Let me tell you…I adore products from Katz Gluten Free.  I have been pimping the quality, taste, and everything about their variety of products since I have tried so many of them.  However…in order to make a gluten-free breakfast bread pudding with a friend of mine…I needed some gluten-free challah.  And I knew the only place to get it was from Katz Gluten Free.

I debated for a long moment over whether to go ahead and order the very, very, very pricey Large Braided Challah Loaf…or just skimp on that line of thinking and get either the sliced challah loaf or the rice challah.  I debated.  Price had a lot to do with it.  I mean…holy gluten-free gods…$35 was a lot to spend on a loaf of bread.  But…I figured I wanted to go for quality of what we were making and opted to go ahead and place an order for Katz Gluten Free Large Braided Challah Loaf.  I just hoped it was worth the $35 I was spending on it.  Oy!

A few days later, the loaf arrived via UPS…and I was really excited to take a look at what a $35 loaf of bread looked like.

Little did I know that when the loaf is called a large braided loaf…it really is LARGE!!  Seriously…the size of two of my heads put together.  That is not an exaggeration!

I only hoped the Large Braided Challah Loaf was worth the investment in the end.  I’d find out on Sunday morning…after a short run…when my friend, Jenn, and I raided her kitchen and began working on a recipe for Gluten Free Morning Bread Pudding with Salted Caramel.  We had the recipe picked out prior to the get-together weekend…and I told her if she got the rest of the ingredients, I would get the bread.  And with both of us following through on the deal…it was time to open up this monster loaf and see if I made a wise investment.

The bread smelled fantastic the moment I got that plastic wrap off of it.  I mean…almost like it was fresh out of the bakery.  So amazing.  I sniffed the air quite a few times, ignoring the slight hunger rumbles in my belly. There was a lot of time between this moment and breakfast time…so I had to focus on getting it made if I wanted to get myself fed.  I sliced off the end piece and, instead of using it as the center of the bread pattern as suggested by the recipe…we cut it up to sample.

OMG…it was good.  It was really, really good.  I loved the taste of the crust and the actual challah bread itself.  The sesame seeds that are scattered on the top of the loaf are a brilliant touch and a very tasty addition.  I wouldn’t have though that those little seeds could be so important, but the taste and texture was only elevated with their presence.  I was impressed.  And, let me tell you…this is one very soft and fluffy loaf of bread.  You’d never guess it because it feels so heavy…but you slice into it and it is just super airy and light.  It’s so weird, I know…but that’s the truth.  It didn’t crumble or fall apart as I sliced into it, as so many loaves of gluten-free bread can do.  And the taste was out-of-this-world delicious.  It tasted like it had just been made and pulled out of the oven.  It didn’t even need a reheat to make it taste edible.  It can go straight from the freezer to the counter top with only a quick defrost.  Amazing.  Totally worth all $35 I paid for it.

I don’t know how this ranks nutrition-wise as no nutrition information is available on the site.  Just know this bread loaf is HUGE!!  HUGE!!  The recipe we were making called for about 12 ounces and I used less than 1/3 of the loaf.  Honestly.  The rest is sitting in my freezer until my next culinary adventure arises.

I can, however, list off the ingredients that Katz Gluten Free uses to make its legendary Large Braided Challah Loaf.  This gigantic loaf is made from a mix of gluten-free flour (white rice, tapioca, arrowroot, corn, soy, and potato), fresh eggs, palm oil, brown sugar, honey, xanthan gum, yeast, salt, flaxseed, and apple cider vinegar.  Mine came topped with sesame seeds, however you can choose to purchase the loaf without the seeds on top.  However, if you don’t have an allergy…I highly recommend keeping them on there.

This bread was amazing in the bread pudding that we baked up for breakfast.  It’s amazing on its own.  It’s amazing with a little butter schmeared on it.  It’s amazing with pizza toppings cooked on it.  It’s awesome as a grilled cheese sandwich.  It holds up to anything and everything.  It won’t fall apart on you.  The flavor is amazing.  The texture is more than superb.  And the versatility this loaf offers is unmatched.  And you’ll want to use it in a variety of ways…since there is so damn much of it.  Not a complaint anymore.  One of my favorite gluten free breads I have ever eaten.  I will definitely spend another $35 in the future without a second thought.

When you have a product that is actually called the “World’s Best Veggie Burger”…then, by God, you better have the best damn veggie burger in the world.

Prior to having to go gluten-free…I went vegetarian, so I have had pretty much every veggie burger out there.  By having to go gluten-free has only helped me to step beyond the very chemical-laden Morningstar veggie burgers and discovered healthier and much tastier options.  Made with…REAL ingredients.  Loving that.

