1 tablespoon coconut oil
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon finely grated lemon zest
  • 1/4 teaspoon sea salt
  • 1/4 cup almond milk
  • 4 teaspoons pure maple syrup
  • 1/2 teaspoon pure vanilla extract
  • 1 packet stevia
  • 1 cup fresh blueberries

Directions:

Cook rice according to package directions.

In a medium bowl, combine rice, oil, cinnamon, orange zest and salt.  Divide among serving bowls.

In a small saucepan, bring milk and maple syrup to a boil on medium heat.  Remove from heat and stir in vanilla and stevia.  Drizzle over top of rice mixture and top with blueberries, dividing evenly.

I loved the warm, homey feel of this breakfast.  It was definitely something different.  Rice for breakfast…when done like this…doesn’t seem too different at all.  The spices and flavors all mixed really well.  The blueberries really played well with the cinnamon and lemon.  And I loved how everything just sort of played well together.

This is a new favorite.  And it is so easy to make.

Brown rice.

People either love it or hate it.

Me…I happen to love it.  It just…takes so long to prepare.  In fact, brown rice often takes longer to get to cook perfectly than white rice.  But with white rice being so refined, brown rice is always a better option.

I just don’t always have time to let it cook up on the stove.

Thankfully…Tasty Bite has me covered.

Yes…the makers of all those amazing little Indian meals I blog about from time to time.

The very same Tasty Bite.

They do rice too.  They do it well.  And they make it so easy to enjoy.

There isn’t too much I can say about Tasty Bite’s Brown Rice.  I mean…it’s brown rice.  But I can say this…

The package contains fully cooked brown rice that you simply reheat in the microwave for 90 seconds.  Yes.  90 seconds and you have two servings of rice as your fingertips.  It’s brilliant and very convenient.  Brown rice is full of vitamins, minerals and fiber, and is my favorite type of rice to incorporate into meals.  Tasty Bite’s Brown Rice has that nutty flavor and that tougher texture that regular brown rice has.  The flavor…is that of plain brown rice…which is why I served vegetarian baked beans over mine.  Hey…don’t mock.  I had vegetarian baked beans in the pantry…just begging to be used.  It actually worked together very well.

Let’s talk ingredients and nutrition then, since brown rice is…well…brown rice.  The Tasty Bite Brown Rice pouch contains water, brown rice, and sunflower oil.  That’s it.  As it is precooked, you’re steaming it back to life and then pouring it into a dish.  The microwavable pouch contains two servings of brown rice.

Half of the package, that being a serving, will dish you up 240 calories and 3 grams of fat.  This particular rice is cholesterol-free, sugar-free, and contains no sodium.  My roommate will love reading that.  This serving provides 2 grams of fiber and 5 grams of protein.  Filling.  Nutrition.  Delicious.  And the Tasty Bite Brown Rice is vegan, vegetarian, kosher, and gluten-free.  Loving it.

So, you don’t have to spend the better part of the evening at your stove waiting on your brown rice to cook to perfection.  Nope.  Let Tasty Bite do that for you…letting you have your rice ready in a minute and a half as opposed to 20-30 minutes (if not longer!).  The rice you get is fluffy, light, and seriously cooked to perfection.  It sure does make dinner a lot easier and quicker to get on the table.

Tasty Bite, as many of you know, is one of my favorite go-to quick meals…especially for busy nights/days or just nights where I don’t have much in the pantry/freezer/fridge…or just don’t want to spend my entire evening on my feet in the kitchen prepping and cooking something.

The great thing about the Tasty Bite meals is that they are clean…healthy…and beyond delicious.  I only have a few remaining packages in my kitchen pantry, but they were perfect after returning from my recent trip to Florida.  Without last week’s check in the bank (the boss still has it), my roommate and I are honestly living off what we have in our apartment…and trust me…that means Tasty Bite meals, pancakes, eggs, or pasta.  This is no joke.  And for the rest of this week, the budget purse strings are being pulled tighter than ever to try to recover from our much-needed and totally fun (but expensive) vacation.

So, after disembarking at the Louisville airport on Tuesday…just before noon…we returned home with hungry stomachs.  I do not do fast food.  I can’t.  Not with my food allergies.  And I’m okay with that.  I actually do not miss fast food at all.  Not one bit.  The drive-thru was never my friend anyway…so my dietary restrictions put a total kibosh on them.  No problem.  I’d rather prepare my food anyway.

