Product: Caveman Bakery Tropical Caveman Cookies – $6.29+

Yep.

This is just what you are thinking.  These cookies are called “caveman cookies” for a reason.  And that reason is…(insert trumpeting here)…they are a part of the “caveman” diet…or the Paleo Diet as it is often called now.

Now, as a gluten-free vegetarian, a lot of what I make can be done the Paleo way…but a lot of my protein sources (beans, peanut butter, etc.) are frowned upon in the paleo diet.  As are some of my favorite vegetables – like potatoes and corn.  So, while I know a few people who do follow that “caveman” way of eating…I can’t for my own health.  It just isn’t feasible for me.  But, that’s not to say that I don’t try these “paleo” recipes and items that are now on the market.  As long as they fit into my dietary restrictions, I’m never one to turn down the opportunity to try something new.  And…since I do know people who live by this form of “diet”…I have learned how to bake many staples to fit into the “caveman” diet by trying out different flours, often made from almonds or coconut.

So, while I was in Ohio visiting my friend Jenn, she picked up for me some interesting cookies that fit my tastes and…were gluten-free.  Jenn loves me like this and often has goodies for me to try waiting at her house.  I took a gander at the boxes…seeing the open-mouthed Caveman and the words Tropical on one box.  Alpine is the other flavor…and the one I haven’t tried yet.  YET!

Well, with the demise of the gluten-free vanilla bean pound cake (it was SO good!), I needed a new sweet treat to cleanse the palate after dinner.  I recalled these boxes in my pantry and screamed my thanks to Jenn as I pumped a fist in the air in dessert victory.  I mean…dessert is something I grew up eating after dinner.  It doesn’t have to be huge.  A cookie or a small bowl of ice cream…just something sweet to tie up the meal.  That’s how I was raised.  I still swear to this today.  So, I happily snagged the Caveman Bakery Tropical Caveman Cookies from the pantry.

So, it was cookie time.  And you know…I am a complete cookie monster.  My favorite thing in life is a good cookie!!  And when I opened up this box…I found individually wrapped little cookies (about the size of a silver dollar) just eagerly awaiting their trial.  I plucked four from the box (two for me and two for my roomie) and got to unwrapping them.  They smelled absolutely delicious.  Hard to explain just how they smelled, but I caught the macadamia nut and a hint of sweetness from the coconut and ginger.  I opened up two cookies for my roommate and delivered them, giving her the usual disclaimer that, “if they suck we can try something else…”  As I was heading back into the kitchen, she took a bite.  At first…I couldn’t tell what she thought of them.  The face she was making was sort of neutral.  Then…there was something.  But from where I stood, I couldn’t tell if it was good or bad.  So, as I was opening up my cookies, I asked her how they were.

“They are like…chewy cardboard that is sweet.”

Um…that can’t be good.

“Are they edible?” I inquired.

She thought for a moment and took another bite.  “Well…I’ll eat them…but they aren’t something I’d buy again.”

Okay…

Guess it was my turn to give them a try.  I settled in for dessert and took a bite.

So…here is the nitty-gritty:

The Caveman Bakery Tropical Caveman Cookies are good in that they are chewy and use real ingredients.  I mean…it doesn’t get much more real than what goes into these cookies.  They are not so good in that they don’t really have that much of a flavor.  I know…you probably think it’s that I’m missing the sugar…but I cut down on sugars wherever I can and try to do low sugar even in my snacks and cookies.  Often I substitute honey…which is what is used in these cookies to sweeten them.  The thing is…they are really bland.  They do have a nice nutty flavor to them, which I like.  The coconut hits at the end.  And the ginger doesn’t overpower…but there is just something about them that didn’t…wow me.  I wouldn’t say they taste like cardboard, but they definitely take some getting used to.  I love a chewy cookie and I wasn’t certain these would be…but they are very chewy.  And that…is my favorite part.  With nothing more than the hint of coconut for something “tropical”…I can’t for the life of me figure out why these are called “tropical”.  But…they aren’t awful.  And we will polish off the box.

Let’s talk ingredients.  Honestly, the good thing about the Paleo Diet is how straightforward ingredients are in products.  The Caveman Bakery Tropical Caveman Cookies contain almond flour, organic honey, unsulfured coconut, macadamia nuts, and ginger.  That’s it.  They really are chewy…and contain 100% real ingredients and are gluten-free.  They are also cholesterol free and sugar free.

Nutritionally speaking…here’s how the Caveman Bakery Tropical Caveman Cookies stack up.  A serving size is 2 cookies.  Yep.  TWO cookies.  This serving will provide you with 140 calories and 10 grams of fat.  Yep…10 GRAMS OF FAT!!  Don’t freak out though.  Much of this fat is derived from the macadamia nuts and almond flour.  Fat from nuts is a healthy fat.  So…yeah…deep breath.  It’s okay.  Additionally, these cookies contain 10 grams of sugar, 2 grams of fiber rand 3 grams of protein.