After reading crazy-good and amazing reviews on the veggie burgers that are done by Hilary’s Eat Well…I knew…absolutely knew I had to try them out.  And, on a recent journey over to my local Whole Foods store, my roommate told me to go grab one of the Hillary’s Eat Well veggie burgers from the freezer section.  They had quite a few varieties…but I thought it best to start with the original.  The burger that started it all.

Quite a reputation to live up to, yes?  Yeah…

A little history on this burger.  Hilary created this recipe back in 2005 for her restaurant, Local Burger, wanting to have it be free of all the common food allergies and artificial ingredients…yet still be packed with great flavor.  It was a hit at the restaurant…and now…it’s available to the general public in your natural food stores.

Ready to dive into a delicious new veggie burger and test out my brand new vegetable spiralizer to make sweet potato curly fries…the other night I got down and dirty cooking this frozen patty up.  Nothing was easier.  I preheated my electric skillet and put a little coconut oil in there.  Once it was heated up, I threw both of the patties in, hearing it immediately begin to sizzle.  With my spiraled sweet potato going down, I was able to focus on cooking these patties perfectly.  These easily took about 3 minutes on each side.  Not too long at all.  And when I flipped the burgers, they didn’t fall apart at all.  Most of the time, my gluten-free veggie burgers crumble.  Not these.  They held together amazingly well.

I plated the burgers on a gluten-free bun from my local gluten-free bakery, topped it with a bit of red leaf lettuce and some tomatoes.  A squirt of Dijon mustard and…there it was.  Dinner was served.

Even better…dinner was awesome.  One bite and I knew exactly why these is called the World’s Best Veggie Burger.  This burger is awesome.  Packed with flavor.  Not flat at all.  And, as I mentioned above, they don’t fall apart as you bite into it, or hold it in the bun.  It’s sturdy, yet soft and delicious.  And I am now hooked, very eager to try out the other offerings from Hilary’s Eat Well.

The Hilary’s Eat Well World’s Best Veggie Burger is made up from water, organic millet, organic quinoa, expeller-pressed non-GMO coconut oil, organic sweet potato, organic spinach, organic onion, organic psylliam husk powder, organic arrowroot, organic apple cider vinegar, salt, organic garlic.  Real ingredients!  Real, recognizable ingredients.  I LOVE this!  It is corn-free, yeast-free, gluten-free, dairy-free, egg-free, soy-free, and nut-free.  It’s perfection!

As for nutrition, the serving is 1 of the 2 patties that are in the package.  This one veggie burger will serve you up 210 calories and 9 grams of fat.  It might seem high, but much of that comes from the coconut oil.  The Hilary’s Eat Well World’s Best Veggie Burger also serves up 340 mg sodium.  This burger is cholesterol free and sugar free.  In addition, you will be getting 4 grams of fiber and 5 grams of protein.  Trust me…you will be FULL!

I love polishing off a meal and feeling full for hours afterwards.  And that’s what happened here.  I didn’t even have popcorn that night for a snack.  It’s not every day a meal fills me up.  Very impressed.

So far, the two products I have tried from Hilary’s Eat Well have blown me away.  I am SO in love with the World’s Best Veggie Burger.  And, as of right now, it really does live up to its name.  Brilliant.  And delicious.  I’m hooked!

Product Review: Sophie’s Kitchen Vegan Prawns – $5.99+

Vegan seafood.

Sounds impossible, right?  I would have doubted its existence myself, until a trip to Jungle Jim’s in Cincinnati, Ohio last year.  My eyes were opened to so much potential and awesomeness.  It’s…seafood…made from plant-based ingredients.

Seriously!

And while my journey into the vegan seafood began with Sophie’s Kitchen Breaded Vegan Fish Filets…which were…eh…okay…I have found other products by this company to be amazing.  Like…you wouldn’t even know it wasn’t seafood.  I’m not kidding.  Taste is sometimes even better.  Texture is spot on.  Yep…I’m in love with this company.  So much, in fact, that the Breaded Vegan Shrimp are always in my freezer.

Between the numerous natural food stores that I shop at each weekend, there is a variety of Sophie’s Kitchen options available.  My most trusted spot, however, is Whole Foods, as they seem to have more of the products than anywhere else.  And on a recent journey, these amazing products were…ON SALE!  So, my roommate and I grabbed one of each.

And…with Fat Tuesday’s arrival…I was in the mood for some Cajun food.  This meant I took the Vegan Prawns and rubbed them with a Cajun seasoning (a la Emeril Lagasse) and cooked them in the oven at 375°F for 6 minutes.  This really is that simple, I swear.