That being said…with a practically empty apartment food-wise, I was happy to dig out a few pouches of Tasty Bite products.  I’m down to one Indian meal and a couple of rice options.  I opted for a rice option with some added protein…because I’m in recovery mode from my 48.6 mile running adventure.

My choice – Tasty Bite’s Ginger Lentil Rice.

Yes…this is exactly what it sounds like…ginger-infused long grain rice that is tossed with brown lentils and red peppers.  It makes a colorful and flavorful plate…trust me.  The package simply gets put in the microwave for about 90 seconds, and BAM…into a bowl and enjoy!  Totally that easy.  And don’t be dissuaded by the fact that this comes in a pouch on a shelf in the microwave.  It still fits into clean eating.  Observe the ingredients: water, rice, onions, whole brown lentils, red pepper, coconut milk, sunflower oil, ginger, garlic, salt, curry powder, chilies, sugar.  Quick…Clean…Eating.

And the taste…was fantastic.  Seriously.  The ginger, garlic, curry, chilies all provide layers and depth of flavor to each bite.  The lentils add great texture and the rice actually steams up to perfection in that 90 seconds.  All the components work together and make magic with each bite.  Each freakin’ tasty bite.  I used some Glutino Gluten-Free Sea Salt Snack Crackers to scoop up the rice and add a nice crunch to my plate.  It was a magical, quick lunch after returning from the Happiest Place on Earth.  I savored each bite…chewed slowly…and just let the flavors roll over my tongue.  This one is amazing.  It’s not just rice.  It’s rice that is so much more.

Nutritionally speaking, this meal is a healthy choice as well.  One serving is half the pouch.  This serving gives you 190 calories and 3.5 grams of fat.  This serving will also give you 380 mg sodium and 2 grams of sugar.  That is amazing for a processed food.  And a serving will also give you 3 grams of fiber and 5 grams of protein.  So it is filling as well.  Loving it.

So, if you’re concerned about Indian food…not sure you’d like it…or just not ready to try something new…then give Tasty Bite a chance through their flavored rices.  In fact…I highly encourage purchasing the Ginger Lentil Rice.  The flavors will wow you…and just might encourage you to give those Indian meals a try after all.

I promise…you won’t be disappointed.

Awhile back, I stumbled upon Garden Lites products.  And I mean…this was a good while back.  Back when really all they were offering were their soufflés.  Well…their product line-up has expanded.  And yes…they even added some different soufflé flavors.

This isn’t something new.  This actually happened quite a bit ago.  I just never could find the new flavors.  And when I finally did…they sat in my freezer.  I just sort of got on this cooking thing and never turned back.  I love cooking up something fresh.

But with the holidays in full swing…sometimes it’s too hectic after a long day to start something from scratch.  That’s why I was so thankful to have a couple of Garden Lites soufflés kicking around in my freezer.

Forreals!

With being out of town the past couple of weekends, the CSA bin has been on hold.  So, no fresh fruits and vegetables delivered to my door.  Not until after Christmas when things aren’t as crazy and I’m traveling less.  So, after a long day at the office and not much energy to spare the other night…I came home and my roommate and I decided to split a Garden Lites soufflé and enjoy that with some baked, hand-cut shoe-string fries.  Always baked…never fried in my home.  Just as my mom always did it.  That’s how I was raised, peeps!

Anyway…we had two choices for the soufflé, so I just grabbed the one on top.  The choice: Garden Lites Southwestern Soufflé.

It sounded amazing, combining seasonings with vegetables like tomatoes, broccoli, zucchini, black beans, corn, red pepper, green pepper, and even brown rice!  Once my potatoes were cut into shoestrings (yes…I do that by hand!), I got them in the oven and then had to wait in order to start the main dish.

Garden Lites soufflés are so easy to cook up.  As the potatoes were finishing up, I popped the Southwestern Soufflé into the microwave and gave it a little burst of heat for 3-1/2 minutes.  I left it to stand for about a minute before removing the plastic wrapper and then microwaving it again for another full minute.

That’s it.  SO easy!