So…while these aren’t awful, they aren’t amazing either.  They are just sort of “MEH.”  And a “MEH” dessert is not a dessert that will be repeated.  We are going to finish up the box.  And, yes, we will also try the Alpine Caveman Cookies as well to see if they perhaps satisfy us better or have more flavor.  I give kudos to Caveman Bakery for making a paleo-friendly cookie for the market…but it seems they could use a little help with the recipe.  But, that’s just my cookie-loving opinion.  I don’t think I’d invest in these in the future.  At least not this flavor.

I am not very good about blogging about various spreads and nut butters that I try.  I don’t know why…but mostly because it’s hard to wax rhapsodic about different varieties of nut butters…because…while they don’t all taste the same…it’s the same thing.  Besides, I’m a  Trader Joe’s Creamy Peanut Butter girl.  That doesn’t change.

Except…when something leaps out at me and catches my eye.

That was the case this past visit to Birmingham, Alabama.  I went to my mom’s favorite natural food store, Organic Harvest, and was shopping around for some products to try that I had never seen in my area.  I was walking the aisles, doing my initial scouting when I spotted little sample packs of almond butters at the bottom of one of the shelves.

The brand: Wild Friends Foods.

The flavor: Vanilla Espresso Almond Butter.

HELLO!!  How could I not buy this?!  I had to.  So, it was one of the items that I chose to bring home with me to try.  And…that’s what happened.  All I needed was the perfect opportunity to use it and to allow it to shine.  I mean…vanilla…espresso…almond butter.  That’s three of my favorite things all rolled into one product.  I was elated.  I was in heaven.  I…needed to find something to use it with.

And so…it all came together one morning when I was toasting up some gluten-free cinnamon raising English muffins.  I had pulled out some butter and honey to top the English muffins with, but then I recalled this spread.  So I decided to do half of the English muffins with the butter and honey, and the other half with this amazing sounding almond butter.

I made a fantastic choice.

The Wild Friends Foods Vanilla Espresso Almond Butter is just as amazing as it sounds.  It has all the texture and flavor of almond butter, but elevated with the bits of ground up espresso beans and the amazing aroma and flavor of vanilla.  It’s almond butter taken to the nth degree.  And there is nothing wrong with that at all.  This packet, once kneaded as instructed, provided a creamy, flavorful topper for the cinnamon raising English muffin.  The espresso bits don’t get in the way or overpower the natural flavor of the almond butter.  In fact, they serve as a bit of a flavor enhancer.   And it was AWESOME!!  Trust me, even my roommate was raving about it.  Seriously…I wish I could find this stuff here.

So, let’s talk about the ingredients.  One very important thing about Wild Friends Foods is that the creators wanted to make fun flavors of nut butters without the white sugars, preservatives, additives, or oil.  So, instead of using slick oils and processed sweeteners, they use natural ingredients that are awesome…and…yes…healthy!  The Vanilla Espresso Almond Butter contains almonds, organic agave, natural vanilla flavor, espresso, and sea salt.  That’s it.  It is non-GMO, dairy-free, gluten-free, and kosher.

Nutritionally speaking, you can’t beat these statistics when it comes to almond butter.  The Wild Friends Foods Vanilla Espresso Almond Butter has a serving size of 2 tablespoons.  This serving will provide you with 190 calories and 17 grams of fat (but it’s the healthy fat you get from nuts…so don’t freak out, okay?).  You will also be getting 95 mg sodium and 2 grams of sugar.  And finally, you will be taking in 3 grams of fiber and 6 grams of protein.

And it really does taste amazing.  Possibly my favorite almond butter I have had to date.  I wish I had more than just the sample pack.  From a quick check on the Wild Friends Foods Web site, it looks like a regular jar of this flavor is a whopping $11.99.  One jar.  But…I would say it was worth it.  For now, I guess I’ll just supplement with the amazing little sample packs whenever I go to Birmingham.

If you can order it online to try it…or if you can find it locally…don’t hesitate…just do it!

Yep.

The cookie monster is back with a vengeance.  Where there is a new gluten-free cookie…it will find a way into my life.  And eventually into my stomach.  For real!

As I was walking through Whole Foods last week, my roommate called me over to an endcap she was passing.  On the end was a display of cookies.  Delicious sounding…healthy sounding cookies.  I know…cookies aren’t healthy, but these at least provided protein and stuff.  Stuff like…green tea in the cookie.  Yes…green tea.

Sounds healthier than the butter-laden versions, right?  Right.

But…was it any good?

We were going to find out.  Because we did end up buying one.  Yes.  One.  To split.  Just in case it was…nasty.  You never know with these things.  You just have to throw caution to the wind.  But my roommate and I do that by halves.  We had three varieties to choose from: Peanut Butter, Chocolate Chip, and White Chocolate Macadamia.  I, naturally, chose Peanut Butter.