Why Cajun shrimp?  Well, when I was at Disney World this past January and was meeting Tiana (from The Princess and the Frog), I asked how her restaurant was going and explained that it was a dream of mine to open my own.  She said to make my signature dish an amazing Cajun Shrimp Alfredo.  So…here I took her advice…except I kept mine vegan and gluten-free.  Because…I want to be able to eat it, yes?  Yes!

Well, being that this was the first time I was eating the Vegan Prawns from Sophie’s Kitchen, I didn’t stir them into the pasta, but rather laid them on tip.  And it worked.  The dish looked beautiful and the pasta came out perfect.  I made up a sauce using So Delicious Dairy Free Unsweetened Cultured Coconut Milk, almond milk, nutritional yeast, vegan butter, garlic, fire roasted tomatoes, and a bit more Cajun seasoning.

And I’ll get to the taste in a moment…

Because Fat Tuesday is tonight and I had another idea going in my head.

This time…a Cajun Shrimp Po’boy.  With my vegan slaw on a gluten-free sandwich roll.  This HAD to happen.  I mean…for real.  I once again rubbed the Vegan Prawns down with my Cajun seasoning, but this time I decided to cook them up in a pan.  I toasted the rolls in the oven, added some local lettuce, slathered them with some slaw and topped them off with the Vegan prawns.  My own, personal twist on a Po’boy.  Getting in the Mardi Gras spirit here!  I cooked the prawns in coconut oil and…OH MY GOODNESS…that was magic.  The Cajun seasoning blackened up perfectly.  And these were…winning!

So, now I can talk about what I thought about the Sophie’s Kitchen Vegan Prawns…

Oven baked or cooked in the skillet, I was beyond impressed with the flavor, texture, and overall taste of the Vegan Prawns.  They were fantastic cooked in the coconut oil in the pan though.  Reminded me of when I used to help my mom make her garlic lover’s shrimp (with real shrimp, mind you!).  And, I think next time I purchase these (and, yes, there will be a next time), that’s what I’m going to do with them.  YUMMY!!  I thought these meshed well with the other flavors I paired with it, in both dishes.  And while baking them in the oven was good…the pan cooking was beyond amazing.  I think I found my new favorite way to prepare them.  In fact, next time I get the Vegan Scallops…that’s how I’m cooking those as well.  Honestly, these are fantastic.

As far as ingredients go, the Sophie’s Kitchen Vegan Prawns are made from water, konjac powder, beta glucan, potato starch, paprika, organic agave nectar, sea salt, carageenan (seaweed based gelatin), alginate (from seaweed), and calcium hydroxide.  The Vegan Prawns are soy-free, gluten-free, 100% vegan and plant-based, non-GMO, contain no artificial colors, preservatives or MSG. These have no added sugars or artificial…anything.  Honestly!

Nutritionally speaking, each box contains 3.1 servings…or 10 of the Vegan Prawns.  A serving is 3 prawns, but being as I’m splitting this with two people over two days, we each had 2.5 Vegan Prawns.  That being said, a normal serving of the 3 prawns would give you 50 calories.  This product is fat free and cholesterol free.  A serving will also provide you with only 150 mg sodium and 1 gram of sugar.  Loving that.  And finally, three of the Vegan Prawns provide you with 3 grams of fiber and less than 1 gram of protein.

Discovering Sophie’s Kitchen products has been amazing for me.  I often keep one product stocked in my freezer at all times.  You never know when you might need it.  If you haven’t tried these yet…go to your local natural foods store and check their freezer section.  Serious yummy vegan seafood eats here!

Coconut milk and I are seriously becoming best mates.

Really.

I am using it more and more…and not just to splash into my coffee or over my cereal.  I mean…I am now making ice cream with it, making soups with it, you name it…I’m probably doing it.  And my main source of coconut milk (my only source, actually!) is So Delicious.  Why?  Because they live up to their name. I have never had a product that I didn’t like from their line-up.  That’s saying something, for sure.

Happily, they make more than just half gallon cartons of coconut milk.  Yep.  They do yogurts and even…desserts.  YES!  Desserts.  Otherwise known as my favorite meal of the day.

I was recently provided with a box of the new So Delicious Dairy Free Minis Organic Just Java Bars.  I just recently reviewed the Fudge Bars and Super Strawberry Bars.  This was the last in the line of products and the one I was anticipating the most.  I mean…java…hello!  I won’t lie…coffee and I are also best mates.  So, combine coconut milk with coffee and make it a dessert…you are totally speaking my language.

I wonder if So Delicious knew that?

Anyway…after a long day that started with spin class at the gym and ended at physical therapy for my ankle sprain, I was looking forward to treating myself to something sweet and refreshing after a quick dinner.  So, after I finished up my meal, I did up the dishes and reached into the freezer for the So Delicious Dairy Free Minis Organic Just Java Bars.  I removed two…one for me and one for my roommate.