I’ll be honest…I thought it made the apartment smell like Taco Bell…and it has been ages since I’ve even set foot in a Taco Bell.  So…that was interesting.  I sliced the fluffy soufflé in half and dinner was served.

Tasty!!  That’s the best way to describe this soufflé.  I loved the fluffiness the egg whites bring to the actual product.  The veggies and spices are evenly incorporated and chopped so they aren’t awkward.  In fact, bite-for-bite, I loved the variety of flavors and textures.  It was a perfect bite…and it even tasted like a taco.  Go figure.  My roommate loved it too.

So, ingredient wise, the Garden Lites Southwestern Soufflé contains pasteurized egg whites, onion, crushed tomatoes, broccoli, zucchini, black beans, corn, brown rice, red pepper, green pepper, corn starch, evaporated cane juice, canola oil, lemon juice, sea salt, garlic, chipotle pepper, chili powder, ancho pepper, and cumin.  All real ingredients…all real food.  Nothing fake or processed here.  This dish is gluten-free, dairy-free, soy-free and nut-free.  Love it.

As for nutrition…the Southwestern Soufflé is actually a really healthy choice.  The entire soufflé is the serving and that one item is only 180 calories and contains only 2.5 grams of fat.  This soufflé also will serve you up 4 grams of sugar and 650 mg of sodium.  The sodium does seem a bit high…but it is a prepackaged food.  Not only that, the Southwestern Soufflé provides 4 grams of filling fiber and 9 grams of amazing protein.  So good.  And good for you!

I loved the Southwestern flair that this souffle carried with it.  Loved every bit of it.  And every bite for that matter.  Looking to add a little spice to your menu on a hectic day?  Keep Garden Lites in your freezer and you’ll have an easy meal in less than 5 minutes.  And…you’ll love every bite of it.  I know I sure did!  I’ve always loved Mexican and Southwest flavors…so this souffle was made for me.  And I devoured it in kind.

Recipe: Oven Baked Broccoli Masala

This one time I went to an Indian restaurant…and got the Broccoli Masala.  It was something that I hadn’t seen on any other Indian restaurant menu in the area.  It intrigued me.  I took one bite and declared it the best thing I have ever eaten…which may or may not be true.  HA!

But, it was really, really damn good.

And during these cold winter months, I see a ton…and I mean a ton of broccoli.  For real.  Like…every week.  Last year my freezer was filled with broccoli.  But not this year.  Not this time.  I’ve gotten more than a little creative with the use of broccoli in the past few months.  And I’m proud of that.

But, instead of turning to a pizza crust…or some other culinary magic skill…this time…I attempted to recreate that dish for that local Indian restaurant.  Because, yes…I was craving and didn’t want to drive into Louisville.

With the guidance of the blog Spicy Treats, I did an oven-baked version of this meal, adding it to caramelized shallots (which caramelized down to this beautiful sweet jam) and some Indian-spiced basmati rice.  The results…while not the same as the restaurant…were a very close alternative.  And I was quite happy with it.  I may or may not have hoovered this meal down in record time.

Recipe: Oven Baked Broccoli Masala

Servings: 2
Time: Prep 10 minutes; Cook 20 minutes

Ingredients:

  • 2 medium-sized crowns of broccoli
    1-2 teaspoons olive oil
    salt (to taste)
    1 teaspoon chili powder
    1/4 teaspoon cumin powder
    1/4 teaspoon garam masala
    Pinch turmeric powder
    Squeeze of lime juice
    2 teaspoons finely chopped parsley/cilantro (optional)

Directions:

Preheat the oven to 350° F.

Wash and cut broccoli in to small florets.  Drain well and keep ready.

In a large bowl, add broccoli and salt and toss well.  Then add the other spice powders and lime juice and toss everything well.  Finally, add the olive oil and stir well, making sure everything is covered with the spices and oil.

Sprinkle cilantro over the top and mix everything well.

Line a baking tray with aluminum foil and grease it with a few drops of olive oil.  Spread the prepared broccoli florets on the baking sheet and bake it for 15-20 minutes, stirring after 10 minutes.