And so, the other night after a delicious dinner, I pulled this out of my drawer of gluten-free treats and cut it down the center to split with my roommate for dessert.  I handed her the half that was hers and she immediately took a bite.  I told her that if it was nasty…I’d dig up something else.  She didn’t seem disgusted.  Just disappointed.  “It’s okeydokey…kind of bland.”

UGH!  I hate bland peanut butter things.  But she deemed it edible, so I took my half and settled in to taste for myself.  I agree with her…the Boundless Nutrition Perfect Fit Peanut Butter Protein Cookie is…bland.  In fact, the peanut butter flavor is very underwhelming.  I felt it even might have needed a bit of salt to help it out.  That being said, the texture was awesome.  If you love a soft, chewy cookie…this is for you.  It is both.  The peanuts that are scattered throughout are a nice touch.  They were definitely edible enough…but I have definitely had far better peanut butter cookies in my life.  You can, however, get the flavor of the green tea, which is actually a nice touch.  Believe it or not.

So…Boundless Nutrition Perfect Fit Peanut Butter Protein Cookie is made up of hormone-free whey and milk protein concentrates (rBST/rBGH-free), organic brown rice syrup, peanut butter, 0rganic inulin (blue agave), vegetable glycerin, brown sugar, peanut flour, organic coconut oil, sunflower oil, filtered water, natural flavors, non-GMO sunflower lecithin, baking soda, sea salt, antioxidant blend (decaffeinated green tea extract, vitamin C), stevia leaf extract (natural sweetener), and xanthan gum.  All ingredients are non-GMO and all natural.  These cookies are low in sodium, gluten-free, egg-free, soy-free and wheat-free.

Nutritionally speaking, a serving of the Boundless Nutrition Perfect Fit Peanut Butter Protein Cookie is one cookie.  One soft cookie.  This cookie will give you 150 calories and 7 grams of fat.  You will be provided with 15 mg cholesterol, 120 mg sodium, and 7 grams of sugar.  Not bad for a cookie, right?!  The sodium count is really impressive.  And only 7 grams of sugar??!  In a cookie??!!  That’s awesome.  Finally, you will be provided with 4 grams of fiber and 10 grams of protein.  So, it’s not just sugar…you will be filled up with this dessert and you won’t feel hungry an hour later.  Love that.

So, while these are definitely not my favorite cookie out there…these weren’t bad.  They weren’t great…but I’m intrigued enough to try out the other two varieties in the near future.  Not great…but not disgusting and worth throwing away.  I happily ate my cookie for dessert…just wishing I could have had more of that peanut butter flavor.  Because I totally love peanut butter.  Give me my peanut butter!!

I’ll see what I think of the other varieties…

I’m very fortunate that I live near one of the best Thai restaurants in the nation.  Yes.  I will go as far as to say that.  However, that being said…I also can’t afford to eat out much these days.  My money is better spent on travel and food experiences outside of my own neighborhood.

And race fees.

But…that’s a horse of a different color.

As I’m getting through a very long two weeks of no CSA bin filled with fresh fruit and vegetables, I’m scraping my pantry, fridge and freezer for things to eat until Friday.  It’s coming.  But it’s been a very rough two weeks of eating processed foods.  Some good…some better…none horribly bad.  I do pay a lot of attention to nutrition information when I shop and when I do buy something in a box or package…I mind the ingredient list and nutrition information above everything else.

Anyway…with nothing real to make food out of, save for a container of organic baby kale and a red onion…I pulled the final Thai food box out of my pantry.  This time it was the Pad Thai for Two from A Taste of Thai.  It sounded brilliant and the picture on the box looked drool-worthy.  One thing I didn’t take into account was that the box literally only contained rice noodles and the Pad Thai sauce.  No joke.  So…I had to think.  And I thought…kale and onions…caramelize…sauté…add noodles…BAM!  Dinner.  Why not?  My roomie seemed game for that too, so I set to work.

I boiled some water and put the rice noodles into a large bowl, covering it with the hot water and letting it sit for 20 minutes.  As the noodles were soaking, I went ahead and sliced up the last of my red onion and got it into a pan over medium heat to begin the caramelizing process.  I, not thinking, started this in a smaller sauté pan…remember this later.  The onions were caramelizing beautifully, so I went ahead and added a couple handfuls of organic baby kale.  I sautéed it until it wilted down and turned bright green.  When the noodles were ready, I drained them and then added them to the small sauté pan, realizing then my error.  Somehow, I managed to contain it all in the pan and still swoosh it and stir it.  I didn’t risk tossing it as the pan was rather full of Thai goodness.  After about 4 minutes, I added some chopped (and toasted) cashews that I decided to add at the last moment, and then the packet of sauce.  All of this was mixed in that itty-bitty pan, but it got the job done.  And soon, I was dishing it up into two bowls and after about 30 minutes…dinner was served.