One taste and I have declared this one my favorite of the bunch.  It’s like…eating a delicious frappuccino.  Seriously.  The best part is, the coffee flavor doesn’t overwhelm this dessert.  Too often, coffee-flavored desserts or treats are overwhelmed by that java flavor.  But not these.  The balance is perfect.  And the coconut milk just makes it.  Honestly.  It just makes this dessert.  It’s so smooth and dreamy-creamy.  I was happy to savor it slowly, until it started to melt more.  Then I had to pick up the pace.  The fact of the matter is…SUPER DUPER JAVA-INDUCED YUMMINESS!

You can quote me on that one.  OMG…so delicious indeed.  These will forever have a spot in my freezer…because they aren’t just good…they are a treat you won’t feel guilty about eating either.

While on that topic…let’s go ahead and peek at the ingredients, yes?  The So Delicious Dairy Free Minis Organic Just Java Bars are made from organic coconut milk, organic dried cane syrup, organic inulin, organic guar gum, organic fair trade coffee, natural flavor, organic locust bean gum, and sea salt.  Not too bad on the ingredients.  Nothing that I don’t recognize.  That’s always a good sign.

Nutritionally, these are awesome!  A serving is one of the dessert bars.  This mini treat will serve you up only 80 calories and 4 grams of fat.  One dessert bar also contains 25 mg sodium and 8 grams of sugar.  That’s really good for a dessert!  You will also be taking in 5 grams of fiber and only 1 gram of protein.

If you are a coffee-junkie like me…you will love this dessert bar.  It is truly amazing.  You won’t even guess that it’s made with coconut milk.  And, trust me, you won’t miss the dairy either.  These are beyond fantastic.  These…are what dreams are made of.  And I, for one, am a happy dairy-free ice cream loving girl.

I have one person to blame for my obsession with anything So Delicious!  Honestly.  Because I was turned onto these fantastic products simply by having some of the vanilla coconut milk at my friend Heather’s apartment one morning when I was visiting.  She asked if I had tried it and then went on and on about how wonderful it was.  I took a sample.

I was hooked.

So…I’m not pointing the finger at you, Heather…I am thanking you.  Because of you, I have this love affair with products from So Delicious Dairy Free.

Recently they launched a couple of new products…one of which is some mini coconut milk dessert bars.  Yes…coconut milk based dessert bars.  They do it brilliantly.  I reviewed the Minis Organic Fudge Bars the other night…but a new flavor steps into the spotlight tonight.  And right there with chocolate, this happens to be one of my favorite flavors in life.

Strawberry.

I love strawberries.  I love strawberry flavored things.  I apparently love strawberries and coconut milk in a frozen form.  Because from my first taste of this bar, I was hooked.  So Delicious Dairy Free Minis Organic Super Strawberry Bars are…well…super.  I’m not kidding.  If you want to taste something that tastes like real strawberries…look no further than this dessert.  And it isn’t fake strawberry flavor either.  That amazing strawberry taste…that’s real strawberries.  Organic strawberries at that.  It’s amazing what real ingredients to do the flavor of food.  I was instantly a fan of this frozen treat.  Instantly.  It was all I could do to saver each taste until it was all gone.  I wanted it to last forever.  But these little bars are mini…and they melt.  So…it can’t go on forever.  But, there are four to a pack, so you can indulge three more times after that first initial one.

And you’ll want to.  Rich, smooth, creamy…it’s hard to believe that these don’t have any dairy in them.  Who says you can’t make a fantastic frozen dessert without real milk and cream.  These bars are proof.  Not only are they creamy and dreamy, but they taste amazing.  And I love that they are the perfect size too.  So often, desserts can outweigh the dinner entree.  Not here.  You get a great portion and great flavor.  This company is named So Delicious for a reason!

Let’s talk ingredients.  According to the package, the So Delicious Dairy Free Minis Organic Super Strawberry Bars are made from organic coconut milk, organic dried cane syrup, organic strawberries, organic inulin, natural flavor, organic guar gum, ascorbicacid, organic locust bean gum, and organic beet juice concentrate.  Not bad.  I know what all the ingredients are.

Nutritionally speaking…you’ll love these!  One serving is one of the mini bars.  This will provide you with 80 calories and 3.5 grams of fat.  You will also be taking in 5 mg sodium (love that!) and 9 grams of sugar.  Considering much of that sugar is coming from real fruit…that’s not bad.  Not bad at all.  A serving will also give you 5 grams of fiber.  These bars, however, contain no protein.  These are cholesterol free, gluten-free, vegan, kosher, non-GMO and certified organic.  YAY!