As I said above, I served mine with caramelized thinly sliced shallots (almost made a shallot chutney) and some Indian-spiced basmati rice.  The meal was amazing and the flavors were really good.  Nothing overpowered.  And it was still mild (because my roomie is a heat wimp), yet had just a little spice to keep each bite interesting.  While it is nothing like the dish I have every time I go to my favorite Indian restaurant…it was close enough and simply delicious.

Recipe: Gluten-Free Sweet-and-Sour Tofu with Bok Choy

Bok Choy.

It seems to be a seasonal favorite of my CSA bin as of late.  For two weeks in a row, it has been one of the components of my bin.  Now, normally I would simply make a stir-fry out of it…but I’ve been attempting to expand on my culinary skills a little.  Step a little outside the comfort zone.  Do something…different.

I think I accomplished that last night when I cooked up a meal inspired by the blog Big Girls Small Kitchen.  I had all the components on hand in my pantry and fridge…including the bok choy and tofu.

What emerged was a fantastic meal that really worked together.  I served mine over basmati rice…which I cooked up while I was working on the rest of the dish as well.  It was a fantastic meal and not too difficult to create either.

Recipe: Gluten-Free Sweet-and-Sour Tofu with Bok Choy

Ingredients:

  • 6 ounces firm tofu
  • 2 tablespoons flour (I used Better Batter Gluten-Free All Purpose Flour)
  • Pinch salt
  • 2 tablespoons safflower, grapeseed, or other neutral oil
  • 1/4 cup lemon juice
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon grated ginger (I used 1 teaspoon ground ginger)
  • 1 tablespoon grated garlic (3 cloves)
  • Sriracha
  • 2 bunches baby bok choy, rinsed, trimmed and cut into bite-sized pieces
  • 3 scallions, white and green parts chopped and separated (I substituted 1/2 a white onion)

Directions:

Cut the tofu into slices about 1 inch thick. Press the water out of the slices, then cut them into 1-inch square cubes. In a baggie or on a wide plate, toss the tofu with the flour and salt until all the pieces have a thin coating.

Mix the lemon juice, honey, soy sauce, sriracha, garlic and ginger in a small bowl.  Add 1 tablespoon water.

In a frying pan, warm the oil.  In one layer, brown the tofu (in two batches if your pan is small), about 4 minutes per side.

Return all the tofu to the pan if you browned it in two batches.

Put in the onions and the crunchy part of the bok choy and cook for 2-3 minutes, stirring constantly.  Add the green leaves and cook 1 more minute.

Add the sauce.

Bring the tofu to a boil, then lower the heat and let is simmer until the sauce has reduced and coats the tofu thickly, about 10 minutes.

I was so happy with the way this meal turned out.  The tofu was perfectly cooked, the flour giving it this slight texture to it, even after cooking in the sauce.  The bok choy and onion, along with the sauce brought this amazing flavor to every component.  I loved this sauce.  It smelled amazing and it had the perfect balance of sweet and sour…nothing overpowering the other.

This meal is a great source of protein.  As I said, I served mine over a serving of basmati rice…and it was delicious.  This meal was so easy to put together and cook…perfect for those nights where you don’t want to spend all night in the kitchen cooking up dinner.

I need to send out a big, huge, whopping THANK YOU to my darling little sister.  Because if it weren’t for her…it probably would have taken me forever…and ever…and even then I possibly would have put it off…to haul myself out to the Indian restaurant that is consistently voted THE BEST in Louisville, Kentucky.  Normally, I would rave and go on and sing praises for the Indian restaurant I have been going to since co-workers suggested it.  That being Dakshin, also in Louisville.

Oh.  My.  God.

I love Dakshin…but after the experience I had at Shalimar…it is out and Shalimar rightfully is where I want to go for my Indian food cravings.  Forever.  And ever.

Welcome to my Indian cuisine loving world, Shalimar.

I have mentioned quite a few times how my family grew up eating Indian food.  Authentic Indian food.  Our neighbors, who had children the same age as my little sister and my older brother, often invited us over to dinner when they were having curry.  And I loved it.  All the different spices and flavors…it was exciting and exotic.  It was…beyond delicious.  I was hooked at a young age.