Was it worth it?  Yes!!  It was.  I enjoyed this little boxed meal more than I thought I would.  I thought the onion, cashew and kale were perfect additions (and very non-traditional, I know!) to the mess of noodles and sauce because they brought different flavors and textures to the meal.  The rice noodles actually ended up being cooked perfectly.  They didn’t stick together, as I was afraid they would because normally that’s what happens with rice noodles.  I was pleasantly surprised.  The sauce was tangy and sweet more than spicy, which was a nice change of pace (but you know I love my spicy foods!).  And it was easy to eat this noodle dish with chopsticks without making a huge mess.  No mess at all, in fact.  I found that I truly enjoyed eating this meal.  I would definitely consider buying it again for one of those quick-to-make meals where I have time for a little prep work and cook time…but it isn’t a flash in the microwave either.  LOVED it!

So, let’s talk ingredients, yes?  As I mentioned, the box contained a packet of rice noodles and a packet of sauce.  The rice noodles are simply made from rice flour, water, and modified (I hate that word!) tapioca starch.  The Pad Thai sauce was made from palm sugar, tamarind juice, water, shallot, sweet radish, garlic, soybean oil, potassium chloride, maltodextrin, miso, salt, hydrolyzed vegetable protein, yeast extract, paprika oleoresin, citric acid, alpha-tocopherol, and chili oleoresin.  I know…not very clean…and some very hard to pronounce words.  Ugh.  So much promise…

Let’s now talk nutrition.  A serving is 1/2 of the package.  This serving will provide you with 391 calories and 3 grams of fat.  This will also provide you with 433 mg sodium and 16 grams of sugar.  That sugar is off-the-chart.  YIKES!!  As for the sodium…it’s under 600 mg, so I can live with that.  Without the additions…this dish has no fiber, but does provide 5 grams of protein.  Of course, then I added onions, kale, and cashews and that really bumped up some of those nutrients, but hardly added any calories at all.  Love it.

So…yes…this is a highly processed item…and the nutrition factors aren’t fantastic, but they aren’t totally bad either.  The sugar content is high, but that is mostly contained to the sauce.  And the overall taste and textures were a huge hit.  My roommate and I loved eating them, but will probably try to do  more from scratch.  But, in a pinch, on those just scraping by weeks…this will do!

Twas two days after my friend Jenn’s birthday and I was visiting her.  That was not planned.  Okay…maybe it was.  I mean…birthdays are so much fun and I wanted to go visit Jenn anyway.  The need to get away from life where I am currently living was a necessity more than anything.  And good friends always offer the best times when you need your spirits lifted and your soul cleansed.

After a morning of delicious gluten-free crepes and an afternoon spent out shopping at the used book stores, a treat at Jeni’s Splendid Ice Creams,  and a stop at the natural food store that literally BROKE my budget (OMG…gluten-free things that I had not even known existed!), Cathy and I were going to take Jenn out to dinner to celebrate her birthday.  I let her know ahead of time and she, even though she didn’t have to, chose a place that features a gluten-free menu.

And at 5 p.m., we rolled up, parked, and made our way into the restaurant.

First of all, the place was nothing like I expected.  Located on the end of a strip mall, the outside is very unassuming…save for the 50’s style door you walk through to enter the diner.  We were greeted by the hostess after a moment and requested a gluten-free menu for me.  We were shown to a table and settled in when our waitress, Candie, came over to get our drink orders.  Despite the day of celebration, we all just stuck to water.  She went over some specials, and the vegetable soup did spark my interest.  So, after she went to fetch our waters and returned, I asked if it was gluten-free.  She said she thought it was, but she would go double-check.  When she returned, she regretfully informed me that it was not gluten-free.  I had to options in mind for dinner.  They had gluten-free fries offered and that was really tempting.  If I did that, I’d be getting a salad.  And it was pointed out by Jenn and Cathy that I could get a salad anywhere.  True…but I can’t get fries everywhere.  That being said, I made up my mind.

Cathy and Jenn ordered what they normally order when we go out to a restaurant that has this on the menu – Fish and Chips ($15.99).  As for me, I went with the Gluten-Free Seasonal Vegetable Plate ($14.99).  Candie asked if I wanted some gluten-free dinner rolls.  I was taken aback.  I wasn’t expecting that.  I eagerly nodded my head and gave her a “Oh…yes please!”  Happiness.

Orders were in, and we fell into conversation about future plans, things happening around us, the waiter with the really awesome mustache, ate dinner rolls (mine gluten-free…theirs regular)…that sort of thing.  The dinner rolls, for the record, were warm, flaky, and delicious!  I kept myself to just one.  And then…our actual food arrived.