If you love strawberries…you’ll dive right into these bars.  Taste-for-taste they just get better as you go along.  I absolutely loved everything about the SO Delicious Dairy Free Minis Organic Super Strawberry Bars.  Everything.  Down to the plant-based and compostable stick.  Saving the environment the So Delicious way.

Many of you already know that I am a huge fan of So Delicious.  Their coconut milk and almond milk (as well as products made from said non-dairy milk) are amazing.  I have yet to try something that I don’t like.  That’s the thing about a company named So Delicious…it has to live up to it.

Recently, So Delicious Dairy Free released a couple of new coconut milk products.  And I was fortunate enough to receive some of these products in the mail.  I was out of town this past weekend, so I didn’t get to dive right in…but now that I’m back…I’m was beyond eager to give these products a try.

I started…with one of the most basic ones.

My choice: So Delicious Dairy Free Minis Organic Fudge Bars.  These little fudgsicle like treats are a coconut milk dairy-free frozen dessert.  And they are chocolate.  And you know…one of the ways to my heart is through chocolate.  I’m a choc-o-holic.  I owe that to my grandma because she ate the heck out of chocolate.  It was her favorite thing in life.  And I can’t blame her.  So, not only are these frozen bars made with delicious chocolate, but also that sweet hit of coconut milk.  Sounds like the perfect snack, yes?

You better believe it.  The Mini Organic Fudge Bar was my dessert tonight.  I was so eager to rip into the wrapper and devour.  But…I paced myself.  Because dessert is meant to be savored.  And this frozen treat is worth every moment of savoring.  It won’t last too long though, because it does melt.  So…do keep that in mind, okay?

First of all, this is the perfect and ideal size treat.  Not too much and not too little.  As Goldilocks would say…it’s just right.  And it is.  Honestly.  The actual bar itself is around 3.5 inches in length, so in the grand scheme of things…not as mini as the product name might lead you to think.  That’s a nice bonus.  The consistency is so ice cream like you won’t believe that you’re not eating a full-blown-to-the-max-with-dairy ice cream bar.  No cows were used in the making of this chocolate treat.  Seriously.  Velvet smooth.  And the flavor is incredible.  I fell in love with the rich flavor of the chocolate combined with that smooth coconut milk flavor.  It is a winning combination in my book.  I think my roommate got tired of hearing me comment on how delicious dessert was.  Best of all, I didn’t have to bake it or make it.  It was in my freezer just waiting for me…begging me…to just try it.

There is no going back.  I want this in my freezer for life.  For afterlife too, if that’s possible.  This sweet tooth was beyond satisfied.

As far as ingredients go, the Mini Organic Fudge Bars contain coconut milk, organic agave syrup, organic inulin, organic cocoa, organic dried cane syrup, water, carob bean gum, guar gum, natural flavor, salt, and carrageenan.  These bars are vegan, cholesterol free, and gluten-free.  All ingredients are also non-GMO!  I totally approve.

As far as nutrition goes, you will absolute do a flip for these.  A serving is 1 bar.  The box comes with 4 inside.  One of the So Delicious Dairy Free Minis Organic Fudge Bars will serve you up only 80 calories and 3.5 grams of fat.  You will be consuming 10mg sodium and 8 grams of sugar.  Not bad for a treat!  And you will be provided with 3 grams of fiber and 1 gram of protein.

My friend Jenn knows the way to my heart.  She knows what can lift my spirits.  She knows how to get me to smile.

Three words.

Gluten Free Cookies.

Yep.  That does it every time.  And this past weekend, when I went up to visit and escape my real life where I live for awhile, she totally lifted my spirits and helped me find that smile that has been absent during this winter year.  And that was before the cookies were even mentioned.

Saturday was a busy day…and one that included many culinary adventures.  But, as the night was winding down and before we all settled in to watch Despicable Me 2, we (being Jenn, Cathy and I) quickly made our way to the kitchen because we were celebrating Jenn’s birthday and cookies had to be had.  For real.  Out of the freezer she pulled a package of Immaculate Baking Company Gluten Free Chocolate Chunk Cookies.  I think I might have salivated immediately.

Anyway…we knew these wouldn’t take too long to cook, so we got right to work, preheating the oven to 325°F and prepping a baking sheet with parchment paper.  I tore into the cookie dough package and removed the tray of 12 balls of dough.  From there, Jenn and I began to remove the cookie dough and place the little balls of chocolate chip gluten-free joy onto a baking pan, about 2 inches apart.  When the oven was up to the proper heat, we popped the pan inside and let it cook for 16 minutes.