So, as my sister’s husband isn’t as outgoing with food choices, when she told me she wanted to come visit me this past weekend, I wanted to get her to an Indian restaurant.  Normally, I’d haul out to the far end of Louisville to Dakshin…but not this time.  No way.  I wanted to take her to the place that Louisville always seems to deem the best.  This was a gamble…since I had never eaten there before.  But…with those kinds of reviews and awards…how could it be a bad choice?  I sent her the menu, although I knew that she’d be ordering the Chicken Curry…and comparing it to the stuff we grew up eating.

The big day, Saturday, came.  And after a fun day of walking around sight-seeing, shopping, and just having a good time, we decided we were starting to get a little hungry.  So…we headed over to Hurstbourne Lane to the strip mall where Shalimar is located.  Two snags.  First…traffic was ridiculous…so we ended up turning around and coming at the restaurant from another angle.  By the time we got there and parked, we realized that the hours posted said dinner on the weekend was 5:30 p.m.  We had about 40 minutes to kill.  We hopped across the way to Half Price Books and just kept making circuits and looking at different books until we couldn’t take it anymore.  Five minutes left…so we slowly meandered out of the store, got in the car, and headed back to the restaurant.

They were now open and people were being seated.  We were given a nice booth at the side of the dimly lit restaurant and allowed to peruse the menu.  I had looked over the menu before, but was going go give it a little more of a look while we had the time.  Our water glasses were filled and we were asked if we’d like anything else to drink.  We all decided to stick with water.  I had spotted something that sounded AMAZING on the menu…so I was now set.  Cathy was still deciding…but finally settled.  When our server returned…we placed our orders.

Cathy went with the Lamb Biryani ($11.95), which is a classic Muglai dish of curried meats cooked with basmati rice.  She made sure to specify that she wanted the spice on it as low as it could go.  The less spice the better.  Wimp.  She also ordered a side of the Naan Bread ($1.95) to go with her meal.  As predicted, my sister did order the Chicken Curry ($10.95), which is chicken that is cooked in a thick curry sauce.  She opted for medium heat.  She hoped it was as good as the Duggal’s.  As for me…I went with the Broccoli Masala ($9.95), which might just be my new favorite thing in life.  For real.  This is simply broccoli cooked in spices.  Except I ordered mine spicy!  I always love some heat with my food…especially when it’s ethnic.  And they promised they would do it up good for me.

Orders in, we talked a lot about growing up with Indian food in our lives…and just having some fun.  We took some selfies in the restaurant.  And…soon…our food arrived.

It all looked and smelled fantastic.  I mean…really, really, really fantastic. I hated that I had pause to take pictures of my food for the blog because I was ready to dive in.  My broccoli masala came with basmati rice, so after the photos were taken, I scooped up some rice onto my plate, then put some of the broccoli over it.  Time to dig in.

No joke.  If I were to pick something to eat as my last meal…this is definitely one of the front runners.  Honestly, there seem to be no words to properly describe how amazing this dish was.  I know…some of you are thinking that it’s just broccoli and spices…but it was more than that.  It was the perfect blend of spices…with the perfect heat level.  In fact…I probably could have taken it a little spicier.  The broccoli was tender and cooked to perfection.  The sauce…the sauce made it.  The rice gave me some oomph to the meal.  And I was even happier when I added a tomato chutney to it.  It was the perfect meal with the perfect people.

For the record, the Chicken Curry brought back happy memories for my sister.  Honestly.  She was thrilled and said it totally reminded her of the stuff we grew up eating.  And Cathy…loved her Lamb dish.  She’s big on rice…and this was a big heaping pile of rice.  For real.

We were so happy with the food and service that we got at Shalimar.  I don’t think I can bring myself to stray from this restaurant.  This is where you go to get authentic, delicious Indian food.  This is where you go to get the flavors, the tastes, and the experience of Indian cuisine.  This…is why Louisville consistently names this restaurant THE BEST Indian cuisine in the city.

In fact…I’m going back on Friday.  Seriously.

And I can’t wait.

Product Review: Tasty Bite Paneer Makhani – $3.29+

Quick Indian meals are usually my Monday thing.  I mean…I have to get home from work, scarf something down, and get changed and out the door to head to my running group’s Monday meet-up at 6 p.m.  Not easy when construction is going on and often traffic is at a stand-still going across the river.  It can be frustrating.  And when trying to take a little bit of stress out of the day…the best thing to do is have a simple meal prepared.