My veggie plate looked amazing.  I mean…I read the description, but this was beyond what I expected.  This plate was stunning.  The colors were vibrant.  The presentation was inviting.  I was beyond impressed and totally ready to dive in and try it out.  But, I composed myself enough to take a picture.  Then let my roomie photograph her fish and chips for her own blog (which maybe one day she’ll actually put up on the interwebs).  And then she promptly stole some of my rice…because she said she really wanted to try it.  LOL!  I also let her steal a tortilla chip and some of the hummus.

Oh…I’m getting ahead of myself here.  I haven’t yet described the actual food on the dish yet.  The menu described the Gluten-Free Seasonal Vegetable Plate as being composed of very wild rice, sliced almonds, goat cheese, roasted red pepper hummus, warm roasted vegetables and cured olives.  I asked for my plate to not include the olives because I disdain olives so much.  I don’t even want to have to pick around them.  The plate came with corn tortilla chips on the side.  The rice had the slivered almonds, corn and craisins in it, really amping up the volume as well as the presentation.  The roasted vegetables were a mix of asparagus, broccoli, carrots, red pepper, portobello mushrooms and garlic.  It was topped off by a very liberal sprinkling of goat cheese.  It looked fantastic.

And it was.  Just popping with flavor.  The corn tortilla chips were my least favorite part, actually and ended up being left on the side of the plate.  The vegetables were roasted to perfection, however.  Packed with flavor and cooked just enough to get them to that brilliant bright hue that catches the eye and really whets the appetite.  I was SO ready for bite after bite.  I ended up using dabs of hummus on my vegetables.  The roasted red pepper hummus was good, but I found it to be very oily and a bit bland.  I felt like it needed a little more seasoning or spice to it.  Believe it or not, though, my absolute favorite part of this entire dish…was the very wild rice.  I loved the play on flavors and textures with the perfectly cooked rice, the crunch of the slivered almonds, the sweetness from the corn and the craisins.  It was absolute perfection.  Everything meshed and mingled well on the plate and I was quite content with eating it.

If I had one complaint it was that the entire plate was swimming in oil.  While I love olive oil as much as the next person, I think there is a thing as way too much.  And this definitely got to that point.  But, the flavors were great and I devoured everything but the chips.  Delicious!

Would I dine here again?  I’d be willing to give it a try.  I might do the salad and french fries next time though.  Cathy said she’d be willing to try a burger the next time as her fish was good…and fell solidly in the middle of everywhere she ate up until now.  Not a bad showing…but it didn’t wow her enough to try it again.  But…each of us are willing to give it another try with other food options.

So, a good showing by Cap City Diner.  We had a great time there.  And we did enjoy the food.  It was a great night out with good friends and that was fantastic in and of itself.  Good food and good times.  Just what I needed.

Granola.

I love it.  I use it every other morning (as in…mornings I don’t go to the gym) in breakfast fruit parfaits or over hot cereal.  I love it.  And, thankfully, I have found some better choices when it comes to the sugars that are included.  And I love finding granola I haven’t tried yet.  And Udi’s Gluten Free released quite a few new options recently.

Now Udi’s Gluten Free has had granola out on the market for awhile…but the new varieties bring some extra oomph to the mix.  For real.

The variety that I purchased was the Udi’s Gluten Free Crunchy Original Granola.

So…what is it?  Simple.  It’s a blend of oats that have been toasted and mixed with sweet and salty toppings.  What might these be?  Raisins, banana chips, walnuts, cashews, almonds, and pistachios.  Mmmm…delicious!  I love that blend.  The raisins and the banana chips bring nice variety in texture, soft and crunchy…and also the sweetness that meshes with the honey toasted oats.  The blend of nuts also adds variety as each has a distinct flavor and texture.  And it just works!  It works well.

The oats are that right level of granola perfect.  Kind of soft, but still crunchy.  The raisins are plump and sweet.  The nuts are amazing…because I love nuts.  And the banana chips are a nice addition of sweetness that is a little unexpected but very welcome.  The variety of ingredients and flavors really works well over the palate.  It’s a fantastic play on the tongue.  And I put this over some gluten-free hot cereal and it was really delicious.  I mean…YUM!

Ingredients are basically already listed above…with a few additions.  Udi’s Gluten Free Crunchy Original Oats are made from certified gluten-free oats, wildflower honey, canola oil, raisins, banana chips, walnuts, cashews, almonds, pistachio nuts.  I love, love, love it.  Clean eating…right here!

As for nutrition…this isn’t bad either.  A serving size is 1/4 cup of granola.  This is actually a rather large amount believe it or not.  This serving will provide you with 140 calories and 6 grams of fat (of which, much is the healthy variety from the nuts).  This granola is cholesterol free and sodium free.  A serving also provides 7 grams of sugar, which is amazing in a granola.  This serving will also give you 2 grams of fiber and 3 grams of protein.

I am wowed!