Longest 16 minutes ever.  The three of us had a little snack of Jenn’s homemade pink salad…while we were waiting…because it seemed logical.  And, for the last five minutes, we all just sort of stared at the timer…eagerly awaiting our chocolate chip treats.  Except we were cooking from frozen, we gave them a little longer, but not much.  When we removed them, they were golden balls of cookie dough, because we didn’t pay attention to the part of the baking instructions that said to flatten the cookie before shoving it in the oven.  Whoops.  No worries.  We now had to let the cookies sit for another 5 minutes.  That was sheer torture, because now the kitchen smelled like chocolate chip cookies.  As those five minutes finished, Jenn scooped a cookie off the sheet to plate it.  Then she said the most glorious words ever (and honestly is one of so many reasons she and I get along so well) when she exclaimed, “Screw this one cookie thing! We’re each getting two!”

There were no arguments.  At least not from Jenn or I.  Cathy might have looked a little bit startled but she happily complied to the 2 cookie vote.

I won’t lie.  I was the first person to take a bite.  It was still very soft in the middle…not raw…but close.  We probably should have let them cook a wee bit longer since we were cooking them from their frozen state.  But…they were really good.  The cookie dough was fantastic.  I loved the buttery flavor of the cookie itself and, even more, the sweetness from the chocolate chunks that were throughout the cookies.  They didn’t skimp on the chocolate, and I appreciate that so much!  I love that no bite was without a bit of chocolate.  The flavor actually reminded me of these large cookies that my school district offered from K-12 grades that were soft and chewy and just above that half-baked level.  They tasted so much like that and it brought back some really happy memories.  I enjoyed these so much.  I might have licked the crumbs off the plate.

The next day, Jenn sent Cathy and I on our way with two more for each of us.  I found that I liked them even more on the second day.  I might have gotten a little hungry halfway home so we had a bit of a snack.  One part of this snack was one of the cookies.  Soft in the middle.  Chewy.  No hard bites that break your teeth.  Still amazing and delicious.  YUMMY!  I might be addicted to these.  The other two were consumed as dessert after dinner that night.  And I once again reminisced about how good they were…how amazing they tasted…but now…they were gone.

Immaculate Baking Company Gluten Free Chocolate Chunk Cookies are made from semisweet chocolate, palm fruit and canola oils, brown sugar, potato starch, tapioca starch, sugar, rice flour, whole eggs, invert sugar, water, natural flavor, xanthan gum, baking soda, and guar gum.  No crazy ingredients that make me question what they might be doing in food…or foody treats like cookies.  These cookies are also completely dairy-free as well.

Now let’s talk nutrition.  I know…cookies.  Cookies are treats and really not nutritionally sound…but…COOKIES!  This from a true cookie monster.  Let’s remember…everything in moderation.  And if you stick to the serving size, these really aren’t too bad on the nutrition scale.  A serving is 1 cookie.  This cookie will give you 150 calories and 8 grams of fat.  This serving will also provide you with 10 mg sodium, 85 mg sodium and 11 grams of sugar.  Yes…that is a lot of sugar.  About 3 teaspoons per serving, actually.  But, remember…cookies.  These are cookies.  Finally, one cookie provides you with less than 1 gram of fiber and 1 gram of protein.  So, these aren’t made to be filling.  And with all that sugar, they won’t be.  But…yeah…they are beyond tasty.

I love that Immaculate Baking Company has a few gluten-free options in their product lineup.  Honestly.  Even more…I am beyond impressed with the way the Immaculate Baking Company Gluten Free Chocolate Chunk Cookies baked up and came out.  Yes…even with the misstep on our part for baking time.  They are really delicious with great flavor and at least a chunk of chocolate in each bite.  I want to fill my freezer with these and cook them all the time.

Consider this cookie monster hooked!

Recipe: White Chocolate Peppermint Coconut Milk Ice Cream

I love ice cream.

Seriously.

Obviously.  I mean…who else in their right mind would make ice cream when it is -100°F outside.  That might be a slight exaggeration on the temperature…but it has felt like that the past couple of weeks.  And it’s driving me insane.  And when I go insane…I make ice cream.

A local ice cream store does some seasonal flavors every year, and one of the ones that is introduced at Christmas time is called Candy Cane Lane.  It’s a white chocolate base with peppermint candies broken up and incorporated into the ice cream.  It is phenomenal.

With the holidays now behind us…that ice cream flavor has gone back to the vault until next December.  With that being said…I set out to recreate it, but instead of using a base made with whole milk and heavy cream, I used culinary coconut milk.  Once again, So Delicious Culinary Coconut milk proves that it is just as good of a base as the heavy dairy, which tears my stomach up.

What was even better…it tasted just like the flavor at the ice cream shoppe.  You’d never even guess coconut milk was used to make it.  So, dig out that ice cream maker and give this one a whirl!