But this time…this was a Wednesday thing.  I had eaten a big lunch on the way back from Chicago the Monday before I had this…so no food was necessary that evening.  Not a bite.  But…Wednesday marked a big heaping deal of a run.  My good friend, Natalie, was completing her pledged 180th straight day of running to raise money for the victims of the Boston Marathon bombing.  And she invited the group at the store to run those last miles with her.  She chose 4.15 miles, in honor of the date of the bombings, April 15.

So, that evening sort of ran (heh…no pun intended.  See what I did there?) like a Monday night.  That morning, I cooked up two servings of jasmine rice, let it cool, and tucked it away in the fridge for later.  Upon returning home from work…I heated up the rice, pulled out my next packet of Tasty Bite goodness…and got ready to dive in.

This week…Tasty Bite Paneer Makhani.  Paneer, for those of you not familiar with Indian cuisine, is a soft, vegetarian-friendly cheese.  It can be firm or soft…depending on how it is made.  But it is…delicious.  Makhani is a Hindustani word meaning “with butter.”  So…this is basically Butter Paneer.  Don’t freak out…really it’s these cubes of paneer that are cooked in this fantastic, creamy tomato sauce…spiced just right to give it that Indian flavor.  I love the taste of Indian food.  So yummy.

So…what happens when said entree comes in a microwavable pouch?  What happens when it only takes 90 seconds to heat and eat?  Magic.  Because Tasty Bite knows what it is doing when it comes to these fun little meals.  Honestly.  I wasn’t too sold on the thought of a buttery cheese dish…but…they proved me wrong.

The Tasty Bite Paneer Makhani is just what I described above…home-style paneer cheese in a creamy, spiced sauce.  This pouch is a delicate balance of natural ingredients that are non-GMO, vegetarian, and gluten-free.  Happy dance.  In fact, the ingredients in this particular Indian meal include tomatoes, paneer cheese, water, onion, cream, cashew nuts, sunflower oil, ginger, garlic, salt, coriander, chiles, and spices.  Sounds delicious, yes?  Of course it does.  So, after giving my jasmine rice a quick steaming in the microwave to reheat it…this little pouch of goodness was put in and given it’s 90 seconds to warm through.

I poured the contents over two bowls of rice…and dinner was done in 5 minutes total.

So, we all know that this Tasty Bite Paneer Makhani was easy to prepare…but how did it stack up in flavor and taste?

It was good.  It was really good.  I loved the bit of mild heat from the variety of spices in the sauce itself.  The sauce was the perfect thickness…not too runny, but not too thick either.  Perfect consistency.  I wished I had more of the sauce, honestly.  The cheese was…pretty good.  I love paneer cheese, but this just seemed a bit rubbery.  Probably because it is, after all, in a microwavable pouch.  It wasn’t bad…it was still soft…but it wasn’t the star of this dish like it should have been.  Major props to the sauce.  It saved this one.  I’d probably invest in this variety again…but only if nothing else caught my eye.  The Paneer Makhani wasn’t about the paneer at all.  It was all about that Makhani sauce.

So, let’s talk nutrition.  A serving of the Tasty Bite Paneer Makhani is 1/2 of the pouch.  This serving dishes up 220 calories and 17 grams of fat.  YIKES!!  Some of that, however, does come from the cashews…but most of it comes from the paneer.  That’s…a hefty dosage of fat, I think.  I mean, 150 of those 220 calories come from fat.  That’s…not that great.  A serving of the Paneer Makhani also will provide you with 440 mg of sodium and 3 grams of sugar.  Not bad for a shelf-stable, processed meal, right?  Also, you will be getting 1 gram of fiber and a whopping 10 grams of protein.  Low fiber, high protein…good for running.

So, while the flavor was there in the Paneer Makhani, the paneer cheese definitely fell flat, but the sauce saved it.  I would recommend trying this one, if you are a fan of Indian flavors.  And if you love paneer cheese.  Just know…fresh cheese that isn’t sealed in a pack and kept on the shelf definitely stands up better when used in Indian cuisine.  But when you are an on-the-go kind of person…this definitely works in a pinch.  So…not one of my favorites, but not bad either.  Tasty Bite hasn’t put out a bad product…this one just didn’t wow me like the others have so far.