No, for real.  This is one of my favorite granola I have had to date.  And trust me…I have eaten a lot of granola.  Why I never purchased this before, I don’t know.  But I’m sold.  The different textures, tastes…it works.  It works magic, whether you top something off with it or eat it straight from the bag.  You won’t be disappointed either.

Now…excuse me…there is an open package of this in my pantry calling my name…

Love Thai food?

Me too.  We have a great authentic Thai place not too far from where I live.  It isn’t even in Louisville.  It’s in Jeffersonville, Indiana.  I love that place.  I haven’t been there in ages, but I contacted them awhile back and they said they could make anything gluten-free for me.  That’s the joy of Thai food…it is easy to accommodate.

That being said, when a sale is happening…my roomie and I tend to go a little crazy at the grocery store.  No lie.

A long time ago in a far away (or perhaps local) grocery store, we encountered a sale on A Taste of Thai products.  We picked up two of the Peanut Noodle Quick Meals (they serve 2 in each box) and a Pad Thai for Two…which we have yet to make as well.

Tonight, after a long day of travel from Birmingham, Alabama back home…and with no CSA bin this week, I needed a quick and simple meal.  Trust me, I haven’t been in the mood to get creative with the food.  And, honestly, after sitting all day in the car and being the sad sot that I am right now (injured runner…stand back!), I didn’t really want to whip up something from scratch that might take…ages.

Thank goodness for these meals in the pantry.

So easy to make too.  Remove all of the envelopes that contain coconut milk powder, the peanut sauce, peanuts and noodles.  Place a cup of water into the box and then add the sauce, the coconut milk, then the noodles.  Microwave on high for 3 minutes.  Stir.  Microwave again for another minute.  Then, let stand for 1 minute.  Afterwards, add the peanuts.  Stir and then serve.

Simple.  Easy.  And ready in 5 minutes.  Gotta love it.

So, how was it?  Better than I expected.  For one thing, the “sauce” packet was a powder, which threw me off for a moment.  So was the coconut milk portion as well.  But those both go in the water first and they mix in all proper like.  The noodles actually do soften up in the 4 minutes of heating and 1 minute of resting.  I promise.  No hard noodles were found in the consuming of this product.  And the flavor was awesome.  Not as awesome as real Thai food, but as close to awesome real Thai food as one can get without being at an authentic Thai restaurant…or in Thailand.  I swear.  There was a little bit of heat…just enough to keep the flavor interesting.  The peanuts gave a nice texture to the overall dish.  The noodles were perfect.  Not crunchy.  Not mushy or sticky.  Perfect.  And the sauce…it was delicious.  I might have licked my bowl.  Maybe.  A little.

So, how does this stand up nutritionally?

Let’s look at ingredients first.  The sauce contains: sugar peanuts, chili powder, kaffir lime leaf powder, lemongrass powder, modified tapioca starch, salt, hydrolyzed vegetable protein, dextrose, tricalcium phosphate (to prevent caking), yeast extract, malic adid.  The coconut milk powder is made up of coconut maltodextrin, mono and diglyceride (an emulsifier), dipotassium phosphate (a stablizer) silicon dioxide (to prevent caking).  And the peanuts contained peanuts and silicon dioxide (to prevent caking).  The rice noodles were simply made from rice flower, water, and modified food starch.  Do I like all those modified ingredients.  Not one bit.  I bought these back before I was paying attention to that.  Kind of shocking when I look at it and type it up.

As for nutrition…this box contains 2 servings.  In one of these servings, you will consume 340 calories and 10 grams of fat.  Not bad for a saucy noodle dish, I think.  You will be taking in 320 mg of sodium and 13 grams of sugar.  The sugar is a bit high, but I believe that is from the sauce.  You get 2 grams of fiber and 5 grams of protein.  It is cholesterol free, gluten-free, and preservative free.

So, while it is not the cleanest of eats, it was quick and easy.  I do dislike the modified ingredients.  Not a fan.  But I am a fan of the taste, flavor, spice, and texture.  For an every-now-and-again dinner, not a bad choice at all.

Product Review: Amy’s Organic Kitchen Andy’s Dandy Candy Chewy Candy Bar – $2.49+

Yep.

Amy’s Kitchen does more than just organic cakes now for dessert options.  In fact, as I am typing this from a hotel in Birmingham, Alabama, I have since discovered that Amy’s Organic Kitchen also does ice cream now…dairy free ice cream.  No joke.  I saw it at the a little natural foods store and the Earth Fare and Whole Foods down here.  No joke.  Where have I been living?

What I did know is that Amy’s Kitchen put out candy bars not too long ago.  Yep.  Organic candy bars.

Trust me, I know…slapping the word organic on the label of something that is chocolate coated, packed with gooey caramel and nuts and…honestly…candy…does not make it healthy or any better than a Snickers.  Save that it is made from organic ingredients and not…well…hydrogenated soybean oil (Snickers, I’m looking at you!), it’s still candy.  I understand this.  I get this.  It doesn’t mean I didn’t pick it up off the shelf at the grocery store when I spotted it and keep it for dessert.