Recipe: White Chocolate Peppermint Coconut Milk Ice Cream

Servings: 8
Time: Prep 10 minutes; Freeze 30 minutes

Ingredients:

  • 2 cans full fat coconut milk (I used So Delicious Culinary Coconut Milk)
  • 1 cup coconut sugar (or your preferred sweetener)
  • 8 ounces white chocolate, melted
  • 1/2 cup crushed peppermint candies or Andes Peppermint Crunch Baking Chips

Directions:

In a saucepan, add a couple inches of water and bring to a simmer.  Place a large bowl over the saucepan, making sure the base of the bowl does not touch the water.  Break up the white chocolate into pieces, add them to the bowl, keeping the heat at its lowest, and allow the chocolate to melt slowly.  The chocolate will take about 5-10 minutes to melt and will become smooth and glossy.  Remove it from the heat and give it a good stir.

In a large bowl, mix the coconut milk, sugar, and melted white chocolate together until completely incorporated.  Refrigerate for 4 hours or overnight.

Add the ice cream base to the ice cream maker and freeze according to the manufacturer’s directions.

In the last two minutes of processing, add in the peppermint candies/baking chips and continue to process until well incorporated.

Transfer the ice cream to a freezer-safe container, cover the ice cream with plastic wrap, cover with the lid, then freeze until firm.

Yep…it’s super simple…and REALLY good.  And, no worries, you can’t even taste the coconut milk.  You get the smoothness of the white chocolate and that hit of peppermint from the addition of the candies or baking chips.  And in the end…it makes a delicious treat that everyone will enjoy.  Even when it’s colder than Christmas out there.

But…ice cream is good anytime, right?

Lately…I’ve been doing my best to make my own veggie burgers.  I’ve been a vegetarian for 4 years now and gluten-free for 3 years…and while there is definitely more of a market for gluten-free/vegan or vegetarian burger patties out there…not all veggie burgers are created equally.  I’ve done plenty of experimentation.  And, before I had to go gluten-free…I was all about the Morningstar patties.  There were none better.

Then…going gluten-free took them off the table and out of my freezer.  At first, I lamented this.  However, then I went back awhile ago and looked at the ingredient list on Morningstar patties…and cringed!  It’s mostly chemicals.  YUCK!  Maybe this gluten-free thing was a blessing in disguise.

That being said, I’ve found some great veggie burgers and some not-so-great veggie burgers.  I’ve had burgers that have fallen apart as they cooked and burgers that wowed me.

Tonight…I tried a different veggie burger.

Made by Health is Wealth, the company that once upon a time made vegan and gluten-free not-chicken nuggets.  They no longer make them anymore.  Which I still cry about.  BUT…they do make veggie burgers too.  And these, at least, are vegan and gluten-free.

My natural food store carried two of the varieties of Health is Wealth.  The burgers themselves are called Sprout Burgers.  Why?  Because they are actually made from organic sprouted grains – specifically quinoa, amaranth and millet).  These vegan and gluten-free burgers are made with non-GMO soy as well, are baked and never fried, and are packed with flavor.  They come in three flavor options – original, Chipotle Bean, and Mushroom and Onion.

With my plethora of romaine lettuce, red onion and roma tomato from my recent CSA bin, a gluten-free veggie burger dinner was definitely needed.  So, I pulled out the gluten-free sandwich rolls my local gluten-free bakery (shout-out to Annie May’s Sweet Café on Frankfort Avenue) from my freezer to thaw while I was at work.  When I got home, it was just a matter of getting the burgers cooked.

That task was easy.  While I toasted the rolls to make the buns, I put the Health Is Wealth Sprouted Grains Chipotle Bean Sprout Burgers on my skillet to cook through.  That took about 4 minutes on each side.  It didn’t take long at all.  I plated up the burgers on the toasted buns with the vegetables and some vegan sriracha sour cream…and dinner was served.

So…how good can the Health Is Wealth Sprouted Grains Chipotle Bean Sprout Burger taste?

AMAZING!  First of all, this burger does not crumble.  It won’t fall apart as you try to bite into it.  The texture is meaty and awesome.  The flavor is just the right amount of spice with the right level of spice.  It has just enough heat to keep it interesting.  The beans add a lot of protein.  And the flavor is amazing.  I was so impressed with the Chipotle Bean Sprout Burger.  I’m also excited that I have two more patties left in the freezer for my roommate and I to eat later this week.  These are fantastic.  Even meat eaters (like my roomie) will enjoy these.  They are hearty, healthy, and just amazing.

So…what sort of ingredients go into vegan and gluten-free burgers?  Well, in the case of the Health is Wealth Sprouted Grains Chipotle Bean Sprout Burger…the following: non-GMO hydrated textured soy protein, organic sprouted grains (millet, quinoa, amaranth), non-GMO isolated soy protein, black beans, corn kernels, canola oil, molasses, red pepper, seasonings (sea salt, tomato powder, garlic powder, lime juice), food starch, hydrolyzed soy protein, modified cellulose gum, oat fiber, garlic powder, caramel color, onion powder, sea salt, maltodextrin, yeast extract, lemon juice.

It seems like a lot…but at least it’s not just a load of chemicals and unpronounceable ingredients.

Nutritionally speaking, a serving of the Health Is Wealth Sprouted Grains Chipotle Bean Sprout Burger is one patty.  This one patty will serve you up 90 calories (REALLY good for a veggie burger) and 3 grams of fat.  These are cholesterol free, contain 420 mg sodium, and only 2 grams of sugar.  One serving also gives you 3 grams of fiber and 9 grams of protein.  You will definitely feel full.

I absolutely LOVED this burger.  My roomie did too.  In fact, we both said that we’ll have to try the other Health Is Wealth vegan and gluten-free burgers.  They were that great.  Loved the texture, the flavor, and everything about these.  The price isn’t too bad either.  Not for 4 patties in a box.  If you haven’t given these a try…make sure you do.  They are really fantastic.

Okay…they aren’t Van’s Gluten-Free Waffles…but they aren’t half bad!

I admit it.  I had a coupon for Kroger’s organic brand of waffles from Simple Truth…and they happen to have two varieties of gluten-free waffles on the market…so I definitely took advantage of the coupon this past weekend.  And, no sooner had I bought them, I was whipping them out for a quick breakfast.  After all, I circuit trained and did spinning this morning.  This meant…easy breakfast that can toast while I showered and got ready for work.

Waffles.

Easy peasy!

Onto a baking sheet and into the oven they went (ever since being diagnosed as Celiac…the toaster went into the garbage due to cross-contamination problems…and was never replaced).  10 minutes later, I was pulling golden, perfectly toasted waffles from my oven.  They smelled amazing.  They toasted up perfectly.  And I could even see the blueberries inside the little waffle shapes.  Quick, but efficient breakfast was about to commence.  A little dab of butter and some maple-agave syrup over the top…and we were in business.  I paired it with some water and a cup of coffee.  Just the easy meal I needed after a hectic morning.

So, how were they?

Less soft and substantial than Van’s Gluten-Free Waffles.  But, for a freezer waffle…for a gluten-free freezer waffle…I give them a solid 8 out of 10.  The batter seemed really thin in parts, making them more of a crunchy waffle, rather than that crisp outside, soft middle that I associate with perfect waffles.  The blueberries weren’t even throughout…mine were mostly to one side of the waffle…but at least they were in there, right?  Yeah!  They were sweet, which I love…waffles should be sweet…and they had a good flavor.  And, when all is said and done, that is the most important thing.  Were they perfect?  Nope.  Were they edible?  Beyond edible.  They were tasty.  And organic…which you have to love.  And they, honestly, were good!

They just weren’t as good as Van’s Gluten-Free Waffles.  But…I haven’t found one that is yet either.

Let’s talk ingredients.  Simple Truth’s Gluten-Free Blueberry Waffles are made from water, brown rice flour, potato starch, vegetable oil, corn flour, organic tapioca starch, blueberry bits, sugar, potato flour, inulin, leavening, soy lecithin, fruit juice concentrate blend, natural flavors, and salt.  So…it’s sort of a mess…but not too bad.  Not really.  Not for a quick dine-and-dash morning meal anyway.  Especially one that is, honestly, coming out of a box in the freezer.

Nutritionally speaking, a serving is 2 waffles.  These waffles will serve you up 220 calories and 8 grams of fat.  Not great…but not bad either.  Van’s does better with 10 fewer calories and 2 grams less fat.  So…there is that.  The Simple Truth Gluten-Free Blueberry Waffles also will serve you up 350 mg sodium and 7 grams of sugar.  Van’s beats them here too, with way less sugar and 30 mg less sodium.  You will also have 2 grams of fiber an 1 gram of protein.  Not exactly a filling breakfast…but it’s a sugary treat from the freezer (and not one I make a habit of consuming either!).

So, the basic gist of this is…Simple Truth puts out a good gluten-free waffle.  The blueberries gave it a nice added bit of flavor.  And they had a nice crusty outside that toasted up perfectly.  They weren’t the best frozen waffles I have had since going gluten-free…but they are close.  I liked them.

So, if you can get Simple Truth products, I recommend trying the Gluten-Free Blueberry Waffles, or even the Gluten-Free Homestyle Waffles (which I’ll get next time I have a coupon).  They make a good, quick, and easy breakfast when you have a busy, busy morning.  Thumbs up.