Because…I did.

Let’s first talk about why Amy’s Kitchen began producing candy in the first place.  According to the Web site, Amy’s father, Andy, loves candy.  He was the son of a candy maker and spent his childhood sampling chocolate morsels and chewy caramels from his father’s kitchen.  To honor Amy’s Organic Kitchen’s commitment to provide great flavor and pure organic ingredients, Andy’s Dandy Candy was created.  Andy was the tester for the flavors and when he was satisfied with the outcome…the candy bars were put on the market.

Currently, there are four different varieties: Crispy, Crunchy, Chewy, and Creamy.

I picked up Chewy.

Why Amy’s Organic Kitchen Chewy Candy Bar?  Well, it was described, on the package, as soft, chewy caramel with pecans that were coated in chocolate.  That sounds like heaven to me.  Pecans are one of my favorite nuts.  WIN!

As I was out of dessert options this past week before heading out of town, the roomie and I each had one of the two mini bars that are inside the package of the Amy’s Organic Kitchen Chewy Candy Bar.  Yes…one for you and one to either keep for later or share.  I highly encourage sharing.  Because the more you share, the more these will sell…and they are SO worth it.

One bite…and it was like eating a hybrid of a Snickers (with less nuts) and a Rolo.  There it is.  It was amazing.  The caramel was soft and chewy.  The chocolate was a nice sweetness.  And nothing pairs better with caramel than chocolate.  Yum.  The pecans were actually quite sizable and prevalent throughout the candy bar itself.  It added a nice salty element…so each bite was perfection.  I was one happy girl.  And this girl doesn’t eat candy, let alone candy bars, all that often.  Even Cathy was a fan.

So, let’s talk ingredients.  Amy’s Organic Kitchen Andy’s Dandy Candy Chewy Candy Bar is made from organic milk chocolate, organic tapioca syrup, organic cane sugar, organic pecans, organic nonfat dry milk, organic grade AA butter, filtered water, organic palm oil, organic vanilla extract, sea salt, organic soy lecithin.  It is deliciously organic, made from Rainforest Alliance Certified cocoa, gluten-free, and contains no high fructose corn syrup, preservatives or GMOs.

Nothing too off-putting, right?  Right.

As for the nutrition facts…a serving size is 1 of the 2 mini bars that are included in the pack.  One bar will provide you with 100 calories and 6 grams of fat, which is actually good for a candy bar, I think.  This little bar has 5 mg of cholesterol, 45 mg sodium, and 9 grams of sugar.  9 grams of sugar for a candy bar is actually not bad at all.  A snickers of comparable size has 24 grams of sugar, twice the calories and way more fat and sodium.  One serving of the Chewy bar also gives you no filling fiber and only 1 gram of protein.  But…it’s candy.

Yes…candy.  Indulgent treats that I actually do treat myself to every now and again.  But, when choosing a candy…choose something a little bit better for you.  Less sugar.  Less fat.  Organic ingredients.  No high fructose corn syrup of hydrogenated oils.  For me…Amy’s Organic Kitchen Andy’s Dandy Candy Chewy Candy Bar is a fantastic option for when the sweet tooth hits.

Try it for yourself.  And as soon as I can find the other varieties…I’ll give those a try too.

Recipe: Shredded Rainbow Salad

You ever look at the food you have in your fridge and wonder what you might be able to make with all of it?  Especially when, in the next couple days, another fresh produce delivery will land on your doorway and you’ve barely scratched the surface of the last bin as it was delivered later than usual due to weather?  Or something to that affect?

That’s my life these days.  The Polar Vortex caused there to be a delay in my CSA bin delivery…which isn’t a problem…but it gave me fewer days to work through the fresh produce.  I’ve managed some…but I still have plenty left.

That being said…Jamie Oliver came to my rescue tonight.  For dinner I got out my brand-spankin’-new food processor and whipped up a delicious, healthy, and colorful salad from the fresh produce I had on hand.  The dressing was a magical touch.  Talk about clean eating!

Recipe: Shredded Rainbow Salad

Servings: 8
Time: 20 minutes

Ingredients for Salad:

  • 2 raw medium beets (any color) trimmed, scrubbed & quartered
  • 4 leaves kale
  • 2 large carrots, scrubbed & trimmed
  • 1/4 white cabbage, quartered
  • 1 apple, quartered
  • 1 cup walnuts, roughly bashed


Ingredients for Dressing:

  • 1 teaspoon Dijon mustard
  • 3 tablespoons apple cider vinegar
  • 6 tablespoons extra-virgin olive oil
  • sea salt & ground pepper
  • Gluten-Free Tamari
  • hot sauce (I used Sriracha)


Directions:

Put a coarse grater attachment into a food processor and push ingredients through in the following order (to stop the beets from staining everything): beets, kale, carrots, white cabbage and apple. (If your food processor is small, do this in batches.)

Turn vegetables out onto a platter so get a pile of rainbow colors.

Mix the mustard, vinegar, and oil, then season with salt, pepper, tamari, and hot sauce.

Add walnuts and toss everything together until you get a big, beautiful plate of dressed vegetables.

Simple…but the flavors are amazing and work well together.  You get this great sweetness from the beets and the apple.  The cabbage and carrots give this earthy flavor.  And the kale…just a bit of that bitter zing.  Topping it with walnuts gives an added boost to the texture.  And the dressing…necessary.  It ties it all together.

My roommate declared this her favorite way to eat a salad.  Me…I devoured it!  Healthy and delicious.  Definitely making this again!

Remember awhile back when I worked my way through every Liz Lovely gluten-free cookie available?

Times are changing.

And so is Liz Lovely.  In fact, they recently just got their certification.  Certified.  Certified for goodness, of course.  But this is HUGE.  Liz Lovely is now CERTIFIED 100% FREE OF WHEAT, DAIRY, AND EGGS!  Yep.

You know what this means?

It means this cookie monster has more cookies from this amazing company at my disposal.  My taste buds are ready!

While out at my local natural food store, I spotted the Liz Lovely shelf that I usually walk to and stare longingly at for a little while.  Most of the time I can talk myself out of purchasing a pack of 2 cookies…but this had varieties I had yet to try.  I got the roomie to consent to one item off the grocery list/budget this week and we brought home Liz Lovely’s Gluten-Free Cowboy Cookies.  Previously, you could only get this version done vegan…now it’s both.

And I am one very happy cookie monster.

So, what is a cowboy cookie?  Well, it’s a hearty cookie for one thing.  Usually they contain oats, chocolate chips and some sort of nut.  Sometimes…coconut is included.  In the case of Liz Lovely’s variety of Cowboy Cookies, you get a magical combination of oats, chocolate chips and walnuts.  YUMMY!!  The base of her cookie is dipped in delicious dark chocolate and the top has some nice dark chocolate stripes.  It looked amazing.  Sounded delicious.  And after dinner last night, I split one in half with my roommate and we enjoyed a gluten-free Cowboy Cookie dessert.

On Liz Lovely’s Web site, she gives a little background as to how the Cowboy Cookies reinvented the idea of the original business concept.  Liz Lovely was originally going to do vegan truffles, but it turns out, one night before hosting a tasting party, Liz had extra chocolate but no more centers…so she quickly baked up some oatmeal chocolate-chip cookies and drizzled the extra chocolate all over them.  The truffles were all but forgotten at the party.  The cookies were the hit.  So, the next day, it was decided…Liz Lovely would be a cookie company.  Cowboy Cookies…that’s what made it happen.

I can see why too!  These cookies are fantastic.  Way better than I could even imagine a vegan truffle to be (although I love vegan truffles too).  My first dessert love is a cookie…always and forever…so this was a very nice treat.  The oats in the dough give it this fantastic texture and a bit of sustenance.  The chocolate chips bring the sweetness.  And those walnuts…not only add a bit of a crunch, but that saltiness that pairs well with the chocolate.  I love how the extra chocolate on the bottom and top of the cookie meshes with the rest of the flavors.  It is one sweet, hearty, delicious bite.  That’s for sure!  Consider me one happy cookie monster.

So…now we’ll talk ingredients and nutrition.

One thing I love about Liz Lovely cookies is that they are real.  No ingredient is processed or fake or made up of chemicals.  You’ll recognize (and enjoy) everything that goes into her cookies.  In the case of the Gluten-Free Cowboy Cookies, you’ll find: unrefined cane sugar, gluten-free rolled oats, rice flour, dark chocolate, palm fruit oil, walnuts, water, tapioca starch, xanthan gum, molasses, vanilla extract, sea salt, potato starch and baking soda.  The ingredients aren’t a mile long…and, as I said…everything is recognizable and able to be purchased in your grocery store.  LOVE IT!

Now, let’s talk about nutrition.  Do remember…this is a COOKIE and any way you slice it (in my case…in half) it is a treat.  A serving size of a Liz Lovely Gluten-Free Cowboy Cookie is 1/2 of the cookie.  This half will dish you up 180 calories and 8 grams of fat.  This half of a cookie also contains 14 grams of sugar (I know…it’s a lot…but it’s a COOKIE!) and a mere 75 mg sodium.  Not too shabby.  And you’ll also be devouring 2 grams of fiber and 3 grams of protein.

Nice!

And these cookies are naughty and nice.  Honestly.  If you are going to splurge, I encourage you to find a store that sells Liz Lovely’s cookies and give them a try.  I have yet to find any better on the market.  They are soft, chewy, and just…amazing.

And…if you can’t find them where you live, you can always order online.

Do it.  You’ll fall in love too.
